Now that the weather’s warming up again, it’s time for some lighter fare. Try this recipe for a refreshing tomato and avocado salad, courtesy of Seasons 52. Salad Ingredients 3 medium tomatoes, washed, each cut into 8 wedges 2 ripe avocados, skin removed, pitted, cut into 1-inch pieces 1/4 cup fresh cilantro, washed and chopped 1/4 cup red wine vinegar 1/4 cup extra virgin olive oil 1 teaspoon Kosher salt 1/4 teaspoon ground black pepper 1 pint packed arugula Drizzle balsamic glaze Bruschetta Ingredients 1 loaf ciabatta bread, cut into 1-inch slices Extra virgin olive oil for brushing Kosher salt to taste Ground black pepper to taste

For John “Hap” Fauth, a longtime seasonal resident of Naples, sailing has been a lifelong love. From his first experience aboard dinghies in the Great South Bay of Long Island at age 7 to becoming a three-time world champion in competitive yacht racing decades later, Fauth has demonstrated his skill on the water time and again. Over the past five years, he and the highly skilled crew of Bella Mente (bellamenteracing.com) have won the Rolex Maxi 72 World Championship three times and are gunning for the title again this year, hoping to continue their winning streak in the Maxi 72 circuit. Fauth’s 2017 campaign has two phases—the Caribbean races and European races. It began with the Caribbean 600, which Fauth's team won in late February, competing against more than 80 yachts in that grueling race around 11 islands. The campaign culminates with the Rolex Maxi 72 World Championship in Porto Cervo, Italy, in September. “Every year, just like in Nascar, there is normally a technological advantage that new boats have,” Fauth says. “You have to beat

them the old-fashioned way: just out-sail them. That’s the reason this campaign is unique—the boat’s a year older and so am I.” Another unique element of the campaign is that it is part of an owner driver class, meaning that while the crew are professional sailors, the helmsmen are the owners, men for whom sailing is a deeply loved hobby. “It’s one of the reasons I went into it,” Fauth says. “All the other guys I’m sailing against are guys like me.” Born and raised in New York, Fauth spent his youth in age class races, ultimately going on to crew on big boats and captain the sailing team at Georgetown University. After graduating, however, he put sailing on hold and moved to Minneapolis to start his own business and raise a family. He moved to Naples in 2002 and now spends winters at his home in Port Royal. As for what's to come after this season’s races, Fauth is not ready to commit to his next adventure. “That’s the $64,000 question,” he says. “Either I retire or I build a new boat. GIVING BACK What a difference a day makes. This January, Naples Junior Woman’s Club (NJWC) spent a day at the Habitat for Humanity of Collier County, a nonprofit that provides new homes to underprivileged families by enlisting volunteers, and the families themselves, in the process of building the home. NJWC is an organization of young women committed to improving the Naples community through volunteer service. The 12 women, as well as their husbands and friends, spent four hours roofing, painting, and drilling to help build the new Collier County home, working right alongside the family who will live there. Each month, NJWC’s philanthropy committee continues to support local charities in various ways. —Summer Fernandez de Castro

Deepening its roots in the community, the Norris Gardens at Palm Cottage will mark its tenth anniversary this month. The five biologically diverse gardens, from the Garden of Senses to the Pioneer garden, were each carefully designed to replicate the landscape history that is believed to have existed in the time of Florida’s first settlers. The Gardens, along with Palm Cottage, Naples’ oldest house, have offered a tangible glimpse of history for the area’s residents since 2007. Naples Historical Society is celebrating the milestone on April 29, when admission to the Gardens and the Historic Palm Cottage will be complimentary from 1 p.m. to 4 p.m. The Society also partnered with Stay In May, a popular arts and culture festival, to host a performance by the Naples Dixieland Jazz Band starting at 4 p.m. The performance is free for Society members and $17 for non-members. If you can’t, then the shoe is too snug. Egbert explains that feet swell when you exercise and you need to account for that. Brooks, which only makes running and walking shoes, is the store’s best-selling brand—about two to one over its second most-popular shoe, Asics. MOISTURE-WICKING SOCKS. Not all socks are created equal. Egbert suggests a moisture-wicking sock made of technical fibers, usually a polyester blend, to help reduce blisters and callouses. A lifelong runner, Carl Egbert is up before dawn each morning for his daily run. So it is no surprise his long-standing passion for the sport shows through when he helps customers at Naples on the Run, which he has co-owned since 2012. His partners—Mitch Norgart, Perry Silverman, and Arthur Sheinholz—originally opened the running specialty store in Naples 26 years ago. Over the past 15 years, and continuing today, the store works with the community to give back to those less fortunate in our area. Egbert accepts donations of “gently worn” shoes from the public, and then offers them to those in need at Guadalupe Center and St. Matthews House.

APPROPRIATE CLOTHING. You don’t need anything fancy, Egbert says, just a comfortable pair of athletic shorts and a dry-fit shirt, which is lighter and more breathable than a cotton T-shirt. And, of course, a proper-fitting sports bra for the ladies.

Trending Now… What’s the latest in the athetic shoe market? An over-the-top amount of cushioning. “A few years ago, minimal was all the rage and now it has moved to an oversized cushioned shoe like the Hoka One One,” Egbert says. While this can be ideal for certain individuals with previous running injuries or another specific need for that extra support, he says the best choice is usually somewhere in the middle.

Napa Valley’s Yountville intoxicates all five senses By Mary Murray

When it comes to wining and dining, Napa Valley reigns supreme. Famous for its Cabernet Sauvignons, the region possesses more than 500 wineries, a smorgasbord of renowned restaurants, and a landscape blooming with viticultural treasures. And it all started in Yountville. George Yount was the first person to plant grapes in Napa Valley in the mid-1800s. Today, the town of Yountville bears his name and a reputation as Napa’s Culinary Capital. Visitors to this 1.5-square-mile foodie mecca are encouraged to “taste life here.” But, in Yountville, no sense is left behind. Visually, Yountville is a quaint, small town dotted with vines and nestled between the Vaca Range and the Mayacamas Mountains. The streets bear charming sculptures, all part of a public art walk. Scamper through a “Rock Mushroom Garden,” sit next to the bronze

Aesthetic wonders continue at Bardessono (bardessono.com). Located on the site of the Bardessono family’s former farmstead, this hotel was built using salvaged materials and comprises 62 suites across four “groves” named after indigenous trees. The halls boast contemporary art while the outdoor courtyards house calming water features and Zen-inducing foliage. The suites are a study in simplicity, but not at the expense of luxury. With a LEED Platinum Certification, Bardessono prioritizes posh green living, as seen in such sustainable design elements as rooftop solar panels and room-occupancy sensors that eliminate lighting when guests are out. Most importantly, each suite specializes in tempting the sense of touch. In addition to an on-site Spa Therapy Center, Bardessono also offers in-room spa experiences. Head down the street to the ultra-luxe Spa Villagio (villagio. com) and order an Ocean and Earth body wrap. After you emerge from your skinsoothing cocoon, take a bath under the pristine Napa sky on a private terrace. No matter where you roam, you’ll hear a chorus of corks and the hum of generous pours. Given its central location within Napa (which only measures 30 miles long and 5 miles across at its widest), Yountville is an ideal home base when visiting the region’s seemingly limitless vineyards. But you won’t go thirsty should you remain in Yountville proper. Washington Street, the town’s main thoroughfare, abounds with tasting rooms, where winemakers are eager to share the fruits of their labor.

The family-run Stewart Cellars (stewart cellars.com) works with some of Napa’s best vineyards to craft wines that emphasize the grapes’ prestigious beginnings. Stewart’s spectacular Chardonnays and red varietals, particularly Cabernet Sauvignon, are available in stores but are best enjoyed at the Yountville outpost, which opened in 2016. Three stone buildings make up the Stewart Cellars “village,” including the Gather Café and the Tasting Hall, where guests can sniff and savor vintages at the concrete-and-leather bar. For a more bespoke experience, reserve a tasting in the Nomad Heritage Library, decked with decor that recalls the family’s Scottish heritage and lined with books on topics ranging from the fashion of Tom Ford to the history of Houdini. Other enological standouts are Hope & Grace (hopeandgracewines.com), known for its Pinot Noirs, and Hill Family Estate (hill familyestate.com), maker of the super-tasty

Start with acclaimed chef Thomas Keller’s collection of restaurants (thomaskeller.com), anchored by The French Laundry, one of the most lauded eateries in the world. Keller diehards can also sample Ad Hoc, a casual ode to comfort food; the Michelin-starred Bouchon, which serves French bistro fare like rillettes aux deux saumons served in a jar; and Bouchon Bakery, a pistachio-colored patisserie.

At Bottega, Chiarello showcases his technical prowess and passion for strong Italian flavors in dishes like the decadent Raviolo di Uovo, one massive ravioli filled with an egg yolk, ricotta, and Swiss chard, topped with brown butter and sage. Want to gaze at the starry night sky? With the press of a button, that multilayered convertible top will burst open in 17 seconds, even at speeds up to 37 mph. Mercedes’ engineers have done a terrific job of turbulence control. With the top lowered, a small but highly effective mesh wind blocker appears between the rear headrests; it’s paired with a mesh foil (Mercedes calls it an Aircap) that ascends from the top of the windshield. Raise all four windows and they’ll reduce wind discomfort inside the cabin to a gentle zephyr—including at 80-plus mph. And at that speed, this V-12 powerhouse is only getting started. With a massive 621 horsepower and an insane 738 pounds per feet of torque driving the rear wheels, acceleration feels like an F-18 Super Hornet being catapulted from the deck of the USS Nimitz. If you’re turned on by such things, this AMG-crafted S65 can lunge from standstill to 60 mph in a mere four seconds. It won’t quit until the speedo needle is kissing the 190-mph mark. At 75 mph on I-75, it feels like it’s going backwards. But being that this is an AMG, there’s still a renegade element to its demeanor. Press the start button and the quartet of rear exhausts delivers a raucous, neighbor-waking squeal. Leadership appears to come naturally to Amanda Beights, who began her career in education, becoming dean of early childhood education at Royal Palm Academy in Naples before moving on to Leadership Collier Foundation, where she manages leadership programs and, most recently, the Emerging Leadership Council that was created to coordinate the philanthropic efforts of young executive groups. “It was a dream of mine to bring our county’s young professional organizations together to increase the impact we have while continuing our mission of growing leaders,” says Beights, 35, who also serves as philanthropy chair of the Naples Junior Women’s Club board to working on the Blue Zones Community Engagement Committee. Proud moment: I had heard about Big Brothers Big Sisters for years and knew children were on a waiting list. This fall, it clicked and my husband and I became a Big Brother to a boy in Collier County. Everyone is busy and thinks they don’t have time. But this was only a 4-hour (minimum) commitment a month. It has changed our lives. Guilty pleasure: I have a group of girlfriends who meet every Monday night to watch terrible reality shows. Biggest splurge: Anything pertaining to my home. I am always trying to channel my inner Joanna Gaines from Fixer Upper. On her watchlist: This is Us and Stranger Things. Can’t leave home without: My husband. We are a team and I could not accomplish half of what I do without his support. Millennial misconception: That we are addicted to our smartphones. While many of us have it near us at all times, we are often simply using it as a tool to enhance our work and make our work more efficient.

He noticed the trend of a shared community workspace that businesses of all types and sizes could utilize, and modeled the idea in Naples in 2012 when he cofounded Venture X, a membership-based office space for local companies. The 27-year-old, who lives in North Naples with his wife and one-year-old daughter, also oversees innovation and technology at his father’s company DeAngelis Diamond, and has been expanding his Venture X concept globally through franchising. Can’t leave home without: Phone. It’s my full-time command center. Prized possession: Wedding ring. It’s physically attractive, but the meaning behind it is worth even more. Technology he can’t live without: Movie streaming services (Netflix, Prime, On Demand, etc.). I’m a huge movie buff. Morgan Private Bank Having grown up visiting Naples’ beautiful shores at her parents’ second home each winter, 32-year-old Shanna Davies jumped at the chance to relocate here permanently in 2010. She worked for Merrill Lynch in New York City, then landed a job at J.P. Morgan in Naples, where she has worked ever since. “After living in New York City and getting my fill of that kind of crazy metropolitan lifestyle, I knew I wanted nothing more than to move to Naples to be closer to my family and the sunshine,” she says. Davies is deeply involved in the community and was named Young Professional of the Year in 2015 by the Greater Naples Chamber of Commerce. Outside of work, the newlywed can be found spending time with her husband, coddling her pug, Layla, and serving on the board of directors for the Humane Society of Naples and the young executive board for the David Lawrence Center. Bucket list topper: Waking up in the morning and not knowing or caring if it’s Tuesday or Sunday and traveling the world—Thailand, Australia, and Hong Kong are just a few on my list. Favorite travel spot: Capetown, South Africa. It’s where I had my honeymoon, the weather’s great, it sits on two oceans, and it has amazing wine and lots of animals. Playing in her earbuds: Thomas Rhett’s “Die a Happy Man” because my husband played this on the piano for me at our wedding. Ashley Leigh Assistant Principal, Second, and Eb Clarinet, Naples Philharmonic An accomplished professional musician during the week and active worship leader on the weekend, 35-yearold Ashley Leigh has lived in town for more than 12 years, performing orchestral and chamber concerts and solo performances alike. At just 23, the talented clarinetist joined the Naples Philharmonic, the resident orchestra at Artis—Naples. She also was awarded the grand prize at the 2006 Buffet-Crampon Young Artists Clarinet Competition in New York. “For me, music is a way of expressing heartache, anxiety, peace, hope, and joy,” Leigh says. Last year, Leigh and her husband, Jeff, a professional violinist himself, started a Christian worship service called Calvary Chapel Abide in Naples. The couple have released two CDs, as well as a collection of contemporary Christian songs they wrote together. Prized possession: My Eb Clarinet, the tiny piccolo clarinet you hear in the orchestra on occasion. It’s super loud and super high, and I always get a powerful adrenaline rush during a solo part. Favorite accessory: A cross necklace made from tiny pieces of multicolored glass, which my husband bought for me at Gallery One on Fifth Avenue. Millennial mindset: I was born in 1981, the first year of the millennials. I think baby boomers tend to accept the traditions handed down to them, while millennials tend to challenge why our traditions and belief systems are there in the first place. Hidden talent: I make great enchiladas. My husband and kids love them. Stress reliever: Being productive; having a great practice session despite a hectic life with kids does a lot to relieve stress for me. That, and a beautiful, foamy cappuccino.

Juan Diaz Fine and Performance Artist For 35-year-old Juan Diaz, what drives his art is the expression of oneness and connection. “I believe it is our urgent need to recognize that humanity is all connected,” Diaz says. “My work shows stories of the moments in life that make up the fibers of the human experience. I paint to turn viewers away from power and ego and direct them toward what matters: nature and love.” Born in Bogotá, Colombia to a family headed by a professional sculptor and ceramist father who helped cultivate his son’s artistic talents. After moving to Naples in 1995, Diaz gained acclaim through his poignant and powerful works in painting, drawing, installation, and mixed media, including pieces featured at the Baker Museum, Naples Depot Museum, and Florida Gulf Coast University. He received the 1999 Porter Goss Award and the Naples Art Association’s Jade Reidel Scholarship Award. His signature light performance art series has been commissioned by the Holocaust Museum of Southwest Florida, The Sidney & Berne Davies Art Center, and The Naples Film Festival. Biggest inspiration: Humble, simple, and genuine people who stand up for what’s right. The ones who dedicate themselves to master who and what they are truly leave the world a better place. What’s playing in his earbuds: Bossanova and classical piano. What might surprise people: I’m allergic to spicy food and I’ve never owned a TV. Words to live by: Take advantage of every opportunity as if it’s your first and last. Treat others like you want to be treated. Do everything the best that you can; it shows who you are.

The Everglades’ gift to water sports, airboats were invented by resourceful frog hunters to traverse the shallow River of Grass. Tourists began asking the frog men for rides and an attraction was born. Gene Wooten, former owner of Wooten’s Everglades Airboat Tours (woo​ tenseverglades.com), credits his father for the birth of the industry in 1953. Now under new ownership, Wooten’s continues to thrill visitors with rides into backwaters, as do a number of operations in and around Everglades City.

BOARD SPORTS

While Florida’s East Coast gets bigger waves, surfers on the Paradise Coast wait patiently for summer storms and winter fronts to produce sizeable surf, particularly around the Naples Pier. Naples has a widespread reputation for fishing, but did you know some locals head underwater for their fishing adventures? Naples Spearfishing League (spearfishingnaplesfl.com) has given new purpose to the sport with the invasion of lionfish in our waters. Last year it organized its first Lionfish Shootout and hopes to repeat the event this year. Its biggest tournament takes place in late summer with a lionfish division.

UIDED SUP TOURS Stand-up paddleboarding (SUP) is popular and available through lessons, rentals, and tours—typically in calm waters. Naples Paddleboard (naplespaddleboard.com) leads Gordon River tours of 90 minutes to two hours duration. Manatee Sighting Adventure (see-manatees.com) guarantees manatees, or you don’t pay. Your best bet for spotting gators on tour is by airboat (see A, above).

ET SKIS Personal watercraft provides a fun alternative mode of travel on the water. Many resorts offer rentals, or try Bonita Jet Ski & Parasail (bonitajetski.com), adjacent to Bonita Beach Park. This maze of mangrove islands, beaches, and water can be as confusing as it is intriguing. First-timers should consider a charter captain or tour. Florida Backcountry Tours (floridabackcountryadventures.com) on Marco Island specializes in informed boat and kayak tours.

Delnor-Wiggins Pass State Park (floridastate​ parks.org) claims a hard-bottom reef for snorkelers and divers about 30 yards or so off parking lot No. 2. Wannabe scuba divers can get certified and equipped at Scubadventures (scubadventureslc.com) or Scuba Outfitters of Naples (scubaoutfittersnaples.com). While they mostly organize dive trips outside the area, Scubadventures also partners with Krakonoon Charters to dive local ledges, wrecks, and artificial reefs. Divers to the Black Hole, aka Naples Spring, report goliath grouper, sea turtles, and sponge ledges. Barracuda, nurse sharks, stingrays, snapper, and other tropical fish frequent some popular dive spots.

Any number of boat dealers can put you in a vessel that’s just right for you—from kayaks to yachts. A good place to start your search is the annual Naples Boat Show (miacc.org), which runs for four days in January. It includes seminars and kids’ activities.

Local sommeliers reveal their choices for wines to sip during every occasion

BY MARK SPIVAK When it happens, it’s magical: You savor a bite, follow it with a sip of wine, and the entire universe falls into harmony. The flavors in the food are amplified by the aromas and nuance in the wine, and the experience becomes greater than the sum of its parts. For most of us, that moment is likely to occur in a restaurant, usually after taking a sommelier’s suggestion for a wine pairing. How do we duplicate it at home? To find out, we asked wine professionals from five of the area’s top restaurants to share their personal recommendations for a variety of occasions, from a swank dinner party to an afternoon poolside. 94

He holds the Advanced Sommelier certification from the Court of Master Sommeliers and will be sitting for the MS exam this year. In addition, he is a Certified Wine Educator from the Society of Wine Educators. He brings a lifetime of passion to the job of overseeing the wine program at Capital Grille. SUMMER SIPS: “Rosé is a no-brainer for hot weather. I like the classic, mineral-driven style of Château Minuty from Côtes de Provence. For something a little more unusual, try a light red from Weingut Prieler in Austria. They have lovely fruit and drink well when slightly chilled.” WHEN YOU'RE GRILLING: “Believe it or not, I love an off-dry Riesling with grilled meat, especially brisket. Go for a solid producer such as J.J. Prüm or Selbach-Oster. Lambrusco is going through a revival right now. It’s refreshing, easy to drink, and affordable. Try the Reggiano Concerto from Medici Ermete.” FOR DINNER PARTIES: “Greeting your guests with a spectacular bottle of Champagne is a great way to telegraph that the evening will be special.

Originally from Brazil, Valle started in American restaurants as a busboy and worked his way up. His epiphany occurred early in his career, when he tasted a 2001 Rauzan-Ségla from Margaux and realized what fine wine was all about. He currently manages a list of 345 selections at The Continental, plus reserve vintages and wines by the glass. SUMMER SIPS: “I usually go for fresh, crisp whites, and a particular favorite is a Txakoli from Spain’s Basque country from Txomin Etxaniz. It has a high acid profile and a bracing feel on the palate. It’s not sparkling, but the acidity almost makes it seem fizzy. It’s a great wine for a hot day.” WHEN YOU’RE GRILLING: “You want a wine substantial enough to pair with meat, but one with supple tannins. I’d choose a wine called Pietradolce from the

Etna Rosso region of Sicily. It has a perfume that will remind you of Pinot Noir or Barolo but a structure that’s between the two. I’d call it an ‘angry Pinot Noir.’” FOR DINNER PARTIES: “Begin with an Austrian Grüner Veltliner from a top producer such as Hirsch. It’s dry and zippy with a hint of white pepper. For a meat entrée, try a Syrah from the northern Rhône. There’s a wine from René Rostaing called Ampodium that is a good introduction to his style, with smoky notes and fantastic acidity.” VALUE WINES: “The most underrated white wine is Muscadet from the Loire Valley. Try a small producer, such as Domaine de la Pépière. It has layers of flavor, great structure, and costs less than $15.” TO LEARN MORE: “Wine Folly is a valuable book and website (winefolly.com); it makes reading about wine very easy. JACQUES CARIOT Jacques and Lysielle Cariot opened Bleu Provence in 1999. While Lysielle presides over the kitchen, Jacques manages a wine list of 3,000 selections. Bleu Provence is among the fewer than 100 restaurants in the country to receive the coveted Wine Spectator Grand Award. Jacques is constantly tasting, traveling to wine regions, and meeting new vintners from emerging regions. He tends to focus on affordable wines that people can drink on an everyday basis, and his approach to wine is thoughtful and poetic. SUMMER SIPS: “I’m delighted with a rosé from Les Baux-de-Provence called Domaine Hauvette. It’s from the area where my wife and I married. It’s very different from most Provence rosés: darker in color with great purity of fruit.” WHEN YOU'RE GRILLING: “I’d stay in the South of France, but avoid Bordeaux and go to the Languedoc. Domaine Gauby is a top-class property, and its Côtes de Roussillon-Villages is wonderful. It’s a blend of Grenache, Carignan, Mourvèdre, and Syrah from old vines and is very enjoyable: balanced, with supple tannins and everything in proportion.” FOR DINNER PARTIES: “For a seafood course, I love the Sauvignon Blanc from Nicholson Jones in St. Helena. It has a roundness and richness you don’t find in Loire Valley whites: casual and classy at the same time. With a meat entrée, I’d go back to Provence with a wine called Two B from Domaine de la Bastide Blanche. It’s primarily Syrah, supple with great body and not dominated by oak.” VALUE WINES: “In the lesser-known regions of the Languedoc, prices haven’t yet caught up to quality. The red Corbières from Domaine de Fontsainte ($15)

Dinah has worked in restaurants most of her life, with the past seven years focused on wine. At Angelina’s, she oversees a list of 600 selections, which is heavy on wines from Italy, and she delights in demystifying regional wines and obscure grape varieties. Dinah will take the Advanced Sommelier exam with the Court of Master Sommeliers this year. SUMMER SIPS: “You can’t go wrong with Champagne. It lightens the mood and makes a weekday seem like a special occasion. One of my favorites is Philippe Gonet. It’s a grower Champagne with a touch of oak, in the style of Krug but on a working man’s budget.” WHEN YOU'RE GRILLING: “Grenache is perfect for grilled meats because it has a ripe red fruit profile, moderate tannins, and some smokiness and spice. On the higher end, there’s an interesting one from Washington’s Columbia Valley called Maison Bleue. For everyday drinking, the Guigal Côtes du Rhône is a great go-to wine.” FOR DINNER PARTIES: “Start with a Vermentino, such as La Pettegola from Castello Banfi. It has enough fruit and acidity to work well with a salad course or with a difficult pairing like asparagus. For the entrée, my choice is the Barbaresco from the Produttori del Barbaresco. It has floral overtones and lots of strawberry fruit, and it matches well with duck or red meat. It’s around $35, but it drinks like a million-dollar bottle.” VALUE WINES: “Try a Cava from Spain, made by the Champagne method but more mineral-driven and a better pairing with Florida seafood. There are some amazing values from Italy, particularly lesserknown areas like the Abruzzo. The Montepulciano d’Abruzzo from Valori is full-bodied, ripe, and complex, and you can buy it for $15.” TO LEARN MORE: “Karen MacNeil’s The Wine Bible is the best book, whether you’re a beginner or studying to be an expert. Napa’s Clos Pegase makes an interesting version from a blend of different grapes. It’s light and crisp with delicious berry flavors. I’d also go for a dry Riesling from Alsace, from a good producer such as Hugel & Fils, with a good balance of acidity and sweetness.” WHEN YOU'RE GRILLING: “For me, Cabernet is still king. One of my favorites is Trujillo from Napa, the personal label of Michael Trujillo, winemaker at Sequoia Grove. It’s complex and layered, and offers flavors of plums, chocolate, and black fruits from

the first sip. The tannins aren’t overpowering, but it needs food to go with it.” FOR DINNER PARTIES: “To start, there’s a terrific Chardonnay from Santa Lucia Highlands called Roar. It has seamless balance, not overly oaky or buttery. For a meat entrée, there’s a red Bordeaux from Pessac-Léognan called Château Picque Caillou, a property that backs up directly to Haut-Brion, that goes very well with steak or lamb.” VALUE WINES: “South America is definitely one of the places to look. The Bodega Septima Gran Reserva is a luscious blend of Malbec and Cabernet, and you can buy it for $25.” TO LEARN MORE: “There’s an app called Vivino that allows you to scan a wine label, and it will give you tasting notes along with retail stores where you can buy it.” «

NI: What influence do you have on the restaurant’s dishes? Weil: I have input into the menu, provide recipes, and constantly search for new ingredients to use. The latest one I found is algae oil, a nutrient-rich oil that has a neutral taste and is heart healthy. We’re going to replace grapeseed oil with that. What are some of the best anti-inflammatory foods? Turmeric is one of the most potent natural ones, as is ginger. All vegetables, especially those in the cabbage family, like broccoli, are also good sources, along with

The Road to Bolgheri Tucked away in coastal Tuscany, the Bolgheri region specializes in grand Super Tuscans BY MARK SPIVAK

In the beginning, there was Sassicaia. Legend has it Mario Incisa della Rocchetta planted Cabernet vines in Bolgheri during World War II to compensate for the shortage of Bordeaux. Sassicaia remained his personal wine for many years, until his son, Nicolò, and nephew, Piero Antinori, convinced him to release the 1968 vintage to the public in 1971. A few years later, Sassicaia beat a field of top-ranked Bordeaux bottles in a blind tasting, and the Super Tuscan gold rush was on. Initially, Super Tuscans, wines made from foreign grape varieties not permitted by Italian wine law, had to be labeled as Vino da Tavola, or table wine, the lowest rung in the classification. As years passed, it became obvious the Cabernet and Merlot of Bordeaux thrived in Italy and were most successful in the coastal Tuscan region of Bolgheri. The Rocchetta family continued to experiment in Bolgheri. Piero’s brother, Lodovico, planted vines near Sassicaia in 1981, and in 1985 unveiled a blend of Cabernet Sauvignon, Merlot, and Cabernet Franc called Ornellaia. The wine struggled for recognition at first, but eventually came to rival Sassicaia in reputation and price (the 2013 vintages of both wines sell in the range of $175). Both display the power and 108 NAPLES ILLUSTRATED

elegance characteristic of all great Cabernet Sauvignon, and it’s now common to find the two labels side by side with First Growth Bordeaux in the cellars of many collectors. As the Bolgheri region expanded, there was an influx of winemaking talent and capital, and the offerings became more democratic. Piero Antinori led the way, establishing the Guado al Tasso estate in an amphitheater-shaped site nicknamed “the bowl of Bolgheri.” While the flagship wine—a blend of Cabernet, Merlot, and Syrah—sells for $90, there are also some delicious value options. The Vermentino ($20) is a clean, fresh white wine with good acidity, ripe citrus flavors, and a firm mineral backbone. Il Bruciato ($25), Guado al Tasso’s entry-level red, has enough structure to stand up to game dishes and red meats, with supple tannins that make it a pleasure to drink.

Angelo Gaja, a name associated for generations with Barbaresco, also couldn’t resist the region’s allure. In 1996, he bought the Ca’ Marcanda estate in Bolgheri and continued the experiments with Bordeaux varietals he had begun years before in Piemonte. Despite Gaja’s reputation and the lofty price of Ca’ Marcanda’s namesake wine, the property does offer two value wines: Magari, a Cabernet/Merlot blend ($52), and a combination of Merlot and Syrah called Promis ($40). There are nearly 40 wine producers in Bolgheri today, and many are turning out exceptional bottles for everyday drinking. A good example is Aia Vecchia, owned by the Pellegrini family, who have grown grapes in the region for several generations. Their entry-level wine, the Merlot-dominated Lagone ($16), entices with scents of dark berries, fresh herbs, anise, and mocha. It’s ripe, generous, and focused on the palate; earth notes frame the lush berry fruit and soft tannins carry the flavors onto the finish. Sor Ugo ($35)—a blend of 50 percent Cabernet Sauvignon, 30 percent Merlot, 15 percent Cabernet Franc, and 5 percent Petit Verdot—is even better. The wine is beautifully balanced and a pleasure to drink, with hints of spiced plum, blackberry, and mint that intertwine on the palate. It’s a good way to experience the uniqueness of Bolgheri at a great value. «

ove might be better the second time around, but when children from previous marriages are included in the new family, it can add up to a tricky estate plan. “With blended families you have special challenges because there’s a larger cast of concerned parties,” says attorney Richard Barnes, author of Estate Planning for Blended Families: Providing for Your Spouse and Children in a Second Marriage (Nolo, $35). “There’s just a natural tension among family members because of the concern in how the assets are transferred, and there’s a lot of emotion involved.” Financial challenges usually revolve around providing for the surviving 110 NAPLES ILLUSTRATED

Because blended families have unrelated members, an estate plan needs to have more structure than it otherwise would. Barnes says the planning process will be easier if you first envision what you want to happen to your assets after your death. Then a professional can better determine the correct estate-planning strategy to satisfy your wishes. One of the more effective tools for blended families is a revocable trust, sometimes called a living trust. You still own the assets in the trust, but they typically bypass probate proceedings, saving your family extra costs or delays in distributing the property, Barnes says. The trust directs the trustee to allocate assets according to your wishes upon death or incapacitation. “It’s something you can change during your life and it gives you a lot of flexibility,” he adds. You’ll still need a will for assets that won’t be in a trust, which generally include a primary residence and some assets with named beneficiaries, such as life insurance policies, as well as for assets you neglect to retitle into the trust, says Barnes. The same goes for bank or investment accounts that are POD (payable on death) or TOD (transfer on death). The primary home is another major asset to include in the estate plan, particularly because it often has personal associations and emotional attachments. Generally, Florida law allows the surviving spouse to continue to live in the marital house before it passes to heirs, Barnes says. But in blended families, a surviving second spouse may receive only a share of the house—especially if there is no will or an outdated will. After marrying, you’ll want to draft a new will that details your intentions for caring for the surviving spouse and heirs. Finally, Barnes recommends parents in blended families communicate the plan with their kids in order to set expectations. Amounts and specifics

BACK TO BASICS Medical studies continue to prove Mom was right: You do need to sit up straighter. While most research highlights the slew of problems poor posture poses down the road, there are immediate consequences, too. A recent study conducted at the University of Auckland in New Zealand makes the case that practicing proper posture can improve attention, enthusiasm, and energy. NI spoke with neurosurgeon Dr. Rick Bhasin from Naples-based Neuroscience and Spine Associates to break down the science behind slouching. (239-5948002, nasamri.com) —Rebecca Rehm NI: Why is posture so important to overall health? Bhasin: Having good posture means that you’re putting your body and all your organs into proper alignment. Everything works together better when it’s in the right place; if they’re lined up well, then they work well. Good posture helps your circulation, respiration, oxygenation, gastrointestinal function, and your neurological functions. What happens to the body if poor posture is not corrected over a long period of time? In terms of the spine, if you have bad posture, you can develop malalignment, which can cause herniated discs, weakness of muscles that support the spine, weakness of ligaments around the spine, as well as chronic pain. Malalignment can also affect all of your bodily functions, including those I mentioned earlier. How can we correct this? The number one thing is to recognize you have bad posture and do something about it. Train your body to hold the spine in proper alignment— keeping your head right over the shoulders, not in front, and shoulders over the hips. Slouching puts the spine in bad alignment, and it takes mental discipline to fix it. You can also do exercises to build your core, and yoga and Pilates to help with flexibility and strength.

While laser cutting and 3D printers are becoming more common in the field of technology, their use in fine art is a rare occurrence. On April 13, Thomas Riley Studio will host an opening reception for a new multimedia exhibit featuring the work of two visionary artists who are pioneering new and innovative design techniques. Taekyeom Lee, a graphic design professor at Appalachian State University, uses unconventional materials and methods such as ceramics and 3D printing to create sculptural art and type, while Lithuanian artist and photographer Tadao Cern’s simple yet striking installations push the boundaries of traditional art forms. 1. Favorite escape: Sardinia, in the Mediterranean Sea. There’s great Italian food and the most beautiful water and beaches. 2. Favorite musician: Bob Marley. His songs are stories of love mixed with the right amount of social consciousness. 3. Revered artist: Michelangelo Merisi da Caravaggio. I’ve always been fascinated with the chiaroscuro technique, and he was debatably the best at it. 4.
