NCI DESIGNATION EXPANDS SYLVESTER’S

CLINICAL TRIAL OFFERINGS By Diana Delgado Residents in Palm Beach County now have greater access to the most advanced cancer care in the region. Sylvester Comprehensive Cancer Center, part of UHealth – University of Miami Health System, has been awarded National Cancer Institute (NCI) designation. Sylvester is now the only cancer center in South Florida to receive this designation. “NCI designation is the ‘gold standard’ for cancer centers,” Stephen D. Nimer, M.D., director of Sylvester Comprehensive Cancer Center, said. “It not only recognizes the excellent work Sylvester has been doing, it also allows our physicians and researchers to expand their research and to collaborate with colleagues at other top-tier cancer centers around the country – which benefits patients here, too, of course.” The NCI has recognized Sylvester’s outstanding research work that starts in the labs, impacts patients, extends to the community, across Florida and beyond. Most importantly, this designation means that patients in South Florida have greater access to cutting-edge clinical trials and the latest treatments available without having to leave the region.

Sylvester at Deerfield Beach, also known as the Pap Corps Campus, is home to the multidisciplinary Women’s Center, led by breast cancer oncologist, Charles Vogel, M.D., which offers advanced screening, diagnostic imaging, and treatment for breast and other female-specific cancers. In addition, the Deerfield Beach facility has a state-of-the-art Radiation Oncology Center led by Laura Freedman, M.D., and it houses a full suite of leading-edge imaging services, provided by UHealth Imaging. What sets Sylvester apart from other cancer centers? Research. Sylvester is often among the first cancer centers in the world to offer access to the newest investigational treatments. In South Florida, Sylvester has the only Phase 1 Clinical Trials program which is the first step in evaluating how patients respond to novel therapies. NCI designation means patients will have even greater access to the latest cancer treatments. When it comes to preventing cancer in high-risk populations, Sylvester is leading the charge. The state-funded Firefighter Cancer Initiative launched in 2015, in partnership with Palm Beach County Fire Rescue. The ongoing long-term study of exposures to carcinogens and ways to reduce the risks for Florida firefighters has already resulted in the implementation of innovative safety strategies. More than 4,000 decontamination kits are being used by firefighters across the state to help them clean up after responding to a call.

The holidays are my favorite time of the year. How can you not love a season that’s all about family, friends, and tradition? In our multicultural family, we blend Greek and American customs to create a unique celebration that my kids love because it involves Santa Claus visiting twice—on Christmas Eve and on New Year’s Eve. Their M.O. is to dial the big man on a “Santa phone”—making sure Mom and Dad hear—and place their requests. This year, they said, they’re willing to forgo all other gifts if Santa brings a puppy. Guess I’d better bake some extra cookies. Young West Palm Beachers Roby and Xiomi Penn have developed their own set of holiday rituals. This month’s cover subjects combine their English (his) and Scottish (hers) ancestries to celebrate in a way that’s both old-world and modern. Their English Christmas dinner—complete with a smoked goose, flambéed plum pudding, and caviar with all the trimmings—is a coveted invitation. Friends arrived in black-tie attire and mingled by the fire as a cellist serenaded them with yuletide melodies. In the dining room, a gorgeously appointed table, set with Roby’s heirloom silver and crystal, reminded of Christmases past, when formality and elegance were the status quo and the world was a simpler place. See the Penns’ beautiful expression of tradition in “An English Christmas” on page 88. This month we have a second cover—this one available on newsstands—to celebrate high fashion for the festive season. The gowns selected by our fashion editor, Katherine Lande, are brought to life by model Daniela Braga and the artistry of photographer Greg Lotus. We chose to set “The Muse” (page 96) against the stunning backdrop of the Kravis Center, whose months-long renovations will be unveiled this season. As you leaf through the issue, you’ll find a wealth of holiday content, from our thoughtfully curated guide to gifts made by local artisans to six pages of sparkling jewels for those on Santa’s really nice list. As we celebrate our good fortune, let’s not forget that the giving season extends beyond our family circle to the community. For beginners and in moments of crisis, Soderman recommends the “STOP” technique: • Stop: When you detect stress or imbalance, simply pause. • Take a breath: Notice the sensations of breathing. Your mind will settle as your body shifts away from fight or flight mode and back to the parasympathetic nervous system. • Observe: Rise above it all to look at the situation from a mental distance. Recognize how you feel, without judgment. • Proceed: Having shifted to a more mindful mode, go forward with compassion and take action that is skillful and appropriate to your situation.

harles Spencer, third Duke of Marlborough, must have looked out his bedroom’s bay window at the park-like grounds of Langley Park House and been overcome by the thrill of the hunt. But Langley offered more than access to 50 acres of woods rich in game and fowl. The eighteenth-century Palladian estate in Buckinghamshire, an hour’s drive from London, also had bespoke creature comforts worthy of a landed aristocrat: mosaic floors, august staircases, and marble fireplaces—20 of them. The centuries do take their toll. When City and Country Hotels Ltd. acquired the Grade II–listed house, it displayed little of its former glory. Dennis Irvine Studio stepped in with a massive renovation, during which the original mosaic floor was uncovered, the Bath-stone exterior was restored, and Doric columns and ceilings were

brought back to life. Even those 20 Georgian and Victorian fireplaces—friezes, fire baskets, and all—got a meticulous facelift according to Historic England’s renovation standards. From that six-year-long effort emerged The Langley, A Luxury Collection Hotel. To augment the historic restoration, the Irvine team installed a few modern touches—most notably a double staircase that allows for a grand arrival to the bronze Venetian front doors, and a 17,000-square-foot subterranean spa that’s a destination in itself. A Lexus for THE WAVES

This new flagship is just that—a multimilliondollar YACHT—and we’re taking it for a spin By Howard Walker When you hear the words, “Honey, I’m thinking of getting a new Lexus,” you could be forgiven for presuming your better half is contemplating the purchase of a shiny Lexus LS 500 sedan or a gorgeous LC sports coupe. Certainly not a 65-foot Lexus LY 650 sports yacht. The price for such an extravagance? That would be $3.7 million, or $4.7 very nicely loaded. Wait a second—a Lexus yacht? You heard right. Lexus is on a mission to evolve from an automaker into a luxury lifestyle brand. They reckon building a range of ultra-high-end yachts is one way of achieving that and have partnered with Wisconsin-based Marquis Yachts to birth a spectacular flagship. This isn’t simply an existing Marquis boat with a

couple of Lexus badges glued to its superstructure. It’s a true joint venture, designed from the keel up with serious input from the Lexus design and production teams in Japan. To demonstrate the connection between car and yacht, Lexus invited Palm Beach Illustrated for an exclusive first drive of the new LY 650 prior to its world debut at the recent Fort Lauderdale International Boat Show. Tied up outside the historic Boca Raton Resort & Club, this beauty wows with its vast windshield, voluptuous hind quarters, and rich copper and steely gray color palette. Climb aboard and the spectacular interior oozes Lexus-style craftsmanship, quality, and elegance. Step down into the sunshine-filled

central atrium and doors lead to three spacious cabins. The full-beam owner’s stateroom is breathtaking, with its large hull windows, sexy lighting, and curvy cabinetry. The mirrorfinished eucalyptus woodwork could have come straight out of a Lexus LS flagship sedan. Our plan is to head from Boca into the Atlantic and cruise down to Fort Lauderdale. But the day’s forecast is enough to send The Weather Channel’s Jim Cantore into a frenzy, with winds steady at 22 mph and gusting to a feisty 28. “I’m game if you are,” says Randy Peterson, Marquis Yachts’ chief propulsion engineer and our captain for the day. At the press of a button, he fires up the twin 12.8-liter Volvo turbocharged inline-six diesels. Each delivers 1,350 hp to Volvo IPS drives with their twin, forward-facing props. On flat water they’ll thrust the LY 650 to a top speed of 33.5 knots—that’s 38.5 mph. From standstill, they can power this 73,000-pound speedster up onto the plane in just 12.5 seconds. As we ease out of the Boca Raton Inlet, helming from the protected flybridge, we brace for the gnarly Atlantic rollers lunging toward us.

The first one, a breaking six-footer, hits us bang on the quarter, sending spray cascading over the fancy sun loungers on the bow. Time to power up. We push forward the throttles and the LY’s flared bow lifts gently and scythes through the heavy swell. Despite the big Volvos spinning at 2,450 rpm on wide-open throttle, there’s only the faintest hum from the heavily insulated engine room. deep-water ship channel. Despite the confused sea, the big Lexus carves easily into the turn, shrugging off the whitecaps, feeling stable and confident. “Quite a ride,” Peterson remarks as we tie up at the Pier Sixty-Six Marina. “I was really happy with the way it took the waves. That was pretty rough out there.” Marquis is building its fourth LY 650, with three already sold, including our well-equipped $4.7million launch version. Next year there’ll be a nonflybridge coupe LY 650, with plans already in place for a 48-footer. It won’t be long before you too could be uttering the words, “I just bought a new Lexus and it handles great in the waves.” «

CHRISTMAS Roby and Xiomi Penn blend their diverse backgrounds and shared passions to host a festive feast BY LINDA MARX PHOTOGRAPHY BY JERRY RABINOWITZ

W

hen it comes to holiday celebrations, John Roby Penn IV likes to showcase his personal and familial history through treasured heirlooms, black-tie attire, and old-world cuisine. Originally from Fort Worth, Texas, Roby recalls a childhood of formal dinners held amid generations-old antiques and artifacts. He and his wife, Xiomi, who grew up with more casual gatherings, recently merged their Christmas memories to orchestrate a dinner party that encapsulated both of their personalities. “The world is more casual and rough these days, but that does not mean our house has to be,” says Roby, 39. “My mother always liked having open houses at Christmas for people who had nowhere else to go. I do the same and love bringing out our heritage via home furnishings and traditional pieces to share with others.”

“Christmas is about celebrating our blessings and gathering people around us,” adds Xiomi, 43. “As we grow older, we like to show our appreciation for friends and family by entertaining them here in our home, where we can talk and enjoy each other’s company.” Tradition—and oil—are in Roby’s blood. His grandfather, John Roby Penn Jr., served as president of Standard Oil of New Jersey and then, in 1919, became president of Texas Pacific Coal and Oil, which was sold to Seagram & Sons in 1964. Roby’s father, the late John Roby Penn III, oversaw that purchase as managing director and then enjoyed a life of ranching in Texas and sport fishing in South Florida and the Bahamas. Roby, who has a BA in history and political science from Texas Christian University, relocated to Washington, D.C., to act as co-chairman of George W. Bush’s 2005 inauguration and pursue other political opportunities. He now works as national relationship manager for Smart Source, a marketing and printing company. Xiomi, an art historian with a master’s degree and PhD from the Institute of Fine Arts at New York 90 PALM BEACH ILLUSTRATED

University, is a curatorial collections specialist for a private art collection. They married in Palm Beach in 2018 and now reside in a circa-1925 home in West Palm Beach’s Flamingo Park neighborhood. For this yuletide party, Roby and Xiomi displayed their manners and social genius by producing a friendly yet formal evening that spoke to their past, present, and future. The couple decided to play up their ancestry—Xiomi is Scottish and Roby is English—with a traditional Christmas dinner, complete with a goose and all the trimmings. Their well-appointed living room resembled a refined Scottish country lodge, and they incorporated an array of family finery into the meal’s presentation. As the finishing touch, they requested that attendees come dressed to suit the classic theme. “We asked our guests to dress in black tie and cocktail attire because I learned this formality practice from my late father, a man I never saw in a T-shirt,” explains Roby. “My mom said I came out of the womb wearing a blazer and tie. Our family tradition is continuous, and I am so used to formal living that it is part of my life. I love the design and look of our heirlooms and enjoy displaying them for Christmas parties.” Visitors entered through an original double-oak front door adorned with burlap ribbons and were greeted with the aroma of holiday delights. A crackling fire illuminated the festive scene featuring monogrammed stockings, scattered nutcracker statues, and a tree decked out in cherished ornaments, pearls, and tartan ribbons. As they settled in, guests admired the pecky cypress ceiling, stained glass windows, and silk curtains, as well as a 1940s chandelier that once hung in the foyer of The Breakers. “Their Christmas decor is spectacular because it is understated and subtly ties into the interior of the house,” says Kate Waterhouse, vice president of the Southeast for Leslie Hindman Auctioneers in West Palm Beach. “There is not a bit of clutter.” Roby and Xiomi divided their holiday hosting duties by the other’s strengths. Roby likes decorating (he had two significant Christmas trees in his Texas home), setting the table with his family heirlooms, and entertaining with his vivacious personality. Xiomi is more regimented and detail-oriented—traits acquired from years conducting research at the Museum of Fine Arts in Boston and the Metropolitan Museum of Art in New York. A native of Washington, D.C., she fondly remembers admiring different states’ Christmas trees on the National Mall alongside her late father, who was a senior art historian at the Smithsonian American Art Museum. This memory inspires her passion for curating her husband’s holiday furnishings and tabletop

selections, as well as arranging the poinsettias, white roses, and hydrangeas. She also has a knack for making their guests feel comfortable with her infectious laugh and calm reserve. “She is the yin to his yang,” Waterhouse says of the couple. Violinist Marina Lenau of the Palm Beach Symphony performed holiday music from a perch set up near Roby’s collection of antique books, a composition of Christmas candy jars, a silver Champagne bucket, and the couple’s two parakeets, who enjoyed the evening from inside a tartan ribbon–topped cage. The Penns’ dog, a Havanese named Papacito, was also in attendance. As they sipped the signature poinsettia Champagne cocktail and sampled appetizers of blinis with Black Sea caviar, guests engaged in spirited conversation about the holidays, upcoming parties, travel, and work, all the while offering compliments to the couple. “Roby and Xiomi are the most gracious hosts I know,” says Elizabeth “Bitsy” Marshman, special events manager at The Colony in Palm Beach. “They’re old souls with traditions, yet people who know how to have fun. Plus, they want us to feel like we are in our own homes.” Xiomi joined in to praise her husband’s entertaining skills and family traditions. “I am constantly learning from him,” she says. “Roby knows history and geography, and I like art and culture. We love to merge these things into our home. And for parties, we do like formality yet enjoy doing most everything ourselves.” Roby and Xiomi also share a passion for philanthropy. They met some of their guests through regular participation in charities and frequently serve on committees and as chairs for numerous events. They support the EW Foundation’s child literacy programs, Achilles International’s sports rehab initiatives for people with disabilities, the Palm Beach Symphony, and American Friends of British Art, for which Xiomi is a board member. 92

“Xiomi’s energy and knowledge of art are tremendous,” says Michael Ridgdill, founder and president of American Friends of British Art. “And both of them are such relaxed hosts who make guests like me feel relaxed, while their Christmas decor illustrates how tradition can be sexy.” Passing the tree’s twinkling tapers, the couple led the way to the magnificently set dinner table, made in the 1960s of Italian wood with a hand-carved base. Always the Texas gentleman, Roby escorted the female guests to their respective chairs upholstered in brown twill. Atop their English Spode china Roby inherited from his grandmother awaited a printed dinner menu emblazoned with the Penn family crest, which prominently features an elephant as a reference to a long-gone ancestor who was the Royal Governor of the British East India Company. Surrounding the English silver centerpiece was a set of 1902 J.E. Caldwell & Co. silver dessert plates, a Penn family gift from Mildred Hedrick Fender, the daughter of architect Wyatt C. Hedrick and granddaughter of Ross Shaw Sterling, the thirty-first governor of Texas and cofounder of Humble Oil (now ExxonMobil). There was also an assortment of small Lalique angels, white roses, and elephant collectibles. “For the personal touch, Xiomi cooked because she remembers the wonderful Christmas dinners with her family and friends when both of her parents prepared the meal,” Roby says of the food. To begin, Xiomi prepared a salmon mousse terrine—with help from

Roby’s mother. “We made it together,” says Xiomi, with a laugh. “I learned from her.” Then, she served her favorite potato and leek soup, followed by a smoked Dakota goose with portcranberry sauce and English roasted vegetables. Roby carved the bird with a set of engraved-silver and ivoryhandled knives circa 1870 from James Deakin & Sons of Sheffield, England, another family heirloom from Mildred Hedrick Fender. The meal was paired with Domaine L. Chatelain Petite Chablis 2017 and Domaine Grand Veneur Côtes du Rhône 2016, and ended with a Christmas pudding flambéed with rum. “They do everything the right way,” says Homer Marshman III, a financial analyst with Comcast. “They honored every classic Christmas tradition with a Texas twist.” After dinner, capped with McLaren Vale Serafino tawny port, the room overflowed with hospitality and good cheer. As happy guests were preparing to depart, Roby handed out gifts of silver picture frames from San Miguel de Allende, Mexico, and fine Churchill cigars. “Having a Christmas party here is a genuine moment for us,” says Xiomi. “With our friends who bring different traditions to our home, we can come together and see the joy and good that the holiday season brings out in all of us.” «

In the 2015 indie biopic Walt Before Mickey, real-life bubbly blonde Kate Katzman transforms herself into an unassuming brunette named Lillian Disney. Katzman portrays the young wife of the fabled theme park and animation genius at the dawn of his career, requiring her to be quietly supportive of her on-screen husband. During intense conversations— on the front porch of their home, in the car, and at business meetings—the actress’ eyes reflect the heart of the scene, conveying hope, optimism, and strength. That ability to capture the subtle traits of a character, along with her stunning looks, are what caught the attention of legendary actor Burt Reynolds, who encouraged Katzman to audition for his master acting class at the Burt Reynolds Institute for Film and Theatre in North Palm Beach. “He had a great love of teaching and he helped me

see the tiny things in a script where you could make an impact,” she says. Growing up, Katzman didn’t dream of becoming an actress. The only child of a nurse and a mounted police officer spent her early years in rural Bucks County, Pennsylvania, until the family moved to Palm City, Florida, when she was 7. “Throughout my life, I’ve always had people trying to get me into acting, but I was really shy when I was younger and never in a million years thought that I would become an actress,” she says. In fact, the animal lover wanted to be a veterinarian. But in the few years since she discovered what has become her passion, Katzman’s racked up an impressive list of credits. Following the debut of her first film, Walt Before Mickey, she’s worked on four more that will soon hit theaters, including a role as a movie director in The Comeback Trail, scheduled for release in early 2020 and starring Robert De Niro, Morgan Freeman, and Tommy Lee Jones. The others include the neo-noir drama Adverse, the half-animated remake of the classic Snow White, and Santa in Training, which Katzman describes as “a cute family comedy.” When she’s not acting, Katzman’s life revolves around her own family. She married Scott Katzman, a surgeon who specializes in minimally invasive spine surgery, 10 years ago and likes to spend as much time as she can with her 3-year-old daughter, Keira, and 7-year-old son, Dylan. Their home in Frenchman’s Reserve in Palm Beach Gardens is just one neighborhood away from her mother, whom she calls her “major grounding force.” The two are extremely close, sharing a bond that was solidified when her father died shortly after they moved to Palm City. “It was difficult for my mom and me in Florida, with the rest of the family in Pennsylvania,” explains Katzman. “It took a while to get acclimated, but now I love Florida.” While the state’s laid-back lifestyle is appealing, Katzman’s personal style is that of a self-described girly girl. “I’m not really a sneakers-and-jeans person,” she says. Whether embodying the persona of Lillian Disney during the 1920s or Megan Albert (her Comeback Trail character) in the 1970s, period costumes appeal to her sense of drama and love of clothes. The 1961 movie Breakfast at

Tiffany’s is her favorite, she adds, because “Audrey Hepburn was just exquisite.” Playing the part of a suffragette or a flapper for a new 1920s-era exhibit at The Wick Theatre & Costume Museum in Boca Raton was a natural fit for Katzman, who’s come a long way from the bashful girl who never considered acting. “It’s my art and my passion and something that emotionally fills me,” she says. “Acting is what I do for me.”

The 1920s Come Alive at The Wick To mark the dawn of the 2020s, The Wick Theatre & Costume Museum has mounted an exhibit that harkens back 100 years, to the decade encompassing Prohibition, suffragettes, flappers, and jazz music. “The economy was booming in the 1920s,” says Kimberly Wick, museum curator and associate producer. “People were more frivolous, and it was an interesting time of freedom of expression.” The fashion of that era, she adds, reflected the mood with looser clothing and the elimination of restrictive corsets. “The Roaring Twenties” is on display through May and features approximately 140 costumes, some of which come from the collection of Marilynn Wick, executive director of The Wick Theatre and founder and CEO of

Costume World, the largest holder of Broadway costumes from more than 85 original shows. Highlights of the exhibit include Angela Lansbury’s outfits from Mame, bathing suits from No, No, Nanette, and vintage pieces that pay homage to major events and notable trends, such as Prohibition, the Nineteenth Amendment, and ragtime music. Tours are by appointment and include a 1920s-inspired luncheon at The Tavern restaurant and a backstage tour of the 333-seat theater. Truffle MANIA The head-turning, musky scent of truffles fills restaurants this time of year. Chances are, if you’re dining at local eateries that like to get liberal with these treasures, such as Renato’s or La Masseria, those truffles are coming from David Iannetta, aka the Truffle Guy. The Italian native grew up in the industry and imports the flavorful fungi from his hometown of Bojano, located in the mountains of Molise, one of the country’s top producing regions. In honor of truffle season, Iannetta shares need-to-know facts about these mysterious morsels. —Liz Petoniak The subterranean fungi grow at the roots of a variety of trees—including oak, pine, and hazelnut—in a symbiotic relationship. Soft, well-irrigated soil encourages their growth. The weather determines truffle availability. A robust bounty requires a rainy summer, and a drought could send prices soaring, which was the case two years ago when white truffles went for nearly $3,000 a pound. It takes months to train dogs to hunt for truffles, making them a target for competitors who may try to steal or poison them. Today, the curly haired Lagotto Romagnolo dogs are bred specifically to sniff out truffles. White truffles, in peak season from November through the first week of January, boast the most pungent flavor and are the priciest. Chef Maneet Chauhan is the founding partner and president of Nashville’s Morph Hospitality Group, a collection of four restaurants with diverse culinary themes. She has been featured extensively on the Food Network and is the recipient of the 2012 Media Broadcast Award from the James Beard Foundation. Perhaps best known as a judge on Chopped, Chauhan will emerge from behind the judges’ table to make her first appearance at this year’s Palm Beach Food & Wine Festival, taking place December 12-15. She’ll join forces with chefs Pushkar Marathe and Julien Gremaud for the Spice lunch at Avocado Grill in West Palm Beach December 13 and will also lead a Kids Kitchen cooking class at the Four Seasons Resort Palm Beach December 14. Here, Chauhan chats with PBI about her adoration for Palm Beach, Nashville, and Indian food. (pbfoodwinefest.com) —Mark Spivak Absolutely. The South is the home of soul food, and I think Indian food has a soulful existence of its own. Similar foods are used in Indian and Southern cuisines, like black-eyed peas and okra.

What’s the most common misconception Americans have about Indian food? The first is that Indian food is an $8.95 all-youcan-eat buffet. It’s so much more than that! Another is that Indian food is very difficult to make. I think a lot of people have a fear of making Indian cuisine, and they just don’t try to make it.

You’re co-owner of Mantra Artisan Ales. Is there a special affinity between craft beer and the dishes you create? When Vivek (my husband and partner) and I were opening Chauhan Ale & Masala House, we were working on the beverage menu and came up with the idea of spiced beers, as they’re a natural flavor affiliate to Indian food and ethnic food. A lot of the beers, like the chai stout, were created exclusively to go with our food.

Nashville is your adopted home. Do you see any similarities between Southern cooking and Indian cuisine?

If you could cook for one historical figure or celebrity, alive or dead, who would it be? I really want to cook for Stephen Colbert.

COCKTAIL CULTURE

If you’re craving a partridge in a pear tree, there’s no need to wait for the 12 days of Christmas—just pop into Jupiter’s 1000 North any night of the week to sample its Partridge in a Pear Tree libation. “This holiday-inspired cocktail is a variation on a Paloma,” says lead bartender David Lovett. “I wanted to amplify the experience and make it special, and the best way to do that is to add an element of theater.” The unusual, bird-shaped stemware references a cocktail glass from The Aviary, a famed Chicago bar, but Lovett wanted something more

elegant. “I looked at many bird-shaped glasses and found this one. It holds 7 ounces, but it looks smaller and more fragile than it really is.” Lovett combines Volcan De Mi Tierra tequila and La Guita Manzanilla sherry with pear puree, fresh juices, cardamom simple syrup, and a trio of bitters before straining everything into the distinctive glassware. This dramatic cocktail is the perfect complement to the restaurant’s sweeping water views and sports-celebrity clientele. “It’s more than just liquid in a glass,” Lovett says. “It’s an experience.” (1000north.com) —M.S.

and emerging establishments. “For the Master Chef series, we look for truly great restaurants that support local farms in the places they come from,” says Swank. “That way we can educate people on the local food scene around the country.” The Sunday brunches are the only gatherings that allow children, who can partake in activities while their parents relax. Rounding out the culinary offerings is the new Swank Farmhouse, a teaching facility slated to open this season. Located in Loxahatchee, Swank Specialty Produce has amassed a devoted following with its annual series of dinners, brunches, and special events. It all started with the Swank Table dinners. There are eight to choose from this season, each taking place on Sundays from December 15 to May 3 and highlighting themes such as “Throwback to the ’70s” and “Chefs for Sustainable Seafood.” The meals bring together four or five local chefs who each prepare a course, assisted by a sommelier or mixologist, with proceeds benefiting an assortment of area charities. “These dinners allow us to give back to the community,” says coowner Jodi Swank. “They also give us the opportunity to bring chefs out in nature and under the stars. They work in an open kitchen and can interact with guests who wander up and ask questions.” The Master Chef series continues on Saturday nights from January 11 to April 25. Each evening will focus on chefs from different cities (such as New Orleans, Nashville, and Detroit), with an emphasis on lesser-known

Fill a glass with a SPARKLING WINE that gives Champagne a run for its money By Mark Spivak Drinking expensive Champagne can be exhilarating— so much so that it’s easy to conclude no other fizzy wine comes close. The truth is that some of the California sparklers and even a few wines from Prosecco can provide a satisfying experience. If you’re searching for a celebratory holiday bottle, consider these alternatives. Le Rêve, Domaine Carneros by Taittinger: When the Taittinger family established their California outpost in 1987, they had the wealth to purchase the best vineyards. They also had Eileen Crane. Thirty-two years later, Crane is still there as winemaker, turning out some of the best sparkling wine on either side of the Atlantic. The 2012 Le Rêve ($115) is a blanc de blancs made from Chardonnay grown on estate vineyards in the Carneros AVA. In terms of taste, it is simply luscious. The 2012 rosé ($135), only available at the winery, is even better. For something more accessible, try the regular Domaine Carneros brut ($31). J. Schram, Schramsberg: Jack and Jamie Davies founded Schramsberg in Napa in 1965, at a time when even making still wine was a risky business. It’s not an exaggeration to say that the couple introduced the idea of high-quality domestic sparkling wine to America. The 2010 J. Schram ($120), their top-of-the-line bottling, is a blend of 84 percent Chardonnay and 16 percent Pinot Noir, aged for seven years on the yeast; there’s also a rosé version (2011, $160). A good introduction to the Schramsberg style is the 2016 blanc de blancs ($41). L’Ermitage, Roederer Estate: Champagne Louis Roederer came late to the California sparkling wine party. JeanClaude Rouzaud selected the Anderson Valley vineyard site in 1982, and his son now oversees the operation. The estate’s regular cuvée debuted in 1988, followed by the 1989 L’Ermitage in 1993. The blends for L’Ermitage are bolstered by the addition of oak-aged reserve wines. Current vintages include the 2012 brut ($50) and 2011 brut rosé ($65). Ultramarine: We’ve all heard of cult Cabernets, but Ultramarine is California’s first true cult sparkling wine. It’s vintage-dated from a single vineyard (the famed Charles Heintz site in Occidental), bottled, riddled, and disgorged by hand—and nearly impossible to find. blanc de noirs ($197), and rosé ($266). Bear in mind that these are after-market prices as the winery sells out each year. Ask to get on the mailing list and cross your fingers. Altaneve: When David Noto dedicated himself to making the planet’s finest Prosecco in 2013, he had a tough road ahead of him. The wine was firmly entrenched in the $10-$15 category, and the best examples weren’t available outside Italy. Noto, who is descended from 10 generations of winemakers, was undeterred. His wines are all-natural, sustainable, and hand-harvested from some of the best vineyards in the Valdobbiadene hills. How good are they? In a word, stunning. Altaneve Z ($46), his tête de cuvée, is produced from a micro-plot that yields only 1,500 bottles annually. It has a light-straw color and a nose redolent of limestone and minerals. Dry yet luscious in the mouth, with notes of citrus and stone fruits buoyed by good acidity, it makes an elegant and memorable statement on the palate. The finish is long and mouthwatering. The Altaneve spumante rosé ($31) is nothing short of delightful, and the Prosecco Superiore DOCG ($32) is rich and opulent, with a core of tropical fruit flavors that invites you to take another sip. «

PBI: How did you discover Pound? Orenstein: Three-and-a-half years ago I went to a studio expecting to take a hip-hop class. It was love at first strike.

Who’s a good fit for Pound? This class is truly for all fitness levels from children to seniors. All of the moves have modifications to adjust to those with injuries or any other issues. I even currently have a student who broke her foot and is doing Pound from her wheelchair.

Facebook is launching a new digital currency—but is the world ready? By Judy Martel Cryptocurrency is nothing new—it’s been in circulation since the 2009 launch of Bitcoin—but the digital asset’s volatility has prevented the masses from embracing it. That could change in 2020 when social media giant Facebook plans to make a new currency called Libra available to users of Facebook and its other holdings, such as WhatsApp and Instagram. Facebook is a founding member of the not-for-profit Libra Association, which is developing the virtual money along with other companies and academic institutions. What makes Libra different from other cryptocurrencies, says Honghui Chen, professor of finance at the University of Central Florida, is that it’ll be less volatile and also more convenient to use via Calibra, an online account Facebook describes as a “digital wallet.” Through social media, users will be able to view their balance in Calibra depicted in their local currency. They can spend, transfer,

send, and store the digital money in their Calibra account and also use it with partners in the Libra Association. Facebook is seeking to reduce the volatility of Libra by not tying its value to an algorithm or a single currency, but rather to a more stable asset or group of assets. One possibility is to value each unit based on a basket of international currencies, including the U.S. dollar, euro, British pound, Japanese yen, and Singapore dollar, says Chen. The other is to peg the value to so-called “stable coin,” which itself is tied to a relatively stable asset, such as gold or government-backed legal tender. Social media’s global reach—some 2 billion users worldwide in the case of Facebook—makes it an ideal platform for international commerce, but there are concerns about security and privacy in the wake of Facebook’s recent lapses. Chen believes that because the Libra Association comprises a group of entities, it creates more layers of

security. “I have more confidence in Libra because it is not controlled by one company.” In addition, he continues, the blockchain network is not currently open to the public but privately controlled by the Libra Association, though there are plans to change that in five years. In a nutshell, blockchain is the record-keeping technology behind cryptocurrency. Bitcoin’s blockchain network is public, for example, but although transactions are not completely anonymous, personal information about users is inaccessible. To further address privacy concerns, Facebook is setting up Calibra as a separate business entity and says it won’t share spending data with other holdings unless users grant permission. But global regulatory concerns still loom large for the association and could delay its planned mid-year launch. Some companies have already pulled out of the association, citing concerns about regulatory focus on their core businesses. France and Germany are reportedly pledging to block Libra in Europe. If the association is successful in launching Libra, the question about what Facebook gains from developing a new currency remains. Chen says the idea of

banking through social media is nothing new. China has been doing it for six years via its own social media giant, WeChat. Theoretically, users can easily and instantly pay for items displayed in ads on Facebook through Calibra, possibly leading to more time spent on social media, notes Chen. In addition, the association will retain interest income from the currency reserve on Libra, meaning accountholders will not earn interest. Getting into the digital currency game before its competitors could allow Facebook to strengthen its brand and potentially increase its number of users if they join because of Calibra. Among other tech giants, Amazon offers its own digital wallet for customers, but Chen says he wouldn’t be surprised if it creates a digital currency in the future. Apple Pay is a successful online payment system, but it is hardware dependent in that it requires an Apple device. However, being first has its risks. Because Libra is new and untested, Chen advises caution. “I wouldn’t put a lot of money in at first, maybe just a couple of hundred. I can see the system improving as it grows—but test the water and add money little by little as you feel comfortable.” «

Libations come to life in Cocktail Hour: The Show, onstage at the Crest Theatre at Old School Square in Delray Beach December 20 and 21. Produced by the New York City–based company Ballets with a Twist, Cocktail Hour features more than a dozen original dances inspired by cocktails and mocktails such as the Cuba Libre (above), White Russian, Hot Toddy, and Shirley Temple (right). Entertaining can take many forms this time of year. From buttoned-up dinner parties to low-key girls’ nights in, I’ve curated everything you’ll need for holiday hosting. Let’s start with the tablescape, which has to be perfect no matter the soiree. These MacKenzie-Childs napkin rings will add a whimsical touch.
