Past Presence, and the Future ne benefit of celebrating a birthday—for those of us who still count them—is the gift of perspective that comes from marking another year on the calendar. To me, that means being better able to appreciate the past. Note that I didn’t say anything about living in the past. That isn’t healthy. You cannot grow if you don’t embrace the future, but, sadly, far too many of us spend a lot of time dwelling on “the way things used to be.” I’m not one of them. Don’t get me wrong—while I love to see where we’ve been, I consider history a way to understand how we got where we are. Sure, we all have deeply rooted preferences. I’m an ardent fan and active supporter of classical music and ballet—some of the oldest forms of culture in Western society—and I can make a good case for why a 1970s rock ’n’ roll guitar riff is far superior to today’s overproduced, computer-generated sounds. Yet my mind remains open to any great idea or new way of thinking—as evidenced by my zeal for my new iPad. Indeed, it’s human nature to strive for something better, and that endless urge is what leads to advances in medicine, communication, transportation, housing and so much more. These are the best of times, with better things still to come. These thoughts occurred to me because of a confluence of events. This month, Palm Beach marks the one-hundredth anniversary of its incorporation, celebrating a century as the town that shapes the way people think about luxury living in Florida. It coincides with a milestone of our own—this month, our company kicks off a yearlong celebration of our sixtieth anniversary as a leading publisher of information that shapes the way people think about luxury living in Florida. Recognizing our milestone, I’ve been looking through our archives to see how affluent tastes have evolved. They have, in numerous ways. Accordingly, when I acquired this company about 20 years ago, one of my goals was to publish great magazines for other communities with similar tastes. While we could have stayed entrenched in doing things the way we always had done them, I knew we had to grow—and we did, successfully. Naples, for example, with its rich culture and gracious sensibilities, has been our home since 1998, and we’re looking forward to celebrating its centennial in another 12 years (having been founded in 1923). Meanwhile, we’ve created new publications, websites and other multimedia outlets that have extended our influence worldwide, and we will continue exploring every opportunity to do so. That said, we’ll take a few moments to honor the past, even as we keep an eye on the future. Here’s to yesterday, and here’s to tomorrow.

Ben Vereen is one of the world’s most multitalented performers. The Broadway actor, singer and dancer has appeared in Wicked, Jesus Christ Superstar and Pippin, which won him a Tony Award and Drama Desk Award, and has crossed over into TV, most recently with CBS’s How I Met Your Mother. Vereen also is a keynote speaker and works with many organizations, which has resulted in three NAACP Image Awards and an Eleanor Roosevelt Humanitarian Award. Of course, there’s always time for his one-man shows. He performs “Steppin’ Out with Ben Vereen” at the Lyric Theatre in Stuart on April 2.

n who was your dancing idol? Arthur Mitchell, who started the first black ballet company in North America, Dance Theatre of Harlem. I had the opportunity to work with him later in his career. It was an amazing experience. He was my hero when I was in school. Bernice Johnson, who gave me my chance to perform, is another one of my heroes. Both Arthur and Bernice touched my life. n What projects are you working on? I [dropped] my first album, Steppin’ Out Live with Ben Vereen, on the Ghostlight Records label in February. Also, I am working on a few other projects, a documentary of my life as well as a dance-related television project. Eventually, I would like to be back on Broadway. n What do you do in your spare time? I like to give back, so one of the ways I have been doing that is by feeding the homeless, which has turned out to be a very satisfying experience. I also am a scuba diver and like to take a jump in the water whenever the opportunity arises. —Lola Thélin

Let’s Do Lunch Thanks to Cheryl and John Barry, lunch ladies are facing stiff competition. After learning what their children were eating at school, the Barrys started thinking outside the lunchbox. They discovered Wholesome Tummies, an Orlando-based company that delivers organic and nutritious school lunches to children. The Wellington couple purchased the franchise for Palm Beach County and journeyed into the lunchroom trenches to gauge reaction to the product. “Children are pretty unique in that they’ll say something right in front of you,” John says. The response, in the form of comments, smiles and audible “yums,” was clearly positive. With a nutritionist on staff, parents and schools are becoming fast fans. —L.G.S.

Queen of embroidery Ranjana Khan has been in the fashion business for more than a dozen years, creating iconic jewelry and accessories with exquisite embroidery, but until recently her name was never attached to any of it. Khan worked hand-in-hand with elite fashion houses under her company, Phoenix Hand Embroidery, until launching her eponymous label in March 2008. Khan hails from Mumbai and, thanks to her family, is no stranger to beautiful and delicate items. She began modeling at age 17, which allowed her to expand her creative vision when traveling for work. She moved to New York as a young woman, and soon met designer Naeem Khan, her husband of more than 30 years. Khan, who says she simply can’t stand still, is constantly working on her line, which consists of two statement jewelry collections, the high-end line Ranjana Khan and the lowerpriced RK for HSN. She is known for her uncanny ability to mix hot and cold, dark and light, masculine and feminine elements, always achieving a striking yet balanced look. Ignore the warnings. Maserati’s magnificent new GranTurismo Convertible will be music to your ears. By Howard Walker
If you’ve been perusing your latest issue of The Journal of Laryngology and Otology—I’ve been a subscriber for years—you’ll have read the disturbing news that riding in a convertible at high speed, with the top down, can have an adverse effect on your hearing. Excuse me, what was that? The study, by a British ear, nose and throat surgeon, showed that in five soft-tops tested, driving at speeds over 55 mph produced a noise reading greater than 85 decibels. According to the good doctor, prolonged exposure to that level of noise could make you go deaf. Let’s put that into a little perspective; normal conversation is usually around 60dB—unless it’s lunchtime at Panera Bread—while your average rock concert or hometown hockey game usually gets up to 120dB. Sadly, many of the best things in life are bad for you. Yes, I’m talking to you, Krispy Kreme. And part of the absolute, unfettered joy of driving Maserati’s breathtaking new GranTurismo Convertible is to drop the top and listen to the aural crescendo of its Ferrari-developed V8 as it screams to its 7,200-rpm redline. If Pavarotti, Carreras and Domingo are best known as The Three Tenors, this Maserati could so easily qualify as the fourth. Press hard on the throttle and some invisible Gustav Mahler brings together the V8’s 16 intake valves and two exhaust manifolds, and commands the active exhaust system to fully open its pipes. The result is a tsunami of timbre, a Hoover Dam of 56

octaves that gets louder and louder, richer and richer till it hits that 7,200-rpm shriek. After performing two zero-to-60-mph off-the-line acceleration runs—it gets there in just 5.1 seconds—I had to go home and take a cold shower. And give my ears a rest. The GranTurismo Convertible is the drop-top version of Maserati’s elegant two-door GT coupe. Its tremendous appeal is that it’s a full four-seat convertible with unrivaled, stretchout rear legroom. The original plan was for the car to have a folding hardtop. But the idea was quickly jettisoned as its designers realized the car’s gorgeous proportions would be compromised in having to store a hefty lump of folding metal in the rear.
Now, when you press a button, the triple-layer cloth top powers open in a mere 24 seconds. And you can lower the roof either at speeds up to 20 mph, or while parked with a turn of the key in the door. But those same designers who opted for a cloth top to protect the car’s beauty also opted not to fit a trunk to the car. Open the trunk lid and the space is tiny—a mere 6.1 cubic feet. Some cars have a bigger glove box. For a car that labels itself as a GranTurismo, or Grand Tourer, it’s ridiculous. But to drive this new $140,000 Maserati is to forgive it all sins. Its 4.7-liter, 32-valve V8 delivers a muscular 433 horsepower, which drives the rear wheels through a smooth-changing six-speed auto controlled by swift-acting paddle-shifters. It’s not blisteringly fast like a 510-horse Jaguar XKR. But a quick pull back on one of the paddles and you can spear past slower traffic as if released from some invisible catapult. Rushing from 50 mph to 75 mph takes just 4.2 seconds. Normally, when you slice the top off a car with an enormous 116inch wheelbase—that’s almost eight inches longer than a Bentley Continental GTC’s—body rigidity turns to Jell-O. But by adding massive strengthening to the GranTurismo’s chassis, Maserati’s en-
gineers have created a convertible with the stiffest body in its class. So even over the bumpiest of road surfaces, there’s no shimmying or shaking, just the feeling of tremendous rigidity. And rigidity helps deliver sharp, communicative steering and truly balanced, agile and involving handling. Top down, sun on your face, and that exhaust heavy breathing in the background, this Maserati is an absolute joy to drive. And arguably, there’s no more exquisite place to sit and enjoy the drive. The GranTurismo’s cabin is Italian craftsmanship at its finest—the wood, the leather, the gorgeous stitching, the deeppile carpeting, just magnificent. So go on and throw caution to the wind. If you’re going to risk inner ear meltdown, risk it in this Italian masterpiece. Whatever you do, don’t wear earplugs. u

Palm Beach may only be 16 miles long but what it lacks in size, it makes up for with its residents, its culture and its joie de vivre. As one of the most famous locations in the world, it owes much of its beginnings to Henry Morrison Flagler, who first visited the island in the early 1890s. “Flagler saw this land of paradise with all of these coconut trees, like no place else in this world. He made the decision to make this the queen of

winter resorts, and did it within a year or so,” says Bill Bone, chairman of Palm Beach Centennial Commission. Indeed, Flagler returned in 1893 and began buying land, on which he built Whitehall and the Royal Poinciana Hotel, and he also extended his Florida East Coast Railway to Palm Beach. Fast-forward 100 years and Palm Beach still upholds Flagler’s principles in hospitality, civility, elegance and recreation, thanks

The centennial weekend, April 15-17, begins with an opening night cocktail party at The Mar-a-Lago Club in Palm Beach on Friday, April 15. Tickets are $100, and the event is expected to sell out. “People who have never been to a charity ball will come to this event,” says Bone. “This isn’t about raising the money so much as it is about celebrating the beauty, excitement, sizzle, fun and thrill of being a part of this town.” The Centennial Ambassadors Ball takes place at The Breakers on Saturday, April 16. The by-invitation-only event honors the centennial ambassadors and major donors who have supported the centennial. On April 17 the commission hosts a parade that begins at the town’s recreation center and ends at Flagler Museum, where a free all-town celebration

will be held. The event will bring the best and latest in sound, imaging and light technology and inspirational footage compiled by master filmmakers. Not only is the island home to fashionforward men and women, but it’s also a source of inspiration for designers, and what better inspiration than a colorful history full of unique style and elegance. Tomas Maier, a part-time resident, is the creative director of Bottega Veneta, which has launched a five-piece capsule collection that embodies the lively and relaxed chic style that is Palm Beach. The collection includes unisex half-body sunglasses, a zipper-pull wallet in antique lizard, a shell-shaped keychain, a beach towel and a handwoven leather tote with metal buckles, all in brilliant Empire blue, except for the sunglasses. A fan of the island, Gucci and its creative director Frida Giannini, who featured Palm Beach in its spring/summer 2010 campaign, reinterpreted The New Bamboo in a limited light pink shade in calfskin for Palm Beach. Of course, Lilly Pulitzer and Stubbs & Wootton are synonymous with the island. For the big birthday, Lilly Pulitzer’s Palm Beach Centennial print scarf in pink highlights everyone’s favorite beaches, landmarks and hot spots. Percy Steinhart of Stubbs & Wootton is releasing a limited-edition linen espadrille for men and women in a mango color with an embroidered coconut grove with a climbing monkey. New addition Alex and Ani also is participating by releasing a centennial charm, while William R. Eubanks Interior Design commemorates with a centennial jasmine-scented candle. Call it perfect timing—Worth Avenue finished its construction just months before the island’s milestone, giving its residents and the Centennial Commission another reason to celebrate Palm Beach’s growth as a community. This momentous renovation certainly did unify the island. “With the exception of the infrastructure such as the water main that was paid for by the town, this renovation and the beautification of Worth Avenue was paid for by the property owners,” says Sherry Frankel, president of the Worth Avenue Association. With owners in agreement, the approximately $16-million streetscape renovation began during the early summer of 2010. The shopping destination first took shape when the Everglades Club opened in 1918. The club hosted weekly fashion shows by Elizabeth Arden, Bonwit Teller or Saks Fifth Avenue, among others, and featured the latest in New York and Paris fashion. Afterward, women shopped the clothes. This became the launching pad for designers and boutiques and thus, the birthplace of Worth Avenue. Today, there are more than 200 stores, including Kassatly Linens, which first opened in 1926, and Maus & Hoffman, which opened in 1961. “Then in 1980, Esplanade, which is now 150 Worth, arrived,” says Frankel. “It attracted shops such as Yves Saint Laurent, Emanuel Ungaro and Calvin Klein. This

A new park near 150 Worth is opposite a living artwork constructed of steel and plant materials. A new plaza at the intersection of Hibiscus and Worth avenues features fountains, hydro-plantings and pedestrian spaces, while a stone-clad clock tower at the Ocean Boulevard end welcomes visitors. “One of our main goals was to make the avenue more pedestrian-friendly,” says Frankel. “People love the benches. [They’re] not just for older people. [They’re] for the younger people walking around in 8-inch heels.” Of course, another main goal for the avenue is to propel the street forward by continuing to satisfy existing businesses and entice new ones. “This has been a terrific season,” she says. “I hear it up and down the avenue. There’s a renewed sense of energy.”

The hand-painted purple and creamstriped cabana tent fluttered as the brisk breezes wafted from the ocean, ushering in one of the coldest Palm Beach nights in recent memory. To walk through was to be transported to another place altogether— call it French Riviera meets the Atlantic Ocean—where a young, über-fashionable crowd sipped cocktails and mingled by torchlight at the water’s edge. The gathering was not your ordinary Palm Beach affair—but then, Tracy Smith is not your ordinary Palm Beacher. The glamorous founder of the vintage-jewel purveyor House of Lavande created a scene according to her vision of all that Palm Beach is—a serene
gathering place for tastemakers, jet-setters and entrepreneurs who appreciate beauty and the fine nuances of a life well lived. The invitations announced a celebration of the Palm Beach Centennial, but the event itself was more about the future than the past. As a DJ mixed French classics like “La Vie en Rose” with Beyoncé and retro house music, the crowd trickled into the tent, set on the beachfront of Smith’s property on North Ocean Boulevard, and spilled out onto the terrace. Purple glass chandeliers hung from the tent ceiling above a long table set for dinner. Lavender was everywhere, even on the menus at each place setting. The floral presentation featured bursts of blooms in pinks, greens and varying shades of purple, all placed in vintage glass and silver vessels of varying heights, as if they were freshly picked from the garden. Smith chose event planners Van Wyck & Van Wyck out of New York to interpret her vision. Bronson Van Wyck, one of the principals, was on hand to see to the finishing touches. “Van Wyck & Van Wyck do a lot of great, great parties,” she says. “They do a lot in Palm Beach, and they get the aesthetic.” This was a night to celebrate both Palm Beach the place, and Palm Beach the lifestyle. The guest list included gorgeous young Palm Beachers mingling with hip New Yorkers from the world of fashion and beauty—a combination of classic island style and funky New York bravado, all with a touch or two of Lavande sparkle. Even the men, including fashion designer Chris Benz, who was in vintage Lilly Pulitzer trousers, and Paper magazine’s Mickey Boardman, opted to wear brooches from the jewelry house. The ladies interpreted the “modern vintage” dress code beautifully with ensembles ranging from Valentino dresses to vintage short jumpsuits with fur stoles. The hostess wore Gucci with a 1990s Cavalli necklace from the House of Lavande collection. Smith’s co-hosts for the evening were Harper’s Bazaar contributing fashion editor and stylist Ann Caruso; Chantecaille Creative Director Olivia Chantecaille; Dalia Oberlander, founder of nomad-chic.com, which is set to launch in June; fashion designer Lucy Sykes Rellie; and stylist and fashion consultant Amanda Ross.

“Ann has been with me since almost the beginning,” Smith says. “She was the style director on my website, chose the photographs and set the tone for the brand. Lucy and Olivia have been big investors in the brand for a few years now. Dalia [is] very style-savvy and is the image of what I want to put forth. Amanda has great style, and is the same thing. We are vintage but I never want to come across as a vintage
shop. It’s more about how to take the vintage piece and make it more modern.” House of Lavande actually started out as Smith’s personal collection of vintage pieces that she kept adding to while trying to decide what business she wanted to go into. She followed her heart and picked jewelry, traveling to places like Paris and London to add to her stash. She launched the house in 2005, and in addition to sell-
ing fabulous faux jewelry by iconic designers, she also loans out pieces to stylists for red-carpet events and to magazines for fashion shoots. These days, she has developed great relationships with dealers who find special pieces for her to evaluate. For this evening, Smith wanted to show the people who are the most familiar with her work just where it all “comes from,” and to fête the town and its way of life.
“I knew that if I [threw a party], I wanted there to be a purpose to it,” Smith says. “I thought that the centennial was a great opportunity for [guests] to see where House of Lavande actually lives. I don’t know that they necessarily know how special and unique [Palm Beach] is, in and of itself. I wanted to give them a view of where the collection’s inspiration comes from.” As the guests’ vintage gems sparkled
in the moonlight, the atmosphere became more and more convivial—the perfect entrée to dinner under the cabana tent and, later, dancing into the night. Tiki torches blazed around canopied daybeds piled with colorful striped cushions, as waiters walked around with trays of hors d’oeuvres, including mini quiches and caviar on blinis. syrup, lemon juice, vodka and club soda, garnished, naturally, with a sprig of lavender. “I wanted it to be on the beach, because I wanted it to have a casual atmosphere too,” Smith says. “And I wanted to show that there are people here who are interested in fashion, and while it is an old town with a lot of history, Palm Beach is not just about people who are retired. There are younger people here who have fun and have families and [an interesting lifestyle] on the island.” Some of those young Palm Beachers were at Smith’s party: Nicole Munder, jewelry designer Jordann Weingartner, Millie Dayton, Whitney Bylin, Claudia Player and Loy Anderson, among others. Part-time Palm Beacher Celerie Kemble also was in attendance. Kemble will be decorating
Smith’s new home on North Ocean. The house that is standing there now is set to be demolished in May. As dusk set in, guests were called to find their places at the long table set up under the tent. “I think the long table was so dramatic and even with that many people, it still felt more intimate,” says Smith. The three-course meal was created by Palm Beach’s C’est Si Bon, and started out with an appetizer of a sesame crab cake with baby lettuces and an avocado crema. Keeping with the element of lavender, the filet of beef entrée featured a lavender, thyme and buzet broth, and was accompanied by baby cauliflower, haricots verts and whipped potatoes. Dessert was lavender ice cream with a tuile and fresh berries. Smith’s husband Matt stole the spotlight for a bit, standing up and toasting his wife by saying she had brought a lot of excitement to his life. He also wished her a happy birthday, which was supposed to be a secret. “I gave strict orders not to even mention it,” she says, laughing, “but they did anyway.” After dinner, the tented area was transformed into a dance club, complete with disco ball as DJ Chelsea Leyland set the tone. Those who wished to brave the dropping temperatures curled up on the outdoor seating for more conversation and a couple more cocktails, as the sounds of a glamorous, youthful and exciting Palm Beach lifestyle echoed down the shoreline. u

A top-flight noodle house in West Palm Beach? Huevos rancheros on the island? What’s the world coming to? It’s become a more diverse and multicultural place—even in Palm Beach, the bastion of Caesar salad and Dover sole. Those dishes remain popular, of course, and find their way onto many menus. However, as Michelle Bernstein demonstrated last year when she opened her Latin-inflected restaurant at The Omphoy Ocean Resort, local residents are ready to journey to the next culinary level. That being said, the most popular ethnic cuisine in the area is still Italian, and some of the best Italian food in the Palm Beaches is reflected here from restaurants such as Trattoria Romana and La Sirena. Eateries such as Pistache and Bistro Chez JeanPierre remind us of just how good classic French food can be. And, of course, there’s always room for a good steak. From a very crowded field, here are 20 dishes that provided a special level of pleasure during an exciting year. OCTOPUS A LA PLANCHA, Café Boulud, Palm Beach Chef de Cuisine Zach Bell is full of surprises. Close your eyes and you’re in Spain; open them, and you’re at one of the local enclaves of French cooking with a Mediterranean flair. For this dish, he combines tender slices of roasted octopus with spicy pieces of Spanish chorizo, and garnishes 92

the starter with crispy chickpeas, red onion, piquillo peppers and a smoked paprika aioli. Somehow it all hangs together, and becomes more than the sum of its parts. MAINE LOBSTER POT PIE, The Atlantic Grille, Delray Beach Nestled in the Seagate Hotel one block from the water, the Atlantic Grille is an American seafood restaurant that offers something for everyone. The pot pie arrives in a ramekin topped with puff pastry and a large lobster claw. The interior resembles lobster bisque on steroids—richly concentrated and filled with fennel, celery root, corn, potatoes, peas, carrots and chunks of lobster meat. PAN-ROASTED DIVER SCALLOPS, Jupiter Island Grill, Jupiter Garnished with wild mushroom risotto and a maplespiced butternut squash velouté, this dish typifies the style of Executive Chef Michael Rolchigo, who combines elements of Italian country cooking and the heritage of the American South into an unlikely but seamless whole. The scallops are plump and sweet, the risotto is laced with Asiago and black truffle essence, and the squash provides an earthy framework that brings all the components together.

CRAB AVOCADO STRATO, Cielo, Boca Raton Boston chef and proprietor Michela Larson, aided by Executive Chef Nader Jaouhar, has transformed this penthouse restaurant with pure “coastal Mediterranean” flavors. Their version of a culinary cliché is startling—lumps of fresh crabmeat and diced avocado layered and wrapped in thinly sliced cucumber, augmented by crispy falafel fritters and a bracing tahini enhanced with preserved lemon. Every taste sensation is distinct, yet the end product is balanced and harmonious. BRAISED LAMB SHANK, Temple Orange, Palm Beach Ryan Artim, the Ritz-Carlton’s diverse and talented executive chef, has blended Florida ingredients and tropical touches into a menu that highlights the best of Italy. Exceptionally tender and flavorful, this lamb shank can literally be eaten with a fork. It’s served in a zesty Barolo reduction, and garnished with shaved vegetable salad and a side dish of creamy polenta.

LOBSTER AND CRAB BURGER, The Capital Grille, Palm Beach Gardens One of the secrets of America’s steak houses is that they’re featuring more interesting and creative seafood dishes all the time. Studded with pieces of crab and lobster, the burger is enhanced with dry mustard and Old Bay seasoning to give it a spicy edge, garnished with a chunky, house-made tartar sauce and served on a toasted brioche bun. Also available as a starter in the evening (minus the bun), the best time to enjoy it is midday at the bar, accompanied by a basket of homemade potato chips. CLASSIC PRIME BEEF BURGER, Tryst, Delray Beach Is hamburger really the new steak? If it’s as good as this, the answer is probably yes. The meat is ground USDA Prime, the sharp cheddar is from Vermont, and the burger is incomparably fresh and juicy. Chef Julian Greaves continues to feed and spoil the masses at this cross between a wine bar and gastro pub, “using produce only from the best artisanal and organic farmers.”
FISH TACOS, City Oyster & Sushi Bar, Delray Beach City Oyster has expanded its scope, adding a sushi bar with a full range of specialty rolls. Under the direction of Chef Dennis Teixeira, it’s still best known for classic dishes. The tacos include the freshest fish available in the market, and are layered with pico de gallo, cilantro and lime crema on flour tortillas, garnished with slices of watermelon. NEW YORK STRIP, Ruth’s Chris, West Palm Beach Everything seems to sizzle at Ruth’s Chris. That’s partly because the USDA Prime steaks are cooked at 1,800 degrees to lock in the juices and flavors, and partly because they come to the table topped with a dollop of butter, which enhances the taste and lends an element of theater to the presentation. It’s just one of the transmitted secrets of Ruth Fertel, who mortgaged her house in 1965 to purchase the Chris Steak House at the corner of Broad and Ursuline in New Orleans. MEE GORENG, Joy Noodles & Rice, West Palm Beach Owner Joy Sumonthee hails from Thailand, but this dish is native to Indonesia. Flat egg noodles are sautéed in a

light and slightly spicy sauce, studded with screamingly fresh Brussels sprouts, broccoli, snow peas, soy beans, carrots and spinach, with bean sprouts added for texture. To complete the dish, select the meat of your choice (chicken, beef, shrimp, squid or sea scallops) or create a combo. Whatever you choose, you’re bound to leave this noodle house with an extraordinary sense of well-being. HUEVOS RANCHEROS, Ta-boó, Palm Beach This nontraditional variation on a Mexican classic is one of the staples of the Sunday Brunch menu at Ta-boó. Several layers of refried beans and crispy tortillas are topped with a layer of eggs, and covered with a house-made ranchero sauce kicked up with cilantro. The eggs are scrambled rather than fried, and the beans are enhanced with jalapeño and bacon fat. The dish has become so popular that it competes with eggs Benedict on any given Sunday. dining room with a graciousness that makes guests feel they are being entertained in his home. His roast duck contains moist and tender meat offset by crisp skin, accented by a black cherry and semiglazed sauce spiked with brandy, and typifies the blend of French haute cuisine and European comfort food served in this 24-seat restaurant. CANTONESE BLACK COD, Echo, Palm Beach Operated by The Breakers, this jewel of an Asian restaurant combines the cuisines of China, Japan, Thailand and Vietnam. The cod is steamed with Chinese wine and augmented with ginger, scallions and toasted garlic. Light yet satisfying, it illustrates why Arturo Gismondi has been drawing customers to this East Boca spot since 1992: He sources the best possible ingredients, and then does his best to present them in their pure form. STEAK TARTARE, Pistache, West Palm Beach This dish has become a headliner at the popular French bistro. Chef de Cuisine Julien Gremaud prepares it using tenderloin cut into cubes, which retains more flavor than ground beef; he blends in capers, shallots, cornichons, olive oil, onions, egg yolk, and dashes of Worcestershire, mayonnaise and Dijon mustard. Available as either an appetizer or an entrée, it’s served with crostinis and the restaurant’s outstanding pommes frites (when served as an entrée). it more moist and flavorful. The slices of tender pork are served in a demi-glace studded with sun-dried cranberries. It’s one of the many reasons why regulars flock to this cozy and intimate replica of a traditional European bistro.
Kong specialty featuring crushed and blended sun-dried scallops and shrimp cooked with chili, onion, garlic and oil. The jumbo crustaceans are cooked to perfection, napped in the sauce and garnished with freshly sautéed green beans.
WARM SHIITAKE MUSHROOM SALAD, Chez Jean-Pierre, Palm Beach Chef Jean-Pierre Leverrier hails from Normandy, and his menu reflects the substantial cooking of that region. Despite its elegant ambience, he describes his restaurant as a bistro, and the earthy, authentic food has been a hit with Palm Beachers for nearly two decades. The fresh wild mushrooms are pan-sautéed with shallots, butter and parsley, and spooned over a bed of mixed greens. It awakens your senses for the main dish to come.
CHICKEN CACCIATORE, La Sirena, West Palm Beach Chef Marcello Fiorentino butchers his own chickens, reserving the breasts for several dishes on his menu. He then braises the legs and thighs for several hours in white wine, chicken stock, tomatoes, onions and peppers, until the meat is falling off the bone. While available every night, this is a “reservations only” dish, made in limited quantities and doled out to those regulars in the know.

pisco fever Cocktails featuring the native South American spirit are back in style. By Mark Spivak
Pisco, the distinctive Peruvian spirit, has had its ups and downs. During the 1960s, it was one of the most popular drinks in California, particularly in San Francisco, because of the influx of Peruvian immigrants who settled in that city from the Gold Rush onward. However, the military government that ruled Peru from 1968 to 1980 destroyed many vineyards and sent the pisco industry into eclipse. With the stabilization of the country over the past 15 years, artisan pisco once again is being produced and finding its way to the United States. In the vanguard of the trend are producers such as Diego Loret de Mola, Melanie Asher and Duggan McDonnell, who have traveled to Peru to source the wine that is transformed into their products. “Pisco is distilled from wine,” says Loret de Mola, whose BarSol brand is now available in 44 states. “We use only the free-run juice, fermented with natural yeasts and with no additives or sulfites. This goes directly into the still, which gives pisco its remarkable fragrance.” Peruvian pisco is made from eight authorized grape varieties, and comes in four styles: pure (made from a single type of grape), aromatic (made from Muscat or Muscat-derived varieties), mosto verde (distilled from partially fermented must), and acholado (a blend 100 PALM BEACH ILLUSTRATED

palate v pour of several different grapes). The result is a clear grape brandy with the appearance of vodka, but with an enhanced texture, aroma and flavor. To make matters more complicated, pisco also is produced in Chile, which capitalized on the decades-long decline of the Peruvian economy. There are significant differences between the two versions. Chilean pisco is mass-produced and can be adulterated before bottling; the Peruvian spirit is made in small batches in pot stills, and cannot be altered in any way before reaching the consumer. The classic cocktail is the Pisco Sour, which incorporates lemon or lime juice, egg whites, simple syrup and bitters and is shaken until a froth rests on top of the drink. The Pisco Punch has also been popular since its invention in the 1880s; it involves marinating pineapple overnight in gum syrup, then adding distilled water,

lemon juice and copious amounts of pisco. Although pisco may not be as American as apple pie, a Pineapple Pisco Sour is served at the 149 locations of The Cheesecake Factory. McCormick & Schmick’s Seafood Restaurants around the country serve a classic version of the drink, while the Roy’s chain offers customers a Passion Fruit Pisco Sour. In independent restaurants, individual mixologists are the gatekeepers, and producers such as Loret de Mola spend a great
deal of time on bartender education. Their efforts are paying off. Creative pisco cocktails are now featured at establishments such as Providence in Los Angeles, La Mar and Fresca in San Francisco, the Pio Pio restaurants in New York, and Restaurant Eve in the Washington, D.C. area. These cocktails pair well with Peruvian cooking, a fusion cuisine that blends elements from Spain, France, Italy, China and Africa. There are more than 250 brands of pisco in Peru, several dozen of which are imported to the States. All are reasonably priced. Some of the best-known are Don César Pisco Puro ($30), Macchu Pisco ($25), Biondi ($40), Centenario ($40), Tres Generaciones ($40), and Soldeica “Black Huaco” ($40). Sample one of these in a Pisco Sour, and you’ll discover why the drink is gradually taking its place alongside the mojito and caipirinha in the hearts of cocktail lovers. u

Hot Spot The menu at Apicius reminds you why you love Italian food in the first place. By MARK SPIVAK

Apicius is the name of a famed Roman gourmet, as well as the title of a classic cookbook from the Empire. It also is the moniker of a cooking school in Florence, highly regarded eateries in Paris and London, and an excellent Italian restaurant in Lantana. Lantana’s Apicius Ristorante e Enoteca is the brainchild of Leo Balestrieri, who took over a modest luncheonette on Ocean Avenue, gutted it, and completely transformed the setting. Several million dollars later, the overall effect is warm, cozy and impressive. The main dining area consists of an enclosed terrace, with a floor of Chicago brick and a stunning ceiling of mahogany-stained oak. Dotted with statuaries and tropical plants, the space is reminiscent of a garden in a private Tuscan estate. The restaurant also houses a welcoming bar area, a separate enoteca (wine bar), and fire pit courtyard, where customers can dine, drink wine and smoke cigars into the wee hours. The cuisine at Apicius displays that intriguing balance between earthiness and elegance that reminds you of why you love Italian food in the first place. Starters include steak tartare, Vitello Tonnato and homemade pâté, as well as an assortment of pasta, gnocchi and risotti. If you want to begin with pasta, look no farther than the Spaghetti 104 PALM BEACH ILLUSTRATED
di Chitarra con Scampi ($29). The hand-cut spaghetti is cooked al dente (extremely hard to do with freshly made noodles), tossed with olive oil, wild mushrooms, garlic and a profusion of fresh basil, and topped with a Madagascar head-on prawn. These prawns are a thing of beauty— rich and sweet, more like a small lobster than a shrimp. Entrées include a selection of USDA Prime meats, aged on the premises for nine weeks, as well as veal chops and creative seafood dishes. Costoletta di Vitello alla Fiorentina ($48) is a center-cut, long bone veal chop with prosciutto, fresh sage, cheese and baby spinach. Cooked perfectly to order, it is served in a truffled Mornay sauce. The Capesante Scottato ($39) is huge, ocean-fresh scallops, beautifully underdone, garnished with risotto and napped in an intense Chianti reduction. Like many dishes at Apicius, it contains a range of very different elements that blend together seamlessly. Desserts consist of the classics—tiramisù, profiteroles, homemade gelato and sorbet. A slice of Semifreddo ($10) is a perfect way to conclude. The semifrozen nougat contains just enough sweetness to end a meal on a light and harmonious note. The wine list at Apicius is lengthy and well composed, particularly strong in Barolo and Barbaresco. For the con-

noisseur, there are verticals of Sassicaia back to 1983 and Bertani Amarone dating to 1968. The more casual drinker can choose from a comprehensive selection of wines from every part of Italy. A bottle of Greco di Tufo from Feudi di San Gregorio ($60) is a crisp and pleasant accompaniment to the food. The service staff is conscientious, unfailingly polite and attentive to every detail. There’s more than enough help to cover
the room when it gets busy, as it frequently does. Balestrieri is fortunate to have the knowledgeable and polished Richard Paladino, formerly of The Breakers and Paradiso, in charge of his wine service. Open since last September, Apicius is now hitting its stride. It is a remarkably attractive restaurant—pricey, perhaps, until you realize the high quality of the ingredients and the care taken in preparing them.

One of the latest openings is China Beach Bistro, owned by Turgut “T.K.” Kaytmaz and Sal Yuksel, owners of Café Centro, and Roger and Judi Hochstin. The restaurant boasts authentic Szechuan cuisine, with a nice-sized menu featuring entrées, noodle and rice dishes and Peking duck, as well as dim sum.

Chef Roy Villacrusis is creating fabulously flavorful dishes at his Kubo Asiatic Cuisine in North Palm Beach. Drawing inspiration from his native Philippines, he blends flavors from Southeast Asia and even Italy in a bold and unique way that goes beyond “fusion” cuisine. One of the menu standouts is the Liver Surf & Turf, monkfish liver served with a saikyo miso sauce, alongside Hudson Valley foie gras in a spiced chocolate sauce with banana brûlée. Another example of Villacrusis’ flavor experiments includes the Longgonisa Sausages, which are three pork sausages served with green papaya achara and garlic fried rice. Add to that a menu filled with both hot and cold entrées, unique sushi rolls and specialty tasting menus your whole party can enjoy, not to mention the fried cheesecake dessert, and you have a restaurant that is full of delicious surprises. 561-776-7248

Brunch is Served Brunch is a popular meal here in Palm Beach County. Why not enjoy it with a side of art? The Norton Museum is serving brunch at Café 1451 on Sundays from 11 a.m. to 3 p.m. The menu has a variety of items, including omelets, pancakes and more decadent dishes, like the smoked salmon eggs Benedict with herb cream cheese and asparagus or the crab cake sliders with tartar sauce on brioche buns. Wash it all down with a crisp and sweet prosecco, bellini or mimosa. You do not have to pay museum admission to dine at the café, but regular fees apply for exhibits and galleries. We went in on a sunny day to check it out. The restaurant is located right across the street from Café Centro. It’s big and open, with high ceilings and exposed brick walls. It does not feel like the Chinese restaurants we are all used to, with bold red walls and gold dragons for decor. China Beach feels like an eclectic restaurant that happens to serve Chinese food. A full U-shaped bar on one side also is open to the outdoor seating area. We chose to stay indoors, where the round tables feature lazy Susans, which made it easier to share the bowls of crispy noodles that were brought out to start. The lunch special is a combination platter of four dim sums and a half order of a select group of entrées. Our waitress hooked us up with three special sauces for our dim sums—a pickled chili sauce, hot mustard with wasabi and a red pepper sauce—each one hotter than the last. The four dim sums came out lined up on a rectangular white plate with soy sauce and duck sauce: an Asian vegetable spring roll, a four mushroom and spinach dumpling, a dumpling of
chicken and mushroom with Kafir lime leaves, and a hanger steak triangle. Between the crispy noodles and the dim sums, we were starting to get full. Then came the main course. Served in large bowls, the half entrées definitely were meant to be shared with the table. The shrimp lo mein was fresh and flavorful with a homemade soy sauce, and was not at all greasy, like we’ve noticed at other restaurants. The Kung Pao chicken was surprisingly light for a traditionally heavy dish, but still loaded with veggies and chicken. The sauce was kept to a minimum, so it wasn’t overwhelming. A seriously spicy dish but you can opt for a moderate level of heat. The dinner menu offers a bigger selection of dim sum, and judging by the size of the half entrées at lunch, huge full-sized portions that the whole group can enjoy. Definitely come hungry to the China Beach Bistro. The food is fresh and deliciously flavored, served in an atmosphere that is unique and inviting.
