When vaccines first became available, the first thing I did was reschedule last summer’s canceled trips—and add a few new ones to the mix. As a result, it’s going to be a busy summer, but nothing feels as good as booking international travel again. If you agree, you’re going to love this issue. We have curated a thoughtful mix of summer adventures that offer insight both on far-flung locales and destinations closer to home. If you love a good road trip (and you also love to experience local cuisine), turn to page 60 for our “Foodie Road Trip.” In this fun, informative package, you’ll discover our state’s hottest culinary stops and learn where to get the best key lime pie, find neighborhood favorites, dine with a view of the sunset, and even sign up for hands-on cooking experiences. For the food-inclined, this editor-tested and -approved resource is a must. For our fashion feature this month, we decamped to Islamorada to the Frisbie family’s new resort, The Islands of Islamorada. Our crew stayed for a couple of days to shoot the story— and they didn’t want to leave. Check out “A Place in the Sun” on page 72, and you’ll see why. One of the travel trends that grew in popularity during the pandemic (and it’s still going strong) is travel via RV. And why not? Luxury RVs are like homes on wheels, with every creature comfort and then some. For big families (pets included!) in particular, it’s the only way to go. Photographer Francesca Coviello Dunham of Coviello Photo is based in Delray Beach but lives out of her 26-foot 1962 Airstream Overlander when traveling to shoot weddings and engagements. She and her husband renovated Sterling with the help of local vendors before embarking on her maiden voyage: a 16,500-mile cross-country adventure. “Transitioning from a big house to under 200 square feet was no easy feat,” Dunham admits. “But having built-in creature comforts made us always feel at home on the road.” To the many young professionals embracing nomadic lifestyles, Dunham recommends investing in little luxuries to make it work. “We made the bed a priority and splurged on a custom latex mattress,” she says. They keep several sets of organic sheets on hand to stay fresh between laundry days, maximized kitchen space since they both love to cook, and are self-contained with water tanks— “a total game-changer” since running water is a tiny-living rarity. In a home on wheels, Dunham says, every item must have a purpose and less is truly more: “Be methodical with your systems and storage, and only bring belongings that will spark joy on a daily basis,” she advises. Beauty FOOD How what we eat AFFECTS OUR SKIN By Ivey Leidy Photography by Kent Anderson We all know how important diet is to overall health, but the power of food extends to beauty, too. What we eat plays a huge role in the appearance of our skin—its youthfulness and elasticity (or lack thereof). Beauty may come from within, but sometimes our body displays external cues to indicate our health. I consider the skin a map that outlines what’s going on inside the body. Oftentimes, the health of our gut is written on our skin, almost as a warning sign. Whether these signals show up as a breakout, dehydrated and dry skin, or a condition like eczema or rosacea caused by gut dysbiosis, our bodies are always communicating with us. For example, eczema can be an indicator of gluten sensitivity, and acne is often associated with dairy allergies. Changing your diet may improve your skin. The most important nutrients for healthy, supple skin are omega-3 fatty acids, antioxidants, and collagen. Collagen supplements—and whether or not they work—are a trending topic. Collagen is a protein found in skin and connective tissue that gives skin its structure and elasticity. As we age, we produce less of it, hence the wrinkles. Because the body creates collagen from the food we consume, it’s safe to say that the most effective approach to increasing collagen levels is to eat foods that naturally boost production of this protein. Certain foods contain available collagen the body can use to help to promote the natural production of collagen—which can’t be said about over-the-counter synthetic collagen supplements. (A rule I live by is that food is your primary source of fuel for everything your body needs, and supplements are just that—supplements to food.) Some collagenboosting foods include bone broth, fish and shellfish, eggs, and foods rich in vitamin E, vitamin C, and zinc. Omega-3 fatty acids—essential fats that we can only get from food—are also vital to skin and overall health. Omega-3s decrease inflammation throughout the body, fight acne, protect against the sun’s harmful rays, and improve the skin’s natural moisture barrier, helping to keep out irritants and bacteria and giving you that healthy, dewy 32

glow. Foods rich in omega-3s and healthy fats include salmon, tuna, avocados, walnuts, sunflower seeds, and pumpkin seeds. Other foods that can improve skin health are those high in antioxidants, such as beta-carotene, vitamin C, and other antioxidants that the body converts to vitamin A, the natural retinol; some examples are sweet potatoes, bell peppers, broccoli, dark leafy greens, tomatoes, citrus, berries, and dark chocolate that is 70 percent cacao or more. And good news for wine drinkers—red grapes contain resveratrol, an antioxidant that protects against free radicals, slowing the aging process. To prevent sun damage, up your intake of cruciferous vegetables containing sulfuric compounds that act as a natural SPF, including broccoli and kale, as well as garlic.
SKIN CARE DON’TS • Over-washing: Our bodies’ natural oils act as barriers against bacteria and allergens. Stick to a deep cleanse at night and a gentle cleanse during the day. The nighttime routine is the most important, as your skin has been exposed to pollutants and dirt all day. • Insufficient sleep: Collagen synthesis happens during rest, when cortisol levels are low. • Dehydration: Excess of anything diuretic (like alcohol
and coffee) is very dehydrating, causing early signs of aging. Frequent water consumption helps to hydrate your body’s cells and organs, especially its largest—your skin. • Poor diet: A diet high in processed foods and refined sugar results in decreased collagen production. • Stress: An excess of the stress hormone cortisol has been shown to cause acne flare-ups.

INGREDIENTS 1 small sweet potato, peeled and cubed 2 cups chopped kale 1 14-oz. block of organic extra-firm tofu 1 baby cucumber, sliced 1/2 avocado, cubed 1/2 orange, cut into segments 1/4 cup fresh cilantro 1 tbsp. avocado oil 3 tbsp. olive oil 1 lemon wedge
TAHINI GODDESS DRESSING INGREDIENTS 1/4 cup freshly squeezed orange juice 1/4 cup tahini 1 tsp. maple syrup 2 tbsp. lemon juice 1 garlic clove Water to thin
• Remove tofu from packaging and place between several paper towels. • Rest a heavy cutting board or book on top of tofu and let the liquid drain for at least an hour. I typically do this the morning of and let it dry all day—this ensures your tofu gets nice and crispy. • After drying, cut tofu into equal-sized cubes. • Preheat oven to 400 degrees. • On a parchment-lined baking sheet, add cubed sweet potato and drizzle with avocado oil. • Roast for 20 minutes.
• While sweet potato is roasting, add 2 tbsp. of olive oil to a cast-iron skillet over medium-high heat. • Add tofu cubes and cook for 5 minutes on each side until crispy and golden brown. • Massage kale with 1 tbsp. olive oil and juice from 1 squeezed lemon wedge. • Arrange cucumber, avocado, roasted sweet potatoes, and tofu around your bed of kale. For the dressing, combine all ingredients in a high-speed blender then drizzle over salad. • Garnish with toasted sesame seeds.

Before starting his own firm, Lucido studied visual communications and architecture at Washington University in St. Louis, then designed for a private estate, overseeing residential projects around the globe as well as completing yachting and aviation work. He also served as design director for the Mercer Hotel in Soho. The South Coast offers epic waterfalls, including Gljúfrabúi: Concealed by a cliff, it often sits unnoticed next to the tourist-favored, 200foot Seljalandsfoss waterfall. To get there you’ll wade through a shallow stream into a mossy cave, where gushing water theatrically cascades into a small pool lit as if by a spotlight. ODE TO THE ORB It seems appropriate that Robin Hill, whose work straddles art and design, would be chosen to display her photography inside The Betsy Orb—a curious, egg-shaped structure connecting the hotel’s two residential buildings. “The Art of the Orb” is a collection of different architectural perspectives of the Orb itself. Some are taken by day, some at night with the structure awash in projected light. They invite the viewer to contemplate its shape from above, below, and even peeking around a corner. FULL-FRONTAL FASHION Barbara Hulanicki is one of those mythical figures who has done more in a lifetime than seems humanly possible. In the 1960s, she launched fashion house Biba, a favorite of celebrities and fashion upstarts (Anna Wintour was an intern). She designed hotel interiors for South Beach’s art deco revival, plus several Caribbean properties for hotelier Chris Blackwell. And she created a body of fashionfocused photography of dancers, models, and notables wearing her clothes. A collection of these images, curated by co-owner Lesley Goldwasser, hangs at LT Steak & Seafood at The Betsy. Don’t be surprised if, while looking at one of her photos, you spy Hulanicki herself. She resides blocks away from the hotel and visits often.

IT’S LIT The Betsy’s owners, the Plutzik family, have literature in their DNA. The late poet and Pulitzer Prize finalist Hyam Plutzik was the inspiration for both a robust library containing rare and firstedition volumes and an extensive poetry collection, and The Writer’s Room—the latter is a studio space where artists-inresidence, selected via a competitive application process, may stay and write. The room is tiny but highly functional, and it contains Hyam Plutzik’s own desk for maximum creative vibes. Lamborghini’s new fast and furious Huracán EVO RWD Spyder is an assault on the senses By Howard Walker We all know about endorphins, the spunky polypeptides produced by the body to stimulate feelings of immense pleasure. Eating chocolate and drinking wine are great endorphin releasers, but there’s another source of endorphin production that’s far more effective than any Godiva or Pinot Noir. Let me introduce you to the newest offering from Lamborghini, the tangerine dream machine known as the Huracán EVO RWD Spyder. The endorphins this 602-horsepower, V-10 engined beauty delivers are up there with hearing Pavarotti hit the high notes of “Nessun Dorma” or receiving a basket of kittens to cuddle. 56
There aren’t enough superlatives in Webster’s to adequately describe the way this hurricane-force machine can slingshot itself off the line, dragster-style. Nothing prepares you for the ensuing mayhem as this rocket ship spins its rear wheels like a Fourth of July pinwheel, lunging at the horizon in a haze of flambéed rubber. I’ve driven plenty of superfast cars; this one scared the snot out of me. Time, perhaps, for CliffsNotes on the raging bull from Sant’Agata Bolognese, Italy. Introduced in 2014, the Huracán replaced the much-loved Gallardo as the first rung on the ladder of Lamborghini ownership. Over the
years it evolved first into the Huracán Performante, then the EVO. But it always stuck with all-wheel drive to help wrangle all that power—and keep drivers out of the hedgerows. For purists, having all-wheel drive has been a bone of contention. They argue that it somehow desensitized the car, taking away the raw, driverfocused, laser-precise responses. Last year, however, the wraps came off the Huracán EVO RWD, with that honking mid-mounted 5.2-liter V-10 spinning just the rear rims. More nimble and tailhappy, it instantly became the most fun-driving old-school Lambo money could buy. And speaking of lira, the base price of the Florida-orange Spyder convertible is $229,428, around $15,000 more than the $214,366 Coupe version. Must-have add-on options easily take the sticker north of $250,000. Toggle a switch and that tight-fitting canvas roof powers back, disappearing beneath a hard cover in a mere 17 seconds and at speeds up to 31 mph. Top down, the Huracán makes a terrific convertible, with hardly any wind

buffeting, even at close to triple-digit velocities. Having the top dropped is all the better for inhaling a manic Guns N’ Roses soundtrack. Inside, you sit in hip-hugging carbon fiber–shelled seats, gripping a wheel that looks straight out of a race car. The theater that goes into operating this orange projectile is so very Italian—flick up a big red flap to hit the start button, pull back on an oversized lever to engage reverse, and shift gears with paddle shifters the size of elephant ears; Tom Cruise in Top Gun: Maverick would feel right at home. This newest Huracán is a pure and passionate assault on the senses. In today’s hyper-car world, 0-to-60 in 3.3 seconds is nothing special: There are kid-toting Teslas that get there in 2.4, as will the all-wheel-drive Huracán EVO. But the fury of the RWD’s acceleration, the brutal 8,000-rpm upshifts, and that truly spine-tingling, hairs-on-the-back-of-your-neck-raising soundtrack makes it feel like the Starship Enterprise hitting warp speed. Rear-drive-only boosts those endorphins. The

The Return of PILAR
Ernest Hemingway’s LEGENDARY fishing boat has been reborn in the new Wheeler 38 By Howard Walker
W
es Wheeler remembers the call. It was Andy Garcia on the phone. The Untouchables star was making a movie about Ernest Hemingway and his longtime fishing captain, Gregorio Fuentes. Garcia needed to find a replica of Papa Hemingway’s beloved boat, Pilar, and was looking for suggestions. Wheeler is the great-grandson of the Wheeler Shipyard founder. Back in 1934, Hemingway took delivery of a fresh Wheeler 38 Playmate from the Brooklyn yard, paying the then-princely sum of $7,495 for the black-hulled beauty. Christening it Pilar, the nickname of his second wife, Pauline, Hemingway owned the boat for 30 years, chasing big-game fish around the Caribbean and writing most of The Old Man and the Sea from its cockpit while docked in Havana. Alas, nothing came of the movie, which was to have starred Anthony Hopkins as

Hemingway, with Garcia playing Fuentes. But it did rekindle a dream for Wes Wheeler. “I decided I wanted to bring Pilar back to life and build a brand-new version using the newest technologies,” he tells me during this year’s Palm Beach International Boat Show. Doing so would be a challenge. His greatgrandfather’s company had shuttered in 1965 after building more than 3,500 boats. But Wheeler knew every inch of Pilar after a visit to Havana with Hemingway’s niece, Hilary Hemingway, in 2012. She had co-written the Hemingway & Fuentes movie script with Garcia and had asked Wheeler to fly down and measure the original Pilar in case a movie replica had to be built. Fast-forward to March of this year and Wheeler is giving me a tour of his brand-new Wheeler 38, which is rocking gently at the dock. It’s hull #1, but he hopes to build more for any classic-
boat enthusiasts with around $1.3 million to spare. Legend, as the new boat is called, is a body-double of Hemingway’s beloved fishing boat; everything above the waterline is a perfect copy, based on Wheeler’s exacting measurements from the Cuba trip and historic documents kept by his great-grandfather. Below the waterline, however, her hull has been modified to run fast, at speeds up to 34 mph—more than twice what Pilar could achieve—and include the kind of features Papa Hemingway could only dream about. In place of a single 70-horsepower Chrysler gas motor, Legend features twin 370-hp Yanmar diesels, with a super-quiet Cummins Onan generator to run the air conditioning and a SeaKeeper gyro stabilizer to tame any rock and roll. Rather than investing in a new boatyard, Wheeler turned to the wooden boat artisans at

Two large cockpit sofas make an ideal place to enjoy a refreshing Cuba libre when happy hour hits. Wheeler is especially proud of the way the
helm station keeps modern technology hidden away to retain the traditional look and feel of Hemingway’s original. To fire up the twin diesels, you need to slide open a small varnished mahogany panel; to program the autopilot and speed and depth read-outs, you lift another mirror-varnished panel. Another highlight is Legend’s classic stainless-steel steering wheel: Brooklin Boat Yard tracked down a 1934 original, digitized it, and had a new one cast.
Down below, the layout has changed dramatically from Hemingway’s bunk beds and spartan feel; comfort wasn’t too high on Papa’s priority list. Forward, there’s now a comfy master cabin with a double bed and a convertible dinette in the saloon, along with two custom leather chairs and a well equipped galley and head. “It really has been an exciting and rewarding project to recreate what is often described as the most famous fishing boat in the world,” says Wheeler. “My next dream, naturally, would be to take her down to Cuba and relive a few of Hemingway’s adventures.” «

When it opened in 2007, The Ravenous Pig (theravenouspig.com) heralded the city’s arrival as a serious food destination. Nearly 15 years later, owners James and Julie Petrakis continue to grow their gastropub into one of the best restaurants in the South. The addition of former Dovecote chef-owner Clay Miller as chef de cuisine only solidified the Pig’s rep as the place to indulge in elevated pub fare with a Southern twang (mulard duck ham, lamb saddle, or pork burnt ends, anyone?). On tap are small-batch craft beers produced by the Ravenous Pig Brewing Co., which is situated next to the restaurant’s newly constructed family-friendly beer garden.
The stunning artistry of the seasonally driven dishes is worth the price tag ($150 for a 15-course omakase and $185 for the 20-course), be it lobster nigiri with brown butter miso or a decadent ending of “mat-cho” featuring a delicate masterwork of matcha, chocolate, and burnt marshmallow. There are only 8 seats in this cozy Winter Park locale, so book early and prepare your taste buds for a memorable adventure.

Kevin and Maria Ruiz have garnered a loyal, almost obsessive following for presenting upmarket takes on classic Peruvian fare at their pop-ups. When they finally opened Papa Llama (papallamaorl.com), a brick-and-mortar operation in Orlando’s Curry Ford West district, they were greeted with a buzz. The bright, modern space reflects the dishes Kevin fires up in the sizeable kitchen, like chicharrón de calamar with herbaceous wakatay salsa, and a snappy arroz chicken chaufa with smoky ají panca, Peruvian choclo, and bok choy. The focused selection of natural wines purposefully veers into the esoteric.
WHERE TO STAY In the heart of downtown Winter Park sits The Alfond Inn at Rollins College (thealfondinn.com). This Spanish-Mediterranean Revival-style gem recalls the look of the historic bungalows it’s nestled amongst. Staying at The Alfond is more than a getaway—proceeds from the hotel support Rollins College’s premier scholarship fund, offering up to 10 full scholarships each year to first-year students. And don’t overlook the hotel’s prestigious art collection donated by Rollins College alumni Barbara and Ted Alfond. Designed as an imaginative extension of the college’s Cornell Fine Arts Museum, more than 300 pieces by established and emerging artists are displayed on rotation throughout the hotel’s public areas.

Deli Desires (delidesires. com) opened this year to major buzz—hardly surprising given the credentials owners Hannah Jaffe and Nathan Sloan bring to their Colonialtown breakfast-and-lunch joint. Jaffe cooked alongside L.A. notables Jessica Koslow and Michael Voltaggio, while Sloan worked under James Beard Award winners Jon Shook and Vinny Dotolo at seafood joint Son of a Gun. But it’s the bialy—the nonboiled, malt-free counterpart to the bagel with a caramelized onion, or smoked jalapeño and muenster, center— that the pair spotlight at their hip little takeaway joint. Get one filled with gravlax, labneh, or even scrapple (this is not a kosher deli), or opt for the corned beef “big mac” served on a Martin’s sesame seed bun. It’s one of the hottest sandwiches in town.

See the 1991 film City Slickers before visiting this state park, an 1876 cow camp where cowboy heritage remains alive and kicking. Perhaps the most entertaining aspect is the living history reenactment each weekend, which transports visitors to a time when a “cow hunter’s” life was spent herding cattle between Florida’s cow camps and downtime was spent on hard ground beside a campfire. Payment in Spanish gold doubloons was a decent enough incentive, say the actor cowboys, but probably few of us city slickers would last a day. Boat, canoe, fish, stargaze, or hike more than 13 miles of verdant pathways–keep your eyes peeled for white-tailed deer and bald eagles–or venture out on horseback through well groomed trails. Hundreds of manatees call this large St. Johns River spring home, and although swimming with them isn’t permitted, it’s nearly impossible not to encounter one of these gentle sea cows: the cheeky fellas take great delight in swimming alongside humans and partaking in aquatic adventure. Snorkel through crystal-clear waters, float with an inner tube (rentals available) down Blue Spring boil’s natural lazy river, or launch a kayak for a zen-like wander through lush woodland areas surrounding the spring. Possibly as famous as the manatees are the cavern and cave diving opportunities–restricted to certified cave divers–and scuba diving, which is allowed only with a buddy. Visitors say the hidden and mysterious underwater holes lead to otherworldly places and swear it is one of the best places in Florida to scuba dive. Don’t miss a visit to the Thursby house, the well preserved nineteenth-century home of European settler Louis Thursby, who hoped to strike it rich with an orange grove and a steamship pier. The largest uninhabited piece of land between Key Largo and Big Pine Key engulfs visitors in the pristine beauty of wild, undeveloped mangrove swamps, rockland hammocks, and seagrass beds. Get wild on a Saturday night and join the local astronomy group for some memorable stargazing or strike out on your own and search for wildlife within the 1,000-acre sanctuary, which is a centuriesold migration route. Visitors can also kiteboard or paddleboard on the Atlantic, kayak through Curry Hammock’s picturesque waterways, hike through miles of nature trails, and fish for tarpon, snook, redfish, and mangrove snapper on the shoreline. A picturesque drive south toward Key West will yield what is arguably one of Florida’s most famous snorkel spots—John Pennekamp Coral Reef State Park in Key Largo. Adjacent to the Florida Keys National Marine Sanctuary and the country’s first undersea park, it’s considered an underwater Grand Canyon, offering a rare glimpse into colorful coral formations. The outside world is left behind when exploring delicate ecosystems via glass-bottom boat, kayak, canoe, or scuba diving here. Thick mangroves provide shelter for inexperienced snorkelers, and these quiet respites sometimes yield close encounters with curious manatees, sea turtles, and dolphins. A short hike through the park exposes an ancient artesian well hidden within mangrove swamps, while walking trails through tropical hammocks lead to picnicking, bird-watching, and fishing spots. Thirty-nine RV sites are available, all dog-friendly with electric hookups and a long list of amenities, from barbecue grills to interpretive programs and handicap accessibility. One of the country’s most famous national parks is at Florida’s southern end, where a million and a half acres of swamps, subtropical jungles, and sawgrass marshes beckon visitors to commune with nature. Fourteen endangered species reside here, meaning you’re immersed in untamed beauty. Yet the adventures are easily and comfortably navigable with plenty of modern conveniences. Choose relaxation or adventure with hiking and biking trails, kayak and canoe rentals, exotic wildlife and bird-watching perches, and world-class fishing. Several campgrounds abound, yet the Flamingo Campground is quickly rising to visitor “favorite” status for its seemingly infinite Florida Bay views, refreshing year-round breeze, and camping options. TIBET’S TRADITION KEEPERS LOCAL PHOTOGRAPHER JUAN LAMARCA ILLUMINATES A CULTURE IN EXILE WITH HIS “PORTRAITS OF TIBETANS” SERIES
In February 2020, just before the world went into lockdown due to the coronavirus pandemic, South Florida–based photographer Juan Lamarca traveled to India’s West Bengal state to document a people and culture in exile. He spent nearly three weeks at the Tibetan Refugee Self-Help Center in Darjeeling, creating portraits of Tibetans—young and old— who are striving to preserve their way of life and their Buddhist religion. This center was founded in October 1959 after the Dalai Lama was

forced to escape Tibet amid deadly tension with the Chinese government. Today roughly 6 million Tibetans remain in Tibet, while more than 100,000 are in exile. Those living and working at the Darjeeling Self-Help Center represent multiple generations, and many have never stepped foot inside Tibet. “They say they are Tibetans, they speak Tibetan, and they culturally identify with Tibet, but they’ve never been there,” explains Lamarca. Lamarca, known locally for his work with the polo and equestrian community in Wellington, has long been drawn to the immigrant and refugee experience. Originally from Argentina, he relocated to the United States 12 years ago. “At some point I realized that all I had left since I left my country was the first film camera I bought and a pair of shoes my grandmother gave me,” he says. “My idea initially was to do portraits of people who are forced to leave their country and what it is they’re holding onto and the emotional value [behind it].” After meeting someone from West Bengal and hearing more about Tibetans living in exile, Lamarca connected with the plight of these refugees and felt compelled to travel halfway around the world to photograph them. During his visit,

Lamarca was able to commune with this group—which he describes as immensely kind—as they went about their daily lives and celebrated the Tibetan New Year. He watched craftsmen produce traditional items such as carpets, wood-carved furnishings, and prayer wheels. He photographed elders, teens, and children in their traditional New Year garb. He saw kids playing between their studies at the Central School for Tibetans, where they learn about their vibrant cultural heritage. Throughout it all, Lamarca came away with a deep reverence for their open, loving ways and their peaceful happiness—and he hopes viewers feel this in his images. “They’re welcoming and kind, but they also impose respect,” he says. “Conditions of life are very low in terms of monetary help or any kind of comfort, but then spiritually, they are so rich.” —Mary Murray

Sustainability, clean eating, and creativity might seem hard to balance, but Fern Street Wine Bar & Kitchen makes it look easy—and taste divine. Since opening in downtown West Palm Beach in 2019, Fern Street has fine-tuned its approach, focusing on farm-to-table dishes that are non-GMO, certified humane, and free of nitrates and antibiotics. Chef de cuisine Antonio “Eddy” Zapil and co-owner Nick Scalisi collaborate on the menu weekly in order to showcase the freshest ingredients available. For his part, Zapil aims to interpret those products through the prism of his Guatemalan heritage, as seen in creations such as Simply Shrimp, which his father used to cook for him. “It’s so simple, made with just Oishii shrimp—the best and most sustainable you can buy—celery, garlic, pink salt, and fresh lime juice, but it bursts with flavor and reminds me of my childhood,” he says. While Fern Street’s offerings are constantly changing, diners can expect a mix of charcuterie, salads, pastas, prime meats, and sustainable seafood, all complemented by an extensive wine list highlighting small producers. From the “Market” section of the menu, opt for the vegan maitake mushroom pasta or the tempura broccolini. The “Sea” and “Pasture” categories feature many items cooked in a wood-fire oven imported from Modena, Italy. If available, try the vintage (i.e., five-year-old) grass-fed hanger steak with chimichurri and arborio rice.

In addition to its dinner program, Fern Street recently introduced Lunch Break, a casual Latin street food concept hosted in a food truck in the restaurant’s outdoor mural garden. “My grandmother used to tell me stories about the elegant parties she attended years ago,” says Ann DesRuisseaux, owner of Le Bar in Palm Beach. “I dreamed about it for years, and I wanted a place where everyone would feel comfortable enough to dance or sing along at the piano.” Open since early December, Le Bar is a bar à vin in the European tradition. The space is framed by Baccarat chandeliers, gilt-edged mirrors, vintage pictures of island life, a long mahogany bar—and, of course, a white baby grand. Decor is just a small part of the equation, even though DesRuisseaux decorated the former bank building herself. There’s voluptuous food (deviled eggs topped with caviar, black truffle flatbread) and 45 wines by the glass, along with a list of bottles not readily available elsewhere and a resident sommelier. If you’re not an oenophile, you can indulge in one of the innovative craft cocktails developed by a barman who used to be a biologist in Argentina. Don’t miss the Invisible Margarita and the Green Goddess. DesRuisseaux, an attorney, jokes that “all lawyers who pass the bar eventually feel they need to own a bar.” For her, the nostalgia of the setting is mixed with a thread of practicality. “As I got older, I wanted to eat lighter,” she admits. “I didn’t necessarily want a three- or fourcourse meal. An evening of small plates shared with friends was perfect.” Le Bar is licensed for retail sales as well as consumption on the premises, and DesRuisseaux is developing new ways to serve clientele. Customers can sit at the bar and peruse the wine list while they grab a glass of Cristal 2007 or Dom Pérignon 2009, preserved by the Perlage system. When they’ve made their selections, the bottles can be delivered to their home. “It’s a very different experience than walking through a liquor store with a cart,” DesRuisseaux notes. Pimm’s Cup Ingredients (serves 1) 2 oz. Pimm’s No. 1 1/2 oz. lemon juice 1/4 oz. simple syrup Lemon-lime soda to top In a Collins glass, add the Pimm’s, lemon juice, and simple syrup and stir. Add ice. Top with the lemon-lime soda and stir gently to mix. Try adding a few dashes of bitters or substituting with ginger beer to add a little kick and complexity to the mix. Pimm’s Pop Ingredients (makes 10 pops) 1 cup lemon juice 1 cup ginger tea, brewed and cooled 1 cup hibiscus and pink peppercorn syrup (right) 1 1/4 cup Pimm’s No. 1 1 cucumber, thinly sliced 5 strawberries, hulled and quartered Fresh mint leaves 98
Combine the lemon juice, tea, syrup, and Pimm’s. Add a mixture of sliced cucumbers, strawberries, and fresh mint into each ice pop mold and top with the Pimm’s mixture. Insert wooden sticks into the molds and freeze for at least 6 hours or overnight. Hibiscus and Pink Peppercorn Syrup (makes 2 cups) 1 cup water 1 cup coconut sugar 1/4 cup hibiscus tea or dried flowers 4 tsp. pink peppercorn Combine the ingredients in a medium pot and bring to a boil. Once the sugar has dissolved, remove from the heat. Let steep for 20 minutes, until the mixture has cooled to room temperature. Strain into a sealable glass container. The syrup can be refrigerated for up to 2 weeks.

Welcome to July, the month in which we celebrate freedom, independence, our country, and our culture. Whether you’re commemorating with a day at the beach, a backyard barbecue, or a park picnic, you’ll want to toast the season with this cooling “poptail.” The Pimm’s Cup, typically made with cucumbers, oranges, and/or strawberries, is a quintessential summer libation: easy drinking, low-proof, and incredibly refreshing. It’s also ripe for variations. Try adding seasonal fruit, creating a large batch for entertaining, or freezing them for a refreshing treat. Here, I’ve outlined the recipe for the original Pimm’s Cup, followed by the poptail version from my new cocktail book LowProof Happy Hour (Countryman Press, 2021). With the traditional base of Pimm’s, lemon, and ginger flavors, this frozen sip gets an additional kick from the unexpected crimson peppercorn syrup. or wine lovers yearning to get back on the vineyard trail this summer, there’s bad news and good news: Many European countries may not be accepting visitors, but emerging wine regions in our own country still await discovery. If you’re looking to explore beyond the usual suspects in California, Oregon, and Washington State, consider these lesser-known areas: Finger Lakes, New York State: The pioneer of the region was Dr. Konstantin Frank, who emigrated from the Soviet Union in the early 1950s and found the climate to be perfect for Riesling, Gewürztraminer, and Pinot Gris. Today there are over 130 wineries in the area concentrated around Lake Ontario as well as Cayuga, Seneca, Keuka, and Canandaigua Lakes. A good place to start is Dr. Frank’s winery in Hammondsport, which remains family-run. Other top destinations include the Hermann J. Texas Hill Country: Ranked as the fifth-largest wine-producing state, Texas has attracted the attention of serious oenophiles in recent years. The Texas Hill Country AVA has nearly 100 wineries clustered around Fredericksburg. Cabernet and Tempranillo are popular, along with hybrids such as Black Spanish and Blanc du Bois. Must-see wineries include Becker Vineyards, a pioneer in the region since 1995 and the first producer to cultivate Viognier; Fall Creek Vineyard, where Susan and Ed Auler have been producing Bordeaux and Rhône-style blends since 1975; Fredericksburg Winery, where the Switzer family makes everything from white and red table wine to port and sherry; and mavericks such as Spicewood, Crowson, and Bending Branch. Shenandoah Vineyards near Edinburg, the state’s second-oldest winery, is a good place to start; nearby destinations include Cave Ridge Vineyard, Wolf Gap, and the Winery at Kindred Pointe. Try to plan your visit for the fall, when flaming leaves highlight Skyline Drive. Cosmopolitan Designer Lorraine Rogers Bolton’s trip to the Milan Furniture Fair, Salone del Mobile, provided the inspiration for many of the design concepts in this Palm Beach Gardens full renovation. To breathe life into the client’s request for an alluring “London meets Hollywood” vibe, Bolton’s team at Rogers Design Group delivered innovative design choices and fine furnishings to convert the Mediterranean home into a gorgeous transitional/contemporary abode. The lofty ceilings of the immense dining room meant Bolton had to consider how each of the architectural details and furniture pieces she chose would impact proportion and play off one another. Side panel drapes run the length of the tall windows, while expansive mirror panels framed by backlit charcoal wood provide an unexpected moment of glam; Bolton also incorporated a 25-foot textural cream stone feature wall around the fireplace, which is framed in a pewter mantlepiece. The tour de force, however, hangs above the rectangular charcoal wood dining table. “The jewel of this space is the Ochre crystal fixture that not only helped us bring an intimate height to the space, but also divided the dining area from the living area in this room of generous proportions,” explains Bolton. “This elegant fixture features over 50 handmade crystal droplets of light. It’s a magnificent detail that brings an additional bit of elegance to the space.” (rogersdesign.com)

Eating for ENERGY When we feel an energy crash, what’s really going on? When you feel a drop in energy, that’s your blood sugar going down. Many people will eat healthy or virtuously at the beginning of the day, but because they haven’t fueled their body adequately, they can feel tired or lethargic—otherwise known as the mid-afternoon slump—later in the day. Which foods surprisingly don’t deliver an energy boost? I often see individuals eating a protein bar before or during workouts; protein is great for building muscle and tissue repair, but it’s a lousy energy source. Which foods do provide fuel? Carbohydrates provide good energy; they’re our body’s primary source of fuel. For long-lasting energy, it’s important to have carbohydrates that have fiber, preferably at least 3 grams per serving. Your body takes a long time to break down the fiber, which can thus supply a longer energy source. Good energy foods include whole grains and fruits; fruit juices or dried fruits have more sugars and can be used for a quick energy boost.

Ingredients 1 1/2 cups rolled oats 1/2 cup vanilla whey protein powder (or vegan protein) 1/2 tsp. cinnamon 1 tbsp. chia seeds 1 tbsp. flax seeds 1/2 cup smooth natural almond butter (or any nut butter) 1 tbsp. raw honey 1 tsp. vanilla extract 1/3 cup chocolate chips, raisins, or preferred add-in 2-4 tbsp. liquid (unsweetened almond, coconut, or soy milk) 1 cup shredded unsweetened coconut Instructions Add oats, protein powder, cinnamon, chia, and flax seeds to a large bowl. Add almond butter, honey, and vanilla extract. Stir to combine. Add chocolate chips; mixture should be slightly sticky but still crumbly. Slowly add milk, using hands to combine until it forms a sticky ball. If mixture is too dry, add more milk, but not so much that it won’t hold shape. Use hands to roll into balls, then coat in coconut flakes. Place on parchment paper, then set in fridge for at least 30 minutes; store in fridge until ready to eat.

Summer concerts are making a comeback. The iTHINK Financial Amphitheatre in West Palm Beach is returning from its COVID-induced hiatus to host headliners all summer long—most of whom are reclaiming the stage after postponing last year’s tours. Country crooner Brad Paisley will cruise to the 20,000-seat open-air venue as the fifth stop of his 2021 Tour on July 10; the beloved Dave Matthews Band will perform hits from their three-decadestrong discography July 30-31; Kings of Leon will kick off their cross-country tour with the Cold War Kids on August 3; Alanis Morissette and Lady A are set to close out the venue’s stacked summer lineup on August 18 and 21, respectively, before Thomas Rhett and Maroon 5 hit the stage in September. STARLIT SHAKESPEARE
After navigating the virtual frontier, the Palm Beach Shakespeare Festival will return to stage two of the Bard’s beloved comedies for audiences to revel in under the stars. In partnership with Palm Beach County Parks and Recreation, Shakespeare by the Sea’s production of A Midsummer Night’s Dream will take place July 8-11 and 15-18 at the Seabreeze Amphitheater in Jupiter’s Carlin Park. The merriment will continue when the festival partners with the Town of Royal Palm Beach Parks and Recreation to host Shakespeare Under the Palms’ inaugural staging of Twelfth Night, August 1922 and 26-29 at the Commons Park Amphitheater, an apropos setting for a tale about shipwrecked siblings finding their way back to each other. Bardolators are encouraged to bring their own beach chairs, blankets, and picnic setups (or moola for food trucks) to best enjoy the free evening performances. (pbshakespeare.org)

Art on the MOVE
The Armory Art Center has already had a busy summer bringing art to the people, but it’s also mixing things up by bringing people to the art. The West Palm Beach venue will host its final Armory Art on the Go with van Gogh “field trip” down to the “Beyond van Gogh” exhibit at Miami’s Ice Palace Studios on July 7. Day trippers will be shuttled down to the Magic City via luxury coach, where immersion into Vincent van Gogh’s best work awaits. Guests can wander freely among more than 300 of the Post-Impressionist’s masterpieces, including The Starry Night, Sunflowers, and Café Terrace at Night, all free from the confines of their frames. Tickets for the trip cost $99. For aficionados seeking art closer to home, the Armory’s “Art of the Phoenix” exhibition is showcasing inspired student works in the East Gallery through July 23. The center’s Art of the Phoenix program was designed in partnership with the Human Trafficking Coalition of the Palm Beaches to offer a safe space for individuals healing from trauma. For those feeling a sense of summer nostalgia, stop by August 6-14 to check out “Goodbye Summer,” the Armory’s ode to the fleeting days of the season.
