Q&A Meet Me at BUCCAN

Clay Conley’s innovative small plate restaurant, Buccan, celebrates its tenth anniversary this year. Long before he made his way to South Florida, Conley grew up on a farm in Maine and started his first restaurant job as a dishwasher at age 13. He worked in Boston with Todd English, eventually becoming the culinary director for 18 of English’s restaurants around the world. He gained fame as the executive chef at Miami’s Mandarin Oriental before moving to Palm Beach County and opening Buccan in 2011. Last year, at the height of the pandemic, Conley started the nonprofit Buccan Provisions to help feed people struggling with economic hardship. PBI recently caught up with Conley to discuss Buccan’s past, present, and future. (buccanpalmbeach.com) —Mark Spivak

Clockwise from top right: Fusilli with Maine lobster and uni butter; Clay Conley; steak tartare; interior of Buccan; Buccan/ Ember Group partners Piper Quinn, Clay Conley, and Sam Slattery: tuna crisp. PBI: What was the inspiration for your small plate concept?

Conley: It was always what I wanted to do—I had been thinking about it since my days in Boston with Todd English. My dream was to have a place that was hyper-focused on ingredients but less formal. I was probably naïve at the time, which helped a lot.

Your menu at Buccan changes frequently. Where does the inspiration come from?

I read a lot of cookbooks and look at a lot of Instagram pages. Certain ingredients come around at certain times of the year, and we like to tweak the flavors. Spring is my favorite time to cook, since you have the best produce from Florida and around the country.

How has Palm Beach changed in the past decade?

The quality level in restaurants is higher. There’s been an emergence of more casual dining, which means that there’s now something for everyone. Sometimes you want to go out for a high-end experience, and sometimes you just want a burger. It should be memorable either way.

NICK MELE LUCIEN CAPEHART

As you look back on the last 10 years, what has been the most significant part of it all for you?

Watching my staff grow up and start to run their own businesses. Speaking from the back of the house, it feels good to be part of helping the next generation of chefs emerge.

EMBER GROUP

What does the future hold?

We’re hoping to open a place in Miami next year, but I have no plans beyond that. I don’t want to open a slew of restaurants—I’m happy with what I have. Someday, I’d like to get back to life on a farm.

FRENCH FETE

When New Yorkers migrated to Florida for this year’s winter season, one of their most popular restaurants came with them. Le Bilboquet, the elegant French bistro on Manhattan’s Upper East Side, opened in Palm Beach in February with the goal of bringing a new level of excitement to island dining. COURTESY LE BILBIQUET

“When we first started looking in 2019, we felt the restaurant scene was missing some energy,” says Dobro- and Le Bilbo Royal, a seafood tower with oysters, clams, shrimp, Alaskan mira (Dobi) Trendafilova, managing partner for the group, which operates king crab, and whole lobster. Almost exclusively French, the wine list locations in Sag Harbor, Atlanta, Denver, and Dallas. “We think of Le is heavy on the classics of Bordeaux, Burgundy, and Champagne, and Bilboquet as something very vibrant, like a house party where everyone there’s an innovative selection of craft cocktails to begin a meal. knows each other.” Owner Philippe Delgrange, who supervises the service at Bilbo (as

Designer David Lucido drew on Art Deco themes for the dining room New Yorkers refer to it), arrived in Palm Beach to set the tone for the and courtyard, situated in Via Encantada off Worth Avenue. Open doors opening. Reservations are only accepted on the restaurant’s website, allow the two spaces to blend together in good weather. The courtyard is rather than by phone or third-party platforms. Prospective diners should typically full by noon, resonating with the sound of popping Champagne take notice of the dress code: Shorts and flip-flops aren’t permitted at this corks. On any given day, the most popular dishes are the Cajun chicken house party, particularly in the evening. (lebilboquetpb.com) —M.S.

From Lebanon, With LOVE

Lebanese cuisine is grounded in the health benefits of the Mediterranean diet and based on the concept of sharing small plates, or meze. Nicolas Kurban is on a mission to bring that authentic cuisine to Delray Beach’s Atlantic Avenue with Amar Restaurant. “I wanted to offer something that didn’t exist here,” he says. “To me, a restaurant is not just about food but also service, ambience, design, and music. It’s a total experience.”

Nearly half of Amar’s menu is devoted to vegan and vegetarian dishes, based on recipes from Kurban’s father’s restaurants in Lebanon. Must-try items include classic meze such as hummus, baba ghanouj, and tabouleh; an entrée of el mehchi (eggplant stuffed with spinach, onions, and chickpeas, baked with tomato and red pepper sauce); and homemade desserts like kanafeh (a semolina and melted cheese tart with orange blossom and pistachios). A sampler option is available, and all dishes are accompanied with freshly baked pita bread from the wood-burning oven.

The wine list is sprinkled with selections from Lebanese properties such as Château Musar, Château Kefraya, Massaya, and Château Ksara. “Lebanon has some of the oldest and greatest wine estates in the world,” says Kurban. “We wanted to give customers the opportunity to experience them with our food.” (amardelray.com) —M.S.

SIP with PBI AT FIRST BLOOM

A LOW-PROOF GARDEN MOJITO

Steep the tea for 3 minutes in boiling water. Discard the tea bag and let cool to room temperature. Add all of the ingredients except the sparkling water, mint, and basil into a mixing tin with ice. Shake well and strain into a highball with fresh ice. Top with the sparkling water and garnish with mint and basil leaves.

As spring continues its bloom this month, we celebrate the season’s bounty with a refreshing riff on the mojito. This low-alcohol version—which can also be found in my latest book, Low-Proof Happy Hour—splits the difference between the traditional rum with a dry vermouth, plus a medley of jasmine and honey, accented with mint and basil. It all comes together to form a delightful bouquet that will send your senses into a spring awakening of their own. —Jules Aron Ingredients (serves 1) 1 jasmine tea bag 1 oz. dry vermouth 3/4 oz. silver rum 1 oz. lime juice 1/2 oz. honey syrup 3 oz. sparkling water 8 mint leaves for garnish 4 basil leaves for garnish
