METHOD • Preheat oven to 400° F. Prepare the potatoes by washing with skins on. Cut into thick, long strips. • Put the potatoes in a bowl and coat them with olive oil and sea salt. • Place the cut potatoes on a baking sheet and bake for 30 minutes. Flip them over halfway through. • After removing the fries from the oven, drizzle with truffle oil, sprinkle with parmesan cheese, and add chopped green onions or chives as garnish.
