Pistachi-Crusted TOFU SQUARES By TATIANA PLATT

INGREDIENTS

2 14-OZ. PACKAGES OF EXTRA-FIRM TOFU 1 CUP GLUTEN-FREE PANKO BREADCRUMBS 1 CUP SHELLED PISTACHIOS 1/2 TSP. SALT 1/2 TSP. PEPPER 2 EGGS 3 TBSP. TAMARI SOY SAUCE 3 TBSP. MAPLE SYRUP 2 TBSP. MAYONNAISE

METHOD • Preheat oven to 400° F. Drain tofu and press between two towels. Cut into 1-inch cubes. Marinate in 3 tablespoons of Tamari for 15 minutes. • Combine the eggs, maple syrup, 1 tablespoon of Tamari, and mayonnaise in a bowl. • In a food processor, grind the pistachios. Combine the ground pistachios, panko breadcrumbs, and salt and pepper in another bowl. • Dip each cube of tofu into the maple syrup sauce, and then into the bowl with the breadcrumbs. Coat evenly on all sides. • Line up the tofu on a baking sheet and bake for 30 minutes. Flip each piece over halfway through.
