DIY Daddy: How to Can Fresh Fruits and Vegetables by Mikey Rox

If you’re lucky enough to have a personal garden, you may have more fruits and vegetables that you can eat. While it’s always nice to share your abundance so it doesn’t rot – that means don’t be stingy; offer your excess to friends, family and neighbors – you can also keep more for yourself to last you through the winter by preserving the produce via canning. The canning process isn’t exactly simple, but the benefits are worth the time and effort. In addition to Mason jars, you’ll also need a pressure canner, a specifically designed metal kettle with a lockable lid used for heat processing low-acid food. Once you have the necessary equipment, use these instructions to preserve your fresh produce for storage.

Once all the jars are filled, gently place them in the pressure canner. Lock the canner lid, but make sure the vent is open so you know when it starts to steam. Once a steady flow of steam is pouring from the vent, close it and allow the jars to sit in the simmering water for the appropriate amount of time, which you will find on the canner’s instructions. Turn off the burner and start cleaning up. You want to let the canner cool completely. When the pressure gauge is at zero again, remove the jars from the canner. Set the jars upright in an area where they can sit for about a day to ensure that the lids properly seal to the jars.

Sanitize your canning or Mason jars by gently placing the jars, lids and sealing bands in a large pot of boiling water Place the jars in your pantry or fridge and enjoy freshly for five minutes. After five minutes, turn off the heat but preserved fruits and veggies whenever you’d like. leave the jars in the water until you’re ready to use them. Add three inches of water to your pressure canner and heat until it simmers. Once the water is simmering, cover the pressure canner until your jars are filled. Get your fruits and veggies ready. Almost any fruit and vegetables can be canned, but you should use the freshest, ripest bunch of your crop. Cut the produce into manageable pieces – preferably bite-sized – so they’re ready to serve right from the jar later. Wash your produce. If you’re using the produce in a preserves recipe, make the ingredients for the preserve at this time. With a pair of tongs, remove a jar from the hot pot of water. Ladle your fruit or veggies into the hot jars. If you’re making preserves, use a funnel to ensure all the liquid gets inside cleanly. Leave a quarter- to a half-inch of space at the top of the jar. Remove the lids and bands from the pot of hot water and dry them off with a clean towel. Place the lid on the jar then add the band, turning it until it’s tight. Continue this step until all jars are filled.

As we reminisce on the best of 2021, I’m proud to say that we ended on a HIGH Note for both Meak Productions and Peach Atlanta Magazine. Last year marked the 25th Anniversary of Atlanta Black Gay Pride (originated by In The Life Atlanta), and the 10th Anniversary of the Black Pride Press Conference series (created by Meak Pro under the brand, History of Black Gay Atlanta). For those that know Atlanta’s LGBT Media history, whenever the Annual Black Gay Pride celebration happens, there’s only 1 dedicated story and cover for each of the publications. Through our partnership with Peach, we made HISTORY as the first LGBTQ Media outlets to come together, partner and produce a 3 Issue Black Pride Series in honor of 25 years of Atlanta’s Black Gay History & Movement. Issue 1 made history by featuring the 1st Black Lesbian on the cover, Angela Hutchins (1st Lady of History of Black Gay America) and featured highlights from our 10th anniversary Black Pride Press Conference, which awarded our 1st 3 Hall of Justice & Fame Inductees: In The Life Atlanta/Atlanta Black Pride, Inc., Traxx Atlanta (ATL’s 1st Club Promoters), and the historic Marquette Lounge (ATL’s 1st Black Gay Nightclub). Issue 2 paid a special tribute to the late Artivist and Mr. Fall Quarter 2016-17, Antron-Reshaud, who made his transition November 12, 2017. The cover photo used was the last photo taken before his passing. Also, for the 1st time, EVERY club promoter & event producer old & new had a detailed write-up and/or event ad about their pride related events. This was a milestone because many of Atlanta’s promoters and producers’ have never been published before.


Issue 3 was the 1st Black Pride Recap of the publication, which manifested by happenstance due to the passing of Atlanta Drag Legend, Tina Devore (who was also the Cover feature), national black gay pioneer, Rev. Carl Bean (Founder of the Unity Fellowship Church Movement), and actor/performing artist and Str8 Ally, Micheal K. Williams, all who passed around the same time in September of 2021. The recap of Black Pride was the 1st that was ever done for an Atlanta LGBT Publication. Finally, we ended 2021 on a HIGH Note with Tomas’ Cosme’, our Mr. Fall Quarter 2020-22, making history for the Agency by gracing the cover of Peach ATL for two weeks, and our Fall/Holidays cover which featured a Holiday COVER FEATURES: Group shot of the CEO, Angela Hutchins and 1. 1999 in Lithia Springs, Georgia, is a American Multi-Grammy Award winning Hip-Hop/Pop Artist and Songwriter. He rose to prominence with the release of his country rap single “Old Town Road” which first achieved viral popularity in early 2019 before climbing music charts internationally and becoming diamond certified by November of that same year. His mother called him Montero in honor of the Mitsubishi Montero, a car she liked. After Lil Nas’ parents separated when he was 6, he and his siblings went to live with their mother and great-grandmother in Bankhead Courts, an Atlanta public-housing community, that was notoriously known for drugs and violence. About four years later, a custody battle resulted in Lil Nas and his older brother moving to the Atlanta suburbs to live with their father and stepmother.

Lil Nas kept his head down in high school. His main focus was online life as a superfan of Nicki Minaj. On Twitter as @nasmaraj, he interacted with other Minaj admirers — the Barbz — and learned how to get attention on social media. He later enrolled in the University of West Georgia to study computer science, however he discovered that college was not for him. He started writing songs and found a love for creating music. Inspired by his newfound passion for music, Lil Nas decided to drop out of school, to his father’s dismay. After leaving college, Lil Nas lived with his sister while sharing his music online. He saw the popularity of country-trap videos, which mixed country music and a Southern style of hip-hop. With a beat purchased online for $30, he created his own country-trap song, titled “Old Town Road.” He posted the tune to SoundCloud in December 2018. His social media abilities helped the tune go viral on TikTok and spread on other sites.


In March 2019, “Old Town Road” made it onto three Billboard charts: the Hot 100, Hot R&B/ Hip-Hop Songs and Hot Country Songs. Then it was removed from the country chart. Billboard’s official reasoning was that Nas’s song did “not embrace enough elements of today’s country music,” but many wondered if his being a Black man had influenced the decision, though Billboard said race was not a factor. Amid this controversy, the song reached No. 1 on Billboard’s Hot 100. On April 5, 2019, he released a remix of “Old Town Road” that he made with country music icon Billy Ray Cyrus, who Lil Nas knew from his role on Hannah Montana. With help from remixes by Cyrus and others, “Old Town Road” set a record for staying atop the Hot 100 chart for 19 weeks. After the success of “Old Town Road,” Lil Nas signed with Columbia Records in March 2019. His next songs “Panini” and “Rodeo” received attention, but nothing he released reached the heights of “Old Town Road.” In 2020, he began working on his first full length album, Montero, during the initial COVID-19 lockdown. The single “Montero (Call Me By Your Name)” came out in March 2021. The video for “Montero (Call Me By Your Name)” drew on visuals linked to the Christian faith and the idea that being gay meant being denied salvation. The video, along with a tie-in release of “Satan Shoes,” drew much criticism online and in the press. His mastery of social media allowed him to swat back at critics while bringing attention to his work. “Montero (Call Me By Your Name)” debuted at No. 1 on the Billboard Hot 100. Lil Nas X was the most-nominated male artist at the 62nd Annual Grammy Awards, winning awards for Best Music Video and Best Pop Duo/ Group Performance. “Old Town Road” earned him two MTV Video Music Awards including Song of the Year, and the American Music Award for Favorite Rap/Hip Hop Song. Lil Nas X is also the first openly LGBT Black artist to win a Country Music Association award.

André Leon Talley is an American fashion journalist. André Leon Talley is best known for his work as the American editor-at-large of Vogue magazine. Talley has also served as international editor of the Russian fashion magazine Numéro. Talley is the son of William C. Talley, a taxi driver, and Alma Ruth Davis, and was born on October 16, 1949 in Durham, North Carolina. However, he was raised by his grandmother, Bennie Frances Davis, who worked as a domestic in the Durham area. Davis had a profound effect on him and he credits her with his uncommon flair for fashion. As a teen, he ventured to the library in the white section of town. It was there that he discovered Vogue and quickly became a devoted reader.

FASHION JOURNALIST, STYLIST, INDUSTRY LEGEND & PIONEER

Talley’s postsecondary experience began at North Carolina Central University and, later he was granted a scholarship to Brown University where he earned an M.A. in French Studies in 1973. He initially planned to teach French, but the fashion world beckoned him. He first worked as an assistant for Andy Warhol. In 1983, he began working as the editor-at-large for Vogue magazine and soon became the most notable African American in the world of designer fashion. A man of great stature and influence, Talley is also known to criticize high profile designers for excluding women of color on the runway and for championing a host of lesser-known fashion designers such as Rachel Roy and Jason Wu over the course of his career. In 1984, he co-authored MegaStar with Richard Bernstein, a publication containing portraits of famous celebrities. In April 2003, Talley penned his autobiography, A.L.T.: A Memoir and followed with A.L.T. 365+ an art monograph that features photographs and captions from one year of his life. Talley had a cameo appearance in the 2008 feature film, Sex and the City, as a Vogueexecutive and in 2009, he appears in the movie-documentary, Valentino: The Last Emperor, and in The September Issue, a 2009 behind-the-scenes documentary about the Sept. 2007 issue of Vogue.


He is a board trustee at the Savannah College of Art and Design and in 2008, he was awarded with an honorary doctorate. The André Leon Talley Gallery opened in the Museum of Art at the College in October 2011. During the same period the College established the André Leon Talley Lifetime Achievement Award, an annual award given to up and coming fashionistas. In January 2014, Talley became the Artistic Director for Zappos Couture, a web-based provider for couture apparel and other goods. Along with Zappos, he will assist with re-designing the website which will include a new look and original content. Talley wrote an autobiography entitled A.L.T.: A Memoir, published by Villard in 2003.According to Publishers Weekly, the message delivered by the book is that “Style transcends race, class, and time.” He also authored A.L.T. 365+, an art monograph designed by art director Sam Shahid, published in 2005. 365 features photos and captions from one year of Talley’s life. Talley co-wrote with Richard Bernstein the book MegaStar, with an introduction by Paloma Picasso, which includes portraits of famous stars. André Leon Talley is one of the fashion industry’s most influential stylesetters. Famous among fashionistas for his flamboyant, often custom-made outfits that accentuate his sixfeet, seveninch frame, as well as by his booming baritone, Talley is undoubtedly the most prominent African American in the high-stakes world of designer fashion, a world which revolves around the semi-annual runway shows in New York, Paris, London, and Milan. Talley has been recognized for his important work. In 2003, he earned the Eugenia Sheppard Award for Fashion Journalism, Council of Fashion Designers of America while in 2008, he was honoured the Honorary Doctor of Humanities, Savannah College of Art and Design.

Stephen Maglott (October 26, 1953, to August 13, 2016) was a social justice activist, civil servant, political operative, historian, and creator of the Ubuntu Biography Project. Born in Bangor, Maine, Maglott moved first to Boston, MA, when he was six, and shortly after that to New York. Maglott attended the Parson’s School of Design (The New School) while working for the United Nations as a researcher attached to the UN Commission on Apartheid. When costs mounted, and job offers began pouring in, he left school to work full time as a graphics designer and art director for several major agencies. He then moved to Los Angeles in the early 1980s at the request of his friend and music legend, the late Rick James. He toured with James and worked periodically with Teena Marie (The Queen of Ivory Soul) and Prince (The King of Rock & Soul), handling merchandise sales while they were on tour. Maglott eventually left California for Amsterdam, where he lived life as a bohemian expatriate artist for a few years before returning to the United States and the world of advertising and marketing. Nurtured in his formative years in both Harlem and Buffalo, he was drawn to civil rights and social justice struggles early on. Working with street prostitutes, the homeless, and migrant workers, Maglott helped create outreach programs and investigate instances where farmworkers were held against their will. He went undercover to expose the corrupt system, and the investigation resulted in a change in policies. Maglott accepted a position with the Men Of Color Health Awareness (MOCHA) Project, a Rochester, New York-based HIV/AIDS prevention and case management program committed to serving the needs of gay Black men. He helped open a Buffalo office and assisted in forming the New York State Black Gay Network (NYSBGN). The MOCHA Project made history in 2000 when it hosted the first statewide summit of Black gay service providers for NYSBGN. Maglott took a short break from the MOCHA Project to assist his friend, Byron W. Brown, with putting together a campaign for a New York Senate seat. When his MOCHA sabbatical ended, Stephen stayed on with Senator Brown as director of research. Maglott returned to New York City in 2005 when Brown launched a successful campaign to become Buffalo’s first Black mayor.


In an email from April 2009, Stephen Maglott first discussed creating what would become his “soul work.” The working title for his new biography collection of America’s Black LGBT+ pioneers and trailblazers was called ‘The Ubuntu Project’ (Zulu for ‘I am, because we are’); however, the details of how this will be used was not complete. By September of 2009, Maglott had created a logo for the Project and begun gathering biographical information on his honorees. Over the next several years, he fleshed out the Project, eventually creating a Facebook site for launch in 2014. Over the next two years, the Ubuntu Biography Project would grow to several hundred biographies, each lovingly and meticulously researched by Maglott. He would also reach out to as many of his subjects as possible, often striking up friendships and charming honorees with his flirtatious and infectious personality. In the final years of his life, Maglott’s eyesight began to deteriorate, and he worried about maintaining the Ubuntu Biography Project. He reached out to friends and community members to express his concerns and to ask for assistance with the Project if needed. On Saturday, August 13, 2016, at around 6:00 in the morning, Maglott’s final biography (of Karen Williams) was posted to Facebook. Scheduled to meet up with friend Aundaray Guess later that day, Maglott instead sent a text to Guess that he was en route to the hospital with chest pains. Stephen Maglott passed away hours later at the age of 62. On September 7, 2016, Maglott was remembered at a memorial service hosted by the Malcolm X and Dr. Betty Shabazz Memorial and Education Center. As of February 1, 2021, the historic National Black Justice Coalition has acquired The Ubuntu Biography Project. NBJC is the perfect organization to continue Stephen’s legacy under its new domain, beenhere.org.

Celebrating


Dear Peach, Last week was Valentine’s Day and it didn’t go as planned. My partner didn’t really pick up on the hints that I was trying to drop in order for them to really know what I wanted to do for the “holiday”, if you can call it that. I wouldn’t be asking other than it was our first together and don’t truly want to hold it against them but DAMN. What do I do?

First of all, Valentine’s Day is a hoax in my opinion. It is a made up holiday that is meant for people to invest in meaningless commercialized products and spend money they might not have. If you don't spend this amount then you don't love someone enough. That is BULL. Acknowledge that even though the evening or day didn’t go as planned, that they tried at least to make you feel special. You might’ve dropped hints and maybe they couldn’t afford what you were asking for… so they did the next best thing that they could do. If they didn’t even take the time to acknowledge you though… that is different. That might take a talking to in order to really understand what is going on. But, breathe. The holiday is not the end all be all for your relationship.
