WHAT’S THE STORY? Today’s open-plan kitchen-living rooms are perfectly suited to family life – just as they have always been Words: Judy Diamond

ver since our ancestors first huddled together around the fire in their cave, gnawing on a haunch of bison or woolly mammoth, the concept of sharing a meal at the end of the day has been part of the human story. Companionship, warmth, the appetising smell of something good wafting from the cooking pot: all are deep and ancient needs. It’s no wonder the kitchen is still the heart of the home today. The Neolithic inhabitants of Skara Brae on Orkney, which was built before Egypt’s pyramids, knew this: their cosy, single-room dwellings were essentially just kitchens, with stone larders, storage boxes and beds, all arranged around a central cooking pot over the fire. Most kitchen designers employ similar principles today, updating the fire with an island hob and swapping the bed for a bar-stool or two.
house, if you lived in a single-end), the kitchen wasn’t just a place to cook and eat, it was also a bedroom (many had a bed recess), a parlour and even the place you’d take your weekly bath. By the middle of the 20th century sophisticated houses boasted a separate kitchen, dining room and sitting room, keeping the chaos of dirty dishes and potato peelings away from the public spaces. Our grandparents wouldn’t have dreamt of allowing guests a glimpse of the main course before it was delivered, via the hostess trolley, to the dining table. Nowadays, whether we realise it or not, we are much more in tune with our caveman ancestors’ domestic arrangements by returning to open-plan living. Today’s hunter-gatherer brings in the shopping bags and rustles up supper surrounded by the rest of the family – kids playing in the corner, teens bent over homework, partner mixing a G&T and sharing the day’s events. This remains the model even when friends come round to dinner. No one wants to be stuck alone at the stove while the party happens in another room. In our less formal times we like nothing better than sipping a glass of wine with our guests looking on as we stir risotto or simmer a casserole.

Upstairs, downstairs As civilisation developed, a split between rich and poor households emerged. Those with sufficient space and wealth gave the messy business of preparing and cooking food over to the servants, leaving them in basement kitchens and migrating upwards to the rarefied air of the dining room and the drawing room. For the rest, in farm cottages and tenements, all the living was done in the warm, convivial kitchen where the coal or wood-fired range functioned as hob, oven, boiler and clothes-drier. As the warmest room in the house (the only room in the 6
and Double Vertigo by Best could be mistaken for beautiful light fittings. Even less obtrusive are the new downdrafts, pop-up extractors that stay neatly hidden below the worktop when not in use. In the reimagined open-plan kitchen of today, several appliances have vanished. The washing machine and tumble drier have been banished to the utility room, itself possibly created from the space vacated by the larder, made obsolete by the fridge freezer. Most open-plan kitchens are constructed around an island which, as well as being an efficient workstation in which to contain appliances, can act as a focal point, setting the tone for the rest of the room. Surrounded by bar stools, it’s the natural place to gravitate to – and it serves as a stage for more theatrical home chefs. A design for life As the boundaries between dining, living and cooking have broken down, some kitchens no longer really look like kitchens any more, as Gillian McCollum of Fifebased kitchen specialists Murray & Murray explains: “Not only are we seeing a move towards open-plan living but more and more we are being asked to conceal the functional components of the kitchen behind sliding, pocket and bi-folding doors to give a sleeker appearance.” That’s a trend that Shona Ponder, design director at Kelso’s Countryside Kitchens, has also noticed: “With openplan living, people naturally want to have less on display. We’re often asked to build individual niches for the toaster, the coffee maker and so on that can then be neatly

hidden from view behind sliding doors.” If cooking is your passion, the design should prioritise functionality. Go for hard-wearing surfaces that are easy to clean and semi-professional appliances that will be a match for your talents. If you see yourself more as a host, a stylish room with plenty of areas to sit and chat or stand and mingle will matter more. It is possible, of course, to combine the two – in fact, it’s the ideal solution.

How long should a kitchen last? And how much should I pay?
A
nyone contemplating a new kitchen has a thousand decisions to make. What style should I go for? Should I keep the old layout or try something more practical? Should we knock this wall down and make it open-plan? How long can I expect my new kitchen to last – and how much should I pay for it? Of all the rooms in the house, the kitchen gets the most wear and tear. It’s also the room most of us spend the majority of our time in. So building something hard-wearing and practical is essential – but it has to be an attractive, pleasant environment too. Bucking the trends Back in the 1950s and ’60s a fitted kitchen, where everything matched and Formica ruled, was the only option. Then came the country kitchen of the 1970s: chunky orange pine, Austrian blinds and an Aga. Metallic and hard-edged, the industrial kitchen followed in the ’80s and early-’90s, a professional-standard Rangemaster six-burner hob taking pride of place. It was all change in the late-1990s and early 2000s. “Ten years ago everything was so ornate,” says Shona Ponder, design director at Countryside Kitchens. “We saw a lot of carved wood and canopies, and buyers had little choice if
they wanted anything less elaborate.” These days we can mix and match, using a combination of fitted and freestanding units to create the look we want. There has never been a bigger choice of styles, materials, gadgets and finishes, and getting the right blend for your home is crucial. Keep a low profile Low-profile, minimalist designs are very popular just now: “I expect the more minimalist look to remain a key trend in 2013 – we have a huge array of handleless units as well as linear designs,” says Kieron Bell of Kitchens International. “Even in traditional kitchens, the look will be a combination of painted and timber finishes that avoid being over-fussy.” Some of the old default choices such as stainless steel may dip in popularity too, says Gillian McCollum at Murray & Murray: “We’re seeing tap manufacturers offering alternative black and bronze finishes that are complemented by light switches, sockets etc. Polished stone worktops are being replaced with leathered finishes which offer a more raw and natural texture.” Shona Ponder has noticed another trend that’s making kitchen units look less obviously kitcheny: “Some designers are removing the plinth you normally get at
the base of a unit so the door or drawer goes right down to the floor – it makes it look like a piece of hand-made furniture more suited to open-plan living.” Kieron Bell’s biggest predictions are for more glass and more colour – at least in specific areas: “As lighter, open-plan designs evolve, glass will play a major role, in splashbacks and even worktops or doors. As for colour, I see accented units in certain areas, combined with greys, whites and blacks and finished in silk rather than gloss so the effect isn’t overpowering.” Worth it in the end Spend as much as you can afford seems to be the best advice – it will give you something functional and beautiful that will withstand wear and tear. “Replacing a kitchen is an upheaval and an inconvenience, so it’s important to invest in well-made cabinetry that will stand the test of time,” advises Gillian McCollum. “Generally, the less ornamentation you have, the less likely it is to date. If you spend time getting the layout and functionality right at the start, you can update your kitchen very easily by painting, replacing handles and even worktops should you need to.” Shona Ponder agrees: “Go for quality – it won’t let you down.” KITCHENS & BATHROOMS

into three categories: traditional, hightech and that all-important in-between area, classic contemporary. The two kitchens pictured above are great examples of just how wide the company’s range is. is an independent family-run firm that was established over 40 years ago, specialising in the design, supply and installation of bespoke interiors for every area of the home. One recent commission, in an Edwardian country house, required a traditional touch: the designer utilised subtle moulding detail to the doors in a burr oak which injected warmth and character. An Aga provided the cooking centrepiece, which was framed with a furniture mantle that added height so it felt more in proportion with the high ceilings in the room. Additional appliances were concealed wherever possible. A large central island provided space for preparation and socialising. In contrast take something altogether more modern such as a penthouse kitchen. Here the company designer can work with gloss-white doors, and walnut elements which complement flooring and client’s furniture. Ease of access is important, so wherever possible cabinetry can be made up of pull-outs and clever storage. If there isn’t enough space for a central island a peninsular unit can be
added to create a divider in the open-plan living space. Callum Walker Interiors prides itself on providing the highest level of service. Part of this is showing entire kitchens in a room setting within its studio, with fully operational appliances that let clients experience products at first hand. A lot of kitchen products look the business but don’t have the quality behind them. That could never be said about Bulthaup: they design, engineer and manufacture most of the elements that go into its kitchens itself or else works only with suppliers which can meet its exceptional standards. Revising the layout of this kitchen was a risk by the designer as it went against the clients’ brief, but when they heard the thinking behind the change of plan they were delighted. It’s proof that an experienced designer knows how to make the most of a space – and add real value
CLIVE CHRISTIAN creates ‘British luxury interiors’ with a timeless appeal, using care and diligence to ensure its customers will enjoy their kitchen for decades to come. The Andersons, a Glasgow couple, discovered this for themselves when they decided it was time to replace their kitchen: “We had moved into a beautiful property and wanted to get rid of the frankly awful kitchen that the developer had put in and replace it with something that suited the period property. We requested a Clive Christian brochure which arrived the

very next day and showed the breadth of designs available. This confirmed our interest so we phoned the showroom to arrange for a designer to come and have a look at our kitchen. The gentleman who arrived was efficient and courteous and took a detailed brief from us. We were pretty sure of what we wanted.” David Harrison, the designer in question, wasn’t so convinced. “We do more listening than talking in our initial conversations – we want to get a feel for the customer and their likes and dislikes. At the Andersons’ house I could see immediately that the style of kitchen did not suit the property. It was too modern and quirky and the workspace was compromised – I could see why they wanted to get rid of it, but I wasn’t sure their alternative would
work. A kitchen must not only look great, it also has to work in practical terms. When this kitchen layout hit the drawing board it quickly became clear that it was unworkable. The existing infrastructure was a constraint to what was possible. So I started with a completely blank canvas and created a layout that increased the workspace and gave beautiful aesthetics.” David knew that this radically different layout was a risk. “They enjoyed eating at the window and I had moved the dining area away from it, and I’d covered the presses which were a traditional feature. But I was convinced it was the best layout for the room – whether the Andersons would agree was less certain!’ The couple received a phone call from David asking them to come to

the showroom to see his proposed design and get a feel for the product in situ. “We were bowled over by the showroom – it was beautifully designed and carefully crafted and it showed us that Clive Christian could deliver what we needed,” says Mrs Anderson. “We enjoyed a great cup of coffee and felt very welcome, and with hindsight I believe this trip was crucial in our decision to go with the company.” And what about the design? “We were presented with a plan that was not at all what we were expecting, and initially we were quite shocked by some of the changes, such as moving the dining area away from the window. But David carefully explained his thinking behind it and the process that had got him there. That really did convince us to go with Clive Christian – it showed that they had truly thought through how we would live and work in the room. As well as the plan, we were shown a beautiful artist’s impression of the room which had been done by hand. This was a nice personal touch and was very different to presentations
we’d had from other companies. The price was higher than we’d anticipated, but it wasn’t beyond the realms of possibility, so we worked with David to change a few details to bring us back closer to our budget.” An order was placed shortly after this presentation and David admits he felt relieved: “Not every client greets your boldness with an open mind, so it was great to see our experience being valued.” The installation team swung into action to bring the room together, a smooth process with only a couple of “small hiccups” that were dealt with efficiently and without fuss. Issues along the way are to be expected in an older property, says David. “We don’t hide this, but we do expect to deal with these quickly and fairly. We always try to put ourselves in our client’s shoes.” The Andersons are “delighted with the room. It has given us even more than we set out to achieve – it is a wonderful social space as well as being a functional kitchen and eating area. And the dogs are as pleased with the new Aga as we are!”

money. Ideally they wish to build up a relationship with the company and their designer prior to purchase. Living For Style operates the KBSA’s deposit protection scheme to ensure all clients have the “feel-good factor when they purchase”. The designers are also responsible for all aspects of the project from initial design to satisfactory completion. Living For Style’s designs tend to be unique to the client and trends are constantly changing within this industry. Callerton’s Deco is undoubtedly a favourite for a contemporary kitchen and Poggenpohl’s +Segmento and Integration continue to theme many modern kitchens. One of the company’s more challenging jobs was, what it calls, “the Harry Potter kitchen”: a converted cupboard under the stairs within a townhouse conversion in Dowanhill. This flat had an extremely grand front room but no kitchen. Living For Style’s designers made one with all the required appliances in one of the tiniest spaces imaginable. At the other end of the spectrum the company is presently working on various projects where it is actually challenging to fill the space provided.
These new builds require an early involvement with either the client or the developer. It’s all about the detail. The most successful jobs are the ones where the client and the designer are singing from the same hymn sheet and have an identical perception of the completed project. The entire process should then be effortless and enjoyable, plus the end result will be stunning. Living For Style makes sure the layout suits the proportions of the room, and imagines how the kitchen will look in 10 years’ time.

SCULLERIES of STOCKBRIDGE A stunning extension on a period property in Dunfermline needed a kitchen that could do justice to its generously grand proportions Words: Fiona Reid
Period houses were never designed to make a feature of the kitchen.These were rooms to be tucked away, usually in the darkest corner of the house (the cold north-east corner if possible, in those pre-refrigeration days), which explains why the owners of so many of these houses today make transforming the kitchen a priority. Ronan McGirr of Fine Designs Architecture was brought in to extend this period property in Dunfermline, creating a new larger dining-kitchen space that faces onto a courtyard, and featuring a dramatic angular cupola that drenches the space in light. The latter is an impressive piece of structural engineering in itself, and credit goes to the builder CDJ Watson of Dunfermline, who turned McGirr’s inspired geometry into reality. Once the building work was complete, the homeowners turned to Sculleries of Stockbridge for a kitchen design that would do justice to the new space. They wanted a handmade kitchen, and Sculleries of Stockbridge is well known for its timeless designs, all of which are tailored to suit the demands of the individual space. “To an extent, this kitchen is designed to look like separate pieces of furniture that have been brought into the room at different periods,” says designer Brian Minns. It’s an unusual but very effective approach that really fits into the style of the whole house. Space flows around the freestanding island, which is painted in Farrow & Ball’s Pale Powder and topped with a gorgeous piece of iroko wood, matching the table that was built into the curved corner of the island. This table can be moved out into the middle of the room to accommodate more diners; otherwise, the piece sits alongside the island, freeing up the floor space. “Even in a room of this size, we still had to give a lot of consideration to how the table could be moved out to seat five or six people,” says Brian. “It was important that the island and the table didn’t completely dominate the whole area.” The L-shaped stretch of floor cabinets includes an electric Aga, in black, with a gas hob. In the 42

stretch of floor cabinets below the window there is a Kohler cast-iron double undercounter sink with a Perrin & Rowe Ionian tap with spray rinse, as well as an ISE hot tap, and there is a second single sink and tap in the island. There is even an integrated Miele dishwasher in this stretch of cabinets, and integrated waste bins. The floor cabinets are hand-painted in Farrow & Ball’s Clunch. “The clients loved this subtle mix of colours,” says Brian. The wall cabinets are solid oak, matching the dresser on the third side of the space. This dresser contains a freezer and a full-sized fridge, both by Miele, with a butler’s pantry in the centre with hand-carved drawer detailing. The two top panels open to reveal a TV – a nice design touch. It was important to create a sense of balance, and this is achieved by the symmetry in the design – with the wall cabinets framing the Aga, for example, and in the design of the dresser. The natural palette is complemented by limestone flooring, which the homeowners sourced themselves, and this organic finish extends into the laundry room. Leathered Cosmic Black granite was chosen for the cabinet worktops and as the splashback behind the Aga. The grain gives this granite a lively finish – it’s a particularly beautiful backdrop to the Aga – that nevertheless looks timeless. There are other nice details such as the oak wine rack built into one corner – a corner that was created by the

structure of the building, demonstrating the benefits of a bespoke approach. The wall cabinets are lit internally to highlight the detailing, with downlighters illuminating the worktops. The laundry room, meanwhile, was fitted with floorto-ceiling cabinets painted in the same Pale Powder hue as the island, creating a real sense of connection between the two areas. This bespoke kitchen was clearly designed for longevity, both in terms of aesthetics and quality. And it really does work beautifully.

Designer secrets One benefit of hand-painted cabinetry is that it gives you the option of changing the whole look without the upheaval or expense of changing the kitchen itself – all it takes is a new colour palette to transform the look, particularly if you’ve gone for flooring and granite that give a neutral backdrop. A handmade kitchen can be tailored to the idiosyncrasies of a space – which is particularly relevant in a period house where walls are not always at right angles. Here, one cabinet was tailormade to incorporate an integrated freezer. As Brian says: “Because we manufacture the kitchens ourselves, we can make the cabinets work for the appliances.”

It’s hard to beat a hotel in a historic building that gives visitors a taste of breathtaking contemporary style once they’re inside. Private homes too are even more desirable with a grand façade. So if a project happens to combine both ideas – private, catered apartments in a top-class hotel, in a curve of splendid Edinburgh townhouses – you would surely be on to a winner. Well, maybe. In fact, when Kirsten Robeson, managing director of Cameron Interiors, was tasked with creating a kitchen for each of the Atholl’s four suites, the merging of old and new seemed impossible. Strict instructions had been issued, making it clear that every single original detail of the apartments had to be retained. There was practically no wriggle room for creativity – or so it seemed. “As well as working with the existing surroundings, we weren’t allowed to change anything,” says Kirsten. Each of the Atholl’s suites needed a luxury kitchen that could be used for cooking (mainly by private chefs for guests’ parties) and work in harmony with the adjoining living room.
This posed another challenge to the design team: “We knew the living area was going to be very opulent, so although the kitchen had to be stunning in its own right, it couldn’t appear to overpower the space”. The solution grew out of some lateral thinking: scrapping the original herringbone floor wasn’t an option; instead, it was made into a feature of the room by building an oversized island on legs to show it off to its full potential. The streamlined Siemens oven and hob married with the black oak veneer of the b3 kitchen furniture (including a 1cm laminate worktop with a recessed, integral sink) to give a contemporary edge. Making the greige laminate island extra-large was a crucial element of the design as it kept everything in proportion with the vast dimensions of the room while also proving practical: a whole family or group of guests can be stationed around it, chatting, eating and drinking. “It was important not to detract from the surroundings of the Atholl building itself ” concludes Kirsten. “To complement it was key”.

When this grade-A listed house in Edinburgh required substantial refurbishment to return what had previously been two flats back into a single dwelling, it was a job for the city’s Helen Lucas Architects, with main contractor John McMenamin Ltd doing the building work. As part of the process of transformation, the kitchen was relocated to one of the house’s most impressive reception rooms, creating a sense of flow between it and the adjoining living room, which is accessed through a set of double doors.

The first designs that Gillian McCollum of Murray & Murray drew up for this kitchen were, not surprisingly, very traditional and in keeping with the style of a house of this period. On reflection, however, the owner decided that she wanted something more contemporary that would contrast with the building’s character and detailing. Gillian went back to the drawing board and developed a striking minimalist scheme that sparkles with clean lines and sleek finishes. The kitchen was made bespoke with MDF
THE FACTS One stipulation of gaining planning consent was that the kitchen should not affect the house’s existing period detailing, and as a result the new elements sit ‘lightly’ within the space. For example, the room had a traditional Edinburgh press with a stone facing; in order to retain this the wall was relined, creating a 20mm step – and an ideal surface for the glass splashback. The cabinets were also scribed sensitively around the original skirting boards.

A slender, subtly reflective Silestone worktop wraps over the elongated island. The appliances are by Miele and Gaggenau, including a Gaggenau stainlesssteel fridge-freezer and an induction hob and a downdraft extractor. The walls are painted in Farrow & Ball’s Elephant’s Breath, and this, together with the kitchen cabinetry and worktop and the existing oak flooring, creates a gentle monochromatic palette. These cool shades of grey are broken up by pops of lively colour, from the apple-green glass splashback to the furniture and upholstery.The client already had the bar stools and dining chairs; the latter were upholstered in vibrant shades, giving them a fresh lease of life, while the same fabric was used on the upholstered window seat. The European oak table was made to measure by Murray & Murray, and its chunky lines contrast nicely with the kitchen. Conscious that the high ceiling could make the kitchen feel ‘short’, wall lighting (from David Brown Lighting) was introduced above the floor cabinets, while two pendants were suspended over the island from one central fitting in order to work with the original single ceiling rose. Success.
