ALCOHOL-FREE WINE
Higher demand for low and no-alcohol Growing number of consumers are looking for low-ABV options, says Eisberg
W
ITHIN any group get together, there is now more chance that someone will be ‘dry’ for the night. Public health advice is changing consumer behaviour, as more and more people opt to cut down or cut out alcohol. This can be for a sponsored spell of abstinence, a lifestyle change or simply because they are driving – but the figures are all moving in one direction. The UK alcohol-free drinks sector is now worth £37.7million, up three per cent year on year. What these customers want is variety and to feel they are included in every kind of social gathering; it is clear that anyone choosing to go dry wants more options than an evening of sugary fizzy drinks,
fruit juices or water. Leading the way is Eisberg Alcohol Free Wine, the clear market leader with a 60% market share of the alcohol-free wine category. Eisberg gives consumers confidence in the quality of what they are drinking because the family of wines is made in the same way as regular wine, with grape varieties including Cabernet Sauvignon, Chardonnay, Rosé and Sauvignon Blanc. At the end of the process, the alcohol is gently removed using unique and advanced techniques. Eisberg has also added two sparkling options to the range – Blanc and Rosé – to ensure that customers choosing to go alcohol-free do not miss out on the celebratory popping of corks or all those ‘Prosecco moments’ that are the basis

for so many social gatherings. Andrew Turner, director of wine at parent firm Halewood Wines & Spirits, said: “The growth in the non-drinking population, especially in Scotland, means the public is calling out for a comprehensive, premium range of drinks that delivers on the alcohol-free promise. “What was previously seen as a beverage just for designated drivers or pregnant women, has now developed into a popular lifestyle choice, and part of the overall drinking repertoire for both men and women. “Your customers deserve options out of the home that deliver on the alcoholfree promise but don’t compromise on taste or quality – and you can’t afford to miss out on the sales.”

BEER LINE CLEANING
A clear route to clean beer lines in the trade Comprehensive service cuts costs and improves quality, says Clear Brew
W
HEN it comes to draught beer in the on-trade, quality is king – meaning regular cleaning of beer lines is absolutely fundamental. Clear Brew is an eco-led professional beer line cleaning company that has been operating from its head office in Cornwall for a decade and has branches throughout England, Scotland and Wales. The company offers an alternative to regular in-house line cleaning and currently provides regular services to over 1000 licensed establishments. Clear Brew provides a dedicated professional beer line cleaning service for both keg and cask lines, providing a fully managed service designed to maintain quality on a regular repeat three-weekly cycle. Using a specialised water-fed mixing
unit, coupled with inhibitors plus marketleading chemicals, the labour-inclusive service is carried out by its experienced technicians and managed through a nationwide network of highly motivated franchised owner/operators who care passionately about what they do. Clear Brew said the service it provides is guaranteed to save operators money, reduce waste and improve the quality of draught products; the firm said it will also maximise yields and add real value to the licensee’s business. The beer line cleaning company said its customers not only use less water and less gas, they no longer have to purchase and handle chemical line cleaner, and save internal labour charges and staff training. On top of this the ‘ullage’, which at the moment goes down the drain each week,
will only be thrown down the drain every three weeks – a total of 17 times a year, meaning that for 35 weeks of the year they are selling that entire previously waste product at full retail price. Furthermore, Clear Brew is so confident in its service that its initial full line clean, cellar and equipment check is free of charge. On completion of this first free clean the company will provide a quotation that demonstrates the savings that a business can make whilst also improving the quality of dispense draught products – and seek no contract and no commitment to continue. Clear Brew said the service it offers makes sense, clearly works and provides a service that landlords and business owners come to rely on and are happy to endorse.

COGNAC
Courvoisier stirring up the Cognac category Bartender initiative designed to celebrate marriage of Cognac and coffee
C
OGNAC and coffee have a long history as the perfect digestif, born of the Parisian café culture of the 18th century and now enjoyed across the globe. With the same Parisian roots, Courvoisier’s association with coffee is a rich one and the world-renowned Cognac house this year turned its eyes to reinventing this relationship, at the same time embracing the burgeoning world of specialty coffee and coffee cocktails. Out of the marriage of coffee and Cognac, Café Courvoisier was born – a range of coffee-based cocktails that highlights the versatility of Cognac and invited a new generation of Cognac drinkers to experiment with flavour and occasion. The hero serve of the platform was the Courvoisier Espresso Martini – a sumptuous

take on the legendary Espresso Martini that catered perfectly for bartenders looking to twist classic cocktails. Marrying the complex aromas of coffee with the famous nose and palate of Courvoisier VSOP produces a truly unique cocktail to welcome consumers into the world of Cognac. To engage bartenders in the world of Café Courvoisier, Global Brand Ambassador, Rebecca Asseline, hosted masterclasses across the country that delved into the history of the famous Cognac house and journeyed further into Courvoisier VSOP and its perfect pairing, offering expert tips on how to turn this amazing spirit into showstopping cocktails. Over 500 bars engaged and Café Courvoisier cocktails were hero-ed on drinks lists in key cities from Edinburgh to London and Bristol to Glasgow. A full through-the-line campaign was launched
that hit over five million people, including a micro-site that mapped every bar to list Café Courvoisier serves. The combination of engaged bartenders and consumers looking for brand moments that chime with their personalities led to a surge of interest in Café Courvoisier. Rate of sale increased nationally, with some bars struggling to keep up with the demand for Courvoisier VSOP. This unique platform demonstrated the perfect marriage of Cognac and coffee, engaging bartenders and consumers alike in this prestigious liquid whilst reinvigorating the category and driving rate of sale. 2018 is set to be another big year for Courvoisier cocktails, especially the Courvoisier Espresso Martini, and we expect to see more than a few people raise a glass to the distinctly Parisian tradition of Pousse-café.

COMMERCIAL FRYERS
Milestone for catering equipment company Valentine Equipment marks 60 years in the UK with new product launches
I
N 2018 Valentine Equipment marks more than 60 years in the UK market selling the highest quality Swiss-made fryers and multicookers across the foodservice and hospitality sectors. 2018 also sees the launch of the first completely new fryer from Valentine in the UK for several years. The Alpina 300 features precise electronic temperature regulation for optimum frying conditions to match the food and quantity being fried. Commenting on the launch, Steve Elliott, sales director for Valentine Equipment and Cuisinequip, said: “We are delighted that Valentine Fabrique has developed and launched the Alpina fryer for several reasons. “The fryer has a 12.5l capacity tank and includes wi-fi to support cleaning and
maintenance and features a connection for integrated energy optimisation to a DIN Standard 18875 Sicotronic terminal to cut power peaks and save money on energy costs.
The Alpina 300 is the first completely new fryer from Valentine in the UK for several years. It features precise electronic temperature regulation for optimum frying conditions to match the food and quantity being fried. “Like other Valentine fryers the Alpina has a small cold zone under the heating element meaning it takes less oil to fill up the fryer. “The other pleasing factor about this launch in 2018 is that it is in the same year as Valentine Equipment’s 60th anniversary of
being in business in the UK.” The Alpina 300 has two available models, the 11kw Eco version and the 15kw Turbo version. Cuisinequip has also recently unveiled a number of new pieces of equipment including the Berner Beef Star Grill, Locher Induction Range and Induction Demo Table. The company also offers a range of modular induction options from respected manufacturer Locher including the Locher Chargrill and several fresh pasta making machines from family-owned Italian manufacturer Bottene. CRAFT BEER
Craft brewer is on track for more success Fallen Brewing Co drawing inspiration from its stunning surroundings
A
LTHOUGH based on an old Victorian railway site in rural Stirlingshire, Fallen Brewing Co is one of Scotland’s most forwardthinking breweries. Its core range of beers includes modern interpretations of classic styles, and, throughout the year, it releases experimental specials and collaboration brews with creative, like-minded friends and colleagues. The brewery occupies the site which was home to Kippen railway station, which first opened in 1856 and was the second-busiest stop on the Stirling to Glasgow Queen Street route. Although the station closed in 1934, its industrial legacy continues today as a busy, thriving brewery. Renovated over 12 months by owner
and head brewer Paul Fallen, the brewery began producing its original range of beers in the Engine Shed in April 2014, and has since expanded across the station site. Its current core range of seven beers includes New World Odyssey Blonde; Grapevine American Pale; the bold, fullflavoured Platform C IPA; and Chew Chew – a salted caramel milk stout. Fallen Brewing Co fills all casks and kegs by hand and, as the first small Scottish craft brewery to install its own canning line on site, it has total control over the quality of every beer it releases. It currently covers Scotland and the north of England directly, and works with distributors to send its beers nationally and internationally. Living and working in such an inspirational setting has a huge influence on every part of the business; the striking
peaks of Ben Lomond, Ben Ledi, Ben Venue, Ben Vorlich and Stuc a’ Chroin can all be seen from the brewery, and the mountain range silhouette graces Fallen Brewing Co’s cans. The company is also very aware of the natural environment around it: the brewery is run using electricity from 100% renewable sources (via Good Energy), all waste malt goes to local farmers for cattle feed, and waste hops are composted for the garden. Ultimately, it aims to produce the best possible beers it can, retaining the maximum flavour and aroma possible. It brews with pure, soft Scottish water, the highest quality malts, aromatic hops from around the world, and its favourite yeast strains. The full range is unfiltered, and as its kegs and cans are unfined, they are also 100% vegan friendly.

FINANCE
A proud history of supporting the trade Tennent’s is continuing to build on its reputation as a finance provider
F
OR licensed trade operators, gaining access to finance through traditional means can be difficult. However, there are alternative options available. Nurturing and maintaining the ontrade is a key priority of Tennent’s and the company offers a range of financial support through the lending wing of its business. It can provide everything from small loans for repairs all the way up to sevenfigure sums for major refurbishments or to purchase new premises. Tennent’s has invested over £51 million into the Scottish on-trade over the past seven years. The company’s ambition is to increase this as part of its ongoing support for Scotland’s licensed trade. As all decision making is taken in
Scotland, the business can usually move much faster than other lenders, and can often pay funds within weeks. Increasingly, the company is seen as the first port of call for lending in the licensed trade, offering finance deals ranging from £1000 to over £1 million. Customers have said the process couldn’t be easier and Tennent’s is making a real difference. There are several routes available to secure funding. A five-strong investment team is on the ground across Scotland, with the sole aim of supporting licensees’ business objectives through finance and loans. The company’s account management team is also on hand to discuss funding options, and its customer contact centre is available seven days a week to take
any queries. The process is designed to be straightforward and simple for customers. As a business based in Scotland, which knows the trade and its customers, Tennent’s is easy to deal with and can make a quick decision on proposals. The company is able to help publicans choose the finance arrangement that’s right for their business, offering flexibility in terms, and can play the part of either a lead, secondary or tertiary funder. The key item to have in place is a clear plan for how the investment will be used. It’s important to have a business plan or projections supporting this, and up to date trading accounts for the business –demonstrating understanding of the project and the costs involved is crucial.

GIN
Edinburgh Gin is just the tonic for consumers Consumers searching for favourites at the bar, says Ian Macleod Distillers
T
HE dramatic growth in gin’s popularity has transformed the category in the last few years across both the on and off-trade. The latest CGA data reveals that the top two drivers of choice for premium gin drinkers in the UK are the quality of the gin and availability of a favourite brand. As the 6th biggest gin brand by value in the UK off trade market, Edinburgh Gin has developed a great loyal consumer following. We know that these consumers are actively seeking out their favourites from the Edinburgh Gin portfolio. Within the on-trade sector, drinks with an interesting flavour profile is a major growth area, with research showing that 44% of white spirit buyers are willing to pay more for this experience. Many bars, pubs, and restaurants
are looking to satisfy this consumer trend; bartenders have a thirst for experimentation and want to offer customers new drinks. Edinburgh Gin is developing a strong reputation for creating the finest classic gins, with a modern twist. For example, our signature Edinburgh Gin has the addition of locally-sourced botanicals of pine, milk thistle and heather, while our Seaside Gin, inspired by the east coast beaches near Edinburgh, contains foraged shoreline botanicals including scurvy grass and ground ivy. The carefully balanced flavour of our classic Edinburgh Gin lends itself perfectly to the addition of fruit flavours, spices and botanicals – resulting in a range of vibrant fruit liqueurs and intriguing small-batch limited editions. The result
is a range of popular flavours including: rhubarb & ginger, raspberry, elderflower, pomegranate & rose, and plum & vanilla. The range of gin liqueurs offer real versatility for on-trade customers. Designed to be enjoyed in a simple serve like a Raspberry Gin Fizz or in a cocktail like a Rosette Martini, using the delicious Pomegranate & Rose Liqueur, a modern twist on a classic Martini. Neil Boyd UK, managing director of Ian Macleod Distillers, owners of Edinburgh Gin, said: “We believe that by producing a varied premium portfolio of gins and gin liqueurs we are able to offer ontrade operators and their customers the opportunity to explore and experiment with flavours and styles resulting in a varied and enriched gin drinking experience.”

LICENSING LAW
Navigating a changing legislative landscape Established law firm has been advising clients for more than six decades
I
N the wake of last year’s local government elections we saw a shift in the world of licensing – with the formation of all new licensing boards – and we are set for further change in 2018 as those boards settle in and as new legislation comes into force. Solicitors at Hill Brown Licensing have been advising the trade for 65 years, and are keeping a close eye on things as the legal landscape continues to evolve. With new boards come new ideas and fresh licensing policy statements are being drafted by the various boards at this very moment. So far the new boards have been guided by the policies of their predecessors, but now they have the opportunity to make their own mark on the licensing world. Could things
become trickier with children and young persons’ access? Will we see a shake-up in terms of overprovision? Only time will tell. Then there is the huge issue of Minimum Unit Pricing (MUP), which will come into effect in Scotland on May 1. While this will primarily affect off-sales, it is something which the on-trade should certainly be up to speed on, particularly from a staff training perspective. The team at Hill Brown are leaders in their field and have a wealth of experience in all aspects of licensing law. Whether you require advice on a variation, have an unusual query or idea for a promotion or are facing a premises licence review, their approachability and depth of knowledge will stand you in good stead.
Your continued success in the trade is dependent on staying compliant, up to date and on the right side of the police and LSOs. Hill Brown can provide a free licensing compliance checklist on request to info@mshblicensing.com. Licensing laws are not the only regulations relevant to the trade, though, and Miller Samuel Hill Brown, of which Hill Brown Licensing is a division, can assist in property and litigation matters, to name a few. Their employment law team are particularly active at the moment – with the new data General Data Protection Regulations (GDPR) coming into force at the end of May. Are you up to speed on that? The message to the trade is simple. It’s your livelihood: make sure it’s in the safest hands.

LIVE SPORT
Sky Sports gets ready to turn up the heat Raft of live sporting events this summer set to pull in the punters at pubs
T
HERE’S an irresistible line up on Sky Sports this summer – all designed to pull in the pub, club and bar customers and leave the licensees to pull the pints! Add this to the World Cup on BBC and ITV and licensees have got a recipe for success. All this is great news for pub and club operators, helping to attract more customers through the door, who are staying longer and spending more money over the summer. The Summer Specials line-up includes: EFL Play-offs (May 26) There’s been a bit of a switcheroo this year due to the World Cup, so any players who are called up for international duty have the most time to recover. This means that the EFL play-offs are going to be held on the weekend of Saturday May 26 with the Championship taking place on Saturday May 26, the League One final on Sunday May 27 and the League Two on Bank Holiday Monday. Sky Sports will be the only place to follow the action as it unfolds. England’s Tour to South Africa (June 9-23) Following the disappointing Six Nations, Eddie Jones will be looking to pick up the pieces as he looks toward the 2019 World Cup. Never has it been more important
to get the squad just right. Key to that success will be the three-match Test series in South Africa where England have not beaten the Springboks since 2000. England v Pakistan Test Series, England v India Test Series and ODI series against Australia England will kick off the summer with a two-Test series against Pakistan in May and June, before Eoin Morgan takes the reins for a one-off one-day international
against Scotland in Edinburgh and five one-dayers and a Twenty20 international against Australia. Morgan’s men will then face India in six limited-overs games in July, before Root resumes control for the Tests in August and September. The British Grand Prix (July 8) The British Grand Prix takes place at Silverstone and Sky Sports will be trackside for all the action. Pub-goers will be eager to see if Lewis Hamilton can repeat his victory of last year in his home race. Sky Sports will show all 21 races live, with 11 of them shown exclusively live. The Open (July 15-22) One of golf’s most prestigious Majors and the only one held outside of America. Follow every moment of The Open from the opening tee shot to the winning putt on Sky Sports. The Open takes place at Carnoustie this year and should prove popular for golf fans in pubs across the country as the likes of Rory McIlory, Henrik Stenson and Phil Mikelson vie for the famous title. The Ryder Cup (September 28-30) The Ryder Cup returns to Europe this September as Europe try to regain the trophy after the Americans ended a run of three consecutive defeats with a commanding victory in Hazeltine. Taking place at Le Golf National, the Ryder Cup is the perfect end to the summer season.

MIXERS
Shaking up sales in the Scottish on-trade Lamb & Watt is well-placed to cater to the growing demand for a wider range of tonic water and soft drinks options in Scotland’s pubs and bars
H
ALEWOOD Wines & Spirits continues to shake up the mixer category with its premium tonic and mixer brand, Lamb & Watt. The refreshing range, which now includes Original, Cucumber, Basil, Hibiscus and Naturally Light, as well as a recently launched Ginger Ale, delivers across a range of spirits, palates and consumer preferences. Bursting with flavour and created with only the finest natural and organic ingredients – including spring water and organic blue agave – Lamb & Watt delivers a beautiful, clean tasting drink and is a natural choice for the discerning drinker.
It is also free from artificial flavours, preservatives and sweeteners – and is low-calorie, too. Lamb & Watt, which complements Halewood’s premium spirits offering, was born back in 1847, by early founders Mr Lamb and Mr Watt who were devoted to producing the finest cordials and syrups of their day. The newly re-invigorated Lamb & Watt brand reflects their passion for sourcing only the best ingredients to enhance the taste and enjoyment of their favourite drinks. Swinging forward to today, Lamb & Watt is looking to inspire bartenders to experiment beyond the classic G&T, as
the premium mixer brand brings out the best across a variety of white and dark spirits. It is also ideal for making nonalcoholic serves and is equally thirst quenching served on its own, chilled with ice and a garnish of the customer’s choice. James Stocker, marketing director at Halewood Wines & Spirits, whose portfolio includes Lamb & Watt, commented: “Our focus is to offer bartenders a refreshing point of difference. “Elevating your premium mixer offering is vital to ensure you’re complementing your spirit offering for today’s discerning consumer.”
