WIMBLEDON CHAMPIONS YARD OF THE MONTH

Congratulations to Lou & Nancy Triche at 6315 Lacoste Love Ct. The Triches live on the corner of Lacoste Love Ct. and Cochet Spring Dr. with both the front and side yards planted with colorful spring flowers. The Triches were one of the first families to build in Wimbledon Champions and at the time the street of Lacoste Love had not even been completed. They retained all of the natural trees that existed on the lot in the back yard and landscaped around them. In the front, all of the beds have attractive stone borders. Near the house are a variety of welltrimmed bushes including Pittosporum, Boxwood, Nandina, Roses and Holly. Rosemary, Lariopie, Iris and other plants give interesting texture to the beds. The yard also has mature trees and Crepe Myrtles. Spring and summer annuals bordering the beds and trees are what make the yard striking this time of the year. Celosia, Begonias, and Petunias fill the beds with color!

May Recipe This smoked salmon dip is a perfect, hearty, flavorful appetizer. Stuff it into cucumber cups for a burst of crunch and turn the dip into easy-to-eat party food.
Smoked Salmon Dip in Cucumber Cups Ingredients:
• FOR THE SALMON DIP: • ¼ pounds Smoked Salmon • ⅓ cups Red Onion, Finely Chopped • ⅓ cups Celery Finely Chopped • 1 Tablespoon Parsley, Chopped (plus Extra For Garnishing!) • 2 teaspoons Lemon Juice • 3 Tablespoons Mayonnaise • 3 Tablespoons Sour Cream • ⅛ teaspoons Hot Sauce (add More If You Like More Of A Kick!) FOR THE CUCUMBER CUPS: • 3 whole Cucumbers • 1 pinch Salt And Pepper, to taste
Directions:
Dip: Gently separate smoked salmon into small chunks with your hands. Place in medium-sized bowl. Add remaining ingredients to salmon and stir gently until just combined. Spoon mixture into cucumber cups and top with a fresh sprig of parsley. Serve cold. For the cucumber cups: Peel cucumbers and slice into 1-2 inch-thick circles. Use a melon baller or a spoon to scrape the seeds out of each cucumber slice, taking care not to pierce through the bottom of the cup. The sides of the cucumber cup can be relatively thin to allow a larger amount of smoked salmon dip. Place cups in the fridge until ready for use or immediately fill with salmon dip. Top with a fresh sprig of parsley. Serve cold.

WIMBLEDON CHAMPIONS CONTROL YOUR WEIGHT, MINIMIZE CANCER RISK Controlling weight can help a person reduce the risk of cancer, said an oncologist from the NCI-designated Dan L. Duncan Cancer Center at Baylor College of Medicine. "We do not know exactly how and why obesity affects cancer risk, but we know there is an increase, so it is important for everyone to control their weight to minimize this risk,” said Dr. Kent Osborne, director of the Duncan Cancer Center and the Lester and Sue Smith Breast Center, both at BCM. Research has linked obesity to a greater risk of developing esophageal, pancreatic, colorectal, breast, endometrial, kidney, thyroid and gallbladder cancer, Osborne said. In some cancers like breast cancer, there is also an increase in the risk of recurrence if a patient already has the cancer and is obese. Many other factors, such as genetics, may play a role in cancer development, but keeping a normal weight is one thing people can change and it may help, he said.
