2 oz. rice vermicelli 8 rice wrappers (8.5 inches in diameter) 8-10 large cooked shrimp, peeled, deveined & chopped 1 ½ tbsp. chopped Thai basil, fresh 1 tbsp. chopped cilantro, fresh 2 leaves of lettuce, chopped ½ carrot, shredded ¼ cucumber, slivered Peanut-hoisin sauce (see recipe below) DIRECTIONS Bring a medium saucepan of water to a boil.
