December Recipe Happy Holidays! Here is a great recipe for breakfast to serve your family or any hungry crowd on Christmas morning. Can be made the night before then cooked the next morning.

Hash Brown and Egg Casserole INGREDIENTS:

1 (1 1/2 pound) package frozen hash brown potatoes O’brien (browned) 1 pound pork sausage 1 small onion, diced 10 eggs 1 cup milk 1/2 teaspoon onion powder 1/2 teaspoon garlic powder salt and ground black pepper to taste 12 ounces shredded Cheddar cheese DIRECTIONS:

Preheat oven to 350 degrees. Grease a 9x13inch baking dish. Place the hash brown potatoes in the bottom of the baking dish. Heat a skillet over medium heat and cook and stir the sausage and onion until the sausage is crumbly, evenly browned, and no longer pink; drain. Meanwhile, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper, and pour over the potatoes. Layer with half the Cheddar cheese, the sausage mixture, and the remaining Cheddar cheese. Cover with aluminum foil. Bake in the preheated oven for 45 minutes to 1 hour. Remove foil; return casserole to the oven and broil until cheese looks golden and a knife inserted into the center comes out clean, about 10 minutes. Let stand for 5 minutes before serving. Bon appétit! If you have a favorite recipe you would like to share with your WC neighbors, please call Kelli Adams at 281-374-6246 or email to kelliadams@sbcglobal.net.

WIMBLEDON CHAMPIONS of Yard the Month

december The December Yard of the Month is awarded to Stacy and Scott Akin in the Estate Section of Wimbledon Champions. They have a variety of plants of different colors and textures which makes the beds so interesting and lovely. The yard was chosen in November to be in the December newsletter so it has bright spots of orange pumpkins carefully placed in the beds for fall. A tall Queen Palm is placed before the highest point of the roof and Crepe Myrtles give height at the corners of the house. The beds on each side of the sidewalk near the street are bordered by stone and have plants with seasonal color, including Verbena, Petunias and Dwarf Lantanas backed by Hawthorn Bushes. Near the front door are large Fire Bushes, Butterfly Grass and also colorful Coleus and Sweet Potato Vines in pots. It is difficult to have a lovely yard in the colder months and so it is a delight to see a yard that the homeowners love and care for themselves. In appreciation for their efforts, the Akins will receive a $50 gift certificate from Plants for All Seasons and have their address highlighted on the Wimbledon Champions Marquee, located on Cypresswood, as Yard of the Month. See the color version of this home on the Peelinc. com/newsletters website.

Mittelstadt Elementary Mobile Computer Cart Project

Carmel Haskin, Wimbledon Champions long-time resident, is in her second term as PTO President for Mittelstadt Elementary School. One of the Mittelstadt PTO’s goals for the 2013-2014 school years is to purchase a Mobile Computer Cart for the school. This cart can hold anywhere from 15 to 25 laptops. It allows the teachers to move the cart from classroom to classroom. It gives them greater flexibility in instructional planning of integrating technology products into the students' everyday lessons. It will also help those children, whose families don't have their own computers at home, to keep up with the other children on their computer skills. The Wimbledon Champions Social Committee has chosen this project as our philanthropic fundraiser this holiday season. Please help us to help Carmel meet her goal and support this effort by bringing a check or cash to the Wimbledon Champions Holiday Party on December 14th at the home of Ron and Ellen Sutphen on Connors Ace. Anyone who would like to donate, please make checks payable to "Mittelstadt Elementary". If you are unable to attend the party and would like to contribute to this worthwhile effort, please contact any of the Social Committee members and we will be happy to pick it up.
