2nd Wimbledon Champions Annual HOA Meeting-2013 Jimmy Watson Award Presentation The 2nd annual meeting was held on Thursday, December 5th with 26 residents in attendance. It was a cold, blustery night but the clubhouse was warm and full of friendly folks. The highlight of the evening was the Jimmy Watson award presentation. Jimmy received a standing ovation as he received his plaque honoring him for all his efforts in removing our subdivision from the 100 year flood plain. There are still a few streets in it (including Jimmy) but those residents should check with their insurance company and have a new survey done of their home which may enable them to pay much lower flood insurance and possibly be put in the Preferred Risk category. With the election of Kelli Adams to the board, the board focused on what was accomplished this first year as a resident-run board: • The Tennis courts have been resurfaced, all new netting and wind screens installed and ready for all who enjoy tennis. • Each of the section’s main entrances have new lighting which provides great curb appeal to all who visit and security for our residents. • The winter color is installed and in bloom in all the common areas and entrances. The irrigation controllers were updated to provide better water management which has reduced our water cost while improving the watering of our landscape. • Lighting in the pool/tennis area and the pool electrical/ mechanical area has been either repaired or updated. • 30+ trees in the reserves were felled to proactively prevent damage to homes and property. • The brick wall which is aging has had some repairs to 8 columns and one panel. The board thanked those residents who, when asked, removed ivy and bushes from against the inside of the brick walls as this will help to prolong the life of the wall. Further repairs to the wall are in the budget for 2014. Committee Reports Were Given: • Beautification/Landscape - Gayle Jennings • Social Committee – Kelli Adams Copyright © 2014 Peel, Inc.
• Women’s Coffee/Block Captains - Jean Kuecher • Architectural Control – Bob Jennings and Glen Murdock • Acknowledgement to all committees and their members as it takes all of us to make this subdivision function and run smoothly. o Newsletter- Sharon Connors o Yard of the Month- Doris Edmonds and Gayle Jennings Pam Bailey, Chaparral Management Company, reviewed the 2013 budget and expenses, sinking fund balances, assessment history and the collection process for assessment fees. The meeting was adjourned and everyone enjoyed cake to celebrate Jimmy’s award and thank him for his efforts. The board elected a slated of officers for 2014 • President - Gayle Jennings • Vice President –Tom Worley • Treasurer – Burt Felner • Secretary – Glen Murdock • Director At Large – Kelli Adams
Jimmy has done more than he will tell: mainly fighting the flood people and giving them hell. He has saved many of us a lot of bucks, yet he is still in the flood plain and that really sucks. But jimmy says “that’s ok”, if it helped my friends, it has made my day. This special man will never boast, but i say we raise out glass and give him a toast!!! Thank You, Jimmy Love U Man! Pound chicken breast with a meat mallet between 2 sheets of waxed paper or plastic wrap until meat is uniform thickness; about 1/4-inch. Cut into serving-sized pieces (2 or 3 pieces per breast) Heat the butter with 1 Tbs of olive oil in deep, heavy skillet or saute pan over medium heat. Dredge chicken in seasoned flour. Add to hot oil/butter in skillet. Saute until golden on each side, about 5 minutes per side. Remove from pan. Add remaining olive oil to hot skillet. Saute mushrooms and garlic until mushrooms begin to brown. Add white wine to skillet, scraping up all the browned bits that are at the bottom of the pan (this is called "deglazing"). Bruise the fresh thyme by twisting it between your fingers or hitting it with the dull side of a knife in a few places. Add thyme to mushroom/wine mixture in pan. Add the chicken back to the pan. Bring to a boil, then reduce heat, cover and simmer for 15-20 minutes. Remove chicken from pan. Add the cream and heat through. Add the asiago cheese (if you like it strongly flavored, use 1/2 cup; not as strongly flavored, use the 1/4 cup. Cook, stirring constantly over low heat until cheese melts. Continue cooking until sauce is reduced by about 1/2. If you wish to skip the reduction step, you may thicken the sauce slightly with about 1 tbs instant flour or 1 tbs cornstarch mixed with 2 tbs water...however, the reduction will taste better. Add chicken back to pan and heat through. Garnish with sprigs of fresh thyme. May be served over any pasta.
