Wimbledon Champions H. O. A. Meeting Dates All meetings will be held a t C h a p a r r a l Ma n a g e m e n t Company, 6630 Cypresswood Drive, conference room. The meetings will begin at 6:00pm. Please note that the meeting has been changed to the third Monday of every other month. Every resident may sign up for the Wimbledon Champions web-site and receive the agenda for the meetings. ATTACK ON ANTS The best defense against fire ants is a community wide effort, according to the researchers of Texas A&M. They suggest that an entire community treat for fire ants at the same time, thus reducing the “save zones” fire ants can retreat to when confronted with an insecticide. The recommended procedure would be to treat any visible mounds and then to broadcast insecticide across the entire yard and all flowerbeds. Our landscape company has already treated the common areas of our property. Your neighborhood Landscape committee is proposing that we set the weekend of May 17 & 18 as the first “Wimbledon Champions Attack on Fire Ants”! Please consider participating. Tell your neighbors! Check with your favorite garden center for the most effective products. Our landscape company recommends Amdro or Logic. We do not all have to use the same product as long as we all put down something within the given 48 hour period. We will need to treat visible mounds, entire yards and flowerbeds and even outside the fence line. This won’t be effective unless we all participate. Please don’t be the one who allows fire ants a safe haven for breeding! So pull those broadcasters down and get ready to attack the Wimbledon Champions Ants! If you love cabbage, you are going to freak out about how good this is. Now, if you are on the fence about cabbage, you need to try this because this might be the recipe that converts you to a cabbage lover. This is a simple side dish worthy of a dinner party and couldn’t be easier to make. Four ingredients, a couple of minutes to prepare and toss in the oven for an hour. Walla!

Garlic Rubbed Roasted Cabbage Steaks

Ingredients:

1 (approx 2lb) head of organic green cabbage, cut into 1" thick slices 1.5 tablespoons olive oil 2 to 3 large garlic cloves, smashed kosher salt freshly ground black pepper spray olive oil OR non-stick cooking spray

Directions:

Preheat oven to 400F and spray a baking sheet with nonstick cooking spray. Pull outer leaf off cabbage (it’s usually dirty and nasty looking), cut cabbage from top to bottom (bottom being root) into 1" thick slices. Rub both sides of cabbage with smashed garlic. Use a pastry brush to evenly spread the olive oil over both sides of the cabbage slices. Finally, sprinkle each side with a bit of kosher salt and freshly cracked black pepper. Roast on the middle rack for 30 minutes. Carefully flip the cabbage steaks and roast for an additional 30 minutes until edges are brown and crispy. Serve hot and enjoy! Bon Appetit! MAY Congratulations to the Bell Family at 6503 Frasier Point Court The May Yard of the Month award goes to the Bell home located in the Estate Section of Wimbledon Champions. Since this picture was taken in April, you can see an array of Easter decorations including colorful eggs and bunny rabbits peeking through the shrubs. Their yard has multiple flower beds filled with rose, pink, purple, and white Petunias, as well as, deep pink Roses supplying seasonal color. Elaeagnus, Indian Hawthorn, Dwarf Yaupon, Liriope and low-growing Juniper are evergreen shrubs that provide varying height to these gardens. The front door is flanked by potted Italian Cypress and a bright pink Hibiscus Topiary. In appreciation for their superb effort, the Bell family will receive a $50 gift certificate from Plants For All Seasons, their address listed as YOM on the Wimbledon Champions marquee on Cypresswood Drive and color photos on the Peel, Inc. web site for Wimbledon Champions.

WIMBLEDON CHAMPIONS Ayusa, a non-profit organization that promotes global learning and leadership through cultural exchange and leadership programs for high school students from around the world, is looking for American families in the Houston area interested in sharing their America with international high school students for the 2014-2015 school year. Applications for interested Houston area host families are currently being accepted. “Sharing the American experience with an international student is a unique opportunity for the average American to profoundly impact the life of a teenager, and provide them with a positive, transformational experience that they will remember for the rest of their lives,” said Sherry Carpenter, executive director of Ayusa. “Houston host families are in a great position to show international exchange students an especially authentic slice of American life, which is one reason we are actively looking for Houston area host families.” Ayusa foreign exchange students come from more than 60 countries, are fully insured, bring their own spending money, and are proficient in English. Whether from Japan or Brazil, India or Sweden, Ukraine or Mexico, France or Lebanon, foreign exchange students are a window into another culture and a great way to travel the world without leaving your home. “Houston host families are the heart and soul of Ayusa’s foreign exchange program,” said Vicki Odom, Community Representative for Ayusa, and the local contact for Houston and the surrounding towns. “Local families have been hosting Ayusa exchange students for the last six years, and the experience has been transformative for the students, who blossom in the local community through support from the families and schools.” There is no “typical” American host family and Ayusa welcomes all interested families, with or without children, from both urban and rural communities. Host families provide three meals a day and a bedroom (either private or shared). Each student is supported by a professionally trained community representative from Ayusa who works with the family and student for the entire program. All host families must pass a criminal background check and a home visit by an Ayusa representative. Ayusa has been a member of the Council on Standards for International Educational Travel (CSIET) for more than 25 years – since its foundation. CSIET evaluates U.S.-based youth exchange programs so that students, families and schools can identify inbound and outbound reputable exchange organizations. Ayusa is a 501(c)(3), and an official U.S. Department of State designated Exchange Visitor Program Sponsor.
