BOARD OF DIRECTORS MESSAGE

Our FC III pool is the hot spot of the neighborhood now that we are in the full swing of summer. The pool inevitably becomes more crowded as the days get warmer and we have received numerous questions about who is allowed to use our pool. Any resident that lives in FC III and is in current good financial standing (dues current) with the HOA should have an active and functioning keyfob that will allow for access to the amenities center, pool and tennis courts. If you are new to the neighborhood and need a keyfob, need to replace a missing

fob or have a fob that does not work, contact Plateau Management at requests@plateaupropertymgmt.com. As demand for pool access increases along with the heat, we ask that in fairness to residents of our HOA, you not allow entrance to the pool to those who do not have an activated keyfob or to residents of surrounding neighborhoods. Please keep the gate to the pool closed after you enter and exit to limit access to those with activated keyfobs only. Thank you in advance for your understanding and cooperation.

REMINDERS FROM THE ASSOCIATION MANAGER POOL/AMENITY CENTER ACCESS: The pool is now open for the season. If you are new to the community and have not received a pool access fob (tag) please contact Plateau at requests@plateaupropertymgmt. com. The charge for replacement fobs (tags) is $25.00. You must have a fob to access the pool area and tennis courts. If your assessment account is delinquent your pool fob (tag) will be deactivated. WEEDS, WEEDS, WEEDS: Spring is here and the weeds are emerging and invading our common areas and yards. The Association is working with our landscape maintenance crew to address the common areas. We ask that all residents apply a weed treatment to your yards as well. You can purchase products from home improvements stores and garden centers or you may prefer to hire a professional. Please do your part to help control the weeds in your community. ASSESSMENTS: Assessments are due quarterly in the amount of $105.00. Statements for the second quarter of 2014 have been mailed to all property owners. Non-payment of assessments can cause a lien to be filed against your property and lead to foreclosure. Legal and late fees are the responsibility of the property owner. If your account is referred to the association you will be responsible for the legal fees. Owners with delinquent assessment accounts will not be allowed access to the facilities. The association needs your assessments to be paid in a timely manner in order for the association facilities to be maintained. An Architectural Modification form can be obtained from the FC III web site (www.fc3hoa.org) or the Plateau website (www. plateaupropertymgmt.com). TRASH CANS & RECYCLE CONTAINERS: Please remember that trash cans and recycle containers should be stored out of sight except on trash/recycling collection days. ALL STARS UNLIMITED GYMNASTICS AND CHEER Nicole Ramirez a former day care owner and Forest Creek III resident got hooked on gymnastics when she was just 3 years old and continued her passion through high school. Now, as owner of All Stars Unlimited Gymnastics and Cheer, Ramirez has her dream job. The 5,000 square-foot full-service gymnastic facility offers a multitude of options for both boys and girls ages 2 to 18 years old including recreational gymnastics, tumbling, cheer classes, in addition to competitive gymnastic teams and cheer squads. “We strive to allow each child to progress in their skills to be able to accomplish their personal goals,” says Ramirez. “Whether that is just staying active, wanting to compete, or thinking into the future for college or professional sports.” Since taking over the facility from its formers owners in 2007, Ramirez knew exactly how she wanted to shape her business. “I wanted it to be the best of both worlds—a gymnastics facility that was both recreational and competitive,” says Ramirez. “I wanted a place for children to excel in gymnastics without the pressures of being a full-time competitive athlete.” Ramirez has six trained employees who coach, mentor

and teach over 150 children every week. Many of the classes begin after school and run until the late evening. Classes are structured and start off with a fun warm up then are split into groups for both safety reasons and maximum learning opportunities. Her goal is to ensure that the children who a t t e n d A l l St a r s f e e l special and unique. “They need to know they have a safe place to go,” says Ramirez. “Safety of all athletes is a priority along with a fun curriculum and progression of skills.” In addition to running the business, Ramirez also gets the opportunity to coach the cheerleader and gymnastic teams. She earned her bachelor’s degree from the University of Texas in Sports Management with a minor in business. Her business minor has also paid off—she has expanded the gym area twice—once in 2009 and to a full-size scaled gym in 2013.

It’s time to get serious, we are going to talk BBQ. In Texas that’s serious stuff and of course it doesn’t mean pork or lamb but beef… let’s make that BEEF. It needs to be said that in Texas everyone has a favorite BBQ place, even if you just arrived yesterday. I am fortunate to have tried quite a lot of BBQ this past year and I am judging brisket and sometimes an occasional beef rib (aka dino-rib). My guide has been the Texas Monthly BBQ Top 50 list in Texas. I have been fortunate to have eaten at Franklin in Austin, Opie’s BBQ in Spicewood and Snows in Lexington- all top notch. Going a little beyond my 10 minute drive rule from FCIII, out 79 past Hutto and into Taylor may be my absolute favorite for brisket and beef rib. No, not the sides. No, not the sauce. All of that is secondary. The only sides you need for great, melt in your mouth moist brisket is brisket, of course, pickles, onions and your hands. I am talking about Louis Mueller BBQ, one of the lords of smoke, cathedral of brisket places. Its pronounced Louie Miller by the locals, I know I know. What separates this brisket is the perfect pepper crust and the meltdown in your mouth. This comes from years of doing it right on old pits and the way they store it when it comes off the pit, covered in

foil in warming ovens. It’s even good (maybe better some say) the next day reheated at home. Started in 1946 as Louis Mueller Food Store serving BBQ, which transformed into Louis Mueller BBQ in 1949. Louis was from a German immigrant family. His son Bobby took over in 1974, many movies were shot there and they rose to fame with Bobby receiving a James Beard award in 2006. In 2008 they were named best BBQ in Texas. On Bobby’s passing his nephew Wayne took over as pit master and it’s still a perfect bite of brisket. For a larger appetite I would suggest a beef rib, which averages a pound and a half. One reviewer said “this is the best cow product I have ever put in my mouth”. For those who know about the Texas family BBQ wars, this is one of them. Bobby’s daughter Leeann owns L.A. BBQ in Austin, and youngest son John owns John Mueller BBQ in Austin. This is one of the first families of Texas BBQ and they are so close to us, you can almost smell it from here. Louis Mueller BBQ is open Monday thru Saturday until 6 or when they are sold out.

ARound the Rock will be an entertaining look at restaurants close to our community, providing information for you to answer the all-important question “where do we eat tonight?” Of course the important things in life; food, wine and music, are subject to our own individual taste and opinion, and this is but one man’s opinion. The locations will all be within a 10 minute drive from FCIII. I look forward to your input as I decide my next stop.

LENTIL SLOPPY JOES I don’t know about you, but when I think of Sloppy Joes, I think of a very specific brand of canned “Joe” sauce. Now, I promise not to bash the can. We’ve all been there. But, I do have to tell you that making Sloppy Joes from scratch really turns this traditionally kid-focused meal to a much healthier, much tastier alternative both parents and kids can enjoy together. Taking it one step further, the following recipe from www. food52.com uses lentils instead of chopped meat, making it a perfect dish for Meatless Monday! What you’ll need: 1 cup green lentils 2-3 cups water 2
tablespoons olive oil 1
cup white or yellow onion, chopped 1
green or red bell pepper, chopped 1
clove garlic, minced 2
teaspoons chili powder 1/2
teaspoon smoked paprika 1
teaspoon mustard powder, dried 15-ounce can/jar of regular or fire roasted crushed tomatoes 3
tablespoons tomato paste 1
tablespoon brown sugar or maple syrup 1
tablespoon apple cider vinegar 1/4 teaspoon salt 1/4
teaspoon black pepper (to taste) 1/2
cup vegetable broth Directions: First, cook your lentils according to the package instructions, keeping them a bit firm since they will continue to cook when added to the Sloppy Joe sauce. While your lentils are cooking, chop your onion and pepper and mince your garlic. Heat the olive oil and cook the onion and pepper for 5-8 minutes. Once the onions are soft, add the garlic, chili, paprika and mustard and continue cooking for another minute or two, until the garlic is fragrant. Once the lentils are done, add them to your spiced onions and peppers along with the tomatoes, tomato paste, brown sugar/maple syrup, apple cider vinegar, salt and pepper. Bring the mixture to a simmer and add the broth. Simmer until the mixture has thickened to your liking, about 15-20 minutes. This recipe makes enough to stuff 6 buns. Copyright © 2014 Peel, Inc.
