Recipe Roundup Let's face it, folks. November is all about the bird. It is the centerpiece of our Thanksgiving meal, sandwiches the next day, and then soup for days after that. It had always been a mystery to me how homemade turkey soup was made and why my mother would happily "dispose" of the turkey carcass for me after the holiday. Last year I finally made her stay with me overnight and the next day she shared with me how to make a wonderfully tasty, healthy, homemade turkey soup. The fabulous thing about this recipe is you can swap out starches and vegetables for things you like. You can also put single serving portions in containers and freeze them nicely. I'll never buy canned soup again. Hope you enjoy! Copyright Š 2014 Peel, Inc.
Turkey Soup 1 Turkey carcass (or assorted parts) 1 onion, diced vegetables of choice - carrots, green beans, onion, celery, mushrooms, etc, cut into small pieces starch of choice - egg noodles, rice, diced potatoes, etc Bouillon cubes or Better Than Bouillon Salt and Pepper to taste Place the carcass in a large pot. You may need to break it into pieces to get it in. Measure the amount of water you add to just cover the carcass. Put in bouillon for that amount of water. Add large chunks of onion. Bring to a boil and simmer for 1 hour. Remove the carcass and other parts from the broth. Strain the broth and put it back in the pot. Pull the meat from the carcass, cut into small pieces and put into pot. Add vegetables and starches starting with the ones that take the longest to cook. Once everything is cooked, enjoy!
