Independence Day Annual Celebration & Picnic 2019 The July 4th event seems to have broken all records this year. The event was held on Saturday, July 6, 2019 and the weather cooperated beautifully. The residents and kids enjoyed a bountiful spread of food including baked potatoes, hot dogs, hamburgers, and all the fixings. Cotton candy, pop corn, cold drinks, watermelon etc., added to the selections available. The Pearland Fire Department brought one of their hook & ladder trucks for the kids to see firsthand. The train made multiple trips around and around and kids never got tired of riding. The children thoroughly enjoyed all of the games, rides and activities. Donations to the food bank also exceeded previous years and will be greatly appreciated by those in need. Our thanks to all of those who attended and helped to make it such a success. Also, thanks to all of the hard workers who braved the sun and hot temperatures to make everything run smoothly.

RECIPE OF THE MONTH

Watermelon Salad 2 tablespoons white wine vinegar 1 lime, zested and juiced 1/4 cup extra-virgin olive oil 1 red onion, thinly sliced 4 cups seeded watermelon chunks 1 cup crumbled feta cheese 1/4 cup mint chiffonade 2 cups baby arugula Directions: Add the white wine vinegar, lime zest and juice to a small bowl. Whisk in the olive oil and season with salt and pepper. Add the thinly sliced red onion and let marinate for 5 to 10 minutes as you prepare the rest of the salad. Add the watermelon, feta, mint, and arugula to a large bowl. Toss with the vinaigrette and serve immediately after dressing. Recipe courtesy of The Neelys, www.foodnetwork.com
