This Directory is your guide to locating food grown, raised and 2018 processed in the Central Kootenay. Whether you are an area resident who wishes to learn more about local food, a processor who wants to source organic ingredients, a restaurateur who wishes to feature the bounty of the Central Kootenay on your menu, a tourist who wants to sample local fare, or a farmer who wants to know what the market opportunities are, this Directory is for you. Among the nooks and crannies of the Central Kootenay is a diversity of farms, big and small, as well as numerous processors. From strawberries to
onions, from bone broth to fine gin, our region benefits from a host of dedicated, passionate and creative entrepreneurs who bring their great food to our tables. This annual print Directory will help you learn about the wide range of foods produced here. Explore the offerings in the different areas of the Central Kootenay or narrow in on a few favourite products and find out who has them and where they can be found. Each business entry includes information on when and where their products are available and how to contact them. And if you are not certain when things may be ready, check out the Seasonal Guide on page 28. The map on the centre pages will inspire you to explore the wide range of food choices in the Central Kootenay.

About the CKFPC The Central Kootenay Food Policy Council builds a just, sustainable and prosperous food system in our region by identifying challenges and opportunities and by advocating for effective food policy. The Council was formed in December 2016 and consists of up to 26 individuals who reflect the diverse regions and population of the Central Kootenay. We are a link between the work in food systems and our local governments. We seek to connect and co-ordinate initiatives across the region,
reduce redundancy and enhance the impact of human and financial resources invested in the food systems and communities of the Central Kootenay. Sometimes the Food Policy Council leads but we also function as a catalyst and support for initiatives driven by others. As part of a broader community, we work to foster vibrant and just food systems across the Central Kootenay, where our focus is on improving the policy environment for food production and access in the region.
While our region features many creative and interesting people, it does not always have enough or suitable jobs for all those who choose to live here. For those who may be struggling with food insecurity, we have a list of emergency food services on page 29 that includes information on what is offered, the location of the services and when they are available. You can also explore the list of farms, products and food processors by using the online version of the Directory at centralkootenayfood.ca Like the print version, you will find a listing of farmers markets, food festivals, and farm & food organisations based in the region.

OUR CHERRIES: Webber’s mountainside cherries is a small, family run, cherry orchard located at the base of the Purcell mountains in beautiful Wynndel BC at the south end of Duck Lake and the gateway to the famous Kootenay Lake. The lapin cherry is a delicious, large, dark red, sweet, firm and juicy variety. We have been told, many times, that our cherries are the best they have ever tasted and we attribute that to the cool Wynndel evenings and excellent soil. GUEST HOUSE: Surrounded by cherry trees, we also have the old family farmhouse that is rented out as a vacation rental. CHOCOLATE: In the fall our delicious chocolate covered cherries are available at the select Christmas markets that we attend. Wholesale Only Food Processor We are a pickle cannery located in Creston, which we started 10 years ago. We grow most of the vegetables on our farm or purchase local vegetables to make 35 plus different pickles. We preserve naturally and use top quality vegetables to produce crunchy pickles which are enjoyed by many. We sell mainly wholesale to stores throughout the East and West Kootenays and into Kelowna. We do sell some retail out of our on-farm store. As well we have an egg grading facility for the brown free range eggs that our hens produce and that we sell only to local stores in Creston. We are proud to say on our farm, that nothing gets wasted – the cut off or discarded vegetable scraps from the pickle cannery are fed to the chickens, the hens produce eggs which we sell fresh or pickle, and the chickens produce manure that we place on our garden soil to enrich it producing wonderful vegetables. Frank grew up in Creston orchards while Barb married into the operation in 1980. Together, they owned and operated a fruit stand in Creston for 16 years while raising their family. During that time, many mistakes were made and lessons were learned. Then 10 years expat work/ travel was followed by a return to the Creston Valley and 5 years of cherry harvesting (about 400,000 lbs annually). In 2012 the land was purchased at the corner of 36th Ave and Hwy #3. Planted to a mixed orchard, it became the base for the Fruit Stand which opened in 2014. The fruit stand is hard work, yes. Long hours, yes. But rewarding in every way. Frank, Barb and staff work about 25 acres of market garden and 18 acres of orchard - enough produce that 98% of what is sold in the stand is grown by Wloka Farms. Our garden is on one acre of gently sloped south facing land above the shores of Kootenay Lake. We grow many different edibles, trying new ones and new techniques each year. We are interested to hear from our customers about their needs and appreciate suggestions . Raised beds and relay planting allows us to grow a good variety of fruit, vegetables and herbs in a limited space. Because of the small size of our gardens we are able to do 95% of the work with hand tools. This enables us to further reduce our carbon foot print. The Chuckleberry community is based on 21 acres of land that has been established for 18 years. Of that, one acre is being utilized for growing a wide variety of crops. We are in our seventh farming season. The farm is based in the middle of a south facing forested mountain side. Our microgreens crop is grown in a 600 sq ft in-ground greenhouse that is predominantly heated and powered by the sun. Of our outside crops, about half are grown in insulated raised bed hoop houses that support year-round cultivation. Chuckleberry Community Farm grows food not just for physical nourishment, but for relationship development, for personal growth and for the building of community resiliency. Like most farms, at one time people produced nearly everything they would need to eat and feed to their own animals. We seem to be going full circle back to that food system. Lamb and chickens are available from early summer through late fall, and turkey is generally raised to be ready for the Thanksgiving and Christmas feasts. Well-packaged frozen meat is high quality and available year round. JULY

More broadly, food security is about the degree of control we have in the present and in the long term over the food we need to feed ourselves, our families and our communities. The measure of our or any community’s compassion and health can be found in how well we care for our disadvantaged

enjoy spring asparagus and strawberries... Omelet with Asparagus and Spinach
Serves 2 In a small skillet sauté the following: 2 tsp butter 2 green onions, minced 4 spears asparagus, bottom broken off and thinly sliced 2 cups baby spinach Beat together and add once veggies soften: 3 eggs Pinch salt and pepper 2 tbsp milk ½ cup grated cheddar cheese Add to the skillet and stir to mix, reduce to low and cover with a lid, cook until eggs are cooked and serve.
Dandelion Greens and Strawberry Salad
Serves 2 In a salad bowl combine: 4 cups fresh dandelion greens, washed and chopped ¼ cup green onions or chives, minced 1 cup fresh strawberries, sliced 1 handful pecans 1/4 cup crumbled feta cheese Dress with: 3 tbsp olive oil 1 1/2 tbsp balsamic vinegar ¼ tsp salt Serve immediately.

Creamy Asparagus Soup
Serves 2 You will need: 1 pound of fresh asparagus, trimmed and very thinly sliced, see directions below. 2 tbsp butter or coconut oil 1 cup minced shallots 2 cloves garlic, minced 3 cups milk, dairy or almond 1 tbsp flour, can be rice flour ½ tsp salt ½ tsp dill weed Pinch cayenne Pinch black pepper Pinch cinnamon Directions: Snap off the tough bottoms of your asparagus and discard, cut off the tender tips and set aside. Heat the butter in a soup pot and sauté the garlic, shallots and asparagus until tender. Add water as needed to prevent sticking. In a separate small skillet sauté the asparagus tips in a little butter until just tender. Set aside once again. Combine the milk with the flour and stir well, add to the veggies along with the other ingredients and simmer until thickened. Place your soup into a high action blender and puree. Pour back into the pot. Add the prepared tips, stir and serve.
Chocolate Dipped Strawberries
Pasta with Fresh Greens and Asparagus
Serves 2 You will need: 1 tbsp Olive oil 2 cups whole grain pasta 2 cloves garlic 1 small leek, minced 8 spears Asparagus, sliced thinly with bottom part removed 4 cups fresh baby greens ½ tsp salt 1/3 cup feta cheese, cubed Sliced Olives for garnish. Directions Cook the Pasta, drain and set aside. In a heavy skillet sauté the leek and garlic for about 1 minute, add Asparagus and sauté until just tender. Add the pasta, greens and salt and cook about 2 minutes more. Remove from heat, fold in feta, garnish and serve. Can be served with baked chicken.
Thai Mango Salad
This is a very simple treat and can be made with help from little hands. The trick is to ensure that your strawberries are completely dry as any spots that are wet will not take the chocolate coating. You can get excellent quality bulk chocolate in both dark and milk at the Kootenay Co-op. You will need: 1 pound of fresh, dry strawberries, whole 6 oz of chocolate, milk or dark Parchment paper and a cookie sheet Directions: Chop the chocolate and then melt it carefully in a double boiler, stirring. As soon as your chocolate is melted dip the strawberries into it and place them on the parchment. Chill and serve. If you are very generous with the chocolate you may need more than 6 oz.
You will need: 2 large firm mangoes 1 cup minced cucumber 2 tbsp fresh basil, chopped 2 tbsp fresh cilantro, chopped 1 hot chili, minced ¼ cup peanuts, roasted and chopped 1 tbsp honey ½ tsp ginger, grated ¼ cup lime juice ½ tsp salt or to taste 1/8 cup Bragg’s liquid Crisp, washed lettuce for serving. Directions: Peel and slice mangoes into a bowl. Add the cucumber, herbs and peanuts. Combine the honey, ginger, lime juice, salt and Bragg’s and mix together, add. Toss well and serve on a bed of crisp lettuce.

Baked Power Greens Omelet
Garlic Scape Pesto
Serves 4 5 farm fresh eggs 2 tablespoons water Salt and pepper 2 tablespoons butter ¼ medium onion ½ cup chopped mushrooms 2 cups chopped leafy greens (kale, spinach, chard, bok choy or any other leafy green you may have growing!) ½ cup grated sharp cheddar cheese Preheat oven to 400°F Beat eggs, water, salt & together. Melt the butter in a heavy ovenproof pan and then add the onions and mushrooms. Sauté for 3 minutes. Add leafy greens and sauté until greens reduce by about half. Pour the egg mixture over the onion, mushroom and greens mixture and then sprinkle with the grated cheese. Bake in the oven for 15 to 20 minutes. When the egg is set and the cheese has melted, the omelet is done Serve with a local seasonal fruit and a piece of fresh bread! This recipe can be customized using any vegetables or cheese your heart desires. It also can double as a satifying dinner on those nights when you feel like breakfast for dinner.
From The Spruce 10 to 12 large garlic scapes (cut into ½ inch pieces) ½ cup pine nuts (or walnuts) ¼ - ½ teaspoon salt ½ to 1 cup olive oil ½ to 1 cup grated Parmesan Cheese Optional: 1 cup basil leaves Add garlic scapes, basil, and salt to the large bowl of a food processor. Start processing, adding oil slowly. Stop processing and scrape down the sides of the bowl with a rubber spatula. Once a smooth paste has been achieved, add parmesan and process until completely mixed in. Stop processing and add the nuts. Pulse processor until nuts are roughly chopped and fully mixed in. Serve with on a sandwich with favourite bread, goat cheese and loaded with local, seasonal vegetables like tomatoes, cucumbers, radishes, peppers and micro-greens. Other serving suggestions: • Grill sausage, chicken or fish and serve with pasta & garlic scape pesto. • Spread fresh ricotta cheese on a toasted baguette – cover with garlic scape pesto. • Add additional olive oil to thin down pesto and drizzle over tomatoes and mozzarella. Storage suggestions: Using an airtight container put your pesto in and cover with a thin layer of olive oil before closing the lid. Will keep refrigerated for a week or two. Spoon garlic scape pesto into ice cube trays. When cubes are frozen, remove and transfer to a plastic freezer bag.
My Baba’s Dilly Potatoes 5-7 cups of new baby potatoes, washed and cut in half 2-3 tablespoons butter ¼ - ½ medium onion Salt and pepper 1- 2 tablespoons flour ½ - 1 cup of whipping cream 2-3 tablespoons fresh dill *These are all approximate amounts. These potatoes are best made when eyeballing the ingredients and channelling your inner Baba Put the potatoes in a pot, fill with water to cover and boil them until they are just soft. Drain cooked potatoes and put them back into the pot with the lid to stay warm. In a large fry, melt butter and sauté onions until soft. Add flour and let cook for about 1-2 minutes. Add in the cream slowly, stirring in the onion flour mixture Once all the cream is combined, add dill. Finally, add the potatoes making sure to cover all the potatoes in the dilly cream sauce. Serve with any protein of your choice (barbecued salmon, tofu or chicken) and other seasonal vegetables like green beans. These potatoes are awesome cold the next day.

warmth and comfort for fall Mary-Lou Bread
1 - 1.5 cups freshly flaked oats 1 – 1.5 cups mashed potato, dried cereal or cooked grain 4 tbsp butter 2/3 cup granulated sugar cane juice 1/2 cup molasses (or 1/3 if you want to reduce the molasses flavour) 3 tsp salt 4 cups hot water 1 tbsp yeast 1 tsp honey or sugar 1/2 cup lukewarm water 4 - 6 cups whole wheat flour 6 cups unbleached wheat flour or as much as you need to get the dough to the desired consistency. In a large bowl combine first seven ingredients and stir well to blend. Set aside and let cool to lukewarm. Meanwhile, dissolve honey in the 1/2 cup warm water and sprinkle yeast over the honey water and let stand ten minutes or so until dissolved. Add yeast mixture to the oat mixture and stir thoroughly. Then stir in flour, first the whole wheat and then as much of the unbleached to form a stiff dough. Knead on a floured board until there is no stickiness. Put the dough in a greased receptacle twice the size of the dough. Cover with a cloth and set in a warm place. Let rise until doubled or more (1 2 hours). Punch down and divide into three or four portions for loaves. Shape into fat sausages about the length of your loaf pans. Place in buttered pans, cover and let rise again in a warm place until doubled. Bake at 375F for 50 minutes or until the loaf sounds hollow when you tap it with your knuckle. Take out of the pans and let cool on racks. Makes 4 loaves.
Minestrone
2 tbsp vegetable oil or other suitable fat 1 medium onion, chopped 2 cloves garlic, minced 3 cups vegetable stock or water 3 cups shredded green cabbage 1.5 cups cooked beans (kidney, black, heritage variety) 4 large tomatoes chopped, or 850 ml or so canned tomatoes 2 large carrots, diced 1 tsp salt 2 tsp each, dried basil and oregano 1/3 tsp pepper In a large saucepan, heat the oil over medium low heat and sauté the onion and garlic until golden. Then throw in all the rest of the ingredients and cook over medium heat until the vegetables are tender - 20 minutes or so. Makes a large pot of yummy soup that will serve 4 - 6 people, depending on their state of hunger. Serve with a flat bread. **This is a good soup to make when cabbage is in season and plentiful. Using dried kidney beans also helps keep the cost down. Other than chopping the cabbage, this soup is easily thrown together and wonderfully flavourful in the end.
Apple Danish
2 1/2 cups flour, spelt or wheat 1 tsp salt 1 cup butter, hard 1 egg ******************************* 1 C. flake or crispy breakfast cereal 8 - 10 tart apples, pealed, cored and sliced (approx. 8 cups) 3/4 cup granulated organic sugar (use less if apples are sweet) 1 tsp cinnamon Pinch freshly grated nutmeg (optional) Combine flour and salt; cut in the butter. Beat egg in measuring cup; add enough water or milk (dairy, soy or rice) to make 3/4 cup liquid if using wheat, 2/3 cup liquid if using spelt. Mix well; stir into flour mixture. On floured surface, roll half the dough to 17 X 12 rectangle; fit into and up the sides of a 151/2 X 10 1/2” baking pan. Sprinkle with cereal flakes (these help absorb the apple juice which as the apples cook); top with apple slices. Combine sugar and cinnamon and nutmeg if using; sprinkle over apples. Roll remaining dough to fit the pan and place over apples. Seal edges, cut slits in top and bake in 375F oven for 50 minutes. Great served warm or cold.

1) Egg Fu Yong with Bone Broth Gravy A snowy, stay at home winter morning requires a warm and salty egg dish. You’ve probably tried this Chinatown classic before but here it features collagen rich bone broth gravy that will have you licking your breakfast bowl. Throw another log on the fire! Serves 2
Eggs - 4 Mung beans – 1 cup or large handful Green onion, sliced – 4 onions Mushroom, sliced – 1/2 cup Water chestnuts, chopped – ½ cup Celery ,thinly sliced – 1 stalk Wild Peach medicinal bone broth – 1 cup Tamari- 1 teaspoon Cornstarch- ½ tsp Vinegar - ½ 1tsp Sesame oil- ½ tsp Sugar – ½ tsp Cook vegetables in a bit of sesame oil until wilted. Set aside Crack eggs into a bowl, whisk with a fork. Pour whisked eggs over vegetable and mix together. Put one half of the mixture into a hot pan greased with a little sesame oil. Let it spread out – like a big pancake. Once it is holding together and simmering at the edges flip to cook on the other side. Flip the egg out of the pan onto a plate and cook the second half of the egg mixture. Meanwhile, put Broth, tamari, vinegar, and sugar in a pot. Whisk in cornstarch. Bring mixture to a boil and as it starts to thicken turn off the heat and spoon over the egg pancake. Yum!

In Chinese Medicine folklore about living well in winter there is lovely poetry about it being nourishing for our bodies to hear beans bubbling on the stove. This is part of an understood connection drawn from the depths of the winter season through our ears to link to our kidneys. As our ears tune themselves to sounds all around us, they root us to our present moment, grounding us. The kitchen sounds of food simmering on a cold winter day are a comforting sort of self-care all on their own. This recipe contains blood building and mineral-rich local beans fortified with medicinal bone broth. Serves 2
This is my family recipe that I count as some of my favourite food going. The goal is tangy chicken that falls off the bone and rice long simmered in broth until it takes on an almost risotto like consistency. This is comfort food that satisfies while also delivering a dose of immunity building tonic herbs. And it’s a one pot meal. Serves 2- 4 people
Simmer away! Black Beans - 2 cups. (or any kind of bean. We had some local Jacob’s Cattle beans from Grand Forks that were amazing! Experiment with different kinds.)
Dulce - 1 TBS Wild Peach Medicinal Bone Broth - 4 cups around 1 litre (one Package) Cumin - ½ tsp Bay leaf 1 each Soak beans overnight - drain off water and put back in pot. Add broth and spices. Simmer for 2-4 hours. Stir often. Add more broth or water if needed. At the very end stir in a dollop of butter or coconut oil. Top with some chopped tomatoes, cilantro or sour cream.

Fryer chicken (cut into pieces) Oil – ¼ cup 1 Lemon – cut in ½. Juice half and thinly slice half Oregano – ½ tsp Garlic Powder- ½ tsp Salt and pepper – to taste. Remember that the broth is salty too. Rice – 2 cups Wild Peach Medicinal Bone Broth – 4 cups (1 pkg) Mix lemon juice, oil and spices together. Whisk with a fork to mix. Put chicken is a mixing bowl or zip lock bag. Coat with lemon juice and oil mixture. Let marinate for a bit. Place chicken pieces in a shallow baking dish. Bake at 375 degrees for 30 minutes. Add dried rice all around the cooking chicken pieces. Pour broth all over chicken and rice. Place lemon slices on the chicken pieces or the rice. Put back in the oven for around 40 minutes. Check occasionally and add extra broth or water if the rice is still appearing hard or uncooked or all the moisture has absorbed. Cover with foil and let rest for 10-15 minutes while you prepare a salad or set the table. Enjoy!
