Today’s couples aren’t afraid to stray from tradition, and they’re coming up with some exciting ways to spice up the buffet line. The most popular trend we’re seeing is the incorporation of various food bars at wedding receptions. There are tons of options that you can do, from cupcakes to candy to chips and dips. Let’s check out a few of our favorites!

Sliders. These portable little bites have ballooned in wedding popularity over the past 5-10 years. They can be made of anything from burgers to buffalo chicken to gyro meat. Serve these up with a condiment station, and you’re bound to delight your guests.

International themes. Think Greek by offering a food bar ďŹ lled with different kinds of olives, Greek cheeses and yogurt, and bite-size spanakopita, or a Mexican theme with a taco, salsa, or churro bar, or an Asian theme with stir fry or sushi. This is a great way to bring out your heritage! 27


Breakfast. If you’re having a brunch wedding, choose a favorite breakfast food items and feature it. Think pancakes, waffles, biscuits, omelets, or even bacon.

Milkshakes. Ice cream bars are great, but imagine having a station where guests can create their own handspun milkshakes. Talk about nostalgic, memorable, and delicious!

Carnival fare. Offer up flavored popcorn, different kinds of caramel and candied apples, corn dogs, colorful cotton candy, or some other kind of carnival fare. Guests won’t be able to resist these indulgent favorites. 28


Donuts. From sweet to savory, you can’t go wrong with a donut bar. Stock this bar with filled donuts, traditional ring donuts, donut holes, and a wide variety of dipping sauces for guests to try. This is a food bar that guests will love any time of the day.

Potato bar. Almost everyone enjoys potatoes, and they’re not very expensive. Present guests with whipped potatoes, French fried potatoes, and baked potatoes along with a variety of toppings and let them create their perfect spud.

Fruit and champagne. Consider providing a fresh and vibrant food bar with an assortment of sliced fruit served with champagne. Guests can eat or drink them separately or pair them together. You can even include some creative recipes for them to try. There are no rules when it comes to creating food bars. Consider how the theme suits your wedding and your tastes, and have fun with it! Love Is Brewing!

Bride-to-bes, their family and friends shared a FUN evening together at the Embassy Suite’s Spring Bridal Show. Upon entering the Ballroom, they were greeted with music from the Ambridge Steel Drum Band in the enchanting atmosphere of Embassy’s glass-top atrium - which features a beautiful cascading waterfall and koi pond. Some of the area’s best wedding vendors were on hand to help the bride-to-bes plan their perfect wedding. Guests were treated to a wine, beer and bourbon tasting, along with a huge table of tasty hors d’oeuvres. Prizes were given

away, including the Grand Prize of a Rehearsal Dinner for 20 people at the Embassy Suites. I distributed lots of copies of Pittsburgh’s Perfect Wedding Guide Magazine to everyone who stopped at my table. And had some wonderful chats with brides and their moms - everyone was so friendly! Can I afford a wedding planner?

What if the music doesn’t fit the mood?

A good, professional wedding planner can save you up to 25 percent of your total wedding budget. Ex. $26000 wedding, savings up to $6500 I had a bride I am doing day of coordinating services for, recently posting on Facebook that these last minute things she had not thought of were really adding up, and were going to have to put the rest of the wedding on credit cards. I immediately reached out to her and asked what she needed and how I could help. She needed linens and to pay less for the rehearsal dinner (she and her fiance’ are paying for the whole wedding alone). Within an hour, I saved her over $1000 on both through negotiations and my past work history with my vendors. I wonder how much more I could have saved her if she would have started with me right after she said “yes”?

Your music should reflect your personality and create the ambiance you have been building up to. Take time to meet your entertainer and listen to music clips. When I am helping a couple choose a band or DJ, I first ask questions, starting with where will the ceremony be. A lot of brides and grooms are opting for same location for their ceremony and reception. This is great because with most entertainers they can accommodate for that! Instead of you spending more money to get one entertainer for the ceremony and another for the reception when they are in the same location, you can SAVE money by using the same one. A professional entertainer will sit down with you and go over what your vision is. They can give you song suggestions for the ceremony and

reception. I know one DJ that creates specialized entrance music so that each attendant can walk in to a different song! Cake cutting can be FUN or playful or solemn and an entertainer can provide that thus creating a mood that reflects both of your personalities! How about the first dance? Mother/ Son, Father/Daughter? Do you want to cry, laugh? What emotion are you looking to share with your guests? Did you know that even if you dance with your dad to “Butterfly Kisses” you can control whether or not you cry? Yes!! Here is one of my secrets…..ponder when you and your dad laughed so hard over something super funny. And when you are dancing with daddy, that is what you talk about - it really works! Same goes for you guys! Mom is going to be about ready to cry, make her laugh and keep it light. How much more fun you will have, go ahead try it! (Just remember to wear waterproof mascara, just in case - LOL). What if you go over your budget.....drastically?

It will happen before you know it, when you plan alone. You don’t want this to happen, as one of the top fights for newlyweds is money. I like to work with what I call a true budget. The more you


refuse to delude yourself, the easier this will be. So be honest, dream, write everything down that you want no matter how wild it may be. I had a bride once, who wanted 2 dolphins jumping in the background forming hearts for her ceremony! So go ahead and write down carriage ride, ice sculpture, and anything else you have seen on Pinterest. List out who all will be sharing in the financial responsibility for this wedding. Let’s say it’s his parents, your parents and both of you. Have dinner with his parents and tell them, “We are preparing a true budget and you both said you would help. We need to know how much you will be contributing and when you will be able to give it to us”. Let him do the talking to his parents while

you are holding his hand and giving him support and then have dinner with your parents. You talk while he holds your hand and supports you. Then the two of you sit down and figure out how much you can realistically afford without going into debt. Then you can let me negotiate for a carriage ride, ice sculpture, or whatever else you have been dreaming of and make sure you stay within budget. I don’t know if I can help you with dolphins, but maybe your cute doggie? What if your vendors arrive late?

Plan ahead! Put someone in charge of this. You do not want chaos and/or vendors calling your cell while you are getting your hair and make up

done! Make a spreadsheet with all your service vendors’ names, phone numbers, and arrival times. Be sure to disperse this spreadsheet to

your designated person in charge and make sure they have it handy on the wedding day - just in case it’s needed. What if the food is inedible?

Try before you buy! Before you choose a venue or caterer and before you put the deposit down, make sure you will have a food tasting. Questions, questions, questions! I cannot stress enough to keep asking until you completely understand what will be served. Don’t worry what they think. You have to get this right Ask them - Does it cost to sample your food? Will we get a full sit down dinner, buffet, or just samples from your menu? Can we select exactly what we would like to taste? Can we bring our parents who are paying for it? Is it private or will we be with other couples for our food-tasting? Most venues and caterers will more

than likely want to prepare for you to taste what you are interested in serving for your reception. What if there is a fire or other emergency?

We all think it won’t happen to us. Be sure the venue has an exit strategy so that everyone can get out, calmly, safely, and quickly..... just in case, it is better to be prepared. Also, you may want to consider buying “wedding insurance�. Check your vendors first as it might be a duplicate service. I am fully insured for up to $1,000,000, and most of the vendors I work with are insured. I just love having a safety net for you and me!

Who should I tip?

Anyone who served you. Especially those who did outstanding work. It is nice to be appreciated. Caterers and limos usually include a gratuity, so check first unless you want to double tip! Should you get married in a church, the standard is a donation to the church for $100. Make-up/hair, bartenders, and chauffeurs usually get 10% of the bill. Planners, Photographers, and DJ/Band anywhere from $50-$100 Another train of thought is to not tip the owner of a business. Can I just say that I personally feel that not tipping someone just because they own their

own business is rude. I tip my hairdresser because she makes me look like Farrah Faucet and I LOVE it. I can’t do that, so I tip her because I am super happy with her work!!

So I say use personal judgment, definitely put it in your budget so you do not go over, but make your own decisions. If someone helps your day run smoother, makes you look like a movie star, or keeps your guests having FUN and entertained all night, say Thank You and pay it forward. Good karma will come to you! What is a great way to end the wedding night?

Plan for a wedding suite so you are well rested for your honeymoon. You may qualify for a FREE room when enough of your guests stay at the same hotel. A lot of times if your wedding venue is at a hotel, they can throw that in complimentary! Maybe elaborate on how some hotels will give you a wedding suite ‘for free’ if enough of rooms are blocked for your guests - or - give you a ‘free’ wedding suite as part of the wedding reception package when booked, if the reception is held at the hotel.

Most couples think of the big expenses when it comes to planning a wedding: food and beverage, the flowers, the photographer, and so on. Many couples fail to budget for the smaller or unexpected expenses, which can really add up and send you into a budget crisis. Here are some wedding costs that you may not know about, but should: PHOTOS AND VIDEO Reprints and Duplication: Photographers and videographers have various ways of structuring their packages. Some charge for time only and surrender a high resolution DVD of the images. Others have a package that includes their time and an album. There are also some who charge for their time and then give a credit towards purchasing products. Make sure you know what end result you want when choosing your vendors. Overtime: Pay careful attention to the amount of time the photographers and videographers include with their packages. I’ve found that six hours of coverage is usually sufficient for a ceremony and reception that takes place in one location. Eight hours is better if the ceremony and reception are in different locations or if you would like photos and video of you and your wedding party while you are getting ready. Be mindful of the time that’s included and be sure to include overtime in the original budget if necessary. FORMAL WEAR Wedding Gown: The most overlooked expense in wedding gowns is alterations. Alteration fees can add up very quickly. Plan to add $150-$300 for wedding gown alterations. Accessories: Don’t forget about jewelry, veil, shape wear, and the bride’s shoes. These can add on another $300-$800, depending on the bride’s taste. Tuxedo Rentals: Late return fees. Make sure you know when your tuxedos need to be returned. Keeping them extra days can cost you a lot of money. Find someone trustworthy to return them in a timely manner or offer that service yourself. Weddings can take more than a year to plan. In the process, couples can lose sight of what is arguably supposed to be the most romantic night of your lives . . . your ďŹ rst night as a married couple. We thought we’d share some tips to make sure your wedding night is everything you hope it will be!

TO PLAN YOUR ROMANTIC WEDDING NIGHT: Wrap things up at a reasonable time. If you don’t want to be so exhausted that you head to bed and immediately fall asleep, get a full night’s sleep the night before and end your reception at a reasonable time. Remember, you and your spouse can leave a little before everyone else if you want. You’re the guests of honor! Curb the alcohol intake. Many couples want to celebrate their nuptials with champagne and/ or cocktails, and that’s okay. It’s a celebration, after all! But know your limits, and keep the coming wedding night in mind. You want to be clear-headed and alert to focus on your new spouse. Get away from it all. Consider booking a room somewhere away from where your guests are staying. If you stay near everyone else, you run the risk of getting disturbed by well-wishers, or even thinking more about whether your guests are comfortable than about your new spouse. Stay somewhere sumptuous (or at least nicer than usual). It’s your wedding night…of course you should indulge! Even if you can’t afford the honeymoon suite, spring for something nicer than you usually would. It will help to set the mood if you’re feeling like royalty. Have a late-night snack. Many couples get so caught up with making the rounds to thank their guests and dancing the night away that they neglect to eat much of their reception food. Arrange for a light snack of cheese and crackers, chocolate-covered strawberries, or something similar that the two of you can enjoy while you relax and revisit the wedding day together. Exchange gifts. Some couples exchange tokens of affection before the wedding, but it’s also perfectly acceptable to exchange them after the wedding. In fact, we think it’s a lovely way to begin your new life together! Yes, your wedding night is meant to be romantic, but be realistic. It will come at the end of an exciting and exhausting day. Don’t put too much pressure on yourselves to make it “perfect.” Just celebrate your love for each other and prepare for a very happy marriage to come! 47

HERE ARE SOME SUGGESTIONS ON

How to Make Your Planning AS STRESS-FREE AS POSSIBLE:

Give yourself time. The more time you have between your engagement and the wedding day, the more you can pace yourself on the planning. For instance, it’s much less stressful (on you and your budget) to interview and hire vendors over a few months than to try and fit it all into a few weeks.

Hire a wedding planner. If your budget permits it, hire a wedding planner. He or she will take the lead in your planning, guiding you throughout the process and serving as your voice of reason in times of stress.

Go on “plan-free” dates. As often as possible, take time with your future spouse to do something you both enjoy. Make that time “plan-free,” and maybe even impose a fun consequence like having to give out a kiss - if they slip up and mention the wedding plans. Keep it simple. I encourage couples to simplify as much as possible as they plan their weddings. Rather than try to book a separate ceremony and reception space, you might consider booking everything in one location. Rather than pay for two different floral setups, repurpose some of your ceremony floral.

By that time, the budget can be greatly depleted or nonexistent. What can you do if you want to give your guests something nice as a thank-you without going broke? Below are some fantastic budget-friendly wedding favor ideas. The best part is that guests can keep for as long as they’d like (as opposed to food). Try these out or come up with your own: Luggage Tags. Destination weddings are popular in Florida, and some couples have given their guests personalized luggage tags as favors. There are many options out there, many for less than $1.50 each! Sunglasses. If you’re having an outdoor wedding, sunglasses are a must! Sites like Etsy customize sunglasses with your names and the wedding date, making them great wedding favors. Each pair is less than two dollars. Personalized Lip Balm. Not only is this an inexpensive gift (pricing out at less than 50 cents each on many sites), but it’s practical too. You could place it in a pretty bag with a travel-sized hand lotion and small packs of tissues and make wonderful care packages as your favors! Lottery Tickets. This one may seem odd, but it can actually be a lot of fun for your guests. Place each ticket in a specially-designed holder. Each personalized favor will end up less than three dollars.

Personalized Tea Bags and Tea Infusers. If you’re having a garden wedding, you can find some absolutely lovely tea-inspired wedding favors such as the ones on Beau-Coup.com. Personalized tea bags placed in each teacup would be a nice touch, as would a personalized tea infuser. Together, they cost less than five dollars. Cookie Cutters. Some brides love the idea of gifting your guests with cookie cutters attached to beautiful recipe cards featuring your favorite cookie recipes. If you’re not into baking, you could just gift cookie cutters personalized with your names and the wedding date. Personalized Mason Jars. Rustic-chic is still popular, and Mason jars cost less than a dollar each. You can create personalized labels in your wedding colors and tie them around the jars, or use etching tools to personalize the jars themselves. For a little extra money, you could even include something in the jars, like the ingredients for grown-up hot cocoa. Donations. If you and your future spouse are more into philanthropy than favors, consider making a donation in your guests’ names to a charity of your choice. My mom’s dress had a beaded neckline to match my beaded sash, and my mother-in-law’s dress tied in the lace element of my dress with a beautiful lace overlay. Grooms, customize your mother-son dance song. There are countless blogs and articles naming the most popular mother-son dance songs, but if none of those seem to represent your relationship with your mom, have your band or wedding singer customize lyrics to make them better fit. For example, my husband changed the words to “The Best Day” by Taylor Swift to say: I have an excellent [mother]. [Her] strength is making me stronger. God smiles on my little [sister]. Brides, give her your bouquet instead of tossing it. HERE ARE TEN OF THE BIGGEST CULPRITS AND HOW TO AVOID GETTING TAKEN BY SURPRISE:

1 POSTAGE.

It can be hard to know exactly how much the postage for your wedding invitations will cost. Wedding invitations come in many shapes and sizes, and the contents will weigh differently depending on what you include . . . then there’s the postage for the RSVPs. Ask the stationer if they can estimate postage costs before you make your invitation decisions. On average, you’ll want to budget at least $150 to mail about 100 wedding invitations.

ACCESSORIES.

Couples don’t always think about necklaces, earrings, bracelets, belts, tie pins, cufflinks, socks, shoes, or watches when they set their wardrobe budget. To cut down on unexpected expenses, consider borrowing some of these items from friends or family members. It will make for nice sentiment. 66

By nature, a buffet offers guests the option of eating as much food as they want. If they don’t fill up on their first visit to the buffet, they can go back a second or third time, potentially making your food costs skyrocket. WARDROBE ALTERATIONS.

You’ve heard this before, but it bears repeating. Wedding gown alterations aren’t cheap, and many brides and bridesmaids forget to include them in their wardrobe budget. Depending on the style of the gown and how much work needs to be done, brides can easily expect to pay several hundred dollars in alterations.

Brittany and Justin married in Lake Como on one of the most beautiful corners of the lake at Villa La Cassinella. 60 guests joined them for a threeday aair. The festivities started with a family style welcome dinner at the intimate Al Veluu overlooking the lake, which featured the Milan symphony orchestra. The wedding day started with guests being picked up by private boat and delivered to the Villa. The head mixologist from the Bvlgari Hotel Milan curated the cocktails for the special day and attendees were welcomed with imported champagne from France and fresh barriers, selected by the bride. The bride was preceded by her 3lb maltipoo and her mother as a string quartet serenaded her down the aisle. Dinner was held in a magical tent featuring endless candles, silk tablecloths and gold-rimmed china and crystal. The bride and groom performed a choreographed tango for their ďŹ rst dance complete with lunges, jumps and dips. After the tango, the live band erupted into dance music and the crowd danced the night away and concluded with ďŹ reworks. 73
