INTRODUCTION Performance Foodservice proudly presents its C-Store chicken program in Perfectly Southern™ Fresh Fried Chicken. We are using our experience in distribution of chicken to customers in markets across the country to create the best in class fresh fried chicken program. We’ve developed an incredible proprietary chicken breading in Original and a Hot & Spicy variety as well as a cornmeal‑based Fish Fry Breading, Jambalaya/ Dirty Rice Mix and Dipping Sauce Cups in the Perfectly Southern Brand. These products are the foundation of the program. We incorporate a list of required exclusive branded products crossing all day parts. A majority of the sides items in the program are our established and trusted branded products such as West Creek® Hwy 40 Fries, Heritage Ovens® Biscuits and Brilliance® High Oleic Soy Oil with Plenish® Soybeans. As a licensee of the Perfectly Southern™ Fresh Fried Chicken program, operators have access to high-quality branded products and sales and marketing support. There are no franchise fees, low startup costs and ongoing support of experts in fresh fried chicken and working with C-stores. This program is ideal for convenience stores, arenas and ball parks, recreation and bowling alleys, food trucks, amusement parks and more. Licensees of the Perfectly Southern™ program instantly become a part of a national brand and the brand recognition that an operator will not have with a standalone operation.

PROGRAM COMPONENTS The Perfectly Southern™ Fresh Fried Chicken Program is based on our exclusive brands. Perfectly Southern™, West Creek®, Silver Source®, Heritage Ovens®, Nature’s Best Dairy® and Brilliance® make up the all-star lineup of products that a licensee is required to use in the program. The operator also has the flexibility to use up to 10% of products outside the required products listed in this document. This gives the operator some flexibility while maintaining the consistency of the Perfectly Southern™ brand products and product quality across the country. All Perfectly Southern™ branded items are available for order through Performance Advantage (PA). The beauty of the Perfectly Southern™ Program is that a majority of PFG-branded products are already stocked by a majority of our OpCos. OpCos should work with their account representatives and local brokers to bring in other required program items. A list of optional program components is provided — noted as Bolt On Products in the following lists. However, OpCos have the flexibility to recommend the best items for each operator’s needs. The following pages include a list of items in the program. Required items are in bold.
PROGRAM COMPONENTS Original Breading Perfectly Southern™ Fresh Fried Chicken Original Breading is bleached, enriched flour mixed with a blend of salt, herbs and spices, onion powder, garlic powder and natural flavors. Some call it a savory blend or a Perfectly Southern blend, but we call it delicious! Ideal for bone-in-chicken, boneless chicken tenders, gizzards, livers, chops, beef, and vegetables. Available in 1/25-lb. bag. Hot & Spicy Breading Perfectly Southern™ Fresh Fried Chicken Hot & Spicy Chicken Breading is the perfect seasoned flour coating for bone-in-chicken, boneless chicken tenders, gizzards, livers, chops, beef, and vegetables. Salt, herbs and spices, onion powder, garlic powder and natural flavors give Perfectly Southern™ Hot & Spicy Breading just the right combination of savory and heat for a flavor that keeps customers coming back for more. Available in 1/25-lb. bag. Fish Fry Breading Made with a yellow corn flour, cornmeal, enriched wheat flour, salt, garlic powder, onion powder and a blend of spices, Perfectly Southern™ Seasoned Fish Fry Breading is ideal for catfish or shrimp. Coat just before frying, Perfectly Southern™ Seasoned Fish Breading cooks up light, crispy and golden brown. Available in 2/5-lb. bags per case. Jambalaya/Dirty Rice Mix Perfectly Southern™ Jambalaya/Dirty Rice Mix is a true Southern Cajun recipe with all the seasoning and flavor you would expect to taste in a Southern inspired Cajun Jambalaya/Dirty Rice Mix. Each one-pound bag contains rice and the perfect amount of seasoning. Just add 3lbs of chicken, shrimp or sausage for the Jambalaya or 3-lbs. of ground meat for the Dirty Rice to yield a half size steam pan. Perfectly Southern™ Jambalaya/Dirty Rice Mix is simple to prepare and makes the perfect side dish. Available in 12/1.5-lb. bags per case.

Perfectly Southern™ Honey Mustard Sauce This classic yellow honey mustard sauce provides just the right blend of sweet and tart for a delicious dipping experience. Comes packed in 100/1.5-ounce containers with foil, peel-back lids. Perfectly Southern™ Honey BBQ Sauce This sweet and spicy BBQ sauce has a rich flavor and a little kick of spice to keep things interesting. This is one of the favorite sauces in the all-star lineup. TRAINING INFORMATION An Operation Guide and step-by-step food preparation will be provided for preparing Perfectly Southern™ Fried Chicken, Tenders, Gizzards & Livers, Fish, Jambalaya and Dirty Rice. The operator will also receive in the Guide best practices for maintaining food safety best practices. Step-by-step videos are available as well as back of the house posters to assist with proper food preparation for consistent Perfectly Southern products. Place fully thawed, refrigerated fresh 8 piece chicken bag into a clean container.

Place “floured” chicken into ice bath, turn over to wet all sides thoroughly, then return back to dry seasoned flour and “recoat” completely ensuring complete coverage.

Begin by removing one marinated chicken tender at a time from the marinade to the dry seasoned flour for coating.
Thoroughly coat each marinated chicken tender with the perfectly southern seasoned flour by hand tossing gently.
STEP 12
Move the breading pan or bowl next to the fryer. Place 1 or 2 empty fryer baskets into the heated oil. Lift the tenders up one at a time, shake gently to remove excess breading, and carefully place into the submerged fryer basket one at a time.
STEP 13
Do not overload the fryer baskets with too many tenders at one time. Fry no more than 6-8 tenders per basket per batch. After 1-2 minutes of frying, lift the fryer basket slightly and shake gently back & forth to create separation in the tenders to prevent them from sticking together.
Add the measured 2 1/2 cups cold water evenly over the chicken tenders.

Cover with lid, label with date/time and refrigerate until ready to fry. Marinated tenders are immediately ready to batter. Keep marinated tenders refrigerated for up to 3 days (72 hours).

LICENSING AGREEMENT To become a licensee of the Perfectly Southern™ Fresh Fried Chicken Program, the operator must sign a brand licensing agreement. This agreement outlines the requirements to be fulfilled by the operator and outlines the many benefits of becoming a licensee of the program. There is no license fee. The only agreement is to be brand compliant in the program. Brand Licensing agreement includes Retailer Requirements including: • Maintaining a clean establishment, with all necessary foodservice equipment to produce, heat, and maintain required holding temperatures • Purchase 100% of all required food and foodservice items for the program from Eby/PFG • Purchase 90% of all suggested food and foodservice items for the program from Eby/PFG • Maintain a properly installed graphics package and branded menu boards in order to display the Brand in connection with the sale of the Program products and services • Cooperate with initial brand and service training for the program • Not co-mingle any unauthorized products with the branded Program products

Static menu boards will be designed using an established menu board design template and tailored content and pricing. Note that all Programs, especially more complex menus, recommend leading edge animated “motion” menu boards.
Primary payment option is a credit card entered on site by the customer. OpCo or sales offices may opt to help pay for products and services as a partial or full payment by using PO or spending account. Payment options based on the OpCo/sales office request. Menuetta has set up each OpCo and Eby-Brown office as an account to allow for shared payments, via spending accounts, POs, e-gift cards for customers in the Program.
