Bayley Hazen Blue is a natural rinded blue cheese. It is made with whole raw milk and expresses an array of flavors that hint at nuts and grasses and in the odd batch licorice. Jasper Hill Farm is a small family farm located in Greensboro, the heart of Vermont's beautiful Northwest Kingdom. Brothers Mateo and Andy Kehler took on Jasper Hill Farm, which had fallen into derelication like so many throughout Vermont, in the summer of 1998.

Harbison is the newest offering from the team at Jasper Hill. The cheese gets its name from Anne Harbison, held by many to be the grandmother of Greensboro, VT. Harbison is a bark-wrapped bloomy-rind cheese that balances a sweet, nutty flavor alongside a complex herbal and woodsy note from the cambium cut from the spruce trees at Jasper Hill Farm. The paste is spoonable but not runny, and represents a marked flavor and textural contrast to the expertly developed rind. Inspired by Chris Duckett's Caerphilly, Landaff has a stunning natural cave aged rind, a tangy, bright flavor, balanced salt and a hint of juniper berry. Doug and Debby Erb are second generation-dairy farmers on their New Hampshire farm (Springvale Farms) which has been producing high quality milk since the 1950's. In 2006 Doug began taking cheesemaking classes through the Vermont Institute of Artisan Cheese. In June of 2008 he traveled to Somerset England to train at Westcombe Farm where they make Caerphilly using the traditional Welsh recipe.

The current batch of Moses is creamy, milky farmstead brie-like cheese, broken down slightly under the rind, but thick enough to have a solid center and longer shelf life. Also a revolutionary war scout, Moses Sleeper was guarding the Bayley Hazen Military Road with his compatriot Constant Bliss, who died with him at the hands of Native Americans in 1781.

Bijou is made from pasteurized milk. After 24 hours of maturation/coagulation the fragile curd is transfered into cheese cloth to drain overnight. The next day, the Bijou are formed and moved into a drying room. After a day in sechoir the cheeses are transferred into the aging room where the natural geotricum rind will grow in a controlled environment. At the right maturity, the cheeses are wrapped in their individual micro-cave packaging.

Starting with our Vermont artisan cheddar, we’ve made this Vermont staple tipsy by adding two kinds of brew from a local brewer Harpoon®. We use both their Munich Dark and their IPA to soak our curds during the cheesemaking process for full ale flavor. Our imported peg mill tears the curds giving them more surface area to really soak up the flavor of the beer. Our AleHouse Cheddar leads with a fragrant ale nose, has a flavorful balance of cheddar and nuts and ends with a strong hop finish. Makes a great pairing partner to any brew. From the northern reaches of France comes the origin of our Coulommiers-style cheese and thicker ancestor to Brie, and the name itself, Lillé. Handmade in small batches, each wheel is a slightly different weight. Aged in its own special room, and lovingly turned regularly, the delicate rind develops evenly with a white downy bloom. This decadently sumptuous soft-ripened cheese has a supple paste core enveloped by a rich creamy body and reveals a subtle mushroom nuance with notes of nut and butter.
