Crab cakes are on every menu, and in every restaurant. Sizing, flavor, and which crab meat to use vary from crab cake to crab cake. History of Crab Cakes American cookbooks confirm crab recipes were popular from colonial days forward. Many recipes combined bread crumbs and spices, and some were fried. These recipes were called Stew Crabs, Crab Patties, or Crab Croquettes. “Crab Cake” appears to be a 20th century term meaning a sautéed or fried patty of crabmeat. M
ichael Kelley, co-owner with Carlos Yanez, of the Ruddy Duck Brewery and Grill in Solomon’s Island, started in the restaurant industry when he was just 12 years old. He wanted a motorcycle and his parents wouldn’t buy one, so he started working at the closest thing to his home-the Fireside Restaurant in Greenbelt, Maryland. From his start as a busboy at the Fireside, he has done everything from line cook to Regional Manager and owner. He has opened over 60 restaurants in his career and managed restaurants in cities ranging from Washington DC, Houston, Dallas, Anchorage, and New York City. The Ruddy Duck is the third he has owned and operated. He took a break from operations in the 90’s and spent a year and a half in food sales in the Washington DC market. Michael came to the Ruddy Duck as a consultant five years ago and through the process developed a partnership with founder Carlos
Yanez. They opened the restaurant in June 2009 in the middle of the recession. The first year and a half, the Duck was just breaking even, making little profit. The end of 2010 and early 2011 saw improved profits by refining many of the operations and scrutinizing expenses. Then, in May of 2011 Ruddy Duck was recognized as having the Best Crab Cake in the Tri-County Area. This title not only encouraged regular customers to try it, but brought many new customers who wanted to try that crab cake. By the year’s end, Ruddy Duck’s sales were up 35 percent. When asked about their success, Michael says they focus on value, friendly and hospitable service and a comfortable and high energy atmosphere. “We just keep to the basics of what people are looking for.” Michael says, “These days, kids often make the decision on where families go to eat. If a kid says ‘No I don’t want to go there,’ you aren’t going there! So you need to be kid-friendly.” Ruddy Duck has kid’s menus and coloring sheets to help engage them in the dining experience. They target the 35-55 year olds demographic. And these are the people who often have young children. “We manage to create a
comfortable family friendly environment, yet stay attractive to the working professionals who are looking to unwind. We do this by serving high quality food at a reasonable price.” When asked about the restaurant’s biggest struggle, Michael named the fluctuation of food costs, especially on “center of the plate” items. Ruddy Duck also makes nearly everything from scratch, which in turn makes costs a little higher. But, Michael points out, “That’s also what sets us apart.” When Ruddy Duck opened, they were buying from other distributors. Michael said that his Performance Food Service Sales Rep, Kevin Jeffrey, started calling on him later. “He kept coming back, but without being obnoxious.” When one of the other distributors started building margins, and raising costs, he gave them the opportunity to fix it. Nothing changed. That’s when he started talking to Kevin more, and found that he was always consistent. Kevin began working with the chef, and began to get more items in the door. “For most professional restaurants, it’s about the relationship with the sales rep, not the distributor,” said Michael. “Kevin was patient in getting into the restaurant, and he was consistent, which created a welcome level of trust. “ For marketing, Ruddy Duck uses Facebook
and direct email blasts, offering incentives to the first 50 people to come to the restaurant and mention the latest promotion. They update their website regularly, listing a variety of upcoming events. Michael believes it is less expensive to market to their current customers than to offer deep discounts to attract new customers. Michael’s advice to future restaurant entrepreneurs is simple: Capitalize and keep your finger on the pulse of the business. “You’re going to need enough money to get through the first year or so, and things will cost more than you expect. You need to be prepared to be in the restaurant 5, 6, or 7 days a week.”

MENU MENTION / RESTAURANT SUPPORT GUIDE As Braveheart Foods continues to build branded presence in foodservice, we want to reward and support those customers who use our brand name and imagery in their menus and other important restaurant marketing tools that help build sales and profits. In an effort to effectively do this, Braveheart Foods will use average weekly case volume (movement) and physical performance in the form of a printed menu as a guide for reimbursement or other support directly to the restaurant. This support is outlined below. As mentioned above, menu mention support is tied to volume. In order to receive support for branding and logo usage in a menu or advertisement, the average weekly case movement must be 10 cases of fresh beef, either in bulk or portion cuts, deli meats, or value added products. The Branding Support Value at this level will be up to $250 per year. In order to qualify for the next level of support, the average weekly case movement must be 20 or more cases of fresh beef, either in bulk or portion cuts, deli meats, or value added products. The Branding Support Value at this level will be up to $500 per year. Braveheart Foods will also provide more extensive profit-driving support to those customers who purchase a minimum of 20 cases on average of Braveheart Foods products per week, either in bulk or portion cuts. At this level, custom signage and other special marketing support will be provided to increase brand exposure. These marketing materials will be developed on a one-on-one basis with the restaurant to build brand recognition specific to the restaurant’s needs. Support can be reimbursed in one of two of ways: As a first option, Braveheart Foods will provide marketing or menu mention support only after an invoice for (re)printing and a physical copy of the menu or other approved marketing piece is submitted to the Braveheart Foods Marketing Department. This should be submitted with a restaurant letterhead reading something to the effect of “As per our recent discussion, “XYZ” restaurant is requesting marketing support in the amount of $xxx for including the Braveheart Foods name and imagery on our recent menu (re)print”. As a second option, Braveheart Foods will provide actual product in the form of bulk or portion cut products, up to the appropriate Branding Support Value, to the restaurant for a promotion or grand opening special. ******A mix of the above support techniques, up to the appropriate Branding Support Value, can be combined to provide the most effective marketing program. Please contact Braveheart Foods Marketing Department to find out what combinations of these options are recommended for you! Mayland Jumbo Lump Crab Cakes Ingredients 2 pounds Jumbo Lump Crabmeat 8 Ritz Crackers (crumbled) 4 tbsp mayonnaise 1 tsp dry mustard 1 tsp worcestershire sauce 2 tsp Old Bay seasoning pinch of salt pinch of white pepper 1 tsp chopped parsley 2 eggs 1 tsp lemon juice

Directions Mix mayo, dry mustard, worcestershire sauce, old bay seasoning, salt, white pepper, parsley, eggs, and lemon juice. Wisk together until blended. Then pour the wet ingredients over crab meat and cracker crumbs. Toss with hands until coated. Bake in oven for 20-30 minutes at 350 degrees or until golden brown. (This recipe will make 8 five ounce crab cakes)
Cornmeal Crusted Soft Shell Crabs with Tarter Sauce Ingredients PFG Item # 3 cups buttermilk 256665 3 large eggs 157436 1 1/2 tbsp kosher salt 56291 1 1/2 tsp black pepper 242872 12 each soft shell crabs 1 1/2 cups self rising flour 81983 1 1/2 cups yellow cornmeal 992153 2 cups New England tarter sauce 158906 Vegetable Oil 289244 Directions Whisk together buttermilk, eggs, salt, pepper and pour into a 3 quart shallow dish. Add crabs and marinate in refrigerator for 1 hour. Mix together flour and cornmeal. Remove one crab at a time and coat with flour, shaking excess flour off. Place each coated crab on a tray. Place about 2 inches of vegetable oil in a frying pan and heat to 375 degrees. Fry 2 crabs at a time tunring halfway through cooking until golden brown on both sides. Drain on paper towels. Place 2 crabs each on 6 serving plates. Serve with new England Tarter Sauce or Coastal Tarter Sauce for dipping.
