any New Englanders are passionate about their neighborhood markets, and locals in the Freeport, Maine area are especially lucky. A Freeport staple for over 70 years, Bow Street Market boasts a huge selection of grocery items and specialty foods, as well as a full deli and butcher counter. Originally opened in 1946, Bow Street Market has grown to an all-inclusive grocery store that stocks an unbeatable selection of products made right in Maine. A
Founder Harold Poulin opened the small neighborhood market, primarily focused on selling freshcut meats from the butcher counter in 1946. In 1974, after almost 30 years
in business, he sold the market to Karen and John Nappi who ran Bow Street Market with their children Adam and Amie for another 30 years. In 2002, Bow Street market became a second-generation family owned and operated business when Adam, his wife Sheila, and their three children bought the business. The Nappis successfully grew the business with the help of friends and neighbors who shared the values of community and local food. On May 24th, 2011, Bow Street Market celebrated yet another milestone: the grand opening of their brand new facility. The larger location, adjacent to the original market from 1946, gave the business the room it needed to stock exciting new products for their customers’ needs and wants. The construction of the building was described as a “barn-raising,” a true community effort that provided jobs for many local people. Friends, neighbors, local architects, construction workers, and landscapers brought the Nappis’ dream of an openconcept shopping area with vibrant decoration to life. Jim Frey, Store Manager, says that owners and employees consider the business a “destination store.” Located about 20 minutes north of Portland, Bow Street draws a huge

following from Freeport locals, Mainers from the surrounding area, and seasonal visitors. The wide range of products available (including an unparalleled selection of Maine products) and the stellar customer service really make the business shine. The people of Freeport are committed to Bow Street as many remember when it was a small neighborhood market. Bow Street continues to be deeply involved in the fabric of the community where they operate. Employees are dedicated and supportive, and almost all of them volunteer in the community. Events such as wine tastings bring friends and neighbors together to mingle and see what Bow Street is all about.
Bow Street focuses efforts on providing excellent quality, clean, and fresh products, and supporting local businesses and farms whenever possible. Customers can feel comfortable knowing that the food they buy is of high quality and can easily identify opportunities to buy locally made products. The grocery department offers all standard food and nonfood necessities, with a focus on quality and knowing where, and from whom, products come from. Breads and pastries are available fresh daily, both baked in-house and procured from local bakeries. The produce department is fully stocked with the freshest available local, seasonal, organic, and conventional produce. Customers
looking for fresh-cut meats can visit the butcher counter for local and natural beef, pork, poultry, and lamb, as well as house-made sausages and meatballs. Looking for Maine seafood and shellfish? Bow Street has it. Live take-home or packed-for-travel Maine lobsters, local oysters, and seasonal fish are just a few of the seafood options available. To complement the delicious meals that Bow Street’s customers can create with their products, the beverage department offers one of Maine’s most varied wine, beer, and spirits selection. They have nearly 1,000 different spirits in stock! And as with all of their departments, local and craft brewed beverages reign supreme. For those looking to pick up a quick bite, Bow Street Market offers a large selection of gourmet hot and cold sandwiches, side dishes, burgers, and pizzas. Their sandwich offerings include a signature Meatball Sub with their own famous meatballs, a Steak or Veggie Bomb, a Spicy Veggie Roll made with crunchy daikon slaw and housemade spicy mayo, a roasted Lamb Baguette with Trempherbe garlic and herb cream cheese spread, and so much more! And what sandwich menu would be complete without a classic Italian sandwich? Bow Street offers a “Maine Italian” made
with ham and American cheese with traditional veggies on a soft roll, and a “From Away Italian,” made with mortadella, salami, capicola, provolone, and veggies on a baguette. They also make pizzas

to order, and have several signature offerings as well as custom pizzas available. The catering menu is a great option for a crowd, and includes favorites such as lasagna and macaroni and cheese, as well as deli salads, crudité platters, shrimp cocktail, freshly baked breakfast pastries, and local cheese platters. As Bow Street states, “You may never cook again!” (Although with their wide selection of fresh and local groceries to inspire you, you will probably want to!)
Bow Street Market is in a unique market position: although they are supplied by Hannaford Bros. Supermarkets, they operate independently as a family-owned business and work directly with many local vendors. Bow Street Market has been working steadily with Performance Foodservice – NorthCenter since May of 2016. Jim Frey, Store Manager, says that one of the biggest benefits they see to this partnership is the quality of products available through NorthCenter. Their sales rep Tim Kieger and manager Jim O’Dare consistently bring information to the table regarding market changes and food trends, and can offer menu ideas and inspiration for their growing business. Frey also mentions that they are grateful that they can always rely on Tim to help them out with deliveries, products, and more when they are in a pinch.
Bow Street Market uses a web based platform to accept online orders for sandwiches, pizzas, breakfast items, and even catering. The online ordering system is built cleanly into their website and allows customers to easily order anything on the menu without ever picking up the phone. Perhaps more importantly from a business perspective, Bow Street staff members don’t have to field as many phone calls for to-go orders, and can instead focus their attention on providing excellent service to customers already in the building. In a time when, like so many other area businesses, their biggest challenge is hiring employees, they knew it was essential to have a system in place to improve the efficiency of their ordering system. Online ordering has been a success for customers looking to order and pick up their meal without waiting, and has allowed for an increase in sales and a decrease in overall wait times for customers. The key is flexibility for the customer – those who want to place an order for takeout sandwiches, soups, and sides in person or over the phone are more than welcome to, but there is an option to order online in a neat and organized fashion. Now that’s service!
Bow Street Market may be larger than when it originated, but owners still believe that their great customer service is at the center of their success. Countless reviews on Yelp and TripAdvisor remark that the staff is friendly and very helpful in all departments, and they can always rely on them to offer up assistance and ideas. Bow Street makes every effort to maintain the small-town feel of their store, stating “Bow Street Market was built on the memories of what food shopping used to be. At an all-time high in the US, Culinary Tourism is the fastest growing tourism sector. According to the National Restaurant Association, “across all dining segments, about one in every four dollars spent at restaurants comes as a direct result of travel and tourism.” These days, tourists are looking for local context--they want to shop, play, and eat like the locals. Tourists seek experiential activities that immerse them in the place they’re visiting. From farmers markets to foraging expeditions, tourists are looking for experiences that they can’t find anywhere else. Your state tourism organization uses its resources to convince international and national travelers to choose your state over any other for conventions, athletic activities, and recreational travel. Your local tourism offices, then, must convince visitors to stay in your city. Once they’ve done so, your job is to drive those tourism dollars to your restaurant.

Tourism offices are charged with telling the world what makes their city or state the best place to visit, but they can’t tell the world about you if they don’t know you yet. Typically, making an introduction is as easy as sending an email to the contact page of your tourism organization’s website.
The modern tourist is looking for an immersive experience. They want to eat like the locals and participate in experiences that represent what that place has to offer. Tourists are creating memory souvenirs through each unique experience, and your mission is to give them that special insight into what makes your city and your restaurant worth visiting time and time again.
Introduce yourself to your regional and state tourism offices
If your tourism office allows you to create a listing for your business, this is a great tool for image control when it comes to presenting your business to visiting guests. Often, you will be able to add an image to your listing, and sometimes, you may be able to offer special incentives to visitors who are researching where to eat when they visit. As always, put your best food forward, with engaging images and offers that go beyond a 15% discount. Let tourists meet your chefs, get in the kitchen, and see what makes your restaurant special.
Let your tourism organizations know what’s new
One way to do this is to loop your tourism organizations in on any press releases you send to the media regarding special dinners, pop-ups, or other unique experiences. Engage in tourism-promoting activities Most tourism organizations host events for visiting businesses, media, and other out of town guests. Let them know that your restaurant is interested in participating in these types of events. Depending on the event, you may want to offer further incentives to guests to visit your restaurant during their stay. Most state and regional tourism organizations have visitor centers that provide travelers with information to help them plan their stay in your state or city. Create marketing pieces that are specific to the traveler to give them an idea of who you are--consider including sample menus as well as your address, phone number, and reservation policy, to help guests plan their visit. Make sure you regularly update your supply of marketing materials, and when you do, introduce yourself to the tourism specialists who are working there. Being able to put a face to a name

If your tourism organization has an ambassador program, research what this entails and consider joining or appointing a staff member to join to further strengthen your connection to tourism. Manchego Manchego is Spain’s most famous cheese. Produced in La Mancha in Central Spain, true Manchego is made from 100% sheep’s milk. The abundance of wild herbs on Central Spain’s grazing lands gives Manchego a special taste and aroma. Its flavor is zesty and exuberant, while its texture is firm but not dry. Underneath the inedible rind, Manchego is ivorycolored with few small holes. It has a wonderful flavor that lingers on your palate creating an experience you will be drawn back to again and again.
Kefalotyri This ancient Greek-style cheese is a well known pantry item in Greek cuisine. Said to be developed by the mythical Artistaeus, son of Greek God Apollo. This traditional hard cheese is a blend of goat and sheep’s milk. It has a firm flaky texture, with a slightly herbaceous and fruity flavor.
Nazareth The Belgians are well known for both beer and cheese. This top-of-the-range cheese has a deliciously fresh and nutty taste. At first glance, this cheese looks smoked because of its dark brown rind, but it’s not; the rind is coated in wax through a series of careful treatments. The cheesemakers start waxing the cheese when it’s only 15 days old. In the beginning they wax it every week, but after one month it receives only one coat every 20 days.
Pecorino Toscano DOP Pecorino Toscano is a classic Tuscan sheep’s milk cheese with a deep savory flavor. It has an opaque color and a rich, complex profile on the palate. Protected by the Consortium of Tuscany Pecorino (DOP), it is treated with olive oil as it matures over sixty days.

I have created so many of these specialty tacos over the past couple of years and literally made thousands of them for customers at food shows and at some of my customer/chef demos…and I have to tell you…they never get boring. You can let your imagination run wild with so many possibilities and combinations of ingredients, simple layers of flavors, textures and sauces, combined with any protein. I use about 1 to 2 oz. of any protein per taco. Vegetarian and gluten-free options are just as plentiful. Get creative and invite your customers to enjoy some easy-to-make “street tacos” from your menu! These could also be used at action-stations for caterers or in a cafeteria.

Vegetarian Gluten-Free Taco Simply grill up some marinated veggies (I used zucchini, summer squash and red pepper strips), and add some sliced Euro cucumbers and some roasted corn medley. Vessels could include any one of the following lettuces: Roma Crunch lettuce leaves (#517979), Napa cabbage leaves (pictured) (#950323), Better Leaf lettuce (#380189)…top with a sour cream and lime crema and serve. The possibilities of vegetable combinations are endless in this application…garlic roasted brussel sprouts, roasted Buffalo cauliflower, Balsamic roasted broccoli…you get the picture!
Seared Tuna Taco I used Saku block tuna loins (#420786) and simply coated them in sesame seeds and gave them a quick sear in some sesame oil (#994615), 1 to 2 minutes on all sides. Cool the tuna and slice it ahead of time if you are going to make a bunch of them. I used a flour tortilla shell (#41167) on all of the tacos in the pictures, but you could also use a corn shell (#5163) if you’d prefer. The slaw was easy as well. I used some shredded cabbage (#272977) and mixed it with some roasted corn medley (#504916), julienned red peppers and a touch of Sesame Ginger dressing (#158908). I also added some Seaweed salad (#885517) as a nice counterslaw, and finished it with some sour cream mixed with fresh lime juice and a Fire Roasted Poblano Pepper base (#401298). Top with some Sriracha and honey and garnished with a lime wedge.

Mexican Chicken Taco Depending on your preference, you can use any kind of sliced chicken. Sometimes I use the Chef Ready random chicken breast (#460072) grilled with Mexican seasoning, and other times I use chicken thigh meat (#158758) grilled the same way. For this recipe, I combined some arugula and shredded carrots with the roasted corn blend and some diced mangos (#241832), and finished it with a light coating of Roasted Red Pepper dressing (#258793). Finally, I topped with some shredded Manchego (#418756), even shredded Parmesan will work, then with a Sriracha aioli, or any spicy sauce of preference.

Toss Brussels sprouts and dressing together; let marinate for an hour before adding to salad or simply flash sauté them. The Brussels sprouts will stand up nicely to heat and the flavor will enhance the fish or chicken that sits on top. Brush the fish or chicken with a bit of vinaigrette before serving and garnish with more fresh chopped parsley.
Toss 4 oz. Power Green Salad Mix with enough Pickled Onion Vinaigrette Dressing to coat. Add feta cheese or goat cheese and toasted pumpkin or pecans. Protein added to this salad would be a nice touch!

2 lbs rainbow carrots, peeled and sliced or cut into sticks ½ cup pickled red onions, strained from the brine 4 cups pickled red onion brine 5 garlic cloves, peeled 2 tablespoons fresh dill chopped 2 tablespoons mustard seeds 10 peppercorns ½ tablespoon celery seeds Combine brine and seasonings. Layer sliced or sticked rainbow carrots with the pickled red onions in a jar and pour brine over. Refrigerate 3 to 7 days before serving.

For roasted pickled beets: Roast beets as you normally would and peel them. Substitute them for the plain beets in this recipe: Use fresh cooked beets (or whole baby beets in a can), reserving the beet water. 4 to 5 beets, sliced about 1/8” thick ½ cup beet water (for color) ½ cup pickled red onions, drained from brine 6 to 8 sprigs of fresh tarragon 2 cups pickled onion brine Combine beet water and pickled onion brine. Layer sliced beets and pickled onions with the tarragon in a jar. Pour brine over and put lid on jar and refrigerate for 3 to 7 days before serving.

Assembled Sandwich: 1 each Ciabatta Bread Roll (6") 1 tsp Garlic Butter 2 Thin Slices Smoked Gouda Cheese Duck Confit Mixture To Taste Salt and Pepper ½ ounce Crispy Apple Chips Arugula Mix
Directions: 1. Heat olive oil in pan; add garlic and sauté. Add Marsala wine and reduce by half. Add warm pulled duck confit and mix together. 2. In mixing bowl combine arugula, minced pickles and mustard vinaigrette. Mix together well. 3. See “Assembled Sandwich” ingredients. Cut ciabatta in half. Spread garlic butter on ciabatta bread. Toast bread in toaster broiler or garlic butter side down in hot pan. Once toasted, lay Gouda slices down on bottom half of ciabatta. Spread warm duck confit mixture over cheese. Spread apple chips on top of duck confit. Top with arugula mix and then top with ciabatta top. Serve as is or for a better tasting sandwich, hot press in a sandwich press for 2–4 minutes. Cut and serve with fresh fruit.
Asian Brussels Sprout Salad with Duck Confit 4–6 Servings Ingredients:

Salad: 1 cup Vegetable Oil, for frying 2 slices Fresh Ginger, each slice about the size of a quarter 2 Shallots, chopped 1 lb Brussels Sprouts, root end trimmed and any bruised outer leaves removed - shred or slice to 1⁄8 thickness using a mandolin ½ cup Red Cabbage, shredded ½ cup Carrots, julienned 2–3 Thai Bird Chilies, seeded, ribs removed, minced 1 cup Duck Confit, shredded and at room temperature 2–3 Tbsp Nuoc Cham Sauce (recipe follows)
Dressing:
Nuoc Cham Sauce: 2 Cloves Garlic, minced 1 Thai Bird Chili, seeded and minced 2 Tbsp Sugar 2 Tbsp Lime Juice ¼ cup Rice Vinegar ¼ cup Fish Sauce ¼ cup Warm Water
3. Return oil to the pan and return to 350 degrees, add the Brussels sprouts and fry 3–5 minutes or until beginning to crisp. You want to maintain some tenderness in the Brussels sprouts, be careful not to overcook.
1. Use a mortar and pestle to make a paste of garlic, chili, and sugar. 2. Add remaining ingredients and blend. Set aside. Note: you will have more dressing than needed for the salad. Salad: 1. Using a wok or large sauté pan, heat vegetable oil to 350 degrees. Add the slices of ginger to the oil for approximately 10–15 seconds just long enough to release the “chi” of the ginger. Remove immediately and discard. Be careful not to scorch the ginger. 2. Add the shallots to the oil and flash fry 1–2 minutes or until crisp. Pour both the oil and shallots through a strainer, reserving the oil. Drain the shallots on a paper towel.
4. Pour the Brussels sprouts and oil through a colander and drain the Brussels sprouts on a paper towel. Discard the oil. 5. Toss the fried Brussels sprouts and shallots with the cabbage, carrot, chilies, and 2–3 tablespoons of dressing. Plate the salad and top with the shredded duck confit. Serve warm.
