Healthcare food system transformed – increased nutrition, locally sourced and sustainable MaineGeneral’s Food & Nutrition Services’ vision is to lead its community in promoting and providing healthy food choices. To achieve this goal, the team works across the system and with many community partners to expand education on nutrition and healthy cooking and to tout the benefits of sourcing through local suppliers and adopting sustainable practices. “We’ve been on this journey for more than 10 years,” said Shelley Goraj, MS, RD/LD, director of MaineGeneral’s Food & Nutrition Services. “Food is a basic building block of health, so addressing nutrition became our mission inside and outside the hospital. We’ve purposefully set the example of making food a staple of good health.” provisions September/October 2017

“Being part of the healing process is the heart of what we do, so our inpatient room service program drives our department,” said Denise Beland, RD/LD, clinical nutrition manager who oversees patient services in the department. “Patient satisfaction scores are at the top levels nationally. Meal freshness and appearance are in the 91st percentile; patients rate the courtesy of the staff who delivered their meal in the 97th percentile. Our room service program staff focus on creating a meal and a service encounter that is a highlight of a patient’s day.” There are three system cafeterias at MaineGeneral Medical Center which serve patients, their families and friends, and staff and community members.

For example, a June special was Maine strawberry rhubarb crisp and July was local spinach salad. To supplement our local produce needs, MaineGeneral sources vegetables from The Pickup in Skowhegan, Maine, as well as a new collaboration with the sustainable agriculture program at Kennebec Valley Community College.”
Brick-oven pizza at the inpatient hospital uses local dough and sauce sourced through Portland Pie Company. The focus is on veggie pizzas, low-fat meats, and less cheese by using a higher quality cheese like Bacio® mozzarella/provolone blend. MaineGeneral committed to purchasing more locally sourced meat and fish each year, including: • Bone-in poultry from Common Wealth Poultry in Gardiner, Maine • Beef from Central Maine Meats in Gardiner and from Sunset Meadows Farms in Vassalboro, Maine (locally bred and raised). Each day, the café menus include two vegetable options with a focus on cruciferous vegetables and greens; two starches, one of which is whole grain; an entrée salad; a vegetarian entrée; soups made from scratch; Maine oats milled in Skowhegan; and freshly juiced vegetable and fruit blends. All entrees are labeled with nutrition information. The inpatient hospital’s deli area has also increased vegetable offerings and hummus as a vegetable protein source, and offers whole grain breads. In July, MaineGeneral began serving sliced antibiotic-free, nitrate-free and growth-hormone-free meat from McKenzie Meats in Vermont.

“We believe all foods can fit into the diet, so we still have sweets available for those who want them,” said Tina Guenette, retail manager. “The goal is to make more healthy options available and desirable. We give our customers product information and other tools to help them make educated decisions about their food.

MaineGeneral has also connected with Lakeside Farms in Newport, Maine for seasonal produce that meets the volume demands of the hospital’s operation. MaineGeneral is a member of Farm to Institution New England (FINE) which is a 6-state network of non-profit, public, and private entities working together to mobilize the power of institutions to transform our food system. “FINE provides us with a wonderful network and connections that we utilize to help us get more local foods on our menus,” Goraj said. Changes in beverage and snack policies began in 2015 with the system adopting a healthier vending policy with nutrition parameters for the snack foods offered. Sugar-sweetened beverages were eliminated. Information was posted so consumers knew the goal and

We have had the great opportunity to be a showcase site for several local food companies who create amazing healthy boutique snack products that we make available for all our customers.” Healthier beverage options were another big step for MaineGeneral. “We follow the American Heart Association guidelines for healthy beverages,” Guenette said. “All dairy and dairy replacements must be below 130 calories per serving. Beverages are set in coolers with water/ juice/low-cal beverages at the top and at eye level, and the diet sodas at the bottom half of the cooler. We do not sell regular soda or sugarsweetened beverages.”
IN THE COMMUNITY Expanding healthy foods in the community is a goal of the entire MaineGeneral organization. The health system supports two local farmers’ markets, including hosting them in the medical centers in the winter. During the summer markets, the MaineGeneral Food & Nutrition Services team hosts educational food-tasting demos and provides nutrition education on the seasonal produce at the market. The team participates in community events such as the Taste of Waterville (where they have won awards for their food each year they’ve participated) and they were awarded the “Best Unexpected Lunch Spot 2015” by DownEast Magazine. The Alfond Center for Health (ACH) was built in 2013. A generous donation from the Peter Alfond Foundation enabled the inclusion of a teaching kitchen and health education classes. Registered dietitians and health educators teach patients and community members cooking techniques and nutrition education. MaineGeneral is also a member of the Teaching Kitchen Collaborative, launched in 2016 and jointly led by The Culinary Institute of America and Harvard T.H. Chan School of Public Health – Department of Nutrition. A recent addition to making healthy food readily available began this year at the ACH: EAT, a meals-to-go program that is available for staff and other customers. EAT stands for Easy, Appetizing, Tonight. “MaineGeneral staff work long days and have families at home,” Goraj said. “If we can provide a healthier meal choice that is also very convenient and costeffective, that’s a win-win. The nutritional breakdown is on each item featured in the EAT cooler and single-serving meals and soups are also offered.” Goraj sees MaineGeneral as continuing to push the bar – being responsive to customer needs and desires while helping the community eat healthy and supporting the local economy. “As a member of Healthcare Without Harm, MaineGeneral recognizes that hospitals have an important opportunity to increase access to healthier, more sustainably produced food for patients, staff and the community,” Goraj said. “We also have an obligation to transform the food system toward greater health and good practices. We are a large consumer of our local economy – and in turn we need to be an even larger investor to ensure the sustainability of our programs.”

How to Private Label a Popular Menu Item Private label products are a billion-dollar industry that continue to grow market share. When a restaurant creates a private label product based on a popular menu item, it can provide another revenue stream for the business and a useful marketing tool as well. Creating a private label product for your restaurant comes down to choosing the right item to sell, packaging the product in a thoughtful and inviting way, becoming certified to sell the product wholesale (if desired), and creating sales opportunities, including meaningful partnerships to represent your product well in the marketplace.
Find a winner on the menu Creating a retail offering from your menu is about looking at what you already make—what people ready love about you--and packaging it in a way that guests can enjoy at home and give as gifts. In Williamsburg, Virginia, the decades-old Cheese Shop in Merchant’s Square is known for their sandwiches. On a busy summer day, the line to order can stretch out of the store. Families, tourists, and William & Mary alum come back year after year for their favorites, and no Cheese Shop sandwich is complete without their signature House Dressing. So popular is the mayonnaisebased condiment that the Power family has long been using a co-packer to produce it in the quantities necessary to fill demand at the store. Just last year, they introduced 16 oz. bottles of the beloved dressing, and the jars have been flying off the shelves ever since. All those House Fanatics are buying cases of the stuff to take home and to share! That’s the goal. Identify what your restaurant offers that keeps people coming back. From there, ask yourself if the item is shelf-stable or has the potential to be shelf-stable with some tweaking of the recipe. Products that require no refrigeration are the easiest, in terms of production, packaging, and selling into retail stores; but refrigerated and even frozen products may be appropriate for your brand.

Stay on brand It may seem obvious, but remember, this product should be a reflection of your restaurant. The food itself should be indicative of the kind of food you serve on your menu. If your brand is all about healthy meals, make sure the nutritional information on your retail products lines up with what your guests have come to expect. Carry your branding through to your packaging. The item on the shelf should evoke images of your restaurant, and the messaging on the package should sound like your ‘voice.’ This product should act as a marketing tool when the item is no longer in your store, reminding the customer to return to the source as often as possible. Your in-store merchandising should be as strong as what you would see in your favorite retail store. The display should look inviting and full of product. It should be in a highly visible area and should be in keeping with the overall vibe of your restaurant. Consult your original graphic designers to see if they can create packaging and labeling options according to your style guide that captures the look of your restaurant. Make sure all packaging points back to your website, and consider sharing additional information there if you can’t fit it all onto the label.
Get legal While you have the right to sell whatever you want out of your Health-Departmentinspected kitchen in your restaurant, if you plan to sell a retail product outside of your establishment, you will most likely need to complete a Department of Agriculture inspection in addition to your Health Department inspection. Every state has slightly different regulations, so it is best to consult your state’s Department of Agriculture before you begin. Typically, the inspection process involves
submitting your recipe, method of procedure, and ingredient sourcing in an application to the Department of Agriculture; then, an inspector will follow up to schedule an appointment to watch your process, looking for potential food safety risks. The good news is this: You already have an approved commercial kitchen facility and, likely, a ServSafe certified employee or two. These two things go a long way with the Department of Agriculture and can give you an advantage right out of the gate! While it isn’t technically a legal concern, you should also consult your accountant and lawyer about the possibility of setting up a separate LLC for your retail sales to keep them separate from your restaurant sales, as there are certain bookkeeping advantages to doing so. In the beginning, depending on the volume you sell, you may not be required to include nutritional labeling. You will need to list ingredients on your label, but a nutrition facts panel is optional until you hit a certain volume of sales, according to the USDA. At lower volumes, whether or not to include a nutrition facts panel is a judgement call. Consider what your customers are looking for to determine if this is important to them. Enlist a food scientist to break down your recipe for the most accurate nutritional information. While there are apps that claim to be able to do this, if you’re going to make the investment in nutritional labeling, you should make sure that it is totally accurate. Only a trained food scientist can do this with authority, and working with one is a worthwhile use of capital. Shelf life, believe it or not, is another judgement call. You can do your own testing to see how long your product will last in and out of refrigeration and once it has been opened. Err on the side of caution when determining sell-by dates to ensure the best possible quality.
Give your product wings, and let it fly
label manufacturer or co-packer. Interview several co-packers in and around your state to find the best fit for you. Here are some things to consider when talking to copackers: • Can the co-packer source all of the ingredients necessary to create this product? • What is the minimum order required to work with this co-packer, and will you be able to move (or store) that much product in a timely manner? • What kind of storage does the copacker offer, if any? • Does this co-packer offer any shipping services, and are they compatible with your restaurant’s eCommerce experience? • Investigate safety procedures at the manufacturing site. If there is a Hazard Analysis Control and Prevention Plan (there should be), read it. • What is the process for recalls, should there be a food safety concern after the product has been sold in stores? • Talk to other businesses that use this co-packer, and ask them to share their experiences, good and bad. Working with the right co-packer will open up wholesale opportunities, as you increase your ability to produce more product. Create a simple wholesale menu to use for approaching potential retail partners. It should include your wholesale cost and suggested retail price (SRP), as well as terms for ordering, such as minimum orders, recommended first-time orders, delivery policies, ordering instructions (do you prefer email, phone, or fax orders?), and terms for payment. You may also want to equip your retailers with shelf tags, point-of-sale displays, and other marketing materials to convey your branding and messaging through the store. Retailers are motivated to move product in their stores, but its your responsibility to equip them for success. Offer tastings and other collaborative events to strengthen the relationship and your presence in their stores.
Initially, you will probably sell your product in your own restaurant and possibly online. This is a great way to test the market. Consider ‘beta-testing’ the product with friends, family, and regular customers to get feedback before moving forward with any large investments. Ideally, there will come a time when demand for your products is so great that you will need to outsource production to a private

Preparation & Tips For best results, have your ingredients prepared ahead of time. Cook your noodles or rice, chop your vegetables, and prepare your proteins, so you can quickly assemble, add broth, and serve. For the rice noodles, I pre-soaked for 30 minutes in cold water, then cooked them for less than 5 minutes, cooled them and tossed them in some sesame oil to prevent them from sticking together. The Yakisoba noodles need to be boiled ahead of time as well, only about 5 minutes there also. The vegetables will be gently softened by the steaming hot broth, so in most cases there is no need to pre-cook. I did roast the edamame in sesame oil, salt, and pepper for about 10 minutes before adding them into the bowls, but the rest of the vegetables were fresh and raw.

I have also listed all of the ingredients that I used, knowing full well that they are completely interchangeable. Proteins will be the biggest variable in the overall cost of the bowls…it all depends on what you want to accomplish and the price your customers are willing to spend. You can use any proteins and vegetables you like or have on hand, and I encourage you to use fresh, local and seasonal ingredients when possible. In the process of building a flavorful bowl, just pick a cool serving bowl and add the base component, noodles or rice, then pick the vegetables, then the protein and finally the broth and garnish components.
