augatuck Kitchens was founded in 1998 by David and Sonia Wells with a commitment to quality and creativity. They started their business with the idea of creating a frozen hors d’oeuvre that they could use on their catered jobs with the same quality as freshly made. Over the years they have created unique combinations and shapes that have translated culinary trends into what is now their frozen hors d’oeuvre line.

Both graduates of the Culinary Institute of America, David and Sonia have a combined 46 years of food service experience. They met at the Culinary Institute of America and upon graduating went on to work at 3 and 4 star restaurants in New York City including: Le Bernardin, Gramercy Tavern and The Hudson River Club. Here is where David and Sonia honed their culinary skills and now bring their expertise to the development of each hors d’oeuvre. The summer is coming to an end, which means it's time for back-toschool specials! Kids are headed back to school, and parents are busy breaking the bank to get them ready for another year.

With the proper marketing, this time of year can easily lead to increased profits.

» Spotlight the Kids Invite families to start their year off right with a celebratory dinner at your restaurant. Offer a discount of a free appetizer or dessert to families that bring receipts for their children's school supplies. This deal will give everyone an excuse to celebrate, and it will be appreciated by parents whose wallets have been hit hard by all the back to school shopping.

» Don't Overlook College Students If your restaurant is near a college campus, team up with the university to set up booths during orientation, or ask to include a flyer, coupon, or menu in the school's new student package. Create a student lunch special where you put together a few combinations at a special price, and market the specials to students on your website or via flyers.

» Show the Teachers Love Create a special promotion or coupon for teachers to redeem using their teacher ID badge. Instead of bringing an apple to the teacher, offer them a free appetizer at your restaurant with the purchase of any entrèe. History of the Lakewood Theatre Lakewood Theatre is in its 118th season, the oldest summer theatre in America. Originally an Indian camp ground, the homestead of Joseph Hayden, and a meeting place for spiritualists, the Lakewood Theatre areas was a swampy amusement park at the turn of the twentieth century when Herbert L. Swett took over as manager in 1899. The first legitimate play was “The Private Secretary” opening on June 15, 1901. The theater and summer colony flourished. In its “Hey Day,” between 1925-1941, this jewel of America’s resident stock companies was the major summer tryout for productions hoping for success on Broadway. One of the longest running plays on Broadway, Life with Father, premiered at Lakewood in 1939. The stock company was the training ground for promising young talent – talented they were and famous many of them would become a “Who’s Who” of silent screen, Broadway, movies, and television have passed through the back stage door. Lakewood Theatre held onto its resident company format until 1961 when it joined with other theaters on the east

coast in presenting package productions. Patrons wanted to see their favorite television stars. The Swett Family sold the Theatre in 1970 and for the next 15 years owners came and went. And for a time, no one came and no one went. In 1985, a non-profit partnership of Stevens, Bruce Hertz, and Jeffrey Quinn was formed and incorporated as CUE (Curtain Up Enterprises). For the past 50 years, performing--restoring, repairing, renovating--and loving this grand old Theatre. Jeffrey Quinn, now General Manager and Artistic Director of the Theatre, recently observed "we take our stewardship of Lakewood Theatre and its rich history very seriously. We strive to maintain her gleaming white facade as we fix leaks, jack up sills, modernize bathrooms, paint, carpet, and landscape. Lakewood Inn Restaurant Where a cast of talented characters aren’t only in the theatre

M

adison Maine isn’t what may pop to the top of one’s mind when thinking about great food and entertainment. Think again! Lakewood Inn Restaurant serves up high quality fare to rival well-known foodie hot spots. Paired with the amazing history and grounds of Lakewood Theatre, some of the best plays in the state and you have yourself an afternoon or evening to remember. (Theatre tickets are not required for dining.) Lakewood Inn Restaurant is in its 18th season. Like the Lakewood property, there’s a story to tell. The Lakewood complex is owned by Curtains Up Enterprises which owned the theatre and grounds. The restaurant, which was literally falling into the ground, was condemned by the town. In 1998, the building was donated to Curtains Up Enterprises (see History). Curtains Up Enterprises, Jeffrey and Susan Quinn along with their business partners began the arduous work of repairing and restoring as much as possible, keeping anything original they could. They were lucky as SW Herbert Swett’s (the founder of Lakewood back in 1899) daughter, Twinnie, was still alive. Twinnie was quite the character herself and offered stories and insight as to how things originally looked. Many things remain such as the fireplace in the dining room and original bar. Photos, artwork and signatures of the famous that performed at Lakewood adorn the walls. Steeped in history and

stories, exploring the restaurant is an extraordinary experience in itself bringing you back to another time. Proprietor Katherine Quinn runs the restaurant. She brought in Chef Justin Fisher five years ago and the two challenged themselves to offer high caliber food and a dining experience today’s consumers seek. Chef Justin describes his strategy. “We took a big risk offering up the quality of ingredients we use in this market. I take pride in what we serve and know we stand with the more publicized restaurants in the Portland or coastal markets. We have a great story, developed our menu and are working on marketing. We use social media, word-of-mouth, and even radio ads (bundled with the theatre). Not to be missed, we make great drinks!” Chef Justin makes everything from scratch including stocks and sauces. He believes this adds more depth to his dishes as he repeatedly reduces the stock to enrich the

flavors. Produce, specialty goods, meats and other local fare are utilized bringing a completely new culinary experience to Central Maine. The small menu takes full advantage of the offerings of local suppliers, whether found at farmer’s markets, regional co-ops or visiting the farms themselves. Chef ’s favorite dish to serve is the Sesame Encrusted Tuna with crispy carrot-cabbage slaw, grilled pineapple, pickled ginger served with a soy sauce reduction, wasabi, long grain rice and market fresh vegetables. The contrast of colors makes a beautiful presentation. Justin also enjoys mentoring young talent who has an interest in food but no experience. Currently Chef Justin is teaching Alex Stafford, a first year employee who will be attending culinary school. Alex assisted in preparing the plates for this article. Not to be outdone by the main menu, Lakewood Inn Restaurant carries its creativity and playfulness to the bar.

When asked ‘what are your biggest challenges’, Katherine responds, “overcoming the belief that Lakewood is top hats and white gloves. People still remember the property in its hay day when the wealthy summered here with fine dining and stage productions. Many famous actors and comedians have performed here. We do serve fantastic food and the plays are delightful but Lakewood is casual. We have a lot of fun. It is worth the drive.” 

Nazareth Manchego is Spain’s most famous cheese. Produced in La Mancha in Central Spain, true Manchego is made from 100% sheep’s milk. The abundance of wild herbs on Central Spain’s grazing lands gives Manchego a special taste and aroma. Its flavor is zesty and exuberant, while its texture is firm but not dry. Underneath the inedible rind, Manchego is ivory‑colored with few small holes. It has a wonderful flavor that lingers on your palate creating an experience you will be drawn back to again and again.

Kefalotyri

The Belgians are well known for both beer and cheese. This top‑of‑the‑range cheese has a deliciously fresh and nutty taste. At first glance, this cheese looks smoked because of its dark brown rind, but it’s not; the rind is coated in wax through a series of careful treatments. The cheesemakers start waxing the cheese when it’s only 15 days old. In the beginning they wax it every week, but after one month it receives only one coat every 20 days.

Pecorino Toscano DOP

This ancient Greek‑style cheese is a well known pantry item in Greek cuisine. Said to be developed by the mythical Artistaeus, son of Greek God Apollo. This traditional hard cheese is a blend of goat and sheep’s milk. It has a firm flaky texture, with a slightly herbaceous and fruity flavor.

Pecorino Toscano is a classic Tuscan sheep’s milk cheese with a deep savory flavor. It has an opaque color and a rich, complex profile on the palate. Protected by the Consortium of Tuscany Pecorino (DOP), it is treated with olive oil as it matures over sixty days.
