Baked Balsamic Honey Glazed Atlantic Salmon with Crispy Julienne Leeks Baked Salmon – Combine balsamic vinegar and honey in small bowl. Brush top of salmon (#529794) with mixture and bake at 350 degrees for about five minutes. Brush with additional honey mixture and cook five more minutes. Wash and clean the white part of leek (#284489). Cut in to julienne strips. Fry in hot oil briefly until golden and crispy. Place cooked salmon on plate and top with crispy leeks. Serve. Blackened Tilapia with Potato, Apple, and Corn Hash Blackened Tilapia – Heat oil in cast iron skillet. Lightly coat both sides of tilapia (#858047) with Cajun seasoning. Gently place tilapia in hot oil. Cook each side about three minutes. Remove keep warm. Dump oil and wipe out skillet. Add butter to skillet and cook diced potatoes (#480521) until golden over medium high heat. When potatoes are cooked add diced granny smith apples (#61694) and corn (#23219) and heat briefly. Filipino Style Salmon Belly This is a great way to utilize an under used or never used piece. Marinate salmon bellies that are cut into strips with garlic, grated ginger, sesame oil, oyster sauce, soy sauce, lemon juice and cinnamon. Place on a sheet tray and bake at 300 for 15 minutes. Use in pasta, on pizza, as an appetizer or make into salmon cakes. *Since salmon scrap/bellies are used, you are only paying for the marinade. Cost $.85/ounce Use in various other dishes
Crab Cake Pierogis with Browned Butter and Onions Season fresh crabmeat (#278830) with salt and pepper and mix with a small amount of mashed potatoes. Pan Seared Cod with Wild Mushroom Medley and Tarragon Lobster Sauce Season cod (#405217) with salt and pepper. Heat oil in saute pan. Gently place cod in hot oil and brown on all sides. Transfer to sizzle platter and cook at 350 degrees for about five minutes or until flakey. Saute mushrooms (#366860) in pan tossing frequently.
