Goodbye 2017 Food Trends, Food Trends! Greens 2017: Kale This trend didn’t exactly start in 2017, but it saw a definite plateau this year, with kale salads all over menus and kale chips cluttering retail store shelves. And while the superfood is versatile and loaded with nutritional benefits, it’s seeing its heyday winding down.

2018: Sea Greens Whether you call it ‘seaweed,’ ‘sea greens,’ or by their proper names, including kelp, nori or dulse, sea greens are entering the market in a big way. This potentially sustainable aquaculture can feed a staggering amount of people, and intrepid entrepreneurs on the coasts are cashing in. Sea greens are rich in vitamins, minerals, fiber and omega-3’s. And, according to Rowan Jacobsen, “a seaweed farm can produce twice the protein per acre of a soybean farm and 17 times that of a livestock farm. And it does it all without any inputs of energy, fertilizer, or water.” Take that, kale!

Dairy 2017: Savory Yogurt In an effort to get sugar out of the breakfast bowl, some yogurt brands saw success with savory options last year, with flavors like ‘everything bagel’ entering the market. Chef Dan Barber’s Blue Hill Yogurts pioneered the trend, with flavors like sweet potato, beet and parsnip. Recently, Fage got in on the trend with their “Crossovers,” and Chobani introduced a line of “Meze Dips,” including Chili Lime and Smoked Onion and Parmesan. Recipes for savory yogurt bowls proliferate on sites like Pinterest.

2018: Savory Ice Cream Look for this trend, which tipped off last summer, to resurface in the warmer months. Flavors like Chicken & Waffles, Sweet Pea, and even Cheese ice cream will make their way into the mainstream. If you’re trying to hone the flavor combinations on your dessert menus, think about the combination of sweet and savory elements, like maple and bacon or balsamic and strawberry, and then let your imagination do the talking. Unexpected ingredients will be making customers stop and take notice this year.

International Tastes 2017: Authentic Ethnic Food The idea of authenticity in ‘ethnic’ foods dominated last year, with the National Restaurant Association recognizing ethnic breakfast items, African flavors, and ethnic spices among their food trend forecast for 2017. Tapping into various ethnic comfort foods, such as pho and Korean fried chicken, for example, was extremely popular over the past year.

2018: Multicultural Food The concept of the "melting pot" as it relates to global food will continue to dominate in 2018, as cultures blend together on the menu. Think everything from watermelon rind to ramps; and while a perfect pickle knows no quitting time, the trend itself has already started to yield the floor to other sour notes, like house-made fermentables such as sauerkraut and kimchi.

3 Impacts of Food Waste

Environmental impact Food decomposing in a landfill emits methane, a greenhouse gas that directly contributes to global warming. Landfills contribute to about onethird of all methane emissions in the U.S. By reducing the amount of waste that goes to the landfill, we can cut this considerably. Wasted food also means wasted resources--water and energy used to produce the food. Those resources are precious. We can’t afford to use them recklessly.

Social impact According to the Food Waste Alliance, “The U.S. Department of Agriculture estimates that nearly 50 million Americans, including 16 million children, are food insecure.” This is a solvable issue, with more than enough food produced annually to feed this portion of the population. By handling food properly, eliminating arbitrary sell-by dates, and establishing safe, reliable channels for distribution, we can provide more food to the people who really need it.

Economic impact Wasted food is lost revenue for restaurants, farms and food producers. Creating better systems means smart job creation and improved efficiency, which cuts down on costs related to overproduction and mismanagement. (Food Waste Alliance)

Restaurant Industry Advocate One of the most notable advocates for change has been chef Dan Barber. In 2015, Barber created a series of WastED dinners, first at his restaurant Blue Hill and later in other cities, inviting chefs like Mario Batali and April Bloomfield to join him. This level of ‘celebrity chef’ attention was integral in raising public awareness. Likewise, "Top Chef" judge and restaurateur Tom Colicchio joined the Food Policy Action Education Fund to attempt to effect change at the policy level, working with lawmakers to adopt policies that improve food access for vulnerable populations as well as those that lessen systemic food waste in retail stores and restaurants.

How You Can Tackle Food Waste Limit menu items and cross-utilize ingredients Look thoughtfully at where you have the most waste on your menu and troubleshoot ways to change or improve those menu items with efficiency in mind. Reducing food waste won’t be the only outcome; you’ll also save money!

Work with local farmers to let them know what produce you need each season and in what quantities. Commit to buying overages and preserving them, either by canning, pickling, or other methods. Doing so will cut your costs, put money back into the local economy and result in a higher quality final product.

Establish a composting system for scraps. These can be used by the farmers you already work with. Often, community partners will pick up compost weekly. Check online for services in your area.

Use your platform to educate the public about food waste. While some consumers are familiar with the concept, most don’t fully appreciate the impacts of food waste on their daily lives. Chefs can be leaders in the fight against food waste.

Consider hosting a Food Waste Dinner that uses food that would be considered waste in a creative way. Share your efforts to donate or reuse food with your followers via social media and press releases. Publicly pledge to reduce waste in your restaurant, and work with staff to educate them on the best ways to do so.

Empanada Empanadas are a popular street food in Latin America, and are quickly gaining in popularity throughout the United States. These filled pockets have origins in Spain and Portugal, and often use beef, chicken, or seafood along with cheese, vegetables, beans, and spices. Empanadas are extremely versatile – they can contain filling with traditional Latin American flavors but are also great for seasonal or ethnic fusion recipes. Dress them up with plate presentation and a signature sauce, or dress them down in a simple deli wrap or container for takeout. Since empanadas contain less than a quarter cup of filling, they can be a great way to use up small amounts of ingredients that might otherwise go to waste. Experiment with different proteins, vegetables, and cheeses to find your favorite combinations. Chef Anthony used beef, chicken, and pork belly with different combinations of black beans, corn, and potatoes.

Cushnoc Brewing Co. opened on Halloween 2017 at 243 Water St. in the heart of Downtown Augusta. Our capital city's downtown has been undergoing the transformation into the showpiece of the Kennebec River, adding 4 new restaurants and over 30 new high-end apartments in the past few years. Cushnoc has eagerly joined the movement. Cushnoc is a Native American word meaning "head of tide," a tribute to the original name for Augusta, and the reason for its founding. Our icon is a blockhouse fort in homage to Old Fort Western, the oldest wood fort in the US, which is visible from our back windows. >>>

Cushnoc Brewing Co. is a wood-fired pizzeria and brewpub. We are proud to craft our own beer, dough, sauces, dressings and desserts, without the aid of a microwave or fryer. Our focus is constant improvement. Our food and beer have been well received, and are only getting better. Many of our signature beers and pizzas have been named after landmarks in Augusta, including Kresge Kolsch, named for the original use of our building as a Kresge's Department Store, and Cony High Pie, named after the city's high school. We eschewed the tenant of creating the restaurant that your customer base wants; we decided to build the restaurant that we wanted to hang out in with our families. We have been rewarded with the overwhelming support of both our local community and the regional beer community. Our first brewery expansion is taking place less than a month after opening our doors, and we look forward to expanding our footprint to satisfy the demand.

Tobias bought the building in 2016 with the hopes of attracting a brewery to Maine's capital city. After a year of searching he decided that he'd have to try and put one together himself. He'd already been talking to Casey about opening a restaurant in Downtown Augusta since 2015, and the concept came to life. Together with their friend James, they decided to move forward with the project in the nearly 5,000 square foot space in January of 2017. After looking at several brewers, the trio brought Chris on as a partner in their enterprise, who relocated from Southbound Brewery in Savannah, Georgia. The planning of the brewpub and build out process went very smoothly, in large part because of the shared passion for beer and food that brought the team together in the first place, and the support of our families. The partnership has operated on the tenant "stay in your lane" since the beginning, and that has allowed each partner autonomy in their responsibilities. Weekly meetings keep us all moving in the same direction.

The "Fort Western" pizza with roasted mushrooms, crispy pancetta, fresh arugula and herbed white sauce facing the window overlooking Fort Western. Inspired the practices of another restaurant in their travels, Cushnoc Brewing Co. uses Performance Foodservice branded PianconeÂŽ peeled tomato cans as a pizza stand.

Huge thanks are due to Steve Trafton, our Performance Foodservice - NorthCenter sales representative. Amber Hynes, Casey's wife and the kitchen manager, has worked closely with Steve to make sure that her vision is executed with quality products. He was on hand, or available by phone, to answer all of our myriad questions, to offer advice, and to ensure the product was delivered on time and in good condition. He has been a great asset while we work through typical opening learning curves. Cushnoc Brewing Co. is now barely over a month old and just hitting its stride. We feel lucky to have been embraced by the capital city, and look forward to things to come. Cushnoc Brewing Co. offers pizza by the slice during lunch.

In a medium sauce pan over medium flame, heat fat to a moderate temperature. Add aromatics and sweat for 2 minutes or until almost translucent. Heritage Ovens® Bakery Shortenings are designed for making everything from pastries to breads and pie crusts, and it is a key ingredient in keeping cakes moist. These are trans fat free, high-performing products with better health profiles than shortenings containing partially hydrogenated oils (PHOs).

Applications Heritage Ovens® Bakery Shortenings are specifically for bakery applications and developed to function more like a partially hydrogenated soybean shortenings compared to other trans fat free shortenings.
