SUPER SIMPLE summer salads

Bright and colorful inspirations for the summer season!

There’s nothing like a tasty, colorful summer salad made with many layers of flavor and components. These are truly so easy to create. I created these with simplicity in mind and tried to cross-utilize as many ingredients as possible in different applications. Pickling vegetables is quite easy and it’s always nice to get a slightly tart bite using whatever is in season and available. Enjoy the recipes and tempt your customers with these healthy summertime delights!

1Summer Fruit Salad W/ BLUEBERRY YOGURT DRIZZLE & CANDIED PECANS 2 Steak Tip SALAD

3Poke Tuna

OVER THAI STYLE RICE

The base of this salad already has a lot going on. Thai Style Rice Blend (534490) contains spicy curry rice and red quinoa with red peppers, edamame and carrots. The Poke Tuna Cubes (804033) should be made to order. Simply take some of the tuna cubes and quickly marinate it in a couple tablespoons of the Sesame Ginger Dressing (158908) and place on top of the rice. To give it some crunchy texture, I roasted the cauliflower florets (877277) and broccoli florets (880569) with a little olive oil, salt and pepper. The shredded red cabbage (359756) needs to stay raw for the crunch, along with the fresh radishes (866537). I pickled the red onions (418212), carrots (544595) and snow peas (24194) for tartness. A final touch of black and white sesame seeds (981722 and 628188 respectively) for garnish and serve with more Sesame Ginger Dressing.

4Chipolte Seasoned Pork Tenderloin

SALAD

For this recipe, I used our Allegiance Pork Tenderloin (464541) rubbed with Chipotle Seasoning (275251) and a little olive oil. Then I slow grilled to reach an internal temperature of 145 F. (You can pre-cook and cool.) Once sliced, I used half of the tenderloin. The salad base is fresh spinach (260811) with shredded Radicchio (951879) . I also grilled some summer squash (867194), zucchini (867190) and red onions (418212) then arranged on the spinach. Pickled carrots (544595) and blistered cherry tomatoes (423589) add great color. Finish with crispy onions (334993), PIANCONE Roasted Red Pepper Dressing (258793) and a green scallion garnish.

5Carne Asada Chicken Cesar

SALAD W/ PICKLED VEGETABLES

Season and marinate some chicken thighs (158758) overnight with Carne Asada Seasoning (797600) and a little olive oil. Grill to 165F and let cool. Salad base is PEAK Chopped Romaine (880507). Arrange grilled chicken on top and surround with a CONTIGO (625682) Avocado, Roasted Corn Blend (504916), Pickled Red Onions (418212), Pickled Carrots (544595), sliced radishes (866537), West Creek Croutons (321335) and Village Garden Caesar Dressing (158911).

6Twisted Wedge SALAD A twist on the classic Wedge Salad. Use 1/4 wedge of iceberg lettuce (907437) as the base set upright on the plate. Top with the roasted corn blend (504916), bacon crumbles (379410), roasted red peppers (867167), blue cheese crumbles (263721), blue cheese dressing (157231), Finish with CONTIGO Tri-Colored Tortilla Strips (334990).
