The season of Spring is approaching quick, but really tough to focus on right now with all of the winter still around us. With that being said, Performance Foodservice-NorthCenter is committed to offering our customers many quality seafood options and solutions for your “Features” board this year. Our line of Empire’s Treasure and Baywinds products are sourced from the best locations possible from around the globe. Saku Block Tuna, Mahi-Mahi, Rainbow Trout, Shrimp, Scallops and Red Snapper are the items that are featured in the following recipe ideas. Many contain interchangeable ingredients, meaning that the accompaniments surrounding each dish can be used with items from another recipe. Most importantly, these are some easy solutions with great flavors that you can introduce to your customers on a weekly basis, and they are simple to produce.

Empire’s Treasure Yellowfin Tuna is available in 4 oz., 6 oz. and 8 oz. portions, as well as Saku block (8-12 squared blocks).
This recipe is bright, colorful and spicy. I rolled the Saku block (#420826) in black and white sesame seeds and seared in a hot pan with some sesame oil for about 15 seconds on all sides, then removed from the heat and let rest prior to cutting into ½ “ thick planks. Arranged over some Seaweed salad and garnished with grilled lemon, Kimchi (#589825), and a Go Chu Jang Sauce, this plate screams out “bold and spicy” deliciousness!

Bay Winds Dry Block Scallops
are available in 2 sizes, 10/20s (#466396) and 20/30’s (#466397). They are a block-frozen at sea product, within hours of being harvested, and are not processed with any extra water added, meaning you will get a nice dry-style product once thawed. The best way to thaw this product is under refrigeration, NOT in a sink of running water. The recipe is simple - Bed of Ancient Grains and Kale (#506445) on the bottom, accented with the seared Scallops (nice hot pan with a little olive oil, seasoned with salt and pepper and cooked for 30 seconds on each side), topped with a roasted corn and pineapple salsa, finished with roasted asparagus and charred lemon wedge…light, colorful and full of flavor!
Baywinds Rainbow Trout
(#558251) is available in 5-7oz. portions, and it is pretty close to a consistent 6 oz. cryovac portion each time. It is a freshwater product harvested from Lake Titicaca located 12,000 feet up in the Andes mountains of Peru. It is ruby red in color, boneless, has a mild sweet flavor and ready to use after a quick thaw. I kept this one light and delicious…a simple quick sear served Almondine (lightly sautéed sliced almonds in butter), served over lemon-sauteed spinach and carrots and charred lemon, finished in a white wine and butter sauce. provisions March/April 2019

Empire’s Treasure Red Snapper
(#470769) is an 8-10 oz. skin-on portion size, and a bountiful piece of fish to work with. I have seen this product prepared a bunch of different ways, but simple works best. Pan-seared in olive oil and finished with a maple cream butter, served over sautéed red cabbage, roasted cauliflower and topped with roasted fennel.
Bay Winds White Shrimp are available
in a multitude of sizes, all IQF in 5/2# bags per case. The best feature of these shrimp is that they do NOT contain any sodium-tripolyphosphate. This means they have never been soaked in any kind of salt water solution and will not purge any fluid while cooking. They have a nice firm bite, clean flavor, and can be added into many dishes. This recipe is simple…I used the 8/12 size of shrimp (#421082), sautéed in garlic and butter, topped with some flavorful garlic and basil pesto, served with some roasted butternut squash and topped with pea tendrils and a quick squeeze of lime juice.
