quantity: General rule is 1 ounce per cheese per person. Denser, richer cheeses can be served in smaller quantities and you can serve less cheese if you are serving more meat and bread alongside the cheese.

for table service: Space cheeses evenly across wood, slate or a glass plate. Space sauces, condiments and additional accompaniments between cheeses, dolloping sauces in artful shapes or patterns for eyecatching presentation. For larger servings like parties or hospitality, dice cheese and serve in heaping piles with fruit or antipasti artfully piled between cheeses. Serve condiments and crackers or bread in separate containers on the side.

West Creek® Queso de Cesta Basket Cheese

Semi-hard Spanishinspired Cheese

Crafted with milk from Wisconsin’s most famous residents, Queso de Cesta Basket Cheese is an American original cheese with a hint of sweetness so unique you’ll keep coming back for more. Inspired by Spanish Manchego, this semi-hard cheese has an ivory-colored body and firm and crumbly texture from crystallization that form during it’s 6 months of cellar aging. During the aging process, each wheel is hand-rubbed with cinnamon and paprika for a sweet flavor and vibrant color in it’s distinctive basket-weave rind. Queso de Cesta Basket Cheese pairs well with sun-dried tomatoes, honey and wheat beer.

West Creek® Gruyere

Made in traditional copper cheese vats and aged on wooden boards, this Gruyere is inspired by the mountains of Switzerland and perfected by milk from the pastures of Wisconsin. Each wheel develops a robust, fullbodied flavor and beautiful golden rind as it’s flipped and washed for 4 months during cellar-aging. The creamy texture and rich, nutty aroma make Gruyere perfect for pairing with figs, fresh apples and amber beer.

West Creek® Italian-style Fontina

All you’ll need is a glass of wine, the perfect dish of pasta paired with this buttery fontina, and you’ll be transported to Italy! This classic cheese is inspired by the history of Italian-made fontina – made with cow’s milk and smear-ripened until it bears a rich, earthy flavor that gets sharper with age. You’ll love it’s creamy texture and versatility –from your favorite recipes to a simple pairing with prosciutto and dry Riesling.

West Creek® Sunset Reserve

This unique table cheese is a combination of two popular varieties – gouda and cheddar. Made with milk from family farms in Wisconsin and inspired by the state’s breathtaking orange sunsets, Sunset Reserve has a distinctive golden hue that makes it a cheeseboard standout. Aged for 4 months, this cheese has a firm texture with an approachable, subtle sweetness, making it the perfect pairing for apples, grapes and salami.
