Operators can choose from a wide range of Performance Foodservice private label branded products in a variety of categories from crusts, to sauce and cheese. With over 21,000 private label branded products available to customers - please discuss your needs with your local account manager to determine what products are a perfect fit for your operations. Several basic recommended products appear below and on following pages. The product recommendations are divided by category and further designated by good (a basic offering), better (a step up - often requiring additional prep) and best (a top-of the line offering, often requiring mixing or additional preparation and or is our highest quality offering in that category). ABOUT THE RED SEAL PIZZERIA™ PROGRAM - TRAINING INFORMATION We offer a full suite of training information on The Red Seal Pizzeria™ Program. The program selling guide, Pizza Operations Guide, Operator Checklist and back of house, step-by-step preparation instructions posters are shown below and are available by emailing Bob Beck, Vice President, Convenience and Retail Foodservice, Performance Foodservice or by emailing John Eccleston, Sr. Director of Brands and Brand Development, Performance Foodservice. Step by Step Pizza Preparation Instructions for Starting with Dough Balls

The Red Seal pizzeria pizza preparation guidelines

• Pull and defrost dough balls under refrigeration daily in covered food trays (approx 12 hrs). Place the pre-sheeted or stretched dough ball on the appropriate pizza screen. The dough should be even with the edge of the screen and not hang over the edges.

Ladle the correct amount of pizza sauce onto the dough using the measures guide by the size of pizza ordered.

• Follow manufacturer instructions for proofing defrosted dough balls.

Use the back of the ladle or spoodle, in a circular motion, to spread the sauce evenly from the center of the dough toward the edges. Leave approximately 1/2 inch edge of dough un-sauced

• Use small amount of bench flour to press dough and stretch to desired size. • Use flat fingers or back of wrist to evenly stretch dough without ripping or puncturing dough.

• Always follow the measures guide when preparing pizzas. This ensures your customer receives the same great product and experience every time.

• Keep your “make” table clean and organized. Restock items as needed and have back up stock ready and available to support business demands.

Use a peel to place completed pizza into oven for baking. Cook pizza until golden brown and cheese is melted evenly. Use preprogrammed oven settings or set timer based on cooking instructions.

Cover pizza evenly with the correct toppings using the measures guide by the size of pizza ordered. Be sure to place toppings to the edge of the cheese. Arrange sliced toppings first then diced or larger pieces after.

• Bake all pizzas according to your oven/time instructions. Inspect each pizza for quality and accuracy prior to serving to your customer.

Spread the correct amount of cheese evenly onto the sauce using the measures guide by the size of pizza ordered. Be sure to cover all sauced areas with cheese.

• Accuracy and consistency are the two key components to succesful pizza preparation. Focus on preparing the pizza as ordered and providing the highest quality pizza to your customer on every order.

LICENSING AGREEMENT

Customer License, Branded Food Products [brand – pick one: Vai Fresco™, The Red Seal Pizzeria™, Contigo™ Taqueria, Deli Day™, or Perfectly Southern™ (Each customer should sign a separate license agreement for each specific branded program. This will provide better tracking of customer participation and brand performance.)]

To become a licensee of The Red Seal Pizzeria™ Program, the operator must sign a brand licensing agreement. This agreement outlines the requirements to be fulfilled by the operator and outlines the many benefits of becoming a licensee of the program. There is no license fee only agreement to be brand compliant in the program. Brand Licensing agreement includes Retailer Requirements: Maintaining a clean establishment, with all necessary foodservice equipment to produce, heat, and maintain required holding temperatures • • •

Purchase 100% of all required food and foodservice items for the program from PFS/ PFG Purchase 90% of all suggested food and foodservice items for the program from PFS/ PFG Maintain a properly installed graphics package, and a branded menu board in order to display the Brand in connection with the sale of the Program products and services Cooperate with initial brand and service training for the program Not co-mingle any unauthorized products with the branded Program products

This Customer Participant License Agreement (the “Agreement”) is dated as of ________________, 20___ (the “Effective Date”) by and between Performance Food Group, Inc., dba Performance Foodservice (“PFG”); and ____________________, with a principal place of business at ____________________ (“Participant”). Branded Tailored Digital Menu Boards & Cloud-based Management Once a customer has signed the selected Program Licensing Agreement and entered in our Performance or Eby system as a viable Program customer, they will have access to RTT Digital Signage to develop tailored dynamic menu boards via an electronic field template form. Once the customer uploads its data, RTT will customize the menu board within 24 hours and send it via the cloud to the instore menu boards (LED screens). This includes pricing and additional items the customer requests to be added to the menu boards such as LTOs or other promotions. Note that most LED TV screen are Internet-ready.

Menuetta Restaurant Marketing of Bloomington, Minn. www.menuetta.com, is our Program Partner to design and fulfill all POS merchandise and static menu boards for Perfectly Southern™ Fresh Fried Chicken, Vai Fresco™, The Red Seal Pizzeria™, Contigo Taqueria™ and Deli Day™.

Branded POS merchandise will be accessed and ordered via an e-commerce site operated by Menuetta and available only to registered Program customer participants. Static menu boards will be designed using an established menu board design template and tailored content and pricing. Note that all Programs, especially more complex menus, recommend leading edge animated “motion” menu boards.

Once a customer has signed the selected Program Licensing Agreement and entered in our Performance or Eby system as a viable Program customer, they will have access to the Program’s Branded POS Merchandise via an online catalogue. Each customer will have a password protected account to order POS.

Primary payment option is a credit card entered on site by the customer. OpCo or sales offices may opt to help pay for products and services as a partial or full payment by using PO or spending account. Payment options based on the OpCo/sales office request. Menuetta has set up each OpCo and Eby-Brown office as an account to allow for shared payments, via spending accounts, POs, e-gift cards for customers in the Program.
