New technology, mobile apps and delivery services are contributing to the takeout and delivery phenomenon, which is surpassing the $52 billion mark. As a restaurant operator, now is the time to evaluate your strategy and determine how you can provide a takeout program that meets consumer needs for convenience, while maintaining the quality and taste of your menu. Takeout and delivery orders are on the rise, and with check averages that are typically higher than dine-in orders, these opportunities are great ways to add new revenues and profits. TAKEOUT AND DELIVERY STRATEGY While creating a takeout/delivery strategy can be a nice bump for your bottom line, there are many things to consider as you develop your plan. Here are a few ideas to get the ball rolling:

Sites like GrubHub, EatStreet and Caviar act as virtual food courts, letting customers browse through restaurant offerings and order online. Restaurants typically pay a 10 percent to 20 percent commission.
Mobile and online ordering are replacing phone orders, offering convenience to customers and restaurant operators. As for the restaurant, operations aren’t disrupted by phone calls, and an app never forgets to upsell.
Communicate
Reward Loyalty
Give an estimated time of arrival. Provide updates if delays arise. People want transparency.
Give customers an incentive to order again. Give discounts to returning customers.
Group Ordering
Pump up your profits by facilitating group orders. A group leader starts the online order and notifies other participants to add their items, with each member discretely entering their own credit card information.
Be your own Billboard Send a flyer or a magnet that customers can add to their fridge with a number and menu to encourage future orders.

PACKAGING
The right packaging is important for protecting quality, flavor and texture of your meals and for preventing messy travel mishaps. Here are some things to keep in mind when selecting containers and packing food to go.

INVEST IN VENTILATION
STAY LOCAL
Placing hot and cold food in separate containers is an important first step, but stacking food items of varying temperatures on top of one another can quickly diminish the integrity of your dishes.
While it may seem counterintuitive, a container that successfully traps every last bit of heat can actually speed up food degradation. Use ventilated packaging that won't allow condensation for form.
Try to limit your delivery area to homes that are no more than a 15-minute drive away. This way, your delivery time won't be all going towards driving.
The U.S. Department of Agriculture recommends keeping hot food at or above 140oF while being delivered. Cold food should be transported at or below 40oF.
