State parks and local spots you won’t want to miss on your fall color tours Lina Belar For Fall Scene Fall is a marvelous time of year to be outdoors in Minnesota. Hunting season is the highlight of the year for many, and opening deer season is practically an unofficial holiday for which preparation begins months in advance. But deer hunting isn’t the only thing that draws people to the Minnesota outdoors. Each fall, the forests and fields erupt in a glorious burst of color before the winter snow blankets the land. Perhaps it’s this knowledge of the upcoming monochromatic landscape that draws people outside every fall, to feast their eyes on the grand colors far and wide. The interest in autumnal splendor has become so widespread that the Minnesota Department of Natural Resources hosts Fall Color Updates from Minnesota State Parks and Trails on its website. This is a handy reference for fall color enthusiasts – whether they want to photograph the colors at their peak, or just enjoy looking at them. Savanna Portage State Park This park, located 100 miles north of McGregor, is a gateway to the history of Minnesota’s fur trade of the early 1800s. The Savanna Portage was a marshy area that crossed the Continental Divide. It connected waters flowing east to Lake Superior with waters flowing west into Minnesota’s interior fur country. It was part of a great circle that took the traders or voyageurs from the Great Lakes down through Minnesota to the Otter Tail River and into the Red River, and then north to Hudson Bay.

According to historical documents, the portage was so torturous, “The voyageurs frequently sank with loads nearly to the hip in mud and water.” Excursions to the park today aren’t nearly so treacherous. And fall colors at Savanna Portage are bright and notable – well worth the travel time for those who don’t live in the area. It’s not just leaves that flaunt their colors. The mushrooms, grasses and weeds seem to vie with each other for attention. At Savanna Portage, the aspens turn bright yellow, while the occasional maples distributed through the woods present leaves splotched with shades of orange. Mushrooms that might have been unnoticed in summer, show up brilliantly. Maplewood State Park Located on Highway 108 just east of Pelican Rapids, Maplewood is one of the best places to photograph fall colors. Whether it’s colorful leaves against a brilliant blue sky or a wooded path carpeted in gold, there’s a photo everywhere you look. As the name implies, the park boasts a preponderance of maples, which turn brilliant shades of orange, gold, and red in the fall, creating a kaleidoscope of color that attracts visitors from all over the state. Knowing this, it’s a good idea to visit the park during the week, if possible, as it is usually quite full on the weekends. The maples are extraordinary, but they’re not all there is to see. There are meadows filled with bright red sumac and heavily wooded

What causes fall colors?

Four main groups of biochemicals are responsible for the various yellows, oranges, red and browns of fall leaves – chlorophyll, carotenoids, anthocyanins and tannins. Chlorophyll provides the green color of most leaves during spring and summer. As the days get shorter and temperatures cool, chlorophyll is broken down faster than it is produced. This allows the carotenoids (the ones that give carrots their orange color) to be revealed. The reds and purples found in some leaves during the fall are due to the anthocyanin compounds. Many things affect the colors, including the acidity of the cell sap in the leaves. Bright, sunny fall days produce the best colors. The tannin in the leaves of oaks causes them to turn brown. The oaks are a little later to turn than the maples, and the native bur oak tends to be mostly brown. Red and white oaks have more colorful leaves. dirt roads lined with ash trees that create a carpet of gold. The park also holds eight lakes and many ponds, and is host to 150 bird species and 50 species of mammals. Itasca State Park Just north of Park Rapids, this park is a place of beauty all year long with its stately old-growth timber. The most spectacular fall colors at Itasca come later in the season, when the Tamaracks turn color. Tamaracks, or larches, are conifers that change color and lose their leaves in the fall. The needles of these “deciduous evergreens” turn a bright golden yellow before drifting to the ground. The Perham area Closer to home, there are some lovely Tamarack stands in the swamps southeast of Perham, and between New York Mills and Wadena.

As the Tamarack gets ready for winter, the needles change color quickly. Those who live in the area should try to scout out a location ahead of time, and then check it daily. At peak, it looks as though the forest is on fire. Brilliant colors are most often seen when the fall weather has warm, sunny days with cool nights between 32 and 45 degrees Fahrenheit. Leaves that are shaded tend to be duller than leaves that are in full sun.

Why do the colors vary?

Fall colors vary from year to year and place to place for several reasons: -Weather is most critical in determining the colors displayed each fall. Colors are best when high quality foliage – a product of a warm, moist summer – is exposed to sunny, cool fall days. Light frosts may also help, but hard freezes can ruin the display. -Physiological stresses placed on trees can impact fall colors. -Cool, wet summers can cause premature displays of color. -A mild summer drought may actually increase the display, but severe drought usually dulls colors noticeably. -In some cases, foliage may die early and turn straw-colored due to a lack of water. Because it is too dry to produce the vibrant reds, yellows, and oranges, a severe summer drought will create a landscape filled with the subtler colors of tans, bronzes and auburns. Festivals to fall for Local pumpkin patches, harvest fests offer fun for families Kiowa Wieser-Matthews For Fall Scene By the time the air cools and the leaves begin to change color, preparations for area harvest festivals have already long been under way. Whether it’s roaming the treasures at a fall flea market or weighing in on which of this year’s giant pumpkins will be the biggest, the local harvest season brings plenty of opportunities for fun, for young and old alike. Following are just a few of the family-friendly events that will be going on around the area this fall. UNCLE RAY’S PUMPKIN PATCH September 27 Uncle Ray’s Pumpkin Patch will take place on the last Saturday in September, from 10 a.m. to 2 p.m. Lunch will be served through the noon hour. The pumpkin patch is located at S&S Vineyards, 2.5 miles north of New York Mills on County Highway 67. This annual tradition – now in its 13th year – gives neighbors a chance to catch up with one another while children walk through the fields and choose their favorite pumpkins to take home. S&S Vineyards owner Brian Sillanpaa said close to 3,000 pumpkins have been given away in years past. As the pumpkin picking festivities wind down, the band Hillside Creeps, out of Minneapolis, will perform in the barn throughout the afternoon and evening. Patrons will be welcome to sample some of the vineyard’s wine. The annual celebration is held in memory of Sillanpaa’s uncle, Ray Sonnenberg, who began the tradition. All events are offered for a free will donation.

PERHAM HARVEST FEST October 6 On the first Saturday in October, crowds will fill the streets of Perham for the town’s ninth annual Harvest Fest. A flea market will kick things off at 9 a.m., with a vast amount of treasures waiting to be found. From arts and crafts to antiques and collectables, the outdoor market will have something for everyone. It will be located behind Blossoms, Birds and Beyond. Family-friendly events will take place throughout the day, in the turtle park near the post office, until 4 p.m. Children’s games, face painting, bobbing for apples, a petting zoo and live music will be just some of the fun activities kids can partake in, free of charge. Kids will also be able to ring a pumpkin, or pick one up at the park, to try carving their very own jack-olanterns. Carving tools will be available for a minimal cost. Kids and adults alike may enjoy watching professional chainsaw carver Charlie Kirchenwitz, from Dent, as he takes on various wood carvings throughout the day. A leaderboard at last year’s Giant Pumpkin Weigh-Off at the Ottertail Pumpkin Festival shows how many growers took part, and what their giant pumpkins weighed. Richville grower Joe Werner took the top prize at the festival. Werner also broke a state record last year with another pumpkin he grew, a 1,779.5-pounder that is the heaviest pumpkin ever grown in Minnesota.

OTTERTAIL PUMPKIN FESTIVAL October 20 The 14th annual Pumpkin Festival in Ottertail will be held on Saturday, Oct. 20 from noon to 3 p.m. Outdoor activities will be going on around downtown, including a highlight of the event, the Giant Pumpkin Weigh-Off. Added to the festival in recent years, the weighoff features huge pumpkins, most of them planted and raised by local growers. The weigh-off will be held this year in the parking lot of the community center. It will begin at noon and various prizes will be awarded. Be-sides the biggest pumpkin, the ugliest pumpkin will also be chosen. 10 | Fall Scene September 2014

No preregistration is required for those who want to compete; simply show up with the pumpkin at 11 a.m. Kids may also register for a chance to win one of four free bicycles. Inside the Williams Company Store, kids can get their faces painted and carve pumpkins. Food will also be available, with grilled brats and pumpkin desserts provided by the Ladies of the Methodist Church. Some of the events are available for a free will donation. All money raised will be donated to Friends of Friends Fighting Hunger in Otter Tail County.

Conservative deer season set Limits leave hunters, farmers wanting more Eric Hendrickx ehendrickx@ perhamfocus.com Hunting season in Minnesota is like an unofficial holiday. A lot of people look forward to it all year long and, when it finally arrives, the excitement is palpable. Men and women take time off work. Kids take a couple days off of school. Friends and families gather at their hunting lands. Most take delight in boasting about their past successes, and razzing the less lucky. This year’s deer hunt, however, is not generating the usual level of enthusiasm among local hunters. The season has been criticized for what some see as restrictive deer limits set by the Minnesota Department of Natural Resources. According to the DNR, there is a less dense deer population this year. As such, only one deer per hunter may be harvested across 95 percent of the state. The DNR says there are fewer deer following two severe winters and high hunter harvest rates for the past decade. Northeastern Minnesota hunters will see the most dramatic changes, with much of the area in so-called ‘bucksonly zones,’ where no antlerless permits will be available. That rule will apply to youth and disabled hunters, as well. It’s the first widespread bucks-only regulation since 1997, and is hoped to

leave more does in the woods to replenish the population faster. “This is the most conservative deer hunting season we’ve had in … two decades,’’ said Steve Merchant, the DNR’s wildlife populations and regulations manager, in a press release sent out by the DNR in July. Only bucks may be shot in 14 deer permit areas in northeastern Minnesota, including areas 108, 117, 118, 119, 122, 126, 127, 169, 176, 177, 178, 180, 181 and 199. Lottery deer areas, with a few antlerless permits each, include areas 101, 103, 105, 110, 111, 152, 155, 156, 159, 171, 172, 173, 179, 183, 184 and 197. Only around Duluth, in area 182, can hunters buy up to four extra permits and take up to five deer total. It’s one of the few areas of the state where wildlife managers say far too many deer still roam. Around Perham, areas 239, 240 and 241 are designated as hunter’s choice areas, where one deer of either gender may be taken. Bonus permits cannot be used within these zones. Area 258, north of Detroit Lakes, will be a lottery area. Hunting zones have been tweaked this year, leaving some hunters scratching their heads. Andy Hendrickx, a resident of Butler Township, northeast of Perham, said, “They expanded our zone – we are 241

now going all the way north to Hubbard county, where there are less deer. So now it’s just one big area still under the rule of a single deer limit, even though deer have always been in abundance here.” The DNR urged hunters to carefully read the regulation booklets that should be available wherever licenses are sold. It may be the first time for many hunters that they can’t shoot a doe, or have to apply for antlerless permits. In addition to being a frustration for hunters, this year’s new limits have irritated some area farmers, who claim deer numbers are far too high as it is. Some have said deer are eating 20-30 rows of their crops by the time everything is ready for harvest. Brian Moenkedick, a farmer with land in Edna Township, stated, “Honestly, I don’t see any loss of deer this year. One field there are 8-10 deer eating crops at any given time, I’d estimate a 10 percent crop loss on that field alone.” But DNR officials stand by their estimates, and say they want to ensure a strong and healthy deer population well into the future. Big game program leader for the DNR, Leslie McInenly, said, “This year’s conservative approach will protect more antlerless deer, reduce the statewide harvest and allow the population to rebound.”

A dozen quick and crafty fall creations Simple things for kids to make using acorns, pinecones and fallen leaves Elizabeth Huwe ehuwe@perhamfocus.com While taking walks in the cool, crisp fall air, acorns, leaves and pinecones are all around. All that is needed to bring the great autumn-outdoors inside is a bit of creativity and a few basic arts and crafts supplies. Before using pinecones or acorns for any craft that will be staying inside the house, first be sure to get rid of any bugs that may be hiding inside. To get rid of bugs inside acorns, place them on a foil-lined baking sheet in a 200 degree oven for 2 to 3 hours. Shuffle the acorns every hour so they do not burn. Do the same for pinecones, but for about 45 minutes. Now for the fun part: getting creative. Crafts do not need to be complex or complicated in order to be cute. Don’t believe it? Try putting a pair of googly-eyes on a pinecone and adding pipecleaners for arms. There’s number one! Another possibility is a pinecone squirrel – built with the snowman concept. Find three pinecones: a big one for the body, small one for the head and a long third one for the tail. Glue the pieces together and add a bit of burlap for the ears (maybe another pair of googly eyes) – and that’s all! Here are another 10 simple fall craft ideas: 1. The classic pinecone bird feeder: smother a pinecone in peanut butter and roll it in birdseed. Hang the cone from a tree with a piece of wire or string and watch the birds enjoy their tasty treat. 2. Hot glue various lengths of ribbon to the large end of several pinecones and hang them from the ceiling like a chandelier (or in a chandelier if you have one). 3. Glue six small pinecones with the wide ends together to create a star. Add a small loop of string on the back as a hanger. 4. Tie a series of pinecones along a 4-foot ribbon to create a garland. 14 | Fall Scene September 2014

Fall-based crafts don’t need to be complex to be whimsical. Three pinecones, some burlap scraps and an acorn can make for a simple, cute squirrel decoration.

5. Spray-paint pinecones and acorns vibrant colors and place them in a clear glass bowl or vase as a festive centerpiece. 6. Paint acorns one color and the cap in a contrasting shade. Hot glue the pairs back together and add a loop of string as a hanger. Add some flair by painting monograms. 7. Make a fall mosaic by gluing acorns, pinecones and dried bits of flowers to a canvas or reclaimed piece of wood in a pattern. 8. Glue gold jingle bells in empty acorn caps. 9. Use a pinecone on its side as a place setting holder. 10. Paint pinecones and acorns bright red. Glue the base of an acorn to the wide end of the pinecone and add a black sunflower seed to the acorn’s point to make a cardinal.

‘You’re never too old to do Old Time!’ Polka Daze returns to Ottertail Kiowa Wieser-Matthews For Fall Scene The sixth annual Polka Daze will be whirling and twirling its way into Ottertail again this fall, with festivities starting on Thursday, Sept. 4 and continuing through Saturday, Sept. 6. Polka fans flock to the big yellow tent in downtown Ottertail every year for this event, to enjoy a polka-loaded weekend and to socialize with old and new friends. The event usually attracts about 200 people per night, who gather at the City Park of Ottertail, next to the water tower, underneath a 110-foot yellow tent set up for Polka Daze. The tent covers a large dance floor and tables for dining. Comfort food, such as beer, brats, and tacos in bags, will be served, and free camper space is provided to all who attend. This year’s event will feature five different entertainers. Far from run-of-the-mill, they have performed across Minnesota, and are always popular with polka fans. To keep their performances fresh, and to ensure a wide variety of music for the dancers, the entertainers frequently switch it up, playing brief sets before introducing a new musician to the stage. On Thursday, Sept. 4, Marie and The Boys will play a variety of Old Time music from 7-11 p.m. On Friday, Sept. 5, Odell Braaten will play from 1-9 p.m. switching off intermittently with the Cathy Erickson Band, which will begin performing at 2:30 p.m. and will stop at 10 p.m. On Saturday, Sept. 6, Leon Olsen will play on and off from 1-9 p.m. Adam and The Jolly Jammers will also play intermittently between 2:30 and 10 p.m. Polka Daze is planned and sponsored by the Ottertail Lions Club, with proceeds going back to the club to be used toward local projects. Ottertail Lion Jerry Smith is responsible for much of the event’s coordination. When asked what he thought about

Polka Daze, he said, “You’re never too old to do Old Time!” Admission is $5 the first day and $14 on the second and third days. A pass for all three days is available for $30.

How do you like them apples? Baking with fall’s sweet and sour fruit Elizabeth Huwe ehuwe@perhamfocus.com Apples, apples everywhere! As September and fall come to Minnesota, apple trees in backyards and gardens give hungry munchers a tasty snack to enjoy. But, as anyone with a hyper-productive apple tree will know, a person can only eat so many apples at once. Other than pawning extras off on family, friends and coworkers, what can be done with these fall treasures? Luckily, apples are an easy fruit to freeze for future use. To freeze apples, first wash the fruit and check for any bruises. Bruised fruit will not hold up as well. Peeling apples before freezing is optional, depending on preference. Next, cut the fruit into quarters and remove the core. Now, slice or dice the apples into the shape used in your recipes (crescent moons for pies, cubes or diced for smaller baked goods). If browning is a concern, soak the fruit in an ascorbic acid (vitamin C) solution or an acidic fruit juice such as pineapple or diluted lemon juice. From this point, drain any standing liquid and pat the apples dry, then place them in a freezer bag, squeeze out any air and leave in the freezer until ready to use. Frozen apples should be thawed and drained before being added to a recipe. They will be softer than fresh-cut apples, so plan accordingly while baking. To use some more apples – frozen or fresh – here are two delicious recipes that can be prepared and ready to eat in less than an hour.

Whole wheat apple dumplings with cranberries.

Whole wheat apple dumplings Whole wheat flour, some spices and dried cranberries make these dumplings hearty, and a perfect addition for brunch. Ingredients: Dough -2 cups whole wheat flour -3/4 tsp. salt -1 tsp. ground cinnamon -1/2 tsp. ground nutmeg -3 tsp. baking powder -2 Tbsp. sugar -3/4 cup milk Filling -Two medium apples, about 2 cups, cored and chopped -1/2 cup dried cranberries, chopped (optional) Sauce -2 Tbsp. flour (white or whole wheat) -1/2 cup white sugar -11/4 cup water -1 cup apple juice (no sugar added) -1 tsp. vanilla extract

What to do: First, mix together the dry dough ingredients. Slowly add the milk, stirring until the dough is smooth. If too sticky to work with, add up to two tablespoons of additional flour. Transfer the dough to a floured work surface and roll into a rectangle. Spread the fruit evenly onto the dough, and then roll the dough and fruit into a log. Using a sharp knife, cut the dough log into slices and place into a baking pan. For a smaller batch of larger dumplings, use a 9x9� pan and thick slices. A 9x13� pan and thinner slices will result in more servings. Combine all of the sauce ingredients, mixing well to eliminate flour lumps. Pour the sauce into the pan, evenly over the dumplings. Bake at 350 degrees for about 20 minutes, or until the dumpling tops start to become dry. Allow the dumplings to cool for 5 minutes, and then serve by scooping from the pan or by turning the pan over a large serving plate and tapping on the bottom to make the dumplings fall out.

Apple cinnamon whole wheat scones Use this recipe as a base to make all sorts of scone flavors. Be sure to thoroughly drain fruit used in this recipe, or else the scone will not crisp up as well on the outside. Ingredients: -1/2 cup unsalted butter, room temperature -2 cups whole wheat flour -2 Tbsp. brown sugar -2 tsp. baking powder -1 tsp. cinnamon -1/2 tsp. baking soda -1/2 tsp. kosher salt (or rounded1/4 tsp. table salt) -1/2 cup, plus 2 Tbsp. cold butter milk -3 Tbsp. unsweetened apple sauce -1 large egg, separated -1/2 to 1 cup diced apples (or other fruits, nuts, chips, etc.) -1/4 cup walnuts, diced or crushed (optional) -Sparkling sugar or cinnamon sugar (optional) What to do: Preheat oven to 375 degrees. Line a baking sheet or pizza pan with parchment paper and set aside. Cut/mush butter into small pieces in bowl and let rest in refrigerator for 5 minutes. 22 | Fall Scene September 2014

Combine flour, sugar, baking powder, cinnamon, baking soda and salt in a medium bowl. Cut the butter into the dry mixture until the pieces are between dime and oatmeal-sized. Add fruit and nuts, fold into the dough with a spatula. In a different bowl, whisk together the butter milk, apple sauce and egg yolk. Gradually add the liquid mixture to the dry ingredients, stirring to create a somewhat-sticky dough. If dough seems too dry, add up to 1 Tbsp. buttermilk; if dough is too sticky, add up to 1 Tbsp. flour. Transfer the dough to a lightly-floured work surface and pat it into a flat disk, about 7 or 8 inches across. Cut the disk into 8 equal “pie wedges� with a sharp knife and transfer to the baking sheet. For crisp, yet moist scones, place wedges in a lightly-spaced circle on the sheet, leaving about 1/2 inch between. Beat the egg white and brush over the top of the scones. Sprinkle with either sparkling sugar or a cinnamon-sugar mixture. Place the scones in the oven and bake for 18-25 minutes, turning the pan 180 degrees after 10 minutes. Scones are done when edges appear crisp and lightly golden brown. Serve warm or set on wire rack to cool. Store in a sealed plastic baggie to keep fresh.
