360 Mall

Baker&Spice Zahra, Kuwait

__ 2019 COMPLETED

Unlike any other location, this Baker&Spice in 360 mall is a very unique and one of it’s kind. Rising up from the floor lever as a pop-up right in the middle of the mall, it gives a great impression as a structure on it’s own. Idea was to treat this object not as a restaurant but as an interactive pavilion. Kitchen is accommodated in the middle as an isle. Seating is oriented on two sides practically as a mirror, opposite from each other. Six tons of stainless steel 8mm thick round bars is implemented in this extraordinary structure as a curtain for the beams, columns and as a cover for the false roof. Moreover, 50.000 velding spots was needed to put everything together in a coherent and consistent shape. This restaurant-pavilion captivates with its distinctive shape and structure; columns and beams are cladded with titanium steel sheets of brushed texture. Entire counter is put together out of travertine on top of which sits 50cm tall tempered glass refrigerated display for fresh salads, pastry and retail items. Open kitchen in the middle represents the heart of the concept where you can have a sneak peak of how your dish is made. The name of 360 mall tells a lot about its shape. This Baker&Spice concept follows the same philosophy on a much smaller scale where you can roam around and interact with it just like any other pavilion intended for exhibition.

Place Vendome

NINO Doha, Qatar

__ 2019 UNDER CONSTRUCTION

Local Kuwaiti brand of Italian food introduced itself to the market in the early 90’s. Over the years Nino has developed to become the franchise and this is the first of its kind located in new Place Vendome mall in Doha, Qatar. New materials and lighting methods are introduced to this concept while preserving Nino’s original brand identity. A mixture of glossy materials, leather and brass helped in creating an urban vibe to this casual yet chic dining experience. Back painted reeded glass is a dominant material applied within this interior. It is used to reduce certain boundaries within the restaurant; specifically between the kitchen and dining area. Carefully designed semi-open brass pattern is applied to the ceiling to provide an industrial sensation but also to preserve Nino’s brand identity. Specific color template of furniture selection gives classic Italian touch to it. Brass trims in the concrete flooring are well designed into a pattern and flows repetitively from one side of the dining area to another. Natural marble flashes off the walls while the branding is engraved in the stone creating very subtle identity. Made-to-measure sofa is designed in nubuk leather enriched with brass details.

Drive-trough

Johnny Rockets Kaifan, Kuwait

__ 2020 UNDER CONSTRUCTION

This timeless All-American brand seeks to exist for almost thirty years as one of the favorite burger joints among the overcrowded food market in Kuwait. One of the oldest franchises in Kuwait is getting it’s first drive-through location in Kaifan. The story of Johnny Rockets takes place in the 60’s with jukebox machine on the table and pin up girls as wall decoration. First Johnny Rockets building in Kuwait gives the 60’s feeling with it’s curved shape, protruded shader with brand slogan around and materials used on it but also at the same time contemporary touch extorted by the double hight chilling, glass and metal. Tiles are almost entirely used in interior elevations but they are coming out into the facade creating 60’s vibe. Only two colors of the tiles are shifting all over the exterior generating this minimal touch. Reeded glass as a divider separates kitchen form a small dining area while grooved blue marble makes a support to that structure. Branding structure on the top of the building is changed from its blue-yellow-red color to only black and white to complement building style.

Pure House Hotel

Baker&Spice Jeddah, Kingdom of Saudi Arabia

The concept expression in Baker&Spice is best described as natural and connected to the environment. The ambiance is a combination of natural materials including raw wood furniture, stone, glass, and modern lines with warm earthy colors giving each restaurant its own unique and cozy feeling. Foods are displayed in chilled food cabinets and on shelves. Everything that B&S cook, as well as raw ingredients and produce, is available in the retail space of the restaurant. B&S use the food to decorate the space. 360 Mall

Taboonat Zahra, Kuwait

__ 2020 UNDER CONSTRUCTION

A levantine street food outlet inside the first food hall in Kuwait, 360 mall. The inspiration is Jerusalem, a holy city that praises all three religions and beholds a history of truce and conflicts; a city that has fused the cultural influence of the indigenous Palestinians both Christians and Muslims and forced the integration of the diaspora of Jews from Iraq, Syria and Yemen by the Zionist movement to declare state of Israel. Driven by conflict but unified in language, palate and common food and ingredients wavered by the reminiscence of the Ottoman empire. Jordanian desert stone in the combination with red brick and casted concrete gives contemporary touch to an ancient story of the street food of Jerusalem. Reddish taupe Petra stone is honed and cladded in vertically cut pieces divided by the stainless steel trims. Entire bar is made out of casted concrete from which carefully designed pattern of red bricks sticks out with its thickness. Both materials and ingredients are telling a story of differences wrapped together into a perfect symbiosis to represent the best of flavors and design.

Vivo Los Trapenses

Damien Mercier Santiago, Chile

__ 2015 COMPLETED

CHOCOLATIER BELGE

This project is conceived to recall the theatre or stage with the chef as a main character who would visit the store once in a month in order to show the customers his way of making a chocolate and to reveal small part of his magic. In a thought process of not showing off everything thats going on inside the store, the idea was to make customers to enter inside and see the show. Three dominant figures in the store are exhibition wall, display table and stage. Table size is 3.6m x 1.8m lying on two beams which are fastened to the column in the middle of the store. Size itself and three layers or steel, marble and tempered glass makes this chocolate display completely unnatural without even one leg to support the weight. Materials used for this project are mainly glass both, tempered and laminated, metal, wood, porcelain and dekton which is made from a mixture of inorganic raw materials found in glass, porcelain tile and natural quartz. Ceiling and flooring materials are the same to give an impression of a huge mirror from wherever you are standing in the store.

GUST University

Baker&Spice Mishref, Kuwait

__ 2018 COMPLETED

With the philosophy – local, organic, fresh, homemade – Baker&Spice became a benchmark for excellence. The menu represents an exciting daily journey through the farms and markets of the region, constantly changing with the seasons and availability of fresh locally grown and mainly organic ingredients. The kitchen and bakery are our centerpieces. Every outlet has a finishing kitchen supplied by a central kitchen which is responsible for baking and menu origination. First of it’s kind, this concept was conceived as grab-and-go for university students. Although the small space was not able to accommodate every service that B&S has to offer, it’s interior reflected the brand message and recognizable vibe throughout carefully selected materials in combination with displays, food and retail items. Travertine and glass are giving that familiar cozy thrill of Baker&Spice while smoked oak wood in combination with metal framework creates contemporary display for retail items and props.

Al-Kout Mall

Gravity Fahaheel, Kuwait

__ 2020 COMPLETED

Introducing itself to the local market in 2017, Gravity has developed a reputation for its excellent coffee and deserts. Task was provided for redesigning Gravity’s future branches to meet the contemporary and demanding market today. The newest updated flagship unit of specialty coffee is located in Al-Kout mall, Kuwait. It is divided into two areas, bar area and seating area and contains outdoor seating with the view of the mall fountain. Gray brick as a predominant material creates two different patterns; one is used to cover two elevations facing each other and the other one for the bar. Bar is a monumental element located in the middle of the coffee shop dividing the seating into two equal parts. Made out of pavers cut in a brick shape it creates an extraordinary object. Brick pattern sticks out allowing customers to interact with it. Gentleman’s blue is the branding color used on the elevation facing the entrance door divided by the shelving which represents an exhibition wall for retail items and objects. Cognac leather with gray tundra stone generates comfortable and made-to-measure seating knitted around the corners of the shop.
