Fish ‘n’ Chips Cod with Pesto Crust with Chips Serves 2 This is a great healthy recipe and you can add extra vegetables like whole mini corn which are delicious roasted. For the fish topping 2 tbsp basil pesto 1 tsp chopped herbs, chives, dill and parsley 3 tbsp breadcrumbs ½ lemon, zest only Olive oil spray 2 x 120g cod fillets Salt and pepper to taste Lemon slices for garnishing Frozen chips
1. To prepare the fish, combine the pesto, herbs, breadcrumbs and lemon zest together. 2. Place the fish on the baking tray. Spread the herb crumb topping onto the cod. 3. Turn on the Air-Wave Health Cooker to 185°C. Bake for about 8 to 9 minutes until just cooked and the topping crisp. Set aside. 4. To prepare the chips, place in the chip basket, turn on the Airwave Health Cooker and follow the timings as per the instructions on the chip packet. 5. Serve immediately with the fish and lemon slices. Tip: Drizzle a little lime juice and zest on the vegetables instead of seasoning with salt. Cumin and Coriander Parsnips and Potatoes Serves 4 This is such an easy recipe – just keep tossing the potatoes and parsnips from time to time. Remembering that the timer ticks on while you have the lid up so add extra time to the end of the cooking time. 3 medium potatoes, peeled and roughly diced to 3cm 3 parsnips, peeled and roughly diced to 3cm Olive oil spray 1 tsp ground cumin 1 tsp ground coriander Salt and pepper
1. Place the potatoes and parsnips in a bowl, spray with olive oil and sprinkle over the cumin, coriander, salt and pepper and toss. Spoon the vegetables on a shallow baking pan/ tray. 2. Turn on the Air-Wave Health Cooker to 190°C. Place the tray on the tall rack and roast for about 20 to 25 minutes until golden, crisp and cooked Tip: Add diced sweet potatoes and orange zest to the mix for a great Moroccan flavour.
