serves 4 Marinade the leg of lamb is 500ml red wine, a drizzle of oil, sprigs of thyme and rosemary and a few garlic cloves over night for a very delicious Sunday roast. 1.2kg butterflied leg of lamb 4 cloves garlic, sliced in half lengthways 6 small sprigs of rosemary Olive oil spray Salt and Pepper Rosemary sprigs, to garnish For the gravy 120ml red wine 1 tbsp whole grain mustard 2 tsp honey 1 tbsp butter Salt and pepper to taste


1. Place the lamb skin outer side up on a meat board and using a sharp knife make small incisions into the meat and push the garlic and rosemary sprigs into each alternating incision. Season with the salt and pepper. Turn the lamb over, place 2 rosemary sprigs in the centre. 2. Remove the fork ends from the rotisserie shaft, carefully roll the lamb up, place on 2 pieces of string and thread the rotisserie shaft through the roll at a slight angle, tie the strings securely. Replace the fork ends on each end of the shaft. 3. Spray the lamb with olive oil and secure into the oven. 4. Turn on the Air-Wave Health Cooker to 190°C. 5. Place a shallow tray underneath the meat to catch the cooking juices. 6. Switch over to the shaft motor. Roast for 25 minutes on 190°C and for a further 35 minutes at 185°C until the meat is cooked to your liking. 7. Remove from the oven, cover with foil and allow to “rest” for about 15 to 20 minutes. Remove the rotisserie fork ends and the shaft when ready to serve. 8. Remove the shallow tray with the cooking juices. 9. To prepare the gravy, increase the temperature to 205°C, pour the cooking juices and wine into a bowl, stir in the mustard, honey and butter and cook for a further 2 minutes. 10. Season with salt and pepper to taste. Serve with roasted cumin and coriander parsnips and potatoes.
