(This recipe is very similar to our Chicken and Fried Rice menu item currently for sale to order: info@petnutritionsystems.com or 562.295.6391) INGREDIENTS 1 1/2 cups instant brown rice 2 cup chopped broccoli 1 cup reduced-sodium chicken broth 1 tablespoons reduced-sodium soy sauce 2 large egg whites 1 large egg 2 pounds of organic boneless, skinless chicken breasts, cut into 1/2-inch pieces 2 scallions, trimmed and thinly sliced 2 tablespoons of ground egg shells 2 tablespoons of Flaxseed oil


PREPARATION A. Prepare instant brown rice according to package directions. B, Pour broth into a heavy medium saucepan, along with soy sauce. Bring to a boil; reduce heat to medium-low. C. Stir egg whites and whole egg in a small bowl. Steam the broccoli. Add ground or cubed chicken to the simmering broth. Gently pour in the egg mixture, without stirring. Sprinkle scallions on top. When the egg starts to firm up, after about 3 minutes, stir it with chopsticks or a knife. Then add the broccoli, ground egg shells and flaxseed oil. Stir for 1 minute. D. Allow to cool and then form into meatballs, loafs or put into individual containers then freeze. E. Thaw and serve. NUTRITION Per serving: 262 calories; 3 g fat (1 g sat, 1 g mono); 87 mg cholesterol; 47 g carbohydrates; 44 g protein; 3 g fiber; 387 mg sodium; 370 mg potassium.
