I have received several requests for some fun healthy meals that both you and your dogs can enjoy. So in celebration of one of my favorite parties, musical cities and regional foods, I have prepared a potluck style Jazzy Jambalaya. Hope you have as much fun making it as I did. Bone Appetite. INGREDIENTS 2 pounds of chicken, deboned & cubed 1 pound of smoked turkey sausage 1 pound of ground beef 1/2 pound of shrimp 1/2 bell pepper, chopped 1 clove garlic, minced 1 stalk of celery, chopped seasoning black pepper, parsley & salt) 2 cups of chicken stock 2 cups of water 2 cups of rice 2 Tablespoons of butter PREPARATION Place the butter in a black iron pot and melt it. Throw in the cubed chicken, turkey sausage ground beef and shrimp (Season the meat well and brown it good). Add bell pepper, celery and mix well. Then add chicken stock and water. Mix together and add the rice. Bring to a boil and stir it real good. Reduce to a simmer, cover and let cook on low for about 30 minutes. You can grill a couple of chicken breast to serve under the jambalaya – just make sure you do use to much seasoning. TIPS & NOTES Place finished product in loaf molds and freeze. Then place in freezer bags for storage. Meals to be fed for the up coming week is to be placed in a bowl, covered and refrigerate.
