Steak, Guinness and Cheese Pie
Delicious Dishes with Helen Kingscott
Why not treat Dad on Father’s Day with this delicious pie? Ingredients: 2 tablespoons olive oil; 3 medium red onions, peeled and chopped; 3 cloves garlic, peeled and chopped; 2 carrots, peeled and chopped; 2 sticks celery, trimmed and chopped; 4 field mushrooms, peeled and sliced; 1kg of stewing beef, cut into 2cm cubes; a few sprigs fresh rosemary, leaves picked and chopped; sea salt; freshly ground black pepper; 440ml Guinness; 2 heaped tablespoons plain flour; 150g cheddar cheese, grated; 170g ready-made puff pastry (or 500g if you want a top and bottom to your pie); 1 large egg, beaten. Method: 1 You can make the filling the day before if you wish. Preheat the oven to 190C/375F/Gas 5. In a large ovenproof pan, heat oil on a low heat. Add the onions and fry gently for about 10 minutes- try not to colour them too much. Turn the heat up, add the garlic, carrots and celery and scatter in the mushrooms. Mix everything together before stirring in the beef, rosemary, a pinch of salt and a level teaspoon of pepper. 2 Fry fast for 3-4 minutes, then pour in the Guinness, stir in the flour and add just enough water to cover. Bring to a simmer, cover the pan with a lid and place in the preheated oven for about 11/2 hours. Remove the pan from the oven and give the stew a stir. Put it back into the oven and continue to cook it for another hour,
or until the meat is very tender and the stew is rich, dark and thick. A perfect pie filling needs to be robust, so if it's still quite liquidy, place the pan on the hob and reduce until the sauce thickens. Remove from the heat and stir in half the cheese, then season carefully and leave to cool slightly. 3 Dust a clean work surface with flour and roll the pastry out evenly with a floured rolling pin to the thickness of a pound coin. Tip the stew into your dish and even it out before sprinkling over the remaining cheese. 4 Place the pastry over the top of the pie dish and crisscross it lightly with a sharp knife. Brush the top with beaten egg, then bake the pie directly on the bottom of the oven for 45 minutes, until the pastry is cooked, puffed and golden. Serve with vegetables of your choice.

Ideal location for Gloucester’s new city centre nursery The Secret Garden Day Nursery recently opened its bright new door, providing Gloucester City Centre with an outstanding childcare facility for up to 70 children. Initially employing 10 staff, the nursery premises is the Grade 2 listed Annandale House – the former home to a long established dentist. The building has been brought back into use following a complete refurbishment after having been left empty for many years, giving a boost to both the economy and appearance of Gloucester.

What’s all the racket about? With the smell of 28,000 freshly picked Kent strawberries and 7,000 litres of cream in the air, and the unmistakable sound of over 50,000 ricochetting tennis balls, Wimbledon is surely here. At 137 years old, Wimbledon is the oldest tennis tournament in the world, starting out as a men’s only game with wooden rackets and tickets priced at a shilling each. Women joined in the prestigious games in 1884, and as time went on we started to see a lot more of them. As the floor length dresses began creeping up, one brush of the wind and those brightly coloured pants had officials reaching for the rule book but without avail. However, in 1995 Tim Henman pushed the officials over the edge when angrily smashing a tennis ball inadvertently into the face of an innocent ball girl, crowning him the first disqualied competitor of Wimbledon ever. In 2007, 123 years after women began competing at Wimbledon, the women’s prize money finally equalled that of the men – and their serves aren’t far behind either – Taylor Dent’s fastest serve clocked at 148 mph in 2010 and Venus Williams creeping up with 129 mph in 2008. Maria Sharapova also reached an impressive 105 decibel grunt, the loudest ever to be recorded throughout Wimbledon! But Rufus the hawk hasn’t got his eye on the ball, as he embarks on his daily patrol around the Wimbledon grounds in pursuit of the pigeons out to ‘spoil’ the idyllic settings. So, in the spirt of being British – grab a bowl of strawberries and cream, pop the tennis on and lets hope for another British winner!

Having smoked for 40 years – apart from brief respite when attempting to give up – I decided to try vaping and visited Spa Vapes. A reason to celebrate When we head into June, we’re getting reasonably close to my birthday in the middle of July. That prompted me to think of some other anniversaries. This year, my old school The Crypt celebrates the 475th anniversary of its founding. I was at school during the 450th year and I hope to be around when it reaches the 500-year milestone. In December this year, it will be 300 years since the Gloucester-born Anglican preacher George Whitefield (himself an Old Cryptian) was born. Whitefield is one of the lesser-known figures in Gloucester’s history, but is a huge influence in America. The restoration of St Mary de Crypt and the Old Schoolroom, which have been granted a first stage pass by the Heritage Lottery Fund, would be a fitting way to mark both of these anniversaries. With the USA playing at Kingsholm in next year’s Rugby World Cup, we’re keen to extend the Whitefield celebrations until then, including perhaps a re-enactment of one of his famous sermons from the pulpit of St Mary De Crypt. In 2016 is the 800th anniversary of the coronation of Henry III at Gloucester Cathedral. I don’t know as yet what is planned for then, but we must not miss the opportunity to mark such a significant national event. 2018 marks the 375th anniversary of the Siege of Gloucester in the English Civil War. This is probably Gloucester’s finest hour, when its Parliamentary forces held out against the might of the Royalists and helped to change the course of the war – and with it our nation’s history. In 2019, we can extend the Civil War theme with the 400th anniversary of the birth of Colonel Edward Massey, who commanded the City’s forces at the time. 2018 is also the 1100th anniversary of the death of Aethelflaed, eldest daughter of King Alfred the Great, who founded and is buried at St Oswald’s Priory. Anniversaries are worth celebrating and the history buffs amongst you have lots to look forward to in the coming years. The Inaugural ‘Road to 2015’ On Saturday 3rd May hundreds of families took part in the inaugural ‘Road to 2015’ sponsored walk. The three mile route took in sights of Gloucester Cathedral, the Docks and the Rugby Posts in the Park, conceived as part of the Club and City’s build up to the Rugby World Cup 2015. Local schools, families, rugby clubs and businesses were invited to take part in the walk and raise funds for the Gloucester Rugby Community and their own chosen charities. Cheltenham Beer Festival Saturday 12th July The current ‘Friends of Cheltenham Samaritans’ group have been raising money for the charity for over 34 years with events as diverse as two large “It’s A Knockout” days at the Prince of Wales Stadium, several Dragon Boat Racing days on Pittville Lake and numerous treasure hunts, pop quizzes and other fun activities. For the last eight years their primary fundraiser has been the ‘Cheltenham Beer Festival’, and each year this magnificent, family friendly event has attracted around a thousand people to the Patesians Sports and Social Club on Everest Road in Leckhampton, Cheltenham. So far these festivals have raised over £75,000 for the charity! This year sees the 9th iteration of the beer festival being held on Saturday 12th July from 12 noon-11pm. There will be over 45 superb real ales available, along with a large selection of ciders and perrys. A Pimms Bar has been a regular feature in recent years, together with a wellreceived BBQ and live music throughout the day in the clubhouse. Only those drinking the real ales and ciders require tickets, but partners and children are welcome to come along as
well. Tickets are available from specialist beer and cider shop, Favourite Beers, on Hewlett Road, Cheltenham. They cost just £8 and the price includes a souvenir glass and programme! One of the key ways in which the organisers raise money at this event is by getting local companies or individuals to sponsor a barrel of beer. For just £50 you will get your name and a logo of your choosing on the barrel as well as getting a mention in the programme. Companies can also buy advertising space in the programme from £50. There is a lot packed into this relatively short walk with plenty of beautiful scenery to capture your attention. Allow extra time to admire the views and to linger in the lovely woodland, some of the beech trees are over 200 years old. A Use the Shortwood car park just off the Haresfield Road. Walk back towards the road and go through the gap in the wall on the right. Take the leftmost of the three paths, signposted ‘Cotswold Way’. Stay on the path until it splits into four. Take the second path on the left and follow it to the road. B Turn left onto the road and at the next road junction turn left. Cross the road to a stile to the left of Stoneridge Farm. Bear left and cross the field heading towards the stile to the right of the two radio masts. C Cross the road and turn right. After a few yards cross a stile and head downhill on the path ignoring crossing paths. Walk down the steep path to the track in the valley (Cotswold Way). D Turn left onto the track and walk through the wood staying on the track until you meet a road. Turn right and head downhill for ¼ mile (400m) to a bridleway on the left signposted to ‘Haresfield Beacon’. E Follow the path uphill at first, past Cromwell’s Stone and on to meet a road. Turn left onto the road and walk 30yds (27m) to a path signposted ‘Cotswold Way’ on the right.

1 This stone is known locally as Cromwell's Stone, erected to commemorate the success of the Parliamentarians in raising the siege of Gloucester in 1643. In July of that year Prince Rupert captured Bristol, leaving Gloucester as an isolated Parliamentarian stronghold in the west of England. King Charles also wanted to open up the River Severn as a supply artery and he surrounded the city on 5th August. It held out for a month, however, until reinforcements arrived under the Earl of Essex – around 15,000 men in all. The King decided it prudent to withdraw and gave the Roundheads one of their few successes in the early part of the Civil War. Why the stone was placed here is not known for certain but, if the trees behind were cleared, there would be an excellent view of Gloucester. F Turn right onto the path, go through two metal gates and up a steep slope. Cross a stile on the left where the path carries straight on to the right of the fence and bear right towards the triangulation point. 2 The site of the hillfort utilized the natural defences of the promontory. The outlook is excellent with steep slopes on three sides and the fourth closed off by a

rampart and ditch across the neck of land to the east. It covers about 16 acres (6.5ha) in all and is so well sited that the Romans made use of it in their military campaigns. Numerous Roman artifacts have been uncovered, including a collection of 3000 coins.
3 From the triangulation point at the end of Ring Hill there is a superb view of the escarpment, and probably the best outlook over the Berkeley Vale. Several outliers are visible, including Churchdown, Robin Wood's Hill, and Stinchcombe Hill. In the distance is the Forest of Dean, forming a backdrop to the Severn below, and in good conditions it is possible to see the Severn Bridge.
G Turn sharp left and walk along the ridge keeping the valley to your right. Cross the stile and walk along the narrow path with a fence to your left. Pass through a gate and head down towards the road. H Just before the road turn right down steps and follow the path until it opens out into an open field. Bear half right across the open countryside to the topograph. Turn and head back to the car park.

Gloucestershire’s biggest ever summer of tennis Families across Gloucestershire are set to go tennis crazy this summer with a series of free ‘Great British Tennis Weekends’ smashing into courts across the county. The weekends of 21st/22nd June, 28th/29th June and 19th/20th July will see parks, leisure centres and clubs offering free opportunities to pick up a racket as tennis fever begins to grip the nation in the lead up to The Championships, Wimbledon. From humble beginnings 30 years ago, Master Sheds has weathered three recessions and changed beyond all recognition to become one of the county’s leading manufacturers of bespoke sheds. The business was started by Malcolm and Sue Ireson in a small workshop on Innsworth Technology Park in April 1984. Over the years the company expanded and employed more staff including Nick Bailey and Simon Wildsmith (pictured right) who, in April 2010, took over Master Sheds when Malcolm retired. Since 2010 the business has gone from strength to strength, Nick said: “When we took on Master Sheds we were in the middle of the credit crunch and wondered if we would make it work. But we stuck to our principles of excellent workmanship and customer service, and we have ridden out the storm and come out the other side in a much stronger position.” The business, now based in Hempsted, has a great reputation for providing top-quality exterior timber buildings made to the customer’s specifications. Due to their success, Master Sheds have recently employed two new members of staff – one of them an apprentice. As a result, they’ve been able to increase their workload and hope to recruit another apprentice later this year.

It’s ‘Chelsea Chop’ time With the Chelsea flower show this month it is the ideal time to do the ‘Chelsea Chop’ which is a way of shortening perennials that can become ‘leggy’. It promotes smaller, later, but increased quantity of flowers. You can try it on lots of plants – i.e. Sedums, Rudbeckias, Echinaceas, Heleniums and Asters. You could also cut back half the stems and leave the other half, thus lengthening the flowering display – have a go, it just takes a bit of confidence. This is a good time to sort out your long term pots in the garden. Re-pot into slightly larger pots (don’t put directly into huge pots from small ones as the plants suffer). Do not use pots that curve inwards at the top for these long term plantings as they are next to impossible to remove the rootball without breaking the vessel. The very big pots are impractical to empty and redo, so with these you can scrape off 10cm or so of soil and top up with fresh soil – something like John Innes No.3. Use slow release plant food pellets to make sure the plant is being fed (refer to the instructions on the packets as to the number needed).

Prune early summer flowering shrubs as soon as flowering has finished – things like Philadelphus (mock orange), Spiraea, Deutzia and Ribes (ornamental currants). Take out one in three of the oldest stems to the ground and reduce the rest by a third. Try and open out the shrub to let the air get to the centre by removing twiggy growth which is growing inwards. After pruning, fork in a couple of handfuls of a balanced fertiliser like Growmore, water well and mulch with some compost to keep the soil moist. These shrubs will repay you with more flowers the following year. Trim the rockery staples – such as alyssum, aubretia and other spreading prostrate plants that have flowered in spring – with shears to keep them from getting untidy. Derby Day is the traditional time of year to give Box a first trim – although obviously it varies from area to area – but by 7th June the risk of frost is unlikely in Britain. Don’t cut it in hot sunshine as the leaves will get scorched.

Better together? It’s going to be a big 12 months in the political world in the UK, from this summer’s European voting to next year’s general election, with a referendum on Scottish independence sandwiched in between. Don’t worry, this is not a political statement, more a musing over the financial implications of splitting up. We all know – whether it is from bitter experience, social contact or reading the newspaper – how costly a divorce can be. It never tends to be amicable either, so the only winners are the lawyers who make a living out of complicating the situation to their hearts’ content. Business split-ups can be messy and costly too, although interestingly there seems to be a better track record of these being completed without some of the animosity attached to a marriage breakdown.
Raging Debate So let’s scale everything up to a national level and wonder what the cost will be of a divorce between Scotland and the rest of the United (or should it now be called Disunited) Kingdom. Would it be just like a large scale divorce or are there other factors in play? Well I can’t see the Scots getting 50% of overall UK assets or a share of the future income streams, but I do know that the lawyers will get even richer if they have to work out who gets what. There’s already a debate raging about whether or not Scotland would be able to be part of the UK monetary system and keep sterling as its currency. Probably not is the answer, as cherry-picking the best bits isn’t usually available to the one who wants to walk away. And what of the continent? Business leaders strongly favour remaining married to the rest of Europe, but there is a significant groundswell amongst the population at large that business leaders are wrong. Are they? I don’t know the answer to that question, but it’s one we need to find a solution to if we are plunged into the messiest, most expensive divorce of them all.

‘Keepsafe’ in the community The Hucclecote team has three police officers and seven PCSOs who work in partnership with many organisations to assist with problem solving of local issues and community engagement. Our Community Team covers Abbeydale, Abbeymead, Coopers Edge, Matson, Robinswood, Coney Hill, Chequers, Barnwood, Upton St Leonards and, of course, Hucclecote. We have recently been working with Keepsafe, an excellent scheme available in Gloucestershire for people with learning disabilities or dementia. Its purpose is to make people feel safe within their communities and to provide help and support when they are out and about. We have been working to raise awareness to ensure as many people as possible have access to the scheme. Junior Wardens have recently helped tackle road safety in the area by taking part in a supervised community speed watch session. The children, also known as the ‘Cool Kidz Crew’, used speed recording devices to monitor traffic.
