Mushroom Risotto

Delicious Dishes with Helen Kingscott

Deliciously rich and creamy Ingredients: 50g dried porcini mushrooms; 1 vegetable stock cube; 2 tbsp olive oil; 1 onion, finely chopped; 2 garlic cloves; finely chopped; 250g pack chestnut mushrooms, sliced and washed; 300g risotto rice (Arborio); 175ml white wine; 25g butter; handful parsley leaves, chopped; 50g parmesan, freshly grated. Method: 1 Put the dried mushrooms into a large bowl and pour over 1 litre boiling water. Soak for 20 minutes, then drain into a bowl, discarding the last few tablespoons of liquid left in the bowl. Crumble the stock cube into the mushroom liquid, then squeeze the mushrooms gently to remove any liquid. Chop mushrooms. 2 Heat the oil in a deep frying pan over a medium flame. Fry the onions and garlic for about 5 minutes until soft. Stir in the fresh and dried mushrooms, season and continue to cook for 8 minutes until the fresh mushrooms have softened. 3 Tip the rice into the pan and cook for 1 minute. Add the wine and let it bubble to nothing so the alcohol evaporates. Keep the pan over a medium heat and pour in a quarter of the £30k £25k £20k £15k £10k £5k

mushroom stock. Simmer the rice, stirring often, until the rice has absorbed all the liquid. Add about the same amount of stock again and continue to simmer and stir. It should start to become creamy, plump and tender. By the time the final quarter of stock is added, the rice should be almost cooked. 4 Continue stirring until the rice is cooked. If the rice is still undercooked, add a splash of water. Take the pan off the heat, add the butter and sprinkle over half the cheese and parsley. Cover and leave for a few minutes so that the rice can absorb any excess liquid as it cools. Give the risotto a final stir, spoon into bowls and sprinkle with the remaining cheese and parsley.

Raise a glass to Favourite Beers Favourite Beers is celebrating its fourth birthday on Wednesday 8th October. Head brewers from Hook Norton and St Austell will be joining owner Leigh Norwood in raising a glass to the company’s success, and there will be a special celebration day on Saturday 11th October with plenty of tasters and special offers. The business boasts a huge range of beverages including over 360 UK bottled ales, 120 Belgian bottled beers, a wide selection of ciders and perrys, wine and a new range of spirits, which are supplied by local spirit producers. Leigh has been passionate about beer for many years and is proud to be running the only specialist beer and cider outlet in Gloucestershire. He runs the shop with his daughter Rosie – the ‘cider expert’ – and is also accompanied by his friendly Golden Retriever, Ruby. Having been so popular with customers, she now has her own beer, with a percentage of its profits donated to the Guide Dogs Charity. Over its four years, Favourite Beers has been nominated for and won several awards, including Independent Beer Retailer of the Year in 2012 and Independent Cider Retailer of the Year in 2013. Leigh is aware that his small company cannot compete on price with large supermarkets, but knows that his and

A warm welcome for everyone! Cheltenham RAFA Club is an extremely friendly environment for all to enjoy in the heart of Cheltenham. Situated by the town’s coach station in Royal Crescent, the club plays host to a variety of social and fund-raising events including live music, bingo and prize draws each Saturday evening and coffee mornings on Thursdays and Fridays between 10am-12 noon. You don’t need to have served in the RAF to join the RAFA Club. Club membership is just £5 and RAFA Associate membership is £8.50. Much of the money raised by the Club/Branch contributes to the Royal Air Forces Association’s ‘Wings Appeal’. The premises are run by the Cheltenham Branch of the main RAF Association – a registered charity that receives no contributions from government. People are also welcome to join the branch itself with an Associate Membership cost as stated above. The biggest benefit is, of course,

felt by the ‘RAF Family’ – which includes all serving and ex-serving personnel and their dependants – who are supported by the organisation’s charitable work through the Wings Appeal. The Club, Cheltenham Branch and entire RAF Association recognise that members are at the heart of everything positive. Raising funds

‘It’s all about you’ at The Guild The Guild was established nearly 15 years ago with a view to bring talented, progressive and like-minded hairdressers together, creating an experienced team that provides a high-quality, professional service for its clients. Salon owner and Director Mike Lunnon (pictured) has been in the hairdressing industry for over 34 years, having had opportunities to work in London and New York, serve such customers as Stevie Nicks of Fleetwood Mac, and he worked on Keira Knightley and Benedict Cumberbatch’s latest film ‘The Imitation Game’. The most recent addition to the team is Dominic Osman – another extremely talented professional who has experience of working in London’s fashion-conscious West End. As soon as I entered the salon, I was treated like a guest – I was greeted with friendly faces, offered a drink and handed an array of magazines to indulge in during my stay. Mike sat down and discussed what I wanted to have done, offering suggestions that he believed would suit me as well as listening to my thoughts. After I admitted my at-home dye went wrong, he said he would colour my hair a lovely chocolate brown, as well as adding some highlights to give the colour some lift – something I hadn’t considered. As a finishing touch after the cut and dye, the lovely Darren curled my hair and really took his time, ensuring every ringlet was perfect. I think it looked amazing and apparently so did a lot of

other people, as I had numerous compliments throughout the remainder of the day. Mike believes it is extremely important to make the experience as personal as possible. He says: “Getting to know your client and understanding exactly what they want and need ensures they are completely satisfied with the end result. 1 'Chipping' is found in several Cotswold place names and derives from the Saxon ‘ceping’ meaning a market. This was to prove very appropriate, for the town later established itself as a market centre for wool. Woolstaplers Hall was built by a wool merchant in 1340 as a meeting place for the staple merchants to purchase raw fleece. The most famous of the merchants was William Grevel, mentioned by Chaucer in Canterbury Tales. His 14th century house remains almost unaltered in the High Street. The church of St James was built following his bequest, and is almost entirely 15th century, lending it a unity of style. There are several notable features inside, particularly the brass of Grevel and his wife, among the largest and oldest of Gloucestershire brasses. Another important local figure was Sir Baptist Hicks, a merchant banker, who built the Market Hall in 1627 and the attractive row of almshouses near the church in 1612. A Park in Chipping Campden. D Turn right and go downhill, keeping close to the right-hand field boundaries when the track emerges from the wood. Re-enter the woodland through a five bar gate and look out for a stile and footbridge when a field comes into view on the right. E Cross the stile and head half-left across the field. Go straight on over the summit, crossing the stile ahead and continuing across a field to the road. 3 Whitsun Games were probably held on this hill as far back as Saxon times but it was later the site of the famous Cotswold 'Olympick' Games, begun by Robert Dover in 1612. They were certainly not for the weak in body or spirit, involving such activities as wrestling, hand walking, shinkicking, and a particularly rough pursuit called singlestick fighting. The occasion became very popular and in the 1830s as many as 30,000 people attended. Unfortunately, the Games became unruly leading to demands for the event to be cancelled. The Games were stopped in 1853. They were revived in 1951 and now take place on the Friday after Spring Bank Holiday, although not all of the original events are included. H Turn left and take the second path on the right (the Cotswold Way) back to Chipping Campden. The Local Answer

The Bloody Mary is often called ‘the world’s most complex cocktail’ because of the vast number of ingredients it contains, and there are three different claims to who invented it. The first is a bartender from New York’s 21 Club named Henry Zbikiewicz, who supposedly invented the cocktail in the 1930s. The second, a frequent visitor of the 21 Club, is the comedian George Jessel. But the third comes from Fernand Petiot who claimed to have invented the Bloody Mary before the other two, in 1921, while working at the New York Bar in Paris – later known as Harry’s New York Bar. Petiot said that he adapted Jessel’s drink from being simply vodka and tomato juice by combining “four large dashes of salt, two dashes of black pepper, two dashes of cayenne pepper, and a layer of Worcestershire sauce”. He then added a dash of lemon juice, ice, vodka and tomato juice before shaking, straining and pouring. The cocktail’s name is associated with several historical figures – most prominently Queen Mary I of England, who gained the nickname due to the mass executions she carried out while attempting to re-establish Roman Catholicism in England. Ingredients: Ice; 50ml vodka; ½ lemon, juice only; 6 dashes Worcestershire sauce; 3 dashes Tabasco sauce; 150ml tomato juice; pinch salt and ground black pepper; celery and wedge of lime to garnish. Method: 1 Place the ice in a tall glass and add the vodka. 2 Add the lemon juice, Worcestershire sauce, Tabasco sauce and tomato juice. Stir well. 3 Season to your taste with salt and pepper, garnish with celery and lime wedge, and serve immediately.

Care centre chef wins Chefs across the UK attended a Unilever Chef day this September where new recipes, creative meal ideas and industry best practice were discussed and demonstrated. One of the most enjoyable demonstrations saw a range of new finger food ideas for care home residents being created, all of which are healthy and easy to prepare and serve. Some of the recipes included a range of innovative and tasty sponges, ideal for accompanying other delicious ingredients. Flavours included apple and ginger, beetroot and chilli, and swede and mixed spice. Blind tasting was conducted on a range of other foods, from gravies to sponge cakes and Unilever nutritionists answered questions from the assembled Chefs, before taking their places on the judging panel to determine the day’s “Master Chef”. Looking forward to the future After 75 years of helping the communities of Cheltenham, the local Citizens Advice Bureau (CAB) has much to celebrate. Having closed its offices in St James Square last year, the bureau – now as part of the Gloucester and District Citizens Advice Bureau – are to move into new premises in the town. From 1st October the CAB will be opening its doors at its newly refurbished office – 3 St George’s Place, Cheltenham. Ideally situated for its clients and with easy access, the CAB will offer a drop-in and appointment service from 10am to 4pm, Monday to Thursday. Additional telephone and email enquiry services will also be available. In Cheltenham alone, the local CAB has helped over 2,000 people in the last 12 months. According to Manager, Norman Gardner: “People from all sections of society are facing increasing challenges as the UK continues to navigate its way through a substantial period of change. Whether the problem faced is one arising from welfare reform, pay day or log book loans, rising energy bills or issues concerning employment, housing,

relationship breakdowns or something where you just don’t know where to turn for help, our team of fully trained volunteers will be on hand to assist you or to seek to point you in the right direction.

Feeding the fussy eater I have the world’s fussiest dog! Many owners claim their dogs are fussy, but I think few compare to Bart the fussy Vizsla. Apparently, Bart failed to read the manual that says dogs should inhale their food, trick humans into believing they haven’t been fed or to stare at you with a desperate forlorn expression until you cave in and offer up a treat. Instead, Bart treats his food with suspicion and even spits out dog treats because he just can’t be bothered! I therefore sympathise when pet owners struggle to get their canine companions to eat enthusiastically. The first thing to establish is whether the dog is unwell. This can usually be determined by whether the fussy eater has always been fussy, if their bowel movements are normal, if they are drinking normal amounts, and by their general body condition. If something is not quite right, a trip to the vet is in order. The next thing to establish is whether the dog is underweight. Surprisingly, many fussy eaters are either in perfect condition or slightly overweight. In this case the reluctance to polish off food is simply that they have had enough, which doesn’t require any significant intervention. Skinny dogs (which Bart is) cause the most anxiety and deserve a more proactive approach.

No single solution for all fussy dogs Generally we don’t encourage owners to change diets too often. Constant variety can form habits and we often find dogs and cats train us to regularly offer them something different when they learn that turning their noses up at one meal results in something else being produced. Some pets can also be sensitive to diet changes, so offering many different brands can end up causing digestive upsets. I usually advise a high quality, consistent diet – genuine fussy eaters will be fussy with most foods, so a varied diet often only works short-term before they go off it anyway. Fussy eaters are much rarer in multi-dog households – one of the few things that gets Bart eating is when his mum wanders over to his full food bowl. Competition encourages dogs to eat – if you don’t want another dog (a bit of a radical solution), remove the food after 10-20 minutes. Dogs soon learn that food is not always available and are more likely to eat it when it is offered. Some dogs eat better when only fed once daily, as they become hungrier, but for skinny fusspots I would put the food down 3-4 times during the day for 10-20 minute periods. Often once they start eating they will eat a decent amount, so sometimes it is okay to offer some food by hand or sprinkle a few treats over the food to get them going. Standing over the dog at mealtimes and fussing them can encourage them to eat their food but gets a bit tiresome! There isn’t one single solution for all fussy dogs. If you’re struggling with a very fussy eater, come and have a chat and, if in any doubt, have your dog checked to make sure there isn’t an underlying illness putting them off their food.

Haunted happenings It’s that time of year again. Halloween is upon us and you know what that means – witches, devils, zombies and ghosts will be roaming the streets, trick or treating their nervous neighbours and collecting as many sweets as they can. But amid all this fun and games are some chilling stories of real ghosts – not the type you’d find with white bed sheets over their heads! Did you know that Prestbury is renowned as the most haunted village in England? Located near the edge of the Cotswolds, there are reports of over a dozen ghosts haunting the area, including the Headless Horseman, The Black Abbot and The White Lady. Prestbury’s most famous ghost – The Black Abbot – was often seen in the aisle of St. Mary’s Church, but when the church was exorised, he was reported to appear only in the churchyard. He occasionally makes an appearance after funerals, crossing the churchyard and disappearing through a wall in the High Street. The Charging Horseman has been seen riding his white horse through Shaw Green Lane and The Burgage, typically around Easter and Christmas. Rumour has it he was killed by a Lancastrian arrow in 1471 while on his way to the Edward IV camp during the War of the Roses. In the 20th century, a skeleton with an arrowhead was found in Prestbury – this was thought to be the horseman. A second ghost rider, named the Headless Horseman, rides through Mill Street and is thought to have been killed in the 17th century. He was a royal dispatch rider travelling from Sudeley Castle to Gloucester, and was knocked off his horse by a thin wire placed across the road. He was then interrogated by The Roundheads of Prestbury before being executed by beheading. There are many more ghosts that apparently haunt the village, including a young girl playing the spinet in The Sundial Cottage in The Burgage, a Strangler who haunts Cleeves Corner near the church, and horses’ hooves can be heard by Prestbury House Hotel and The Plough Inn. There are many ghost walks organised across the county that will take you on a spooky journey where you may even experience some paranormal activity yourself! Hopefully this hasn’t scared you too much and you can still enjoy your Halloween celebrations, whatever they may be.

Brilliant Ba Get Batty at the Bird Park this Halloween!

The Bird Park has been hosting ‘Bat Night’ for many years, coinciding with Halloween this year on Thursday 30th and Friday 31st October. With the addition of the brand new ‘Visitor Centre’ ready to welcome you all, the event will be better and more ‘spook-tacular’ than ever before! The not so wicked witch will be found in the Wendy House, amusing the children and lowering down sweets for those would be trick and treaters. The new centre has massive balconies overlooking the park where the beautiful lights illuminating the trees can be seen from, and those who want to be inside the park can get up close and personal to some of the parks inmates. As pumpkins light up the paths, and pumpkin skittles amuse the children, face painters will help complete the finishing touches to the wonderful costumes you’re sure to create. Great value with minimal effort This year my sweetpeas have been glorious. I think I have watered them more than in previous years, which could have helped, but I have picked bunch after bunch for the house, and as you know – the more you pick the more that grow! For the cost of a packet of seeds I think they are very good value and just need a little cosseting in the planting hole to help them reach their potential, with some well rotted compost or manure for their roots to get into. So this month, sow some in pots made of the inside of toilet rolls, lined with a bit of newspaper to stop the compost falling out the bottom. Soak seeds overnight and plant two per roll, using seed compost, which you can buy at the garden centre. Water in and leave to germinate inside at 18-22°C. Once germinated, pinch out the smaller plant and they can be moved outside to a sunny cold frame, or as I did last year just left against the south facing wall and I don’t think I even covered them over at all! They will be ready to plant into their position in the spring.

Enough fruit to fill the freezer October is a good time to prepare the ground for new fruit trees and bushes. If planting on heavy soil, add plenty of grit to ensure drainage is adequate. Work-in plenty of well-rotted manure into each planting position and add a handful of slow release fertiliser when you plant the new trees. Fruit trees are really becoming popular as they take little looking after (unlike vegetables) and can provide enough fruit to fill the freezer to use all year round. It is at this time of year that the Sedum Herbtsfreude – or the Ice Plant – comes into its own, as the borders settle into the last round before the winter. It starts early in spring with the fat rosettes of succulent, lettuce-green leaves, topped with salmon-pink flower-heads in summer, maturing to pinkishbronze then coppery-red in autumn. This versatile perennial is a perfect filler plant for a sunny, well-drained spot. A valuable late source of nectar for butterflies and bees, the dried flowerheads provide structure and colour in the winter garden and in November they still look interesting. You should finish planting your spring bulbs this month, but leave Tulips till last as they fare better if planted late October or even November to limit their exposure to soil-borne diseases.

However, there are a couple of things you may not have thought about that can help your CV become as attractive as possible. One important thing to remember is that the average employer will spend 30 seconds looking at your CV before deciding whether or not to take your application further. Therefore, it is crucial your CV is presented in the best possible manner. Unlike me, you need to write clear, concise statements, with minimal manoeuvre for waffling!

Each CV should be different The most important advice I can offer is that your CV must be tailor-made to the job you are applying for. By including non-specific experience as opposed to clear examples that relate to the job in question, your potential employer will easily identify that this is a generic CV and may accuse the applicant of having no passion for their prospective role. So, make sure you adapt your CV to the job – it’s common sense. One area people always seem to struggle with is the brief description of yourself and your hobbies. Many people think they don’t have any hobbies, which is nonsense, since very few people spend their free time doing nothing but staring at walls. We all engage in activities of some form, but it is human nature to find describing yourself annoyingly difficult. My advice is this – picture your average week and pick out the things, outside of work time, that you repetitively do because you enjoy doing them. In some shape or another, you will find yourself describing your hobbies. It might be something as simple as going to the gym, which can be branded on a CV as “enjoys regular fitness and exercise sessions”. Employers will like this – it proves you are motivated and class yourself as active. Nine times out of ten you will find the day-to-day things you do can be branded, using the right phrase of speech, into a hobby that an employer will look at favourably.

Road tax changes The long-serving paper tax disc will no longer need to be displayed in vehicles as of 1st October 2014. A new electronic road tax system will keep track of who has paid their car tax through the use of Automatic Number Plate Recognition (ANPR) cameras, which can issue alerts for vehicles without insurance, tax or an MOT. Those who don’t pay their tax can expect to face a fine of £1,000. If your vehicle is currently taxed, you won’t need to take any action until the tax disc expires and you don’t have to remove it from your car. You will still receive a V11 reminder from the DVLA and can pay your car tax at Post Office branches or online at gov.uk/tax-disc, but you won’t be issued with a paper disc. Drivers looking to sell their vehicle can claim a refund from the DVLA for any full calendar months left on the tax disc – the buyer will not benefit from any unused months, as vehicle tax will no longer be transferred with the vehicle. Changing vehicle tax to an electronic system could have a positive impact on insurance premiums. By eliminating tax evaders from the road, insurance premiums are likely to reduce for many drivers. Help for charities There is always someone worse off than us and so we are encouraged to give to those organisations who are trying to help the disadvantaged. Some of them are funded by public and corporate donations; others rely on government and similar funding to provide contracted help in their chosen sector. The last few years have been a period of austerity and cutbacks. Many aspects of our lives have been affected, including the amount of cash that we have to support good causes. The government has threatened, but so far backed off from, changes to the tax legislation that would make charitable giving less attractive, particularly for the higher-rate tax payer. The argument is that such giving is a tax-led action; let me assure the Chancellor that this is nonsense – if someone is genuinely helping those in need, a small tax benefit is a great encouragement.

Simplifying the system of giving The government seems suspicious of the motives of those setting up charities as well as those donating to them. The 2006 Charities Act changed the rules for creating a new charitable entity but left in place the Charity Commission as the sector regulator, only to criticise it heavily in the last few years for being too feeble in its investigation of certain organisations that it has claimed registered charities solely to exploit tax loopholes. There will always be the odd bad apple in any basket, but let’s not make everyone else’s lives impossible as a result. I knew from my dealings with a number of local charities that the sector had lost significant sums of funding from government sources in the last few years. I was staggered to read recently that the rate of reduction was in the order of £1 billion a year! But all is not bad. The government has simplified Gift Aid declarations, facilitated online claims for Gift Aid and allowed charities to claim under that scheme for small, unidentified donations. Long may it, and our support of the sector, continue.

Trust in your team Bobbies tend to moan a lot about their lot, much like squaddies do and, I imagine, like a lot of people in a lot of organisations (I was a squaddie so I earned my right to comment – in case you were wondering). But, much like bobbies and squaddies, when the chips are down they never fail to impress. Believe me when I say that we are experiencing some significant challenges in the Police Service at the moment with several high profile events such as the NATO conference, the GCHQ demonstrations and the badger cull taking away our precious resources. What’s more, taken together with the austerity cuts that are really hitting home now, your local Police are working harder than they have ever done before in my 25 years in the job.

Safeguarding people It is a pleasure to work with such hard working, compassionate and enthusiastic people. Of course, there is always the odd one who makes you wonder why they joined in the first place, but I can honestly say the vast majority of your local team have their communities’ interests at heart. We talk about safeguarding people, we talk about locking up thieves and burglars, and we talk about disrupting the activities of the organised crime gangs – like the ones from Romania or London who think Cheltenham is a soft touch. I have dozens of ad hoc conversations and pop up meetings a week where staff tell me what they plan to do in order to combat crime and anti-social behaviour over the coming weeks.

You would be astounded if you spent a bit of time with us as to how much work goes into keeping Cheltenham as safe a place as it is. You could argue that this is what we get paid to do and, of course – you are right – but we all know the difference between a team who are going through the motions and a team who care.
