Espresso Espresso M Martini artini The Espresso Martini has a fairly short history as far as cocktails go, with the drink rumoured to have been created in the 1980s by a London-based bartender, Dick Bradsell. Bradsell was asked by a young woman for a drink that would “wake me up”, so the story goes. There was a coffee machine next to where Dick served drinks and he said it was a nightmare, as “there were coffee grounds everywhere”. With vodka all the rage and coffee constantly on his mind, Bradsell decided to combine the two, naming it the Vodka Espresso. The original recipe consisted of vodka, sugar syrup, two types of coffee liqueur and freshly made espresso. Ingredients: 50ml vodka; 50ml espresso coffee; 25ml Ingredients: sugar syrup; 25ml Kahlua coffee liqueur. M Method: ethod: 1 Add all ingredients to a cocktail shaker with ice and shake well. 2 Strain into a chilled martini glass and garnish with three coffee beans.

B Blueberry lueberry aand nd P Plum lum CCrumble rumble P Pie ie Ingredients Ingredients For the pastry: 175g plain flour; 1 tbsp granulated sugar; 100g cold unsalted butter; 30ml plain yogurt; ½ tsp salt. For the crumble topping: 75g unsalted butter; pinch salt; 50g granulated sugar; ¾ tsp ground cinnamon; ¼ tsp ground nutmeg; 100g plain flour; 25g walnuts, chopped. For the filling: 150g blueberries; 7 plums, stones removed and roughly chopped; 75g granulated sugar. Method: M ethod: 1 To make the pastry: Stir together the flour, sugar and salt in a large mixing bowl. Cube the butter and add to the bowl, then rub it into the dry ingredients. Add the yogurt and 1 tbsp cold water and mix until it comes together. Use your hands to press it all together in the bowl. Wrap in cling film and chill for at least half an hour. 2 Preheat the oven to 180°C (fan 160°C , gas mark 4). On a lightly floured surface, roll the chilled pastry out into a circle, until roughly 30cm in diameter, then use to line a greased 20cm pie dish.
3 Prick the pastry all over with a fork . Line with baking paper and fill with baking beans. Transfer to a baking tray and blind-bake the pastry for 10 -15 minutes. Lift out the paper and beans, return the case to the oven for a further five minutes, remove and set aside but leave the oven on. 4 To make the crumble topping: In a medium-size saucepan, melt the butter and continue to heat it over a medium heat until it foams up and smells nutty. Remove from the heat and stir in the salt , sugar, cinnamon, nutmeg and flour. Mix in the chopped walnuts, then put to one side. 5 To make the filling: In a large bowl, stir together the blueberries and chopped plums with the sugar and 3 tbsp of the crumble. Spoon into the pre-baked pastry case. Bake for 20 minutes, remove from the oven and cover with the rest of the crumble. Put back into the oven for a further 20 minutes. Serve with your choice of cream, custard or ice-cream.

So how can you beat the hay fever hel l without a becoming recluse, and keeping a smile on your face?

M o d e r n a n t i h i st a m i n es are often non-drowsy, so taking one each morning sets you up for the day, no matter what the weather, with a g o o d d o s e of t h e d r u g already in your system. • Wear sunglasses as much as possible. Most people don’t want to appear like a rock star with an ego, but keeping sunglasses on while outside, even on a cloudy day, will help stop the pollen reaching your eyes. • Put Vaseline around your nostrils to trap pollen before it reaches the nose lining. • Purchase an electric fan. If you p a r t i c u l a r l y s u f f e r i n t h e ev e n i n g s, buying a fan to keep you from getting stuffy means you can keep the windows closed while the pollen is dropping, as the temperatures cool in the evening. • Practice self-hypnosis. TThe he g gentle entle hum hum o off b bees ees One of the most familiar sounds on a summer ’s day has to be the gentle b a c k g ro u n d h u m o f b e e s f l y i n g about our gardens, making the most of what is on offer. They are a wellloved garden visitor and one that we have perhaps taken for granted considering the crucial role they play in pollination. Bees are a type of flying insect and w e h a ve 2 5 s p e c i e s i n t h e U K . Species such as the bumblebee are more common and can be seen b u z z i n g a b o u t o u r g a r d e n s, w h i l s t rarer varieties, such as the Great Yellow Bumblebee, are only found on the North coast and some Scottish islands.

Without them, o u r l a n d s c a p e wo u l d l o o k ve r y different and our diet would be too. Many plants we eat, such as apples, r e l y o n i n s e c t p o l l i n a t i o n to re produce. Pollinators, such as bees, transfer pollen and seeds from one The Local Answer
flower to another, which fertilises the plant so it can grow and produce food. Unfortunately bees are in decline. They are facing a number of c h a l l e n g e s i n c l u d i n g i n s e c t i c i d e s, c l i m a t e c h a n g e a n d t h e e ve r increasing urbanisation of our l a n d s c a p e. A s w e t u r n t h e g r e e n landscape grey, bees face travelling further distances to find the plants they need. A l l i s n ot l o st t h o u g h , a s s m a l l c h a n g es at h o m e c a n h e l p t h es e garden friends fight back . The insects need bee-friendly plants and by having these in your garden, be it in a border or a pot , you can help. Choose plants marked as bee friendly when visiting the garden centre and if you have a gravel or tarmac front garden/driveway, consider adding a couple of pots out front – the loss of our front gardens to car parking has taken its toll on pollinators. Another thing you can do is allow a part of your lawn to grow wild. If grass is left un-mown it ’s likely plants such as clover will grow, which are great for bees. A wild area
will also benefit many other insects as well. Leaving a patch of lawn can be a challenge, as we often prefer neatly trimmed grass, but if you can give up even a small patch you may well be surprised at what appears! If you have children, a summer holiday activity could be to mark out a s q u a re a n d g e t t h e m t o i d e n t i f y what plants and creatures appear as it grows wild.

The Great British Bee Count takes place every year and offers valuable information about the state of our bee populations. The shrub Ceanothus ‘Autumnal Blue’ is a nice one to plant if you have room, as it flowers from August to October. This handsome, evergreen shrub has fluffy clusters of sky-blue flowers and small, glossy, bright green leaves. It has a strong, upright habit and is ideal for training on a sunny wall, or for the back of a south or west-facing shrub border or sunny wall. Although it is one of the hardier varieties of Californian lilac, it d o e s n e e d p ro te c t i o n f r o m s t ro n g winds. It needs space, as it grows to a height and spread of 3m, but it is a good one to give colour at this time of the year.

If only there was a way to transport Hawaii into our homes. Luckily, there is! Why not relax in the garden under the shade of a beautiful palm tree. Although they can be a little pricey, they will transform your garden into a tropical paradise for you to relax in. The shade will keep you cool when lying under it and will make you feel like you’ve just stepped into Hawaii.

Bamboo is such an exciting thing to play around with. For this month’s interior design DIY, I’ve decided to show you how to make a Bamboo W i n d C h i m e. N o t o n l y w i l l t h i s complement the summer evenings, b u t i t ’ l l l o o k g o rg e o u s w h e n i t catches the sunlight and wind 1 Buy some Bamboo either online or check out your local garden centre or nursery – you may even have some growing in your back garden. Make sure it’s healthy and isn’t rotting or splitting. 2 Cut the bamboo into six lengths, creating tubes by making sure each length is composed of two 6 On the base tube, you will need of the plant’s ‘sections’, with one to measure in 5cm from the end above the partition-like edge. This will be the location of segment end, and the other the first hole. Many of them are surprised, I’m not sure why, when we mention insurance, as it’s a business protection that none of us can do without . It would be easy to get carried away and insure against every eventuality, but there are some risks against which adequate insurance is an absolute must. Although limited liability protection is available to those trading through a company, more and more cases are being taken against individuals rather than corporate entities. Insurance can often be demanded by those providing funding to the business. The most common requirement is for there to be cover in the event of something happening to the person that makes the business tick – keyman cover as it is popularly known. And what happens if there are two of you involved in the business and something happens to one party? Does the survivor really want the estate of his or her former partner involved with the ongoing business? Almost certainly not , so should there be some form of insurance to provide a payment in these circumstances so that you can retain control of the business?

The 31-year-old took charge of the club in November last year at a time when relegation from the Premier Division of the Southern League was already pretty much assured. Performances and results did pick up after Michael’ss arrival, but not enough to stave off the inevitable, and the one-time Risca United player/boss is now looking forward to putting his own stamp on the club as they prepare for life back in Division One South and West. “Very much so,” he said. “We’d have needed a miracle to have stayed up last season and we were always looking at this season as the real start for us. “What last year did give us was a bit of a run-up to this season. We already had a core of players and we’ve added some quality players

which has made us much more competitive. We’ll be much better than last season. We’re confident in the players we’ve got and we’ll definitely be looking for a place in the play-offs. It’s an exciting time for everyone at the club.” Michael, who says his assistant Andrew Smith has a big part to play in any success the club may achieve, cut his managerial teeth at Risca in South Wales, which is where he is from.
So what type of manager is he? “I wasn’t always as calm as I’d like to have been last season,” he admitted. “Things were difficult because we had so little time on the training pitch, but this pre-season has been very organised and we’re in a much better place. “For me it ’s all about finding tactical solutions rather than screaming at the players. “I’m a calm manager who thinks deeply about the game. We do a lot of video analysis, we prepare properly for every single session and we watch the opposition wherever possible. We plan for every game.” And how far does he want to go in the game? “I am ambitious,” he said. “I’ve just completed my UEFA A licence with the Football Association of Wales. “At some time in the future I’d love to get the chance to work in the fulltime game.” Full story online

Here is a man who truly deserves to be called a club legend. More than 60 of his 75 years have been spent associated with the club – he’s captained the 1st XI, served as club chairman and now looks after the wicket, which is described by current club captain Joe Lawrence as “a batting paradise”. H e h a s e n j o ye d a s t e l l a r c a re e r t h a t s a w h i m f i r s t t a k e up the whistle just short of his 20th birthday. From humble beginnings, the former Hartpury Primary School and Newent Secondary School pupil went on to hit the heights, r e f e r e e i n g m o re t h a n 7 7 0 games in the Football League and Premier League over 19 seasons. H i s re m a r k a b l e re fe re e i n g j o u r n ey b e g a n i n t h e N o r t h Gloucestershire League back in 1974 and the 62-year-old, who lives in Corse, has never fo rg o t t e n w h e re i t a l l s t a r t e d , w h i c h m a d e i t e ve n m o re special when he was invited by the league to be their president soon after he had hung up his whistle. And he’s proud to say that it’s a position he still holds today. As a youngster growing up in Hartpury, refereeing was never on Wilkes’ radar, however. H e m u c h p r e fe r re d p l ay i n g sport and was a good allrounder, enjoying table tennis, fo o t b a l l , c r i c k e t , r u g by a n d tennis. He played for Hartpury in the top division of the Gloucestershire Table Tennis League – “Table tennis was big in those days,” he said – and a l s o h a s fo n d m e m o r i e s o f p l ay i n g cricket for Staunton and Corse and Woodpeckers. By his own admission, he wasn’t the b e s t c r i c k e te r t o p u l l o n a p a i r o f whites.

I wasn’t a great p l a ye r b u t I h a d g r i t a n d determination.” H i s fo o t b a l l t o o k h i m to N e w e n t Town Youth before moving on to Williams and James, a factory team who played in the Premier Division of the Gloucester Sunday League. “I was a left-back with the attitude of ‘thou shalt not pass’,” he chuckled. “In those days, full-backs didn’t go forward like they do today. I’d occasionally move into midfield but my job was to tackle.”

The corner was headed clear and I just whacked it from 30 yards and it flew into the top right hand corner. That was 45 years ago and I’m still talking about it,” he laughed. Injury, though, was to curtail Wilkes’ sporting pursuits. “I had two cartilage operations on my right knee when I was 18 and 19 and I was never the s a m e a g a i n , ” h e s a i d . “ T h e re was a weakness there and I just couldn’t do the things that I’d been able to do in the past.” While recuperating after his second operation, W i l k es s p o t te d a n a d ve r t t h a t w o u l d change his life forever. “There was a shortage of f o o t b a l l i n g re fe re e s a n d t h ey wanted people to take a referee’s course,” he said. “I thought I’d do it because I wasn’t doing anything else. “ At t h i s st a g e I h a d n o aspiration to be a referee as I thought I’d be back playing sport again in a few months.” The course was run over six or s ev e n ev e n i n g s a n d i n N ove m b e r 1 9 7 4 h e to o k h i s exam and passed. It was the first stage on his refereeing journey.

So he took the plunge and started refereeing in the North Gloucestershire League. It was a decision that was to change his life. Such was his aptitude for the job that he was to go on to referee at all the top grounds in the country, including at Wembley. “I prided myself on getting the big decisions right,” he said.
