M Manhattan anhattan

A Manhattan is a whiskey-based cocktail, stirred and strained into a cocktail glass and garnished with a maraschino cherry or orange twist. A popular story of origin for the Manhattan suggests that the drink was invented by Dr. Iain Marshall in the early 1870s at the Manhattan Club in New York City. It is said he created it for a banquet hosted by Jennie Jerome (Lady Randolph Churchill, Winston’s mother) to honor presidential candidate Samuel J. Tilden. The banquet’s success made the drink very fashionable, prompting many people to request “the Manhattan cocktail” – named after the club it originated. Unfortunately, Lady Randolph was in France at the time and pregnant, so the story is unlikely to be true. There are references to a similar cocktail recipe called “Manhattan” served in the Manhattan area. One story says it was invented in the 1860s by a bartender named Black at a bar on Broadway near Houston Street. An early record of the cocktail can also be found in William Schmidt’s “The Flowing Bowl”, published in 1891. He writes about a drink containing gum (gomme syrup), bitters, absinthe, whiskey and vermouth. Ingredients: Ingredients: 25ml Italian sweet vermouth; 45ml bourbon; dash Angostura bitters; orange twist or maraschino cherry to garnish. Method: Method: 1 Add vermouth and bourbon to a cocktail mixer and stir. 2 Pour the mix into a martini glass, add a dash of bitters and garnish with a maraschino cherry or a twist of orange peel.

If you were ever to look at my family tree, I would be somewhere near to the top, hanging from a dysfunctional branch like a perfectly ripened fruit just waiting for s o m e o n e t o b i t e i n t o a n d s a vo u r m y re f i n e d d e c a d e n t qualities. Miles below my lofty position, just beneath the decaying husks of my siblings, down in the dirt near the roots, would be the first of my ancestors. Rugged, pioneering mainstays whose function I can only surmise was to eventually give me an existence. I’m aware this family tree doesn’t follow the usual template, artistic licence.

The sugar beet, for instance, has been carefully cultivated to provide everyone with a little sweetness in their lives, but if you look at its origins you’ll find the Sea Beet. E ve n t h o u g h t h e s u g a r b e e t wo u l d p r o b a b l y b e everyone’s preferred choice when it comes to applied kitchen science, it would be a shame not to remember where it came from. Since we’re already on the beach from last month’s Limpet forage, it would be worthwhile to take a little stroll and see if we can spot any of this ancestral throwback .

When tasted, it should serve as a reminder that trying to improve something that is already pretty perfect could produce more problems than it solves. In the case of the sea beet, so called improvements have caused wide spread obesity, diabetes and cancer. B Breathing reathing pproblems roblems iinn sshort-nosed hort-nosed dogs dogs There is something ever so appealing about the appearance of flat or short nose dog breeds. Pugs, French Bulldogs, Boston Terriers, British Bulldogs, etc. share the similar physical characteristics of squashed or flattened noses and large eyes. One theory goes that they are more human or baby-like in their facial shape, which is why we find them appealing. Personally, I often find them to be affectionate and devoted pets, but the shortened nose/squashed face comes at a price.

SSelectively electively b bred red o over ver many many generations generations We describe these dogs as ‘brachycephalic’, which essentially means short-nose. They look very different from wild dogs because we have selectively bred them over many generations to have shorter and shorter snouts. The problem with this selective breeding regime is that the structural breathing apparatus behind the nose has essentially got compressed and simply doesn’t fit into the space that is provided for it. The nostrils are too narrow to allow good airflow, the ‘soft palate’ at the back of the throat extends too far and obstructs the opening of the airway, and the larynx (top of the windpipe) struggles to cope with this limited airflow by gradually collapsing under constant strain.

LLife-threatening ife-threatening b breathing reathing difficulties difficulties The give away is the excessive noise that a lot of these dogs make when they are breathing. Most of them will snore excessively and pant far more than they should – even when relaxed their breathing is often raspy or rattle-like. Hot weather can be particularly problematic a s t h e s e d o g s c a n n o t p a n t e f f i c i e n t l y to k e e p themselves cool. We call this condition ‘brachycephalic obstructive airway syndrome’, or BOAS for short , and s a d l y i t o f te n g e t s w o r s e a n d m o r e s e r i o u s a s a d o g ages. Some of these dogs will struggle to manage any sort of exertion and suffer life-threatening breathing difficulties. Early surgical intervention is possible to dramatically improve breathing in the worst affected dogs. It is possible to widen the nostril openings, shorten the soft palate and relieve some of the pressure on the larynx . If these procedures are performed early in a dog’s life it dramatically reduces the long-term strain on the airway. Ultimately, better and more responsible breeding will reduce the more extreme breathing problems we see. If you are interested in getting a puppy from one of these breeds, talk to your vet about what to look out for and what can be done if a problem occurs.

Those simple things can and will make a world of difference. The most vital part is – do not feel guilty. You are doing a brilliant job and your kids will love you regardless. So enjoy the good days and celebrate those little wins, because you deserve it.

Tough Tough ttimes? imes? It’s not often that you are asked to spare a thought for the boss’s finances, but that’s what Money Matters is going to invite you to do. There has been plenty of publicity over recent years about the struggles of employees trying to keep pace with the cost of living, as businesses have found it increasingly difficult to afford pay rises in different economic times. But what about the boss him/herself? How has he or she fared across these uncertain times.

It appears that self-employed workers earned 20% less in 2014/15 than they did in 1995, and that ’s without factoring in the effects of inflation, which would nearly double that figure. How has the self-employed community coped? Well, not giving pay rises to their staff for one and cutting their costs, whilst at the same time searching for efficiencies, is the obvious other explanation. What intrigues me a little more is WHY the self-employed are earning less. Markets have widened – certainly if your product or service can be sold abroad – and interest rates have helped to keep finance costs at record low levels. So surely all the ingredients are there for success? The research threw up some interesting data, not least of which is that self-employed business people are working a lot less hours than they did 20 years ago. It’s no surprise then that they are earning less; it’s a well known fact that self-employed profits are generated first and foremost from your own hard work . It appears that the number of self-employed people employing others has also fallen. If that’s going to be your business model, surely it has to be coupled with doing more hours yourself? These two elements just do not make sense put alongside each other.

Whether it is health and safety, employment legislation, EU bureaucracy or corporate governance, compliance all costs time and money. Not all small businesses have seen their earnings and profits fall of course. There are many success stories out there, making money for themelves, rewarding their hardworking employees and investing in the future. They are the entrepreneurs whose examples should be followed by anyone looking to succeed as their own boss.
