Ingredients: Ingredients: For the pastry: 225g plain flour, plus extra for rolling out; 3 tbsp icing sugar; 140g unsalted butter, diced and chilled; 2 medium egg yolks; 1 tsp vanilla bean paste; pinch of salt. For the custard: 1 tsp vanilla bean paste; 250ml w h o l e m i l k ; 1 l a rg e e g g ; 2 l a r g e e g g y o l ks ; 100g golden caster sugar; 25g cornflour; 15g unsalted butter. For the roasted rhubarb: 700g thin forced rhubarb (about 5 stalks), trimmed, washed and cut into 9cm-long pieces; 175g golden caster sugar; 1 tsp vanilla bean paste; juice of 2 oranges; 10g chopped pistachios to serve. Method: M ethod: 1 For the pastry: Put the flour, icing sugar and salt in a large bowl and mix . Add the butter and rub together to form a breadcrumb texture. Add one egg yolk , the vanilla and 1 tbsp cold water, and mix until it starts to form a dough. Put the mixture on a clean work surface and gently bring together with your hands. Wrap the pastry in cling film and chill for one hour. 2 For the custard: Put the vanilla bean paste and milk in a pan over a medium-high heat and bring to the boil. Meanwhile, put the egg , yolks, sugar and cornflour i n to a b ow l a n d w h i s k together until smooth. Pour the milk over the egg mixture and whisk to combine. Put the custard back in the pan and cook , whisking u n t i l t h i c k e n e d . Po u r into a bowl and add the butter, mixing until melted and combined. Press a sheet of

On a lightly floured surface, roll out the pastry to line a 12 x 36cm fluted tart tin. Using the rolling pin to help, drape the pastry into the tin, carefully lifting and pressing into the corners and edges. Roll your pin over the tin, cutting off the excess. Chill for 30 minutes or until the pastry is firm. Heat the oven to 180°C (160°C fan/gas mark 4). Line the tart with baking parchment , fill with baking beans and place on a tray. Bake for 30 minutes, then remove the parchment and beans, and bake for another five m i n u t e s o r u n t i l t h e b a s e i s g o l d e n b ro w n . B r u s h t h e inside of the tart with the second egg yolk and return to the oven for one minute to set . This creates a seal, meaning the pastry will stay firmer for longer. Set aside to cool. For the roasted rhubarb: Heat the oven to 190°C (170°C fan/gas mark 5). Line up the rhubarb pieces in a roasting tin and sprinkle over the sugar, vanilla bean paste and orange juice. Roast for 15 minutes or until the rhubarb has softened but is still holding its shape and has a lovely pink syrup. Remove from the oven and leave to cool. Take the custard out of the fridge, stir, then spoon into the pastry case and smooth with a spatula. Top with the rhubarb, brush a little syrup on top, then sprinkle over the pistachios.

LLive ive llife ife o on n tthe he w wild ild sside ide As we come into April the changes we can see outside in terms of our wildlife are rapid. The weather is becoming milder (hopefully) and the days longer, and we have the promising summer months stretching before us. It ’s a good time to make plans for the garden and if you would like to do something in your garden to help wildlife this summer then you could try planting some wildflowers.

T h i s i s a b i g p ro b l e m a s wildflower meadows are extremely valuable in offering a diverse set of habitats for various species. Our bees, birds and butterflies, as well as many other types of wildlife, rely on wildflowers to support their survival. As our wildflower meadows have decreased in number through the years, road verges have offered somewhere for wildflowers to grow instead. However, the continuous c u t t i n g o f t h e s e v e r g e s p r ev e n t s t h e m f ro m f l o u r i s h i n g . O u r n a t i ve wildflowers are struggling but there are things we can do.

Luckily you don’t have to have a spare meadow at hand to grow wildflowers – you can grow them on a s m a l l s c a l e a s we l l . W i l d f l owe r s g row b e s t i n l ow- n u t r i e n t s o i l a n d , once the area is planted, they are pretty low mainten-ance. A small p a tc h o f b a r e g ro u n d c a n b e converted into a lovely display of n a t i ve w i l d f l ow e r s w h i c h w i l l t h e n attract other wildlife. Patience is required though, as it won’t look its best that first year. Instead it will evolve over time as species establish. There are a few things to consider when planting your wildflower area so it’s worth looking at the wealth of information available online from organisations such as Friends of the Earth, the RHS and the RSPB. If planting wildflowers is something you don’t have time for then another option is to just choose a section of your garden that you can leave to grow wild. Or, if you fancy a break f ro m l aw n m ow i n g d u t i e s , t h e n l e t the whole area go wild! You may be surprised what appears both in terms o f p l a n t s a n d i n s e c t s . I f yo u h av e children you could make it into a fun experiment by completing a bioblitz . S e e w h a t s p e c i e s t h ey c a n f i n d o n

It’s It’s tthe he o only nly ttime ime II’ll ’ll rrun un a m marathon… arathon… Clare Richards is preparing to run the London Marathon at the end of April – a n d s h e i n s i st s i t w i l l b e t h e o n e and only time she does it. In fact , the 45-year-old insists it wil l be the one and only time she ever runs a marathon. Clare took up running only three years ago, joining the Forest of Dean Athletic Club 12 months later, so is relatively new to the sport. So why did she decide to take up running? “I’d reached my 40s and needed to get fit,” said the mum-of-two. “I was going to join a fitness class at a gym and then I saw something advertising ‘Couch to 5K’ and I thought, ‘That sounds ideal’.” Indeed it was. Clare never did m a k e i t to t h e g y m a n d a f te r completing the ‘Couch to 5K’ over nine weeks she progressed to ‘5K to 10K’, a course she did three times. It ’s certainly worked and she’s advanced to such an extent that

she’s since run a handful of half marathons. The marathon is an altogether different proposition, of course, but she says she’ss looking forward to the big day in the capital on Sunday 22nd April. “The actual marathon shouldn’t be too bad,” said Clare, “it ’s all the training that takes so much time.” Clare reckons she trains for about

The first team have been flying high in National Two South and in January stunned big rivals Chinnor by going to their place and winning 26-14. And while Paul Morris’ flagship side h ave u n d e r s t a n d a b l y b e e n w i n n i n g most of the plaudits, just as pleasing for club stalwart Rob Worgan is the overall good health of the club. “Yes, it’s very good at the moment,” said Worgan. “Paul as director of rugby has done a great job, a wonderful job. “He works very well with coaches Clive Stuart-Smith and Adam Balding but the great thing about him is that he’s not just interested in the first team. “ H e wo r ks ve r y we l l w i t h R i c h a rd P l a n c h a n t , w h o r u n s t h e U n i te d , a n d also Steve Jelf, who runs the Stags.”

10 hours a week and juggling that with family and work has convinced her that this is the only time she’ll take on the 26.2-mile challenge. It’s a big commitment, of course it is, so w h y d i d s h e d e c i d e to r u n t h e London? “It ’s a once-in-a-lifetime thing ,” she said. “It’s one of those things to cross off your bucket list. “I’m never going to run down the Mall again – well, not unless I’m trying to catch a bus! But the London Marathon is such an iconic race.” Clare is also motivated by the fact that she is raising money for a good cause – the Children with Cancer UK charity. And even though Clare is adamant this is the one and only time she’ll run a marathon, she says she has no plans to hang up the spikes any time soon. “ I ’ l l d e f i n i te l y k e e p o n r u n n i n g , ” she said. That ’s because s h e i s F re e d o m Leisure’s Active Steph Moreland Communities Officer in the Forest, a job she has enjoyed doing since October 2015 when Freedom began operating the leisure centres. Originally from Somerset, Steph has lived in Gloucestershire for eight years and now works with people of all ages across the Forest, encouraging them to lead healthier and more active lifestyles. “I work with local community groups and I look to engage with people of all ages, from tots to grandparents,” said Steph, who lives in Highnam. Fortunately Lynn, a qualified PE teacher, thought a gymnastics club was a good idea and she was spot on because 43 years later she is the driving force behind the Forest of Dean Gymnastics Club which trains at the incredibly successful Gymnastics Centre at Five Acres in Coleford, which boasts 420 members.

And that ’s pretty much what she’s been doing most weeks for more than fo u r d e c a d e s . N o t t h a t t h e g y m n a s t s have always trained at the impressive set-up at Five Acres. “When we started we were based at Berry Hill Primary School,” said Lynn. “It was just after the Olga Korbut era when everyone was watching gymnastics on TV almost for the first time, but as numbers and equipment grew we had to move to the Royal Forest of Dean College gym.” But it soon became obvious that even their new home wasn’t going to be big enough to cater for all the wannabe gymnasts around the Forest. “We knew we needed a specialist gym to give gymnasts the facilities that matched their ability and to give them the opportunity to develop,” said Lynn. But easier said than done of course, so what did Lynn and the club do? “We fundraised for 11 years,” she said. “Every weekend. We’d hold jumble

sales, we’d collect pennies i n S m a r t i e t u b e s a n d we c r u s h e d t h o u s a n d s of aluminium cans.” It was tough – Lynn was married and raising a family of four at the same time – but all t h e h a r d wo r k c a m e t o fruition in 1994 when they were awarded a grant of £100,000 by the Found a t i o n fo r S p o r t a n d t h e Arts. A Lottery grant followed a n d w i t h t h e i r ow n fundraising efforts, two years later they moved into their ful ly equipped purpose-built Gymnastics & Fitness Centre at Five Acres, packed with Olympic standard apparatus. It’s the place they still call home today. “All the hard work was worth it,” said Lynn, who is the director of coaching at the centre. “It’s an amazing facility for the community. It was a £1 million b u i l d i n g w h e n i t o p e n e d a n d i t st i l l looks very good. We still think of it as new.” The Centre is run as a registered Sports Charity on a ‘not for profit’ basis. Gymnastics was something that was pretty new to Lynn back in the early 70s and she admits it’s not something that she did herself. “I didn’t have the opportunity,” she said. “Gymnastics was not in the public eye when I was a child.” But while she may have missed out, Lynn has certainly done everything in her power to make sure that successive generations growing up in the Forest have been given every opportunity to realise their dreams, whether it be on the beam, the pommel, the rings or on the floor. “ I s t a r te d by g o i n g o n a g y m n a s t i c s course to become a coach and I’ve been learning ever since,” she said.

There are currently some 10 qualified coaches at the centre – the club would like more – and they cater for people of all ages. “We take in tots almost as soon as they can walk ,” said Lynn. “They can be as young as 18 months and we go right through to adults.”

The current competitive squads are aged eight to about 13. “They are really enthusiastic and it ’s all they want to do. I see them bouncing outside the gym door saying, ‘Can we do bars tonight’ or ‘Can we do beam?’ and I just look at them and think , ‘Wow, what keeps them motivated?’ “It ’s important to remember that children are competitive and for me it’s just a privilege to be part of their lives and their development,” Lynn added. Reduce Reduce A simple way to reduce the amount of plastic you throw away or recycle is to not buy it in the first place. Plastic ziplock bags d o n o t h av e to b e s i n g l e u s e i te m s either, especially when used for storing things in the freezer or cupboard. Rinse them with water, dry them and use them next time you need them. Use old cereal boxes to make a new magazine holder, and old plastic fruit holders to store small items like packet mixes in your pantry which would otherwise fall over. Big ice cream tubs can be repurposed as sewing kits after being washed t h ro u g h , o r t h e y c a n h o l d y o u r sandwiches or last night ’s leftovers. Incredibly, estimates by the Bank of England suggest that there were over £2billion worth of old tenners still in circulation when they ceased to be legal tender. Yes, £2billion!! That represents over a quarter of the total £10 notes in circulation. They have been coming back at a rate of £85m a week . “I suppose the scores will be next to go?” “Surely you haven’t been hoarding manuscripts with your vinyl?” “No not musical scores, old twenties!” “Oh I see, yes, give it a couple of years and I’m sure we’ll have plastic ones of those too”. George is right , the existing £20 note is due to be replaced by a plastic version in 2020. If you want the answer to the pub quiz question in the meantime, they will carry a portrait of the landscape artist, J M W Turner. Britain joins a growing list of countries who have exchanged old paper notes for more durable polymer ones. Apparently Australia led the way as far back as 1988. As well as being more durable, the new notes are supposed to be more difficult to copy. If you’re a fan of paper notes, Money Matters has some good news for you. There are no plans to replace the existing £50 one!
