SSpinach pinach ssoup oup aand nd homemade bread bread rrolls olls homemade FFor or tthe he SSoup o up IIngredients: ngredients: 20g butter; 2 medium onions, sliced; 1 clove of garlic, sliced; 2 medium potatoes, peeled and chopped into 1cm cubes; 1.25 litres chicken stock; 300g baby spinach; nutmeg; the juice of ½ a lemon; 4 tbsp single cream. Method: Method: 1 Heat the butter in a large saucepan over a medium-low heat and add the onions. Cook gently for 7-8 minutes or u n t i l s o f t ( b u t n o t b row n ) . A d d t h e g a r l i c a n d p o t a to cubes and cook , stirring, for an extra 2 minutes. 2 Add the stock , increase the heat and bring to the boil. Reduce the heat and simmer gently for about 10 minutes. Add the spinach leaves, increase the heat again and simmer for a further 10 minutes. 3 Remove from the heat and allow to cool a little. Purée t h e s o u p i n b a tc h e s i n a b l e n d e r o r w i t h a h a n d - h e l d blender until smooth. Season with freshly grated nutmeg. 4 Add lemon juice and season to taste with salt and freshly ground black pepper. Bring the soup back to the simmer and then stir in the cream

For For tthe he B Bread read R Rolls olls Ingredients: Ingredients: 500g strong white bread flour; 7g sachet fast action dried yeast; 1 tsp salt; 1 tsp sugar; 310ml lukewarm water; 1 tbsp poppy/sesame seeds (optional). Method: Method: 1 Mix all the dry ingredients together and make a well in the middle. 2 Pour in half the water and stir using a fork , gradually bringing in the flour from around the sides of the bowl. 3 Add the rest of the water and continue stirring to form a dough. Add a little extra water if it is very dry. 4 Flour a work surface and your hands lightly. 5 Turn the dough out and start kneading it by pushing it away and folding it back . If the dough is too sticky add a little extra flour but not too much or it will make the bread dry. Keep kneading for about 5 minutes until the dough is smooth and elastic. 6 Put the dough in a large bowl and cover with clingfilm. Leave to rise, preferably somewhere warm but not hot, until the dough has doubled in size. Depending on the surroundings this could be 30 minutes to 2 hours. 7 Preheat the oven to 220°C (fan 200°C/gas 6). 8 Knock the dough back . Knead again for about a minute. 9 When shaping the dough, make any shape you want but ensure all rolls are even sizes so they will be ready at the same time. 0 Put the rolls on a baking tray and leave to rise until the 10 oven has heated up. 11 1 Brush the top of the rolls with a little milk or beaten egg and sprinkle seeds on top if you wish. 12 2 Bake the rolls in the oven. Depending on the size they could take any time from 7-15 minutes. When they are ready they will sound hollow if you tap them underneath. 13 3 Put the rolls on a wire rack to cool.

H How ow iimportant mportant iiss ssleep? leep? We spend a third of our lives asleep and that is because it is essential to our physical and mental health. In my practice I put a lot of emphasis on the importance of sleep, and work with p e o p l e s u f fe r i n g w i t h s l e e p d e f i c i e n c i e s, m a n y o f w h i c h d o n o t even realise or know of the damage it could be doing. Some of the key effects of sleep deficiency are: • Increased risk of heart disease, kidney disease, high blood pressure, diabetes and stroke. • Increased risk of obesity, as sleep helps maintain a healthy balance of t h e h o r m o n e s t h a t m a k e yo u f e e l hungry (ghrelin) or full (leptin). When you don’t get enough sleep, your l ev e l o f g h r e l i n g o e s u p a n d yo u r level of leptin goes down. This makes you feel hungrier than when you’re well-rested. • S l e e p a l s o a f f e c t s h ow yo u r b o d y reacts to insulin, the hormone that controls your blood glucose (sugar) l e ve l . S l e e p d e f i c i e n c y re s u l t s i n a higher than normal blood sugar level, which may increase your risk of diabetes. • Greater risk from infections. • Studies also show it alters activity in some parts of the brain. If you’re

sleep deficient, you may have trouble making decisions, solving problems, controlling your emotions and behaviour, and coping with change. • L a c k o f s l e e p c a n b e l i n k e d to depression, suicide and risk-taking behavior. • Children and teens who are sleep deficient may have problems getting a l o n g w i t h o t h e r s . T h ey m a y f e e l angry and impulsive, have mood swings, feel sad or depressed, or lack motivation. They also may have problems paying attention, and they may get lower grades and feel stressed.

But before any single ladies who knew him 20, 30 or 40 years ago start kicking themselves over missed o p p o r t u n i t i e s, t h e h a p p i l y m a r r i e d father-of-two grown up boys was ‘unattached’ only in running terms. The now nearly 62-year-old, who is chairman of Stroud and District Athletics Club, has always been into his running but didn’t join the club fo r w h o m h e d o e s s o m u c h u n t i l the mid-noughties, competing unattached until then. Born in Gloucester, Jim was brought up in Stroud and went to Marling School. “I did some cross-country at school and quite enjoyed it,” he said. He also played rugby but that was not quite such an enjoyable experience. “I was tall for my age and they always put me in the second row,” he recalled. “I used to keep getting black eyes because I was getting

kicked by the opposition props. I didn’t like that much!” After finishing university Jim remained close to his roots, getting a job working in a bank and moving to Cheltenham. It was at this time that he rediscovered his love of running. “I was sat behind a desk and working at a computer all day,” he said. “I knew I needed to be doing some form of exercise so that ’ss when I started to go running.” He was lucky that his brother Steve was like-minded and two parts of

The club have been running since the mid-1970s and these days boast around 120 members. “We run nine teams,” says coach Wendy Chandler.

the Adams family could be seen regularly going for runs around Cheltenham. “We’d run around the streets of Cheltenham,” said Jim. “It was easy because it was flat and well lit. We’d run a circuit right around the town.” Like his brother, Steve was unattached, although these days he is now a member of Almost Athletes. H e j o i n e d t h e C h e l te n h a m - b a s e d club after his running mate moved to Stroud a dozen or so years ago. “I love it at the club,” said Jim, whose wife Tricia is also a member. “I love being out and about and running in the fresh air. There’ss such a wide variety of running – Rodborough Common, Selsley Common and down by Stroud canal. I love running at places like Randwick and Standish Woods. “I’m out three or four times a week . The club train on Tuesday and Thursday evenings and I also coach a group of runners.” Full story online.

And that success came four years after he became the first Briton ever to win individual gold in the World Tumbling Championships in, you guessed it, Sofia.
“We’re just a club run by a group of m a t e s . ” T h o s e a r e t h e wo rd s o f t h e man they call ‘Mr Eastcombe’ – better known as Kenny Smith – who was talking to The Local Answer about his beloved Eastcombe Football Club. Smith is player/manager of the first team, who play in Stroud League Division Two, as well as the club’s secretary. And if that wasn’t enough, he took on the job of results secretary for the Stroud Football League at the start of the season. It ’s not surprising really. She has a ready smile, has already achieved t h i n g s i n h e r l i fe – p r i m a r i l y a s a n actress – and would appear to have a ve r y c a r i n g s i d e j u d g i n g by h e r humanitarian work . She seems to tick most boxes and it ’s certain that any children that follow on from the big wedding day will be welcomed with open arms by a country looking for some welcome good news amid all the Brexit doom and gloom stories. Those children – Hector or Tuppence m ay b e ? – w i l l b e b o r n w i t h t h e proverbial silver spoon in the mouth of course. There wasn’t a silver spoon to be s e e n w h e n R u ss e l l H i l l i e r c a m e i n to this world 78 years ago, however. In fact it ’s far more likely that he was b o r n c l u t c h i n g a r u g by b a l l t h a n a n item of cutlery. That’s because Hillier has devoted a lifetime to the oval ball game as a player, administrator and volunteer. He was a good player, enjoying a four-year spell with Gloucester as a full-back in between longer periods at Stroud, the club who remain his first love. When he hung up his boots, he didn’t turn his back on the game that had given him so much fun, serving as an administrator at club, county and national level. And he’s still very much involved today, to the extent that he still serves up soup and bread to Stroud’s players after Tuesday and Thursday night training sessions and watches them play on Saturday afternoons Hillier was born in Burton-on-Trent but by the time he was blowing out the candle on his first birthday cake he had already moved to glorious Gloucestershire – and more particularly Stroud – with his family.
It was at Marling S c h o o l t h at h e f i r st learned about the joys of rugby. “ I s t a r te d o f f a s a scrum-half or fly-half,” h e s a i d , “ a n d I g ot s e l e c te d fo r the Gloucestershire Schools under-15 team.” Soon England came cal ling and the up wardly mobile Hillier was selected for their under-15 squad as well – although not as a half-back . “ T h ey p u t m e a t f u l l - b a c k w h i c h was a bit unusual,” he admitted. Not that Hillier was fazed by the change of position nor anything else for that matter. “We played Wales at the Arms Park i n C a rd i f f i n 1 9 5 4 , ” h e s a i d . “ T h e re was a crowd of 35,000 and it was a great experience even though we lost 9 - 6. I’ve still got the schoolboy cap that I was presented with that day.”

He was three years later, though, when he was chosen for the England Schools senior squad to play Wales at Twickenham and France in Paris. This time he was at outside centre as Wales won 9 -3 and the game with the French ended 6- 6. Closer to home, Hillier was doing pretty well too. “I was captain of Marling’s 1st XV,” he said with some pride, “and in my final season we won every game. We u s e d to p l a y s o m e t o u g h g a m e s against Cainscross 2nds, Stroud 2nds and Old Marlingtonians.” By now Hillier was a familiar face around Stroud Rugby Club.

“I played my first game for Stroud in 1955,” he said. “It was for the Nomads. I was in the first team in 1958 and was playing fly-half.” He went to St Luke’s College in Exeter to further his studies, a place w h e r e h e a l s o g o t t o p l ay a v e r y decent standard of rugby. He continued to play for Stroud as well and it wasn’t long before Gloucester and Gloucestershire came knocking. “Peter Ford, who was captain of Gloucester, said why don’t I come and play for them, so I did,” he explained. “ A n d i n t h o s e d a y s p l a y i n g fo r Gloucestershireshire was one step below international level.” H i l l i e r h a s n o t h i n g b u t h a p py memories of his four years at Kingsholm. And when they were over he was just as happy to return to his first club Stroud, where he was elected captain for three years. And the good times continued for Hillier once he’d untied his boots for the last time as a player, as he moved seamlessly onto the administrative s i d e. W i t h h i s p o s i t i v e c a n - d o personality, Hillier was a breath of fresh air in committee rooms around the county and beyond, and over the years he has been given more titles t h a n ev e n s o m e m e m b e r s o f t h e Royal Family! Woodlands are in decline but fortunately, thanks to groups such as The Woodland Trust , there are areas being preserved that we can all enjoy. It runs from the 27th-29th January and you can register at www.rspb.org.uk . These are just a few ideas of how your New Year resolutions could help to make positive changes for wildlife. Money Matters is not in the habit of making too many resolutions for a New Year, but I thought I would share with you a few predictions for the financial outlook in 2018. Maybe you’ll agree; maybe you won’t. You may even want to have a go at the exercise yourself. We have to start with the UK’s departure from the European Union. The Government appears to have made some progress in persuading EU negotiators to discuss trade arrangements, but it looks like a long haul to me. There has to be a risk that no deal on trade will be struck u n t i l t h e E U i s h a p p y w i t h ev e r y t h i n g e l s e a n d t h a t therefore we will still be talking about this issue this time next year. “Surely not”, you cry! I wish I had your faith. The stock market will, of course, be reactive to the EU trade talks, but the longer those take to conclude, the more jittery the market will become. Could it survive a hit of, say, 20% of share values? Clearly it can, but what will the impact be on savings, pensions and businesses if it did fall that far?

Less speculative potentially is the subject of interest rates. We saw our first rise in base rates for a decade in November and it’s not rocket science to work out that they are only going one way in 2018. I think base rate will double to 1% in the next twelve months. We’ve also had the announcement of more bank closures recently and this is another trend that seems certain to continue in the year ahead. More and more of our financial transactions are being done online and I score no marks for predicting that this too will continue apace, but it clearly will! These are bits of fun, of course, rather than advice on which you should rely. I haven’t strayed far from the regular topics. Maybe I should predict that we will see the first £250 million football transfer or that I will win the National Lottery. Fat chance of the latter methinks. Enough of my ramblings. Let me wish all readers a happy, healthy and prosperous New Year.
