SSpinach pinach ssoup oup aand nd homemade bread bread rrolls olls homemade FFor or tthe he SSoup o up IIngredients: ngredients: 20g butter; 2 medium onions, sliced; 1 clove of garlic, sliced; 2 medium potatoes, peeled and chopped into 1cm cubes; 1.25 litres chicken stock; 300g baby spinach; nutmeg; the juice of ½ a lemon; 4 tbsp single cream. M Method: ethod: 1 Heat the butter in a large saucepan over a medium-low heat and add the onions. Cook gently for 7-8 minutes or u n t i l s o f t ( b u t n o t b row n ) . A d d t h e g a r l i c a n d p o t a to cubes and cook , stirring, for an extra 2 minutes. 2 Add the stock , increase the heat and bring to the boil. Reduce the heat and simmer gently for about 10 minutes. Add the spinach leaves, increase the heat again and simmer for a further 10 minutes. 3 Remove from the heat and allow to cool a little. Purée t h e s o u p i n b a tc h e s i n a b l e n d e r o r w i t h a h a n d - h e l d blender until smooth. Season with freshly grated nutmeg. 4 Add lemon juice and season to taste with salt and freshly ground black pepper. Bring the soup back to the simmer and then stir in the cream

For For tthe he B Bread read R Rolls olls Ingredients: Ingredients: 500g strong white bread flour; 7g sachet fast action dried yeast; 1 tsp salt; 1 tsp sugar; 310ml lukewarm water; 1 tbsp poppy/sesame seeds (optional). Method: Method: 1 Mix all the dry ingredients together and make a well in the middle. 2 Pour in half the water and stir using a fork , gradually bringing in the flour from around the sides of the bowl. 3 Add the rest of the water and continue stirring to form a dough. Add a little extra water if it is very dry. 4 Flour a work surface and your hands lightly. 5 Turn the dough out and start kneading it by pushing it away and folding it back . If the dough is too sticky add a little extra flour but not too much or it will make the bread dry. Keep kneading for about 5 minutes until the dough is smooth and elastic. 6 Put the dough in a large bowl and cover with clingfilm. Leave to rise, preferably somewhere warm but not hot, until the dough has doubled in size. Depending on the surroundings this could be 30 minutes to 2 hours. 7 Preheat the oven to 220°C (fan 200°C/gas 6). 8 Knock the dough back . Knead again for about a minute. 9 When shaping the dough, make any shape you want but ensure all rolls are even sizes so they will be ready at the same time. 0 Put the rolls on a baking tray and leave to rise until the 10 oven has heated up. 11 1 Brush the top of the rolls with a little milk or beaten egg and sprinkle seeds on top if you wish. 12 2 Bake the rolls in the oven. Depending on the size they could take any time from 7-15 minutes. When they are ready they will sound hollow if you tap them underneath. 13 3 Put the rolls on a wire rack to cool.

In my practice I put a lot of emphasis on the importance of sleep, and work with p e o p l e s u f fe r i n g w i t h s l e e p d e f i c i e n c i e s, m a n y o f w h i c h d o n o t even realise or know of the damage it could be doing. Some of the key effects of sleep deficiency are: • Increased risk of heart disease, kidney disease, high blood pressure, diabetes and stroke. • Increased risk of obesity, as sleep helps maintain a healthy balance of t h e h o r m o n e s t h a t m a k e yo u f e e l hungry (ghrelin) or full (leptin). When you don’t get enough sleep, your l ev e l o f g h r e l i n g o e s u p a n d yo u r level of leptin goes down. This makes you feel hungrier than when you’re well-rested. • S l e e p a l s o a f f e c t s h ow yo u r b o d y reacts to insulin, the hormone that controls your blood glucose (sugar) l e ve l . S l e e p d e f i c i e n c y re s u l t s i n a higher than normal blood sugar level, which may increase your risk of diabetes. • Greater risk from infections. • Studies also show it alters activity in some parts of the brain. What What ttoo ddoo oonn yyour our ggap ap yyear ear After applying to university to study English Literature with Creative Writing at Oxford Brookes, I realised I just wasn’t ready. I wasn’t sure about the course, the university and whether uni was for me at all. I d e c i d e d I n e e d e d to t a k e s o m e time out , which has been an a m a z i n g d e c i s i o n a n d o n e I wo u l d definitely recommend to others. A gap year is what you make it . It ’s completely up to you how you spend your time – here’s how I’ve been spending mine:

W Work ork a and nd w work ork e experience xperience H av i n g a j o b a n d g a i n i n g wo r k experience relating to what I’d like to do were the most important things I wanted to achieve. My work experience placements have given me an understanding of the working world and I’ve learnt a lot from them. They’ve made me feel sure about the degree I want to do, as well as the career path I’d like to follow. Most importantly, I got a job at The Lo c a l A n s we r a f t e r p re v i o u s l y working in retail, which has so far proved an extremely valuable experience! Not only has it been great to earn money, but the range of jobs I’ve had have helped me gain confidence. If you’re still unsure about the degree you want to pursue, try to secure a few work placements in different industries or sectors, as this may help you to figure out what you enjoy and excel at , thus making it easier to choose your degree.

V Volunteering olunteering Volunteering is something I’ve hoped to do for a while, and now I’ve got the time to do it . So far, I’ve vo l u n te e re d w i t h Le c k h a m p to n Beavers and I am going to be involved in fundraising for Marie The Local Answer

C u r i e a n d C h e l te n h a m A n i m a l Shelter. I’ve been really enjoying it; it’s so rewarding to give back to my community and it has made me a more well-rounded person. Paid placements can be hard to come by, so why not volunteer your time and energy instead? You may not be able to volunteer in the exact i n d u s t r y i n w h i c h yo u h o p e to f i n d paid work , but you may learn new skills, improve your confidence and find a new passion.

Hobbies H obbies I’ve had a good amount of time to d e d i c a te t o t h i n g s I l ov e d o i n g , a s well as a chance to get to know what they actually are. There’s still so much more I want to do, I just hope I have time for it all! I’d be really happy if by the end of the year I’ve managed to make some progress with learning to play the guitar because that ’s something I haven’t been able to commit to yet. Work and education are very timeconsuming so if you’ve been meaning to learn a new hobby or improve on existing ones, do it while you have time!

Having H aving a b break reak I’ve loved not having to think about studying. I’ve been able to have a break , during which I can spend quality time with my family and friends. It ’s important to get some ‘headspace’ every now and then, and it ’s especially important not to f e e l g u i l t y a b o u t i t . I f y o u n e e d to h a ve t h r e e d u v e t d a y s b e t w e e n work placements to recoup some energy, do it and enjoy it! Travelling, for many, is a big perk of a gap year. There are loads of opportunities available, ranging from volunteering and adventure holidays to simply getting a chance to sightsee. They also vary in length; you could spend all year travelling or just a couple of weeks. So far, my gap year has given me great experiences and opened me up to new perspectives. I’ve become m o re i n d e p e n d e n t , b u t u l t i m a te l y I know that when I go, I’ll feel ready. I’ll be sure about the course I want to do, and I’ll be more confident after s p e n d i n g t i m e fo c u s i n g o n w h a t I want to get out of life. So, what ’s your plan?

A year year o off o openings penings and and anniversaries anniversaries 2015, with the Rugby World Cup and the Tall Ships Festival, was badged as ‘Our Big Year ’. I described 2017 as “the year it all starts to come together”. So what will 2018 be? It will be a year of anniversaries and a year of openings. We celebrate the 1100th anniversary of the death of Aethelflaed, Lady of the Mercians and daughter of Alfred the Great, and her burial at St Oswald’s Priory (which she founded). We also mark the 375th anniversary of the Siege of Gloucester in the Civil War – arguably the city ’s finest hour. It’s also 175 years since the publication of Dickens’ “A Christmas Carol”, which has a local connection because Jemmy Wood, known as the Gloucester Miser, is said to have been the inspiration for the character Ebeneezer Scrooge. It’s also the 100th anniversary of the creation of the RAF, since women got the vote, the first woman MP was elected and probably a lot more besides. We will see the long-awaited opening of our new bus station and the completion of phase one of Bakers Quay (the Premier Inn hotel, Beefeater restaurant and Costa Coffee drive thru, plus the Provender apartment building). The University of Gloucestershire’s Business School at Oxstalls is due to open in September and the associated student accommodation at Blackfriars will be ready for occupation at the same time. The new Next home and fashion store at the Peel Centre should be open towards the end of the year too and I’m very hopeful that the former BHS store in Eastgate Street will be occupied, giving the city centre something to cheer about.

The The landscape landscape o off tthe he ccity ity w will ill h have ave changed changed d dramatically ramatically The housing development on the former Kwik Save site, wrapping around Northgate Street , Black Dog Way and Worcester Street, should be completed and our heritage projects – Project Pilgrim at the Cathedral, Llanthony Priory and Discover DeCrypt – will all see major progress. When these projects are all completed, the landscape of the city will have changed dramatically, but there is still a lot to do. I hope 2018 will see us move the next generation of regeneration projects forward, particularly Kings Quarter (including Kings Square) and the former Fleece Hotel site. There will be a planning application for Kings Quarter by the summer, with work starting on demolition by the end of the year. The Council is going out to the market shortly to find a developer partner to regenerate The Fleece site following completion of de-risking works. As well as founding St Oswalds Priory, Aethelflaed was responsible for the street layout of the city centre and much of it remains today. When it was released in July 1998, Kristof Willerton was only four, but while there was Something About Mary for her gaggle of suitors played by Matt Dillon and Ben Stiller among others, for Kristof there is certainly Something About Sofia. That ’s because he has not long returned from the Bulgarian capital where he helped Great Britain win team gold in the World Tumbling Championships. And that success came four years after he became the first Briton ever to win individual gold in the World Tumbling Championships in, you guessed it, Sofia. It ’s fair to say that Willerton is probably the best tumbler that this country has ever produced. The 24-year-old one-time Sir

As it is, he’s certainly a big name among British fans of tumbling and, if he has his way, he’s still got several years left in a sport that he first became aware of a year before Cameron Diaz was exciting Ben Stiller and the like while playing the j o u r n ey it wo u l d take them on. Connor is still very much p a r t of t h e junior set-up at Old Richians – he’s captain Neil Galling with son Connor of the under15s – but dad has gone from being just t h a t , a p a r e n t , to b e i n g o n e o f t h e team’s coaches and also acting as the club’s webmaster. “I used to be a parent and I sort of got roped in,” he laughed.

Rugby R ugby iiss m much uch more m ore tthan han Megan’s Megan’s p pet et llove ove The South Africans always have a springbok with them when they run out onto the pitch, the Australians a wallaby and the British Lions, unsurprisingly, carry a lion. For Megan Goddard, there’s always a dog close by. And it ’s not just any d og. “It ’s my pet pug Gwen,” laughed Megan, who plays her club rugby for Gloucester-Hartpury. “She comes to all m y g a m e s . My m u m a n d d a d b r i n g her and she comes dressed in a Gloucester-Hartpury shirt!” M u m a n d d a d a re E m m a a n d Richard and they are the 23-year-old’s biggest supporters. Rugby takes up much of Megan’s time, of course, and she has to juggle those commitments with a full-time job at Bournside School where she is a PE technician. It ’s worth all the effort , however, because she’s a very good player as well as being a very good place-kicker. In addition to playing a starring role for Gloucester-Hartpury in the Tyrells Premier League, she’s also played for England and was in the first ever women’s Barbarians team that played against Munster in the autumn. She’s certainly racked up the achievements since she started playing the game at the age of 11. “I was always sporty,” she said. “I’d play all sport but the first time I ever picked up a rugby ball was at a county trial. I was told just to join in but once t h e y s a w m e p l a y t h ey s a i d t h e y couldn’t not select me because I had so much natural talent.” Those county selectors were good judges of course, but what was it that ex-Chosen Hill School pupil Megan liked so much about rugby? “I just liked running with the ball and k i c k i n g i t , ” s h e s a i d . “ I u s e d t o p l ay quite a lot of football but this was a bit d i f f e r e n t , I e n j oy e d k i c k i n g t h e b a l l over the sticks.”

And although she’d hardly played any rugby, she knew where she wanted to be on the pitch. “I was never a forward, no way,” she l a u g h e d . “ I s t a r te d o n t h e w i n g a n d then moved inwards to 10 or 12.” So which position does she prefer? “Fly-half,” she said. “You get your hands on the ball more and can make more decisions. You can run a game from 10. I think my distribution is the strongest part of the game although I have the kicking option.

It It didn’t didn’t h happen appen o overnight vernight “I’m not a crash ball player although I can take it into contact if needs be.” And it ’s that sort of ability that attracted the attention of England’s selectors, although it didn’t happen overnight. “I didn’t play much rugby during my time at school,” she said. “I started off at Hucclecote, then they folded and I went to play for Gloucester Reds. “After that I played for Cardiff Quins before joining Worcester Ladies when I was 18. That was a good move for me because I went straight into their first team. It helped me that there we r e s o m a n y g o o d p l a y e r s a t t h e club.” Megan had already won representative honours – she was selected for

England Under-20s at the age of 16 – and it was while a student at Hartpury College that she earned the first of her five England caps at the age of just 18. “ I p l aye d i n t h e N a t i o n s Cu p i n Colorado in Canada,” she said. “Then I played in the Six Nations so that was really good.” Just when things are going so well, however, sport has an unhappy knack of kicking someone in the teeth and u n fo r t u n a te l y f o r M e g a n , a s e r i o u s k n e e i n j u r y b r o u g h t h e r c a re e r t o a shuddering and lengthy halt. “I did my ACL in 2015,” explained Megan, “and I was out of rugby for a season. I needed a knee reconstruction and then further surgery. Fortunately my parents were very supportive, they saw how low I was.” That injury was bad enough of course but the timing couldn’t have been worse, as it was the period when the top players in the women’s game were going professional. Sadly for Megan she was in no position to press her claims for a fulltime contract, and despite being one of the more high-profile players in the game – her selection for the Baa-Baas i s t e s t i m o n y t o t h a t – s h e re m a i n s strictly amateur. This is the time when traditionally we make resolutions, so why not shake things up this year and make one for wildlife? Here are six suggestions of resolutions you could make that would benefit our wildlife, but may just benefit you too.

1. 1. Visit Visit a woodland woodland There is growing research to show the great benefits that being outside and surrounded by nature can bring to our wellbeing. Woodlands are in decline but fortunately, thanks to groups such as The Woodland Trust , there are areas being preserved that we can all enjoy. There are many throughout the year including The Great British Bee Count in June, The Big Butterfly Count in August and the RSPB’s Big Garden Birdwatch this month. It runs from the 27th-29th January and you can register at www.rspb.org.uk . These are just a few ideas of how your New Year resolutions could help to make positive changes for wildlife. You could just do one or go for all six, b u t n eve r u n d e re s t i m a t e t h e difference you can make. 2018 will n o d o u b t b r i n g m o re c h a l l e n g e s fo r our natural environment so let ’s do what we can to help it.

2 2018 018 P Predictions redictions Money Matters is not in the habit of making too many resolutions for a New Year, but I thought I would share with you a few predictions for the financial outlook in 2018. Maybe you’ll agree; maybe you won’t. You may even want to have a go at the exercise yourself. We have to start with the UK’s departure from the European Union. The Government appears to have made some progress in persuading EU negotiators to discuss trade arrangements, but it looks like a long haul to me. There has to be a risk that no deal on trade will be struck u n t i l t h e E U i s h a p p y w i t h ev e r y t h i n g e l s e a n d t h a t therefore we will still be talking about this issue this time next year. “Surely not”, you cry! I wish I had your faith. The stock market will, of course, be reactive to the EU trade talks, but the longer those take to conclude, the more jittery the market will become. Could it survive a hit of, say, 20% of share values? Clearly it can, but what will the impact be on savings, pensions and businesses if it did fall that far? Less speculative potentially is the subject of interest rates. We saw our first rise in base rates for a decade in November and it’s not rocket science to work out that they are only going one way in 2018. I think base rate will double to 1% in the next twelve months. We’ve also had the announcement of more bank closures recently and this is another trend that seems certain to continue in the year ahead. More and more of our financial transactions are being done online and I score no marks for predicting that this too will continue apace, but it clearly will! These are bits of fun, of course, rather than advice on which you should rely. I haven’t strayed far from the regular topics. Maybe I should predict that we will see the first £250 million football transfer or that I will win the National Lottery. Fat chance of the latter methinks. Enough of my ramblings. Let me wish all readers a happy, healthy and prosperous New Year.
