Delectable Duck Salad
Delicious Dishes with Helen Kingscott
A tasty summer treat! For a lighter lunch option, shred 2 duck breasts between 4 people Ingredients: 2-4 duck breasts; ½ kg new potatoes; salad leaves; handful of coriander; 1 lemon; 1 apple, sliced; red pepper, diced; a few radish, sliced. Method: 1 Pan fry 4 duck breasts for 20 minutes – if preparing the salad as a lighter lunch option, oven cook 2 duck breasts at 180 degrees for 40 minutes (vary the time depending on the size of the duck breasts). 2 Boil new potatoes for 15 minutes or until soft. 3 Mix the salad leaves with coriander, apple, red peppers and radish and prepare on plates. Squeeze lemon juice over the salad.

4 Slice the duck breasts and serve with the salad and new potatoes. For the lighter option shred the duck breast and mix into the salad – serve with new potatoes if you want.

Treating cancer in pets Heart disease is the number one killer in humans but in the pet world it is a minor problem compared to the number one nasty that is cancer. Nearly every type of cancer that affects humans has a version in the dog and cat world – skin tumours, mammary/breast cancer, leukaemias, and every single internal organ like the lungs, liver, pancreas, brain, gut and bladder can all develop cancers. Last month I discovered a small pea-sized growth that had developed in one of my dogs’ mammary glands. Being a vet and knowing the problems that can occur with these type of tumours I had her in the next day and removed it surgically. Although it turned out to be cancerous I had caught it early and it is unlikely to grow back or spread elsewhere. How we treat pets that have cancer varies tremendously depending on the type of cancer, where it is located, the age of the pet and of course the willingness of the pet owner. Surgery is still our number one tool to remove cancer and can be curative if the cancer is caught early and hasn't already spread. However there are an increasing number of other options that are also available.
Various options available I hesitate to use the term 'chemotherapy' as most people's knowledge of what that means is largely affected by what they understand of human treatments. Most people instantly think of the sort that makes us extremely ill, our hair fall out and endure months of unpleasant treatment. In reality with pets we don't use those sort of intensive, toxic regimes. We only use medications that pets can tolerate largely with few, if any side effects and at doses that are unlikely to cause more problems than they fix. As a result only certain types of cancers are responsive to these more gentle protocols but for those that do respond it is possible to get very effective periods of remission and sometimes even cure. Radiotherapy has a place in the animal world. Although this type of treatment is only available in specialist veterinary centres it can be a good option for tumours in hard to remove places like the mouth or nose. It will likely involve a dedicated owner who can take a pet for multiple visits but again is well tolerated by many pets. Advances in diagnostic tests and CT scans can give a greater understanding to the extent of a tumour and improve surgical cure success rates and new drugs are always becoming available that give us better and safer options to treat previously unresponsive cancers.
Early diagnosis is vital Ultimately, though, early diagnosis and action give us the best chance to beat cancer in pets as in humans. If you find a lump on your pet, or are worried about other symptoms, get them checked out quickly. Regular health checks and annual vaccinations are a great opportunity to allow us a chance to examine them for problems. Don't be afraid to bring your pet in because you are worried about 'the big C' – there are always practical things we can do and even palliative therapy if we decide against more involved treatments.

Blue Lagoon The origin of this cocktail, like many others, is disputed but many people believe that it was invented in 1972 by Andy MacElhone – the son of the owner of the first cocktail bar in Europe, Harry’s Bar. The ability to master a blue cocktail is evidence of the impressive mixology skills that have earned Harry’s Bar great respect over the years. Many bars have concocted their own variations of the popular cocktail, with some substituting vodka for rum, some adapting it to create a Blue Lagoon Margarita, and others adding fruit juice instead of lemonade. Whether you have a favourite version or have never tasted this cocktail before, why not try out our recipe and relax in the sun with a refreshing summer beverage. Ingredients: Crushed ice; 50ml vodka; 25ml Monin Blue Curacao syrup (non-alcoholic, other types of Blue Curacao may contain alcohol); 25ml lime juice; 80150ml lemonade. Method: 1 Combine the ice, vodka, Blue Curacao syrup and lime juice in a shaker and mix well. 2 Pour the mixture into a tall glass, top up with lemonade and garnish with a slice of lime.

SALES EXECUTIVES Reincarnation of town’s Lower High Street Cheltenham’s Lower High Street is being demolished later this year to make room for ‘Phase II’ of The Brewery. The development will provide a 104-bed hotel and 34 town centre apartments above 100,000 sq ft of retail space. The attractive modern design will provide a vibrant retail frontage, and include a safe pedestrian link through to the existing Brewery facilities. However, did you know that the current Lower High Street was once home to an educational establishment – Cheltenham Boys’ Grammar School? Where today the cinema, Tesco and various other retail shops stand, caps, mortar boards and blazers were once commonplace. The school was designed by local architects Knight and Chatters and, despite being over-crowded and the sports field being situated miles away, is said to have had a great spirit and a sense of history that was almost tangible. It was erected in 1887, replacing the original Tudor school of 1578, and showcased many elements of the Tudor Gothic style from gargoyles and heraldic decorations to a castellated roofline and an octagonal turret. No doubt an extremely impressive building. Famous attendees of the school include Benjamin Baker (builder of the Forth Bridge), Gustav Holst (composer of the Planet Suite), Gilbert Jessop (England cricketer) and Sir Frederick Handley-Page (aircraft designer whose company made the Halifax bomber). When it was demolished in the late 1960s, the Grammar School moved to a brand new building in Hester’s Way, unfortunately losing its vast history. Page 10

Health & Beauty I could have stayed for hours! WOW! The most relaxing hour of my life! A calming and revitalising Indian Head Massage from the wonderful Emma Jones (below). Emma qualified as a Sports Massage Therapist in 2009 and has been working at Oakwell Health for just over a year. She was very welcoming, which, combined with the scent of the aromatherapy oils in her treatment room, helped me to relax straight away. The Indian Head Massage originated in the East several hundred years ago and is a big part of Indian culture. Despite its name, the treatment actually involves the back, shoulders, arms, neck and head. Emma emphasised that she has a ‘tailored’ approach with all of her treatments, because she believes her clients should get the most benefit possible. She asks a few questions before starting the physical work, in order to assess general health and any specific conditions the customer may have. If you don't have any particular aches or pains, Emma will work on all parts mentioned above, giving the client an overall feel of the treatment. However, for those with a problem in a specific nature, such as persistent headaches or neck tensions, Emma will focus more of her time in that region. The Indian Head Massage offers many benefits in a short space of time. By working on pressure points, Emma can relieve physical tension as well as clearing the subtle energy channels, which helps to synchronise body systems. Though many therapists

use oils as an aid, Emma doesn’t as she feels she is able to create the shapes and movements of the treatment using only her hands. With no oils dripping through your hair and no need to undress, the Indian Head Massage is an accessible treatment that can even be done during a lunch break! The treatment can last for either 30 minutes or an hour – if you have the time I would definitely recommend an hour! The massage was calming, yet invigorating and I left feeling totally relaxed. I couldn’t have asked for a nicer therapist – Emma was so lovely and I look forward to returning to try another of her treatments in the future. This walk climbs quite steeply to Fish Hill, then levels off as you walk along the top of the scarp slope of the Cotswolds towards Broadway Tower where you are rewarded by uninterrupted views over the surrounding countryside. A Use the car park off the B4632 Stratford road. Walk east along the High Street and out of the village for ½ mile (1km) to a public footpath on the left, just after Broadway Waterworks. B Cross two stiles to pass under the A44. Cross another stile, bear right and continue following the waymarks uphill to the road. C Take the path opposite into the wood, turning left over the stile. Where the path splits at the top, turn right and, at the next junction, turn left. Follow the path to climb up the steps to the road.

Continue along the grassy path to the Tower. 1 The tower occupies the second highest point of the Cotswolds at 1024 feet (312m). The extensive view covers 13 counties and includes the Black Mountains, the Malverns, the Clee Hills, and the Wrekin. It was designed as a folly by James Wyatt and built in 1799 by the Earl of Coventry for his wife. It is 55ft (17m) high, constructed from a non-native stone and remained in private hands until 1972. Prinknash Bird & Deer Park is all ‘go’ this summer, with a selection of great events for the whole family to enjoy! The new “Creative Crafting” event will be held every Wednesday and Saturday from the 6th to 30th August – an ideal day out for young children. This exciting addition will include face painting and a craft marquee where children can use their imagination and creativity to make all manner of things under the watchful eye of Lyn. Every year we hope to have additions to our tame deer herd and this year we are hoping that our latest new arrival becomes part of the deer who will meet the public in the summer months. It is always touch and go with young fallow deer as they are very hard to hand rear, but we are making good progress with our new arrival – all we have to do now is choose a name and soon she will be in the park meeting all of the children. Teal the Gypsy Caravan is the jewel in the crown of The Bird Park and it can still be hired for children’s parties, adult lunches or grandparent’s afternoon tea. The Gypsy Caravan seats 14 children and two adults with ease, and is a lovely place to host your child’s special day amongst the park’s inmates of birds and animals. And of course, all of the newly hatched ducklings and goslings are being released daily along with the new hatchlings in the aviaries.

Time to tidy up To start with, I received a well-deserved rap on the knuckles from the people who run the Annecy Gardens (mentioned in last month’s garden tips). The lovely gardens are run by a group of hard-working volunteers under the auspices of ‘Transition Town Cheltenham’, not by Cheltenham Parks department, although the council has been very helpful to the group. Look at their blog, which gives weekly seasonal information – http://annecygardenscheltenham.blogspot.co.uk/. Now back to the garden in August! It is the time to cut-back summerfruiting raspberry canes such as ‘Glen Ample’ or ‘Malling Admiral’ as their harvest should be over. Cut them down flush with the soil to stop pests and diseases taking over and to promote new canes to grow. Put any pots of plants into a shady spot if you are away for a few days and stand in a paddling pool with an inch of water or so if you have one to keep them going.
Stop pests and diseases taking over Keep your tomatoes and peppers consistently moist throughout the growing season or the roots won’t absorb nutrients properly and can get blossom end rot (light brown spots appear at the flower end of the fruit). Only apply a liquid fertiliser when the soil is moist. You should be starting to prune established fruit cordons, espaliers and fans to help restrict growth, maintain the shape of the tree and promote next year’s fruiting spurs. With clean, sharp secateurs shorten new shoots growing from the trunk or main stems to three leaves. Prune sideshoots growing from established lateral branches to one leaf. Ordinary fruit trees are pruned in the dormant season. August is the time to tidy up climbing and rambling roses after they have flowered. If they are grown over arches or pergolas they can be a real hazard if their shoots are too long and whipping around in the wind. The shoots should be pliable when they are young and are best trained around supports in a spiral fashion which encourages the most flowers. The main pruning will be done in February but this is just to keep them under control. The climbing beans you have planted need regular picking now so as not to stop producing. If you are going away, entreat a neighbour or friend to come in and help themselves (and then they can water them as well!) Pick any courgettes before you go, even if they are way too small because they will be the size of marrows when you get back!

The Local Answer
Reshoring It was a word that was new to me when I first heard it earlier this year. It’s a made-up term, of course, and it means the process of bringing manufacturing processes back into the UK from the Far East. We’ve always encouraged readers of this magazine to shop locally and reshoring is an extension of that principle – if it can be done on a more local basis, it should be. A quarter of a century or more ago, British consumers began to demand production of higher volumes at lower prices. It drove manufacturing out of this country at a rate that represented an exodus. But the tide has turned and many businesses who sent their manufacturing activities offshore are in the process of bringing them back onshore. Labour rates in the Far East were so low that UK consumers could afford to pay the carriage and import costs associated with bringing the goods back to this country. For many years the system worked and produced the low-cost product that consumers sought – for some it still does work and they will continue to source their goods abroad. But for a growing number of others, things have changed to such an extent that they have taken the bold steps to reshore their manufacturing activities. The reasons are numerous and varied. A big rise in labour rates in China and its neighbouring countries, ethical issues and the costs of auditing them, a demand for quality over quantity, disruptions in the supply chain. All good reasons, but perhaps the one key ingredient was that the UK government recognised the issue and started to give greater support to those wanting to produce goods in the UK. Perhaps the stamp ‘Made in Britain’ will soon be seen on more of the goods sold in our shops.

We have opportunities in our new Gloucestershire North area for:
DRIVERS for a few hours/month
DISTRIBUTORS for a few hours/month
We need Drivers with their own vehicle to collect and deliver copies of The Local Answer to our Distributors in your area. Ideally you will live in this area and your vehicle will be a large car or small van to avoid more trips than necessary. The estimated hours are 3-4 per month to fit in with print and distribution schedules. You will be expected to fund your fuel and any telephone contact required. Your vehicle will need to be insured for business use – a small charge or free with most insurance companies. You must be flexible, reliable and sufficiently physically fit in order to lift boxes of magazines.
We require Distributors for rounds in your area. Each round is made up of 150-400 copies per month. The rate of pay is 6 pence/copy. Depending on property types, our current team of people average between 100150 copies/hour (equivalent to £6-£9/hour). Magazines are delivered to Distributors’ homes towards the end of each month and we expect deliveries to be completed within four days between the hours of 7am and 9pm. You must be 13+ years old, flexible, reliable and sufficiently physically fit to perform the duties.
