Italian Herbed Bread

Blue Christmas I’ll have a blue Christmas without you; I’ll be so blue thinking about you. Decorations of red on a green Christmas tree Won’t mean a thing if you’re not here with me. I’ll have a blue Christmas, that’s certain; And when that blue heartache starts hurtin’; You’ll be do'in’ all right with your Christmas of white, But I’ll have a blue, blue Christmas.

Christmas Song 21/2cups bread flour 1 cup hot tap water 3 tablespoons olive oil 1/2 teaspoon white sugar 1/2 teaspoon salt 1 package fast-acting dry yeast* (see note below about yeast) Dried Italian seasonings, to taste Dried rosemary, to taste 1 teaspoon olive oil reserved for after baking Sprinkle of Kosher salt reserved for after baking In a mixing bowl, combine fast-acting yeast and hot water. Let yeast and water sit for 5 minutes.Add sugar, salt, olive oil, herbs and flour. Mix until ingredients are well incorporated. (For those with bread machines, follow the directions for the machine for mixing the dough).Then turn out onto a floured board.With hands dusted in flour, knead bread for 5 minutes until dough is soft and no longer very tacky. *If using fastacting yeast, follow the instructions for rising. Many brands require the dough to simply sit aside for 10 minutes, which will replace the first rise with traditional yeast recipes. If using traditional yeast, follow the instructions on the packet for rising and punching down dough. When dough has sat or undergone the first rise, transfer it to a loaf pan that has been lightly oiled. Set the pan in a warm spot of the home. Let the dough rise in the loaf pan until doubled in size, roughly 2 to 3 hours. Bake risen dough in an oven preheated to 400 F for 20 minutes, or until golden brown. Remove bread and use a pastry brush to brush olive oil on top and then sprinkle with Kosher salt. Serve warm. (Serves 6 to 8)

Turkey leftovers the family will want to eat It's easy to have leftover turkey once the Christmas holiday has passed. Many people miscalculate the number of pounds of turkey they need to feed the family, or an excess of side dishes makes Tom Turkey less of the culinary centerpiece he should be. Don't worry if you're one of the people left with an abundance of turkey.There are plenty of ways to turn it into delicious meals to be enjoyed for several days after the holiday. To enjoy turkey leftovers, first the remaining turkey should be prepared and stored so it can be safely eaten later on.This means that turkey should be deboned and packed up for storage no later than two hours after the bird has been served, according to the U.S. Department of Agriculture's Food Safety and Inspection Service. Generally, leftover turkey can be enjoyed 3 to 4 days after Christmas if it is refrigerated. If the meat is frozen, it can last much longer. Now comes the time to whip up delicious recipes from that remaining turkey. Here are some ideas to whet the appetite. • Turkey chili: Combine the meat with kidney beans, red and green peppers, onions, pureed tomato and

a package of chili seasonings from the supermarket. Let simmer and serve with corn bread or over rice. • Turkey kabobs:Thread turkey on skewers with apples, pears or pineapples. Bake until meat is reheated and fruit is soft. • Turkey gyro:Top pitas with turkey meat, lettuce, onion, and fresh tzatziki sauce.Tzatziki is made by mixing chopped cucumber, garlic and lemon juice with a thick Greek yogurt. • Turkey omelets: Chop up turkey and add it to the egg mixture when making omelets. Serve with toast spread with cranberry sauce. • Turkey pot pie: Line a pie tin with homemade or store-bought pie crust.Add the turkey, half a can of cream of chicken soup, a package of thawed mixed vegetables, and the remaining pie crust. Bake until the pot pie is bubbly and hot. • Turkey Mexican-style: Replace the meat in tacos, fajitas or enchiladas with leftover turkey. • Buffalo turkey pizza:Toss leftover turkey with melted butter and hot sauce. Use the seasoned meat on top of a homemade or pre-made pizza. Bake and enjoy. • Turkey-tossed pasta:Add strips of turkey to a dish of pasta, topped with

Serve on soft sandwich buns with a side of cole slaw. • Turkey salad sandwich: Mix chopped turkey with mayonnaise or salad dressing, diced celery, onions, and shredded carrots for a refreshing cold sandwich filling. • Turkey and vegetable stir-fry: Heat a wok or skillet with a little oil and saute onions, garlic and favorite stir-fry vegetables.Add the turkey to heat and season with soy sauce or teriyaki. Serve over steamed rice.

Continue cooking mixture until it reaches 245 degrees F. Remove from heat and stir in salt and vanilla. Pour mixture into pan to cool and harden. Remove the caramel block from the pan and cut into squares using a sharp, well-oiled knife. Sprinkle a few grains of fleur de sel on top of the caramels before wrapping. Yield:About 60 caramels

Holiday Ham with Maple Syrup-Clove-Marmalade Glaze Courtesy “Stonewall Kitchen Winter Celebrations” (Chronicle Books, 2009) by Jonathan King, Jim Stott and Kathy Gunst ingredients 1 8- to 10-pound bone-in smoked ham (sliced or unsliced) 2 tablespoons whole cloves 2 large oranges 1/2 cup maple syrup 1/2 cup marmalade Place a rack in the middle of the oven and preheat to 350 degrees F. Trim the ham of any excess fat and place it flat side down on a rack in a large roasting pan. Using a small, sharp knife, score the ham by making a grid pattern (1/4-inch deep) across the ham at 3/4-inch intervals. (If you’re using a sliced ham, you’ll only need to make one set of cuts, perpendicular to the slices that are already there.) Poke the pointy ends of the cloves into the ham where the lines intersect, scattering any remaining cloves on the bottom of the pan. Zest the oranges, and set the zest aside in a small saucepan for the glaze. Juice the oranges directly over the ham, straining the seeds, then cover the ham with foil and bake for 2 hours, turning the pan and basting with the pan juices once or twice during cooking. Meanwhile, add the syrup and marmalade to the pan with the zest and bring to a simmer over low heat, stirring.When the marmalade has melted, remove from the heat and set aside. After 2 hours, increase the oven temperature to 425 degrees F. Remove the foil, pour the glaze evenly over the ham and bake another 30 minutes uncovered, or until nicely browned.Transfer the ham to a serving platter and let it sit 15 minutes before slicing. Serve warm, drizzled with pan juices. Note: Look for smoked hams at specialty food shops and most good butchers, or in most supermarkets.You can also use a honey-cured ham, sliced or unsliced. Nougat Candy (Turrón) with Almonds & Cashews From “Dulce: Desserts in the Latin-American Tradition” (Rizzoli, 2010) ingredients 1/3 cup granulated sugar 1 cup honey 1 vanilla bean, halved lengthwise, seeds scraped out and reserved (or 1-1/2 teaspoons vanilla extract) 1 egg white 1 pinch cream of tartar 1 cup toasted and coarsely chopped almonds 1 cup toasted and coarsely chopped cashews About 2 cups confectioners’ sugar method In a small saucepan over medium heat bring the granulated sugar, honey and vanilla bean and seeds (or extract) to a boil. Continue cooking, without stirring, until the temperature on a candy thermometer reaches 248 degrees F (the “soft ball” stage). If you don’t have a candy thermometer, scoop a bit of the sugar mixture onto a spoon and submerge it in a bowl of ice water for a few seconds. Grab the sugar with your fingertips.You should be able to form it into a small, soft ball. Remove the vanilla bean.

While the syrup is cooking, soak the bowl and the whisk attachment of an electric mixer in warm water and dry thoroughly.This will ensure that the egg whites gain enough volume during beating. Put the egg whites and cream of tartar in the bowl and beat until soft peaks form.Turn the mixer to high speed and slowly and carefully add the hot syrup to the egg white mixture. Continue beating at high speed until the meringue becomes nice and fluffy, 5 to 7 minutes, or until the bowl no longer feels hot to the touch. Fold in the nuts. Dust a work surface generously with confectioners sugar. Pour the warm nougat on top and cover it with more confectioners sugar. Knead it until it is fully coated with the sugar and no longer sticking to the surface of your hands, about 1 minute. Form the nougat into a large rectangle and, using a rolling pin dusted with more sugar, flatten it to 1/2-inch thick. Cut the nougat into 2-by-1-inch rectangles and transfer them to a container dusted with confectioners sugar. Once the candy has cooled completely, cover the container and store in a cool, dry spot.

Salt-Topped Chocolate, Toffee and Pecan Cookies 1 cup (2 sticks) unsalted butter 1/3 cup packed dark brown sugar 1/2 cup granulated sugar 2 cups flour 1/4 teaspoon salt 1/2 teaspoon baking powder 2 (3.5-ounce) bars milk chocolate with toffee pieces (see note) 1 cup coarsely chopped, salted, roasted pecans Coarse salt Combine butter, brown sugar and granulated sugar in bowl of electric mixer. Beat at high speed until light and fluffy, scraping bowl down occasionally. Stir together flour, salt and baking powder in a bowl.Add flour mixture to butter onehalf cup at a time. Beat after each addition to blend in. Chop chocolate into bite-size pieces.Add chocolate and pecans to butter mixture. Line two baking sheets with parchment paper. Divide dough into 18 balls,

Silent Night about 3 tablespoons each. Place 9 on each baking sheet, at least 2 inches apart. Flatten to 1/4-inch thickness with fork. Refrigerate cookies at least 1 hour or up to 8 hours. Just before baking, sprinkle a small pinch of coarse salt over each cookie. Bake cookies one sheet at a time in preheated 325 degree F oven for 20 minutes or until cookies are set and golden brown around the edges. Remove from oven. Cool for five minutes; remove to wire rack and completely cool.Wrap cookies individually in plastic wrap and add a ribbon. Makes 18 cookies. Note: Look for milk chocolate with toffee pieces in natural food supermarkets and finer food stores. Green & Black’s Toffee is an excellent choice. If not available, use milk chocolate covered toffee. Chop and measure 1 1/3 cups. If desired, bake cookies in advance, wrap in heavy-duty aluminum foil and freeze.

Beef Shanks with Red Wine and Tomatoes (Adapted from “The Italian Slow Cooker”) ingredients 1 large head garlic, separated into cloves, peeled 2 cups dry red wine 1 (14-ounce) can Italian peeled tomatoes with their juice, chopped 1 (4-inch) sprig fresh rosemary or 1 tablespoon crushed, dried 3 pounds bone-in beef shanks, about 2 inches thick, trimmed Salt and freshly ground pepper to taste Thick-sliced Italian bread method Scatter garlic in large slow cooker.Add the wine, tomatoes and rosemary. Place the beef shanks in the cooker and sprinkle with salt to taste and plenty of pepper. Cover and cook at low setting for 6 to 8 hours, or until beef is tender and falling off the bone. Skim and discard excess fat; correct seasoning. Toast the bread and place 1 or 2 slices in each serving dish. Break the beef up with a spoon and ladle some of the beef, garlic and juices over the bread. Serve with the bones for the marrow. Makes 8 servings.
