Q. What makes your olive oils and balsamic vinegars unique? A. We offer a product that demands quality and freshness, and so we stand by our products by allowing the customer to try our olive oils and vinegars before making a purchase. Being able to taste our products before purchasing is what sets us apart from other stores. The result is a high level of customer approval with every purchase. We are lucky in the sense that we get to see the look of satisfaction on our customers’ faces before they leave our stores. Allowing the customer to sample our oils and vinegars is the source of our continued success and it is what makes us unique and memorable.

Q. What is your current favorite product and how are you using it? A. My current favorite product is our Coratina Extra-Virgin Olive Oil. The Coratina olive is native to the Puglia region of Italy and grown today throughout the world. Our Coratina is grown in the southern hemisphere, in the desert, in Pisco, Peru. It has a fruity aroma of green apple and green tomato with bitter greens such as radicchio on the palate. It is perfect for dipping with warm, crusty bread, which is also my favorite thing to do. Our Coratina has won two prestigious awards: Winner of the Gran Prestige Award at the 2012 Terra Oliva Olive Oil Competition in Israel and the Bronze Medal Award at the 2012 Los Angeles Olive Oil Competition.

Q. Your products are popular wedding favors. Tell us more about that. A. Our selection of olive oil favors and bridal gift sets are not only unique but delicious. Brides can choose from over 30 different olive oil and vinegars and create a perfect pairing to match a theme. Our Dark Chocolate Balsamic Vinegar is popular with February brides looking for a Valentine’s Day flare. Our Nocellara EVOO and Fig Balsamic Vinegar are popular pairings with brides looking for an Italian theme wedding. Our large selection and amazing taste is what brides fall in love with when they first try our products. We have recently been chosen by brides for Best of Weddings 2013 on the Knot, the number-one wedding destination, most trusted by brides.

Q. If someone was shopping there for the first time, what would you recommend they try?

A.

When a customer first enters our store an associate is there to guide them through the different olive oil and vinegars. We recommend that they try at least one olive oil and vinegar, any of them! This allows the customer to experience first-hand what we’re all about. After that, it becomes a matter of deciding which one if his or her favorite. Some current customer favorites are the Coratina Extra-Virgin Olive Oil, Garlic Olive Oil and Dark Chocolate Balsamic Vinegar.

Taste of the square Conchiglie Balsamico

Everyone loves Teresa Caffe. ...And with good reason. They have some of the yummiest pizza, pastas and salads around. We were thrilled when they shared one of their signature dishes with us. “It’s a simple dish, but the balsamic reduction adds the magic,” says Rich Phillips, General Manager. During extra busy times, Chef de Cuisine, Rogelio Morales can make this dish up to 225 times a week! And now you can make it at home.

Ingredients 6 oz shell shaped pasta 4 oz chicken breast 1 oz dark balsamic vinegar 4 oz heavy cream 2 oz asparagus 1 tsp chopped garlic S&P to taste Balsamic Reduction––dark balsamic vinegar, granulated sugar Ahead of Time Cook pasta 1/2 to 3/4 of the way to ala dente, cool and coat with oil (canola/olive oil blend.) Cut chicken breast into 1” pieces (shape does not matter) Prepare Balsamic Reduction– 4 parts dark balsamic vinegar/one part granulated sugar, simmer until reduced by half or sticks to spoon (Balsamico for two–1/4 cup dark balsamic vinegar 1 tablespoon of granulated sugar.) Cut asparagus on a bias into 3/4 inch pieces Prepare Heat pan and coat with a canola/ olive oil blend (75/25) Add chicken and garlic– cook through Add 1 oz (two tablespoons) balsamic vinegar Add 1/4 cup cream– reduce by 25% Add 6 oz pasta and 2 oz asparagus – bring to temperature and finish cooking to ala dente (add a little water, preferably, the water the pasta was cooked in if needed) Plate and drizzle with Balsamic Reduction

Lisa Brock, opened Zoe 18 years ago in a 584 sq foot space on the Square. Today the store has grown to 10 times that size and continues to be Princeton’s very own style landmark, where you’ll only find the freshest looks hanging from the racks. Nassau Inn Rejuvenation Provides Exciting New Amenities to Guests and Clients The buzz surrounding the recent completion of the rejuvenation of Nassau Inn, a luxury, full-service hotel located on Palmer Square, has guests, clients, the community and visitors very excited about the outcome. After two years of construction, Nassau Inn has transformed from 203 quaint and colonial to 188 spacious and luxurious guestrooms and suites people consider their home away from home. Everyone from area businesses to brides are benefiting from Nassau Inn’s updated 14 event spaces, including the redesigned Prince William Ballroom.
