Treasure Trove Farms are made up of 50 hectares of land that produces Swiss chard, spinach, green beans and baby marrows for Pick n Pay. Peter Nyathi Owner of Tropical Mushrooms
Homegrown, fresh mushrooms Peter Nyathi founded Tropical Mushrooms with nothing but a small bank loan in 1999 and has since nurtured it to become the biggest black-owned mushroom farm in South Africa. The farm now employs 146 Magaliesburg locals and produces 500 tons of the freshest mushrooms annually.

PnP White Mushrooms 250g Each
Mix ½ tub (110g) cream cheese, 1 crushed garlic clove, 2 tbsp (30ml) chopped pickled jalapeño, 1 tsp (5ml) smoked paprika, 2 tbsp (30ml) finely chopped coriander and the zest and juice (30ml) of ½ lemon. Season. Carefully twist off stalks of 2 punnets (250g each) PnP button mushrooms (freeze stalks and use for soup, sauce or risotto). Fill mushroom caps with cream cheese mixture using a butter knife. Dip in 1 cup (250ml) flour, then 2 whisked eggs, followed by 2 cups (500ml) fresh breadcrumbs. Refrigerate for 30 minutes. Heat 4cm canola oil in a saucepan and shallow-fry mushrooms until golden. Drain on kitchen paper. Blitz 1 avocado, ¼ cup (60ml) sour cream and a squeeze lime juice together. SERVES 4-6 Serve mushrooms with creamy avo.

Since founding their company in 1973, our yoghurt suppliers, the Groblers, have chosen to keep things in the family. Today, they count 500 employees from the local community as family as they handle all production and distribution in-house. Sustainably farmed free-range pork Richard Krige Director of Desert Star Free Range Piggery
If you’ve bought PnP brand fresh pork, bacon or pork sausages in the Western Cape, chances are it came from Desert Star Free Range Piggery. This renowned farm in Bot River near Hermanus takes the welfare of animals seriously as they believe it impacts the quality of the meat. “I simply love walking through the production units and looking at grazing pigs not confined in small areas,” Director Richard Krige says. Even though he is clearly passionate about his product, Richard cites his staff as his greatest asset. “Finding the balance and optimising sustainable production are key to producing in an economically sound and environmentally acceptable manner,” he says. “This happens when your people are the number one priority in your business. Life is about the people you engage with.”

ITALIAN PORCHETTA ON ROLLS A real crowd-pleaser. 1 large onion, finely chopped 1 bulb fennel, finely chopped Glug olive oil 3 cloves garlic, finely chopped 2 tbsp (30ml) rosemary leaves, finely chopped 2 bay leaves, finely chopped 1 tsp (5ml) fennel seeds Pinch ground cloves 1 free-range shoulder of pork, butterflied Salt and milled pepper Rocket and fresh floured rolls, for serving Sauté onion and fennel in oil until soft. Add garlic, herbs and spices and cook for a few minutes more until fragrant. Cool a little. Preheat oven to 170°C. Open out pork and spread the inside with an even layer of onion and fennel filling. Season well, roll up and secure with butcher’s string. Wrap tightly in foil and slow-roast for 2-3 hours until very tender. Unwrap and cook for 30minutes more or until golden brown. Rest well. Thinly slice and pile pork and rocket onto rolls to serve. SERVES 6-8

As easy as pie NUTTY PEAR AND CHOCOLATE PIE 1 batch basic Filling short crust pastry ¼ cup (60ml) cocoa powder, sifted 6 tbsp (90ml) water 4-5 medium pears, cored and cut into wedges 1 packet (100g) pecan nuts, hazelnuts, raisins or cranberries 1 slab (100g) 70% dark chocolate, chopped ¼ cup (60ml) castor sugar Chocolate ganache or whipped cream for serving Preheat the oven to 180°C. Whisk cocoa powder and water together until smooth. Add remaining filling ingredients and mix well. Place filling into a pie dish and cover with pastry. Seal edges with a fork and make a slit in the centre for steam to escape. Brush with an egg yolk and milk glaze and bake for 25 minutes or until pastry is golden and cooked through. Serve topped with chocolate ganache or whipped cream.

When married duo Judy and Doug Woodgate built a swimming pool on their dairy farm in 1997, they got a big surprise. While testing the mountain water they filled the pool with, builders told Judy: “Your water is better than the bottled water we have tested. You should bottle it.” Knowing that the surrounding nature conservation area has no inhabitants or developments causing pollution of the aquifer’s pure water, she obliged. BRUSCHETTA WITH BABY MARROW PESTO
FRONT COVER RECIPE
Cover Recipe Place 1 punnet (400g) chopped baby marrows, 1 packet (100g) toasted cashews, a handful each of coriander and basil leaves, 2 small crushed garlic cloves, 1/3 cup (80ml) olive oil, ½ cup (125ml) grated parmesan, and zest and juice (120ml) of 2 lemons in a food processor and blend. Add extra olive oil if needed and season. Heat a griddle pan and toast 10-12 slices of crusty bread. Spread pesto on toast and top with 1 tub (300g) crumbled feta and ½ packet (120g) sundried tomatoes in olive oil.

The regulatory technologist keeps up with all relevant legislation to provide the necessary training to the technical team. The packaging technologist works with everyone involved in the making of our products to ensure our packaging is honest, sustainable and beautiful. The in-store food safety technical manager creates and maintains the food safety protocol in all of our retail stores. The dietician answers customers’ and staffs’ nutrition and food-related queries via the customer care toll-free line, the Health Hotline or email.
